The article is devoted to investigate the changes in the composition of biologically active substances (essential oils, lipid fraction, phenolic compounds) of the aerial part of the Bupleurum scorzonerifolium Willd. in depending on the phase of plant development. The greatest variety of compounds included in the composition of essential oils is characterized by a flowering phase. Fifteen terpene compounds – p-cymol, β-myrcene, trans-β-ocymene, limonene, (E,E)-α-farnesene, α-copaene, β-elemene, humulene, germacrene D, caryophyllene, γ-muurolene, bicyclogermacrene, Δ-cadinene, t-muurolol, spatulenol – are constant components of essential oils, regardless of phenophase. The quantitative content of these components varies from trace to major at different phenological phases. The coincidence of the main components of the lipid fraction was established. The main saturated acid is 16:0. Its content changes depending on the phase of vegetation – it is approximately at the same level determined in the phases of vegetation and flowering phases (26.78% and 27.26%, respectively) and there is a decrease in the fruit phase (18.17%). The main monounsaturated fatty acid is 18:1n9. Its greatest content was found in the fruiting phase, the smallest – flowering. The predominant polyunsaturated fatty acid is 18:2n9,12. Its greatest content was found in the vegetation phase (26.78%), the lowest - flowering (24.23%). However, the total content of unsaturated fatty acids exceeds the total content of saturated fatty acids in all phases of plant development. Although, their ratio varies from phenophase. There is a general pattern of highest content of phenolic compounds in the flowering phase for all studied samples. It was shown that during the flowering phase, the maximum accumulation of essential oils, lipids and phenolic compounds is observed.

Representatives of the genus Bupleurum L. in the composition of biologically active substances accumulate triterpene compounds (derivatives of α-amyrin and β-amyrin). Triterpene glycosides isolated from plants of the genus Bupleurum are called saikosaponinov, buplevrozidy, skorzonerozidy. Plants of the genus Bupleurum in the underground organs accumulate triterpene compounds in an amount of from 1 to 7%. Triterpene compounds of plants of the genus Bupleurum possess a hepatoprotective, antiviral, cytostatic effect. We have studied the triterpene compounds of the aerial organs of Bupleurum scorzonerifolium Willd. The material for the study was collected on the territory of the Irkutsk region (Russia). Isolation of triterpene compounds was performed with 70% ethyl alcohol. The compounds were identified by liquid chromatography with mass spectrometry and diode-matrix detection (UPLC-DAD-ESI-MS/MS). According to the results of the analysis, the content of 5 triterpene compounds was established: saikosaponinov A, B2, C, D, F. The isolated compounds are structurally derived from oleanan, in which glycosidation is observed at the C-3 position with α-L-rhinose, β-D-glucose and β-D-fucose. The spectrophotometric method determined the quantitative content of the amount of triterpene compounds in the above-ground organs of B. scorzonerifolium at different phases of the vegetation of the plant, by organs (in flowers, leaves, stalks), and also depending on the place of growth. It has been established that the maximum amount of the amount of triterpene compounds accumulates in the aboveground organs of B. scorzonerifolium during the flowering phase – 1.54±0.05%; the highest content of this group of compounds is noted in flowers – 1.70±0.06%; most of all, this group of compounds is collected by samples collected in the Ust-Horde Buryat District (1.96±0.06%). The aboveground organs of B. scorzonerifolium can be used as a source of triterpene compounds, the highest content of which is noted in the flowering phase. The study of triterpene compounds in the aboveground organs of B. scorzonerifolium was carried out for the first time.

The aim of the study was to determine the technological stock of phenolic compounds in European technical grape varieties grown in the climatic conditions of Uzbekistan, used to produce white and red wines. UV-Vis spectrophotometric method determined the total content of phenolic compounds in localized wine-technical grape varieties. Using high performance liquid chromatography (HPLC), the qualitative and quantitative content of groups and subgroups of phenolic compounds was studied, biologically active components obtained in the process of their extraction were identified, and studies were carried out to analyze the types of phenolic compounds by chromatographic separation in certain wine-technical grape varieties. Chromatographic separation, identification and qualitative analysis of phenolic compounds revealed 2 groups of phenol-carboxylic acids, 9 groups of dihydroxy acids, 7 groups of flavan-3-ol, 12 groups of flavonols and 15 groups of anthocyanins, as well as, 2 tannins. Also revealed the presence of flavonoids, which have such advantages as the individual identification of their polymer products. Studies have shown that local grape varieties have a high degree of phenolic retention. This result opens up tremendous opportunities for future scientific improvement of wine production technology

Aim. The aim of the work was to assess the composition of biologically active compounds in plants of Artemisia annua L. Methods. The plants were grown on the experimental plot of the Central Botanical Garden of the National Academy of Sciences of Belarus. Essential oil from the above-ground mass was isolated by the method of water-steam distillation. To analyze the content of flavonoids and hydroxycinnamic acids, we used the method of quantitative extraction and spectrophotometric determination of the total content of hydroxycinnamic acids in the presence of flavonoids in plant extractive substances, and the method of Folin-Chocalteu was used to determine the content of phenolic compounds. Analysis of the essential oils was performed by GC and NMR. The analysis of the content of phenolic acids in extracts was performed by HPLC. Results. The genetic potential of A. annua was evaluated under conditions of the central agroclimatic zone of Belarus. The yield and composition of essential oils, the content of phenolic compounds and flavonoids, the composition of phenolic acids were studied. Conclusions. A. annua in the conditions of the central agroclimatic zone of Belarus contains essential oil, which is dominated by isoartemisia ketone, β-selinene, β-myrcene and camphor. In the above-ground mass phenolic acids including chlorogenic acid and isomers of caffeoylquinic acid were predominant in the composition of phenolic compounds. Keywords: annual wormwood, essential oil, phenolic compounds, phenolic acids.

It is known that phytosterols have high immunomodulating, hypocholesterolemic and oncoprotective activity and are widely used in medicine. In addition, the plants containing them are used in feed of farm animals as dietary supplements that stimulate growth and the immune system. Promising, but poorly studied, sources of these biologically active compounds may be plants of the class Horsetails (Equisetopsida), grown under extreme conditions of sharply continental climate of Yakutia. The steric composition of the aerial part of the variegated horsetail (Equisétum variegatum) was studied for the first time during the summer and autumn vegetation. It is shown that the composition of the main free sterols includes β-sitosterol, campesterol, stigmasterol, isofucosterol, as well as a small amount of cholesterol. The total amount of free and bound sterols in the tissues of the aerial part of this species is about 0.5 mg/g dry weight or 2% of the total content of all lipid components. Moreover, the content of free sterols in the aerial part of variegated horsetail is an order of magnitude higher than the content of sterol esters in these tissues. Peculiarities of the seasonal (autumn-summer) dynamics of changes in the relative contents of stigmasterol, campesterol and isofucosterol and the absolute total content of sterols in the aerial part of variegated horsetail are revealed.

Extracts and their concentrates can be considered as a source of biologically active ingredients of food products and as food additives to increase the consumption of useful substances of berries. The benefits gained from their use lead to the development of advanced technologies that can allow them to be extracted from the feedstock without significantly compromising the biological activity from the feedstock. In this paper, we studied the content of antioxidants and their activity in concentrated extracts of cranberry (Vaccinium Oxycoccus), sea buckthorn (Hippophae rhamnoides L.), blackberry (Rubus fruticosus), viburnum (Viburnum opulus L.) and mountain ash (Sorbus aucuparia L.) berries. For all extracts, the total content of phenolic compounds, flavonoids and anthocyanins, antioxidant activity according to the DPPH method and iron-reducing antioxidant activity (FRAP) were determined. Concentrated extracts of viburnum contain the largest amount of phenolic compounds (9.3±0.3 mol HA/l), flavonoids (1.96±0.08 mol K/l) and anthocyanins (0.26±0.02 mol CG/l) among the studied extracts. There is also a high total content of phenolic substances and flavonoids in blackberry and rowan extracts (5.7 mol HA/l, 1.33 mol K/l and 4.7 mol HA/l, 192 mol K / l, respectively). The antioxidant activity of the extract of viburnum berries showed a directly proportional dependence on the content of biologically active compounds in it: DPPH-method-2.4 mg / ml; FRAP-method-39.99 mmol Fe2+ / kg. Also, high levels were found in concentrated extracts of blackberries, sea buckthorn and mountain ash. It is the extracts of viburnum, blackberry and mountain ash that are recommended to be used in the production of food products to enrich them with biologically active substances and give them antioxidant properties. Cranberry and sea buckthorn extracts can be used in combination with other extracts.

The aim of this work was to investigate and compare the amounts of biologically active compounds, dry matter and soluble solids in pulp and peels of four pear cultivars (‘Ksena’, ‘Beloruskaja pozdniaja’, ‘Alna’ and ‘Aleksandr Lucas’). The research was carried out at Vytautas Magnus University Agriculture Academy (Lithuania) in 2020. Four pear cultivars (‘Ksena’, ‘Beloruskaja pozdniaja’, ‘Alna’ and ‘Aleksandr Lucas’) were cultivated at a farm in the Joniškis District of Lithuania. Pears were grown following traditional pear production technology. The amounts of dry matter, soluble solids, vitamin C and fiber were determined using the standard method. The total content of phenolic compounds was determined using a Folin-Ciocalteu reagent with a UV/VIS spectrophotometer. The research results showed that significantly the highest amounts of soluble solids were found in the ‘Alna’ pear fruit pulp (14.25% f. w.). The ‘Alna’ peel sample had significantly the highest amount of total phenolic compounds (1290.99 mg 100 g–1 d. w.). The highest content of dry matter was found in the ‘Aleksandr Lucas’ pear fruit peel (24.67%). The ‘Aleksandr Lucas’ and ‘Beloruskaja pozdniaja’ pear fruit peel contained significantly the highest amounts of vitamin C (2.70 and 2.63 mg 100 g–1 f. w., respectively). The highest content of fiber was found in the ‘Ksena’ fruit peel (36.12% d. w.). The investigated pear peel sample had significantly higher amounts of dry matter, vitamin C, total phenolic compounds and fiber than the pulp. However, the pulp contains the highest contents of soluble solids.
