To conduct this study, a market survey was conducted in the form of a questionnaire to see what assortment of cheese and what ingredients bioactive compounds people want to consume. In order to find out what assortment of cheese and what ingredients with bioactive compounds people want to consume, a market survey was made in the form of a questionnaire. Taking into account the results of the survey,to process a melted cheese mix with the addition of dried tomatoes and basil. A technological scheme was developed for this cheese and sodium bicarbonate was used instead of melting and emulsifying salts to try to obtain a healthier product. The obtained product was analyzed for a period of 30 days from a sensory and physico-chemical. Physico-chemical and sensory properties of the obtained product were analyzed for a period of 30 days.

The search for cost-effective and environmental benign practices for the production of bioactive compounds has gained considerable attention since last decade, due to increasing demand of eco-friendly processes. Many industries have started adopting routes for the development of green chemistry by employing enzymatic approaches to overcome the limitations of physico-chemical methods and environmental concerns. Laccase is one such enzyme which has gained considerable attention in recent years as a biocatalyst in organic synthesis. Laccases possess versatile biochemical properties and the reactions catalyzed by laccase require only molecular oxygen with concomitant release of water as a byproduct. They have been widely used for reactions such as dimerization, polymerization, coupling, and grafting reactions and for antibiotic modifications. This chapter summarizes the advances that have been made in developing technologies based on laccase mediated reactions in the field of medicine, agriculture, food, and pharmaceuticals.

The main directions of research aimed at nutritional improvement have to face either excesses or deficiencies in the diet. To this end, different strategies may be adopted, such as the reformulation of products, the introduction of functional ingredients, and the application of biotechnology to increase the bioavailability of bioactive compounds. These interventions, however, can alter the physico-chemical and sensory properties of the final products, making it necessary to achieve a balance between nutritional and quality modification. This Special Issue offers readers information on innovative ways to improve the cereal-based foods and beverages, useful for researchers and for industry operators.

This study aimed to characterize the honeys of Babors Kabylia through sensory, melissopalynological and physico-chemical parameters. Thirty samples of honey produced in this region were collected over a period of two years and analyzed. All the samples presented physico-chemical parameters in conformity with legislation on honey quality, with few exceptions, linked mainly to beekeeping management. The pollen spectrum revealed a great diversity with 96 pollen types. The main pollen types were spontaneous species as Fabaceae (Hedysarum, Trifolium, Genisteae plants), Asteraceae plants, Ericaceae (Erica arborea L.) or Myrtus and Pistacia. The sensory properties of samples showed a high tendency to crystallization, the colors were from white to brown, but most of them had gold color. Smell and odor corresponded mainly to vegetal and fruity families and in taste perceptions besides sweetness highlighted sourness and saltiness notes. Seventeen samples were polyfloral, one was from honeydew and twelve were monofloral from heather, genista plants, sulla, blackberry or Asteraceae. Heather and the honeydew samples showed the darkest color, the highest electrical conductivity and phenol and flavonoid content. A statistical analysis based on the most representative pollen types, sensory properties and some physico-chemical components allowed the differentiation of honey samples in terms of botanical origin.

The use of sewage sludge in agriculture decreases the pressure on landfills. In Romania, massive investments have been made in wastewater treatment stations, which have resulted in the accumulation of important quantities of sewage sludge. The presence of these sewage sludges coincides with large areas of degraded agricultural land. The aim of the present article is to identify the best technological combinations meant to solve these problems simultaneously. Adapting the quality and parameters of the sludge to the specificity of the land solves the possible compatibility problems, thus reducing the impact on the environment. The physico-chemical characteristics of the fermented sludge were monitored and optimal solutions for their treatment were suggested so as to allow that the sludge could be used in agriculture according to the characteristics of the soils. The content of heavy metals in the sewage sludge was closely monitored because the use of sewage sludge as a fertilizer does not allow for any increases in the concentrations of these in soils. The article identifies those agricultural areas which are suitable for the use of sludge, as well as ways of correcting some parameters (e.g., pH), which allow the improvement of soil quality and obtained higher agricultural production.
