ABSTRACT Sweet potato is one of the most important foods in the world. Among the different cultivated genotypes, it is worth highlighting those with orange pulp due to their ability to supply adequate amounts of provitamin A carotenoids to humans. This study evaluates the effect of potassium and phosphorus fertiliser application on carotenoid yield in sweet potatoes. Two experiments were carried out in São Luis City, Maranhão State, Brazil. The experimental design was a randomised block design, with six treatments for each of the studies (0, 30, 60, 90, 120 and 150 kg ha-1 K2O and 0, 60, 120, 180, 240 and 300 kg ha-1 P2O5), with four replicates. Cultivar 'Beauregard' was used, which has high levels of carotenoids. Roots were harvested at 123 days after planting for both experiments. The following variables were evaluated: root fresh and dry weight, dry weight content, in addition to the yield and contents of total carotenoids, α-carotene, β-carotene, 13-cis β-carotene and 9-cis β-carotene. With the average data of the evaluated characteristics, we performed analysis of variance and polynomial regression analysis. Potassium rates influenced carotenoid yield in sweet potato roots, with the rates of 73 to 77 kg ha-1 K2O being recommended to maximise the production of total carotenoids, β-carotene, and α-carotene. Phosphorus, in turn, influenced only total carotenoids, and is recommended at the rate of 174.09 kg ha-1 P2O5 to maximise the production of these nutrients.

Abstract Sweetpotato (Ipomea batatas), as a well-known plant and widely cultivated by farmers in South Sulawesi, if it is intercropped with satoimo taro (Colocasia esculenta (L.) Schott var. Antiquorum) as a staple crop should be suspected of being able to be a ‘safety’ crop when there is a failure in taro plant—due to the relatively new and un-well-known plant. The study was aimed to know the productivity and economic value of sweet potato planted as an intercropped on the staple crop satoimo taro plantation with several levels of compost. The study used a randomized complete block design with four levels of manure compost, namely 400 grams, 800 grams, and 1200 grams per staple plant, which put into and mixed evenly in the plant hole, and 1200 grams per staple plant which mixed evenly in the beds, and three blocks. Sweet potatoes were planted between staple plants satoimo that arranged 20 plants in a bed of 500 cm x 110 cm in two rows. The parameters observed were yields of tuber per plant, size of tuber, number of tubers, and dry weight of tops. The results showed that there is no level of compost affected significantly. However, both of the levels of 1200 grams of compost which is filled into the plant hole, and 1200 grams of compost mixed in the beds tended to be higher than the others in tuber productivity. By economic valuations, the RC-ratio and RC-ratio indicated that planting intercropped sweet potato are beneficially in all levels and increased after the levels of compost. Cultivating sweet potato intercropped in the two kinds application of 1200 grams levels in the taro plantation is more recommended.

Seed cutting of sweet potato influenced by nutrient availability, especially nitrogen. Humic straw substances and cattle chicken manure fertilizer can increase the amount of nitrogen in the soil and also can improve the physical nature of soil. This study aimed to find out the influence of humic straw substances and cattle chicken manure fertilizer application toward the uptake of nitrogen nutrients for the seeds cutting quality of sweet potatoes. This research was conducted using factorial Randomized Block Design (RBD) with two factors, trere are humic straw subtances and cattle chiken manure. The variable observed was pH, C-Organic, N-Total of soil total length of plants, wet weight, dry weight, content of N-tissue, and N absorption. The result showed that a combination of humic straw substances and cattle chicken manure fertilizer influence to the increase of N-Total of soil, N-tissue, the uptake of N, the total length of plant, wet weight, and dry weight of the upper plants. The addition of a single factor of chicken manure fertilizer affects to the increase of pH and C-Organic of soil. Moreover, the best treatment combination in increasing the nitrogen uptake were A2P3 treatment (with 0.2% humic acid and 0.92 gram N of manure fertilizer). Furthermore, the best treatment combination in improving the number of seedlings cutting of sweet potatoes was A0P1 treatment (without humic acid and adding 0.46 gram N of  manure fertilizer).  Keywords:  seed cutting of sweet potatoes, nitrogen, chiken cattle manure and humic subtances.

In response to increasing consumer demand for high-quality, easy-to-prepare foods, it is necessary to develop innovative ways to use roots and tubers, such as sweet potatoes, in processed foods. Thus, two thermal processes were evaluated, freezing-cooking (F+C) and blanching-freezing-cooking (B+F+C) on the physical properties of the orange-fleshed sweet potato (OFSP) cultivar, which has a high content of β-carotene, in terms of drip loss (Δm), volume variation (ΔV), color, and texture. Cylindrical samples of OFSP were used. Blanched and unblanched samples were stored by freezing, at -18 °C for 2 months, and subsequently cooked at 95 °C. The blanching process was carried out at 95 °C for 2 min. The results showed that, when blanching was used as a pre-treatment for freezing-cooking, a product with fewer physical changes, with a lighter and more intense color (chroma), and with a lower loss of elasticity (Ed) and firmness (F) was obtained.

Carotenoids and folate are two mandatory supplying micronutrients for children or pregnant women. Inadequate intake of these two nutrients was relevant to a higher mortality of both children and pregnancies. This study is intended to investigate the thermal impact on the changes of carotenoids and folate in sweet potato roots (SPRs). Carotenoids were identified by high performance liquid chromatography (HPLC) while the folate was estimated using a microbial assay. An obvious decline was observed in total carotenoids after heating. Nevertheless, the content of provitamin compound β-carotene exhibited incredible stability during steaming and α-carotene multiplied in certain varieties, evidencing that SPRs could be an efficient way for addressing Vitamin A deficiency (VAD). As for the total folate contents, two varieties were found no significant loss after thermal process while the others showed a significant decrease. The results indicated that steaming process led to generally loss of both carotenoids and folate while the α-carotene and β-carotene were well preserved. The information provided by this study might help with enhancing the food quality in processing industry and the understanding in the nutrition changes during steaming.

Biofertilizer enable to improve nutrient cycle in soil and induce plant growth and production, but sweet potatoes farmers in Indonesia are still use only chemical fertilizer as a source of plant nutrient. The objectives of this experiment were to evaluate the effect of different doses of consortium biofertilizer to reduce chemical fertilizer dose; and maintain yield and sweetness of two sweet potato varieties. The experimental design was completely randomized block design which tested six combinations of different chemical fertilizer and biofertilizer doses. Analysis of variance was performed to determine any significant differences between the means of treatments. The results showed that the response of both sweet potatoes varieties on combined application of chemical and bio fertilizer was differ. All treatments did not change tuber number and weight of sweet potato var. Awachy-1 but increased those of var. Rancing. Application of diazotrophic bacteria (Azotobacter, Azospirillum and Acinetobacter) mixed with phosphate solubilizing microbes (Pseudomonas and Penicillium) with reduced fertilizer doses up to 75% did not alter soil available nitrogen and phosphorous. Despite different fertilizer rates, tubers number of both sweet potato varieties in individual plot was similar. Yield did not change due to reduction of fertilizer dose up to 75% when biofertilizer was applied. However, yield was potentially decreased when chemical fertilizer was only 50%. All fertilizer treatments did not change the sweetness of tuber which indicated by constant brix. Research suggested that biofertilizer might substitute 25% of chemical fertilizer to obtain the same yield and quality of tuber, and maintain the availability soil nitrogen and phosphorous.

Sweet potato is one of the seven major staple crops in the world. Although most cream-fleshed sweet potatoes are produced locally, orange-fleshed sweet potato (OFSP) is an excellent source of beta-carotene and can be promoted to alleviate vitamin A deficiency. The aim of this study was to evaluate the retention of total carotenoids (TC) and all-trans-beta-carotene (ATBC) after processing and storage of cookies with different proportions of OFSP and margarine. Cookies formulated with 18 to 22.23 g/100 g of OFSP and 28.57 to 34.6 g/100 g of margarine were analyzed by spectrophotometry and high-performance liquid chromatography. The formulation containing the highest content of OFSP (22.23 g/100 g) and 32.84 g/100 g of margarine showed greater retention of TC and ATBC after processing. Among the other samples with the same proportion of OFSP, the one containing the highest margarine concentration (34.6 g/100 g) has shown a greater capacity to maintain TC and ATBC during storage (up to 56 days), demonstrating lipids important role in the preservation of these components.

This study aimed to establish the effects of lactic fermentation on the levels of β-carotene in selected  orange fleshed sweet potato (OFSP) varieties from Kenya.  Furthermore,it sought to demonstrate fermentation as a potential process for making new products from sweet potato with enhanced nutraceutical attributes. The varieties (Zapallo, Nyathiodiewo and SPK004/06) were fermented with Lactobacillus plantarum MTCC 1407 at 25 ± 2°C for 48 h and kept for 28 days to make lacto-pickles. During fermentation both analytical [pH, titratable acidity (TA), lactic acid (LA), starch, total sugar, reducing sugar (g/kg roots), texture (N/m2), β-carotene (mg/kg roots)] and sensory (texture, taste, flavour and after taste) attributes of sweet potato lacto-juice were evaluated. Process conditions were optimized by varying brine levels, with fermentation time. A UV-visible spectrophotometer was used to identify and quantify β-carotene. Any significant variations (p < 0.05) in analytical attributes between the fermented and unfermented samples (pH, LA, TA and β-carotene concentration) of lacto-pickles, prepared from the potato roots, were assessed. The study reported a final composition of 156.49mg/kg, 0.53mg/kg, 0.3N/m2, 1.3g/kg, 5.86g/kg, 0.5g/kg and 5.86g/kg for β-carotene, Ascorbic acid, texture; Starch, total sugars, LA and TA respectively, and a pH of 3.27. The fermented products were subjected to flavour profiling by a panel. The product sensory scores were 1.5 to 2.5 on a 5 point hedonic scale, ranging from dislike slightly to like much. The products with brine levels at 4 and 6% were most preferred. The retention of β-carotene was 93.97%. This demonstrated lactic acid fermentation as a better method for processing OFSP as the main nutritional attributes are retained. The final product was resistant to spoilage microorganisms after 28 days of fermentation. Further preservation could be obtained by addition of sodium metabisulphite. In conclusion, Lactic acid fermentation using L. plantarum is a novel method of producing Lacto pickles from Zapallo OFSP, with 93.97% β-carotene retention and adequate shelf life.

ABSTRACT The use of mini-cuttings is an option for obtaining sweet potato propagules of excellent quality. The objective of this research was to evaluate the production and quality of sweet potato roots propagated by mini-cuttings in different types of trays and ages of seedlings. Six treatments, resulting from the factorial 2x3, were evaluated: two types of trays (162 and 200 cells, with 31 and 18 mL of substrate per cell, respectively) and three ages of seedlings (39, 46 and 53 days after placement of mini-cuttings in trays), in a randomized block design, with five replications. Seedlings characteristics, production and quality of roots were evaluated. Higher number and dry weight of leaves per seedling were observed in the tray with 162 cells than in trays with 200 cells. The younger seedlings (39 days) had a lower number of leaves, dry weight of leaves, stem, roots ant total (leaves + stem + roots) than seedlings of other ages. There was no difference in root production depending on the type of tray, regardless of the age of the seedlings. For the 162-cell tray, the age of the seedlings did not affect the production of roots. On the other hand, for the 200-cell tray, higher roots production was observed on seedlings 39 days age compared to seedlings with 53 days. No differences were observed among the roots of different treatments for titratable acidity, and levels of sucrose, reducing sugars ant total sugars. It is recommended to avoid old seedlings, that is, it is recommended to use seedlings with a maximum of 43 days after planting of mini-cuttings for trays with 200 cells, while for trays with 162 cells no difference in root production was observed with the different ages of the seedlings.

Consumption of biofortified foods such as sweet potatoes with high content of β-carotene may reduce deficiency of this micronutrient. The development of biofortified sweet potato chips expands the distribution and offers an alternative to the consumption of this product. The aim of this study was to evaluate the thermal blanching methods (steam and in boiling water) in β-carotene retention in the production of dehydrated biofortified sweet potato chips with air circulation at 65°C. The raw material, the chips blanched in steam and in boiling water had a content of β-carotene of 501.86 ± 53.65, 490.23 ± 30.00 and 473.91 ± 11.43 µg g-1 (d.b.) respectively. The retention of β-carotene for steam and boiling water blanching was 97.7 and 94.4% respectively. The blanching conditions followed by drying used in the processing to obtain sweet potato chips were adequate as they resulted in β-carotene high retention.

AbstractAnthocyanins are economically valuable phytochemicals of significant relevance to human health. Industrially extracted from multiple fruit and vegetable sources, anthocyanin yield and profiles can vary between sources and growing conditions. In this study, we focused on three purple-fleshed and one orange-fleshed cultivars of sweet potato—a warm-weather, nutritious crop of substantial interest to growers in northern, cooler latitudes—to determine the yield and diversity of anthocyanins and flavonoids. Acidified ethanol extraction of lyophilized roots yielded ~ 800 mg average anthocyanins/100 g dry weight from all three cultivars. UHPLC-DAD-Orbitrap analysis of sweet potato extracts identified 18 high-confidence, mostly acylated peonidin and cyanidin derivatives contributing to > 90% of the total anthocyanin signal. Further assessment of the untargeted Liquid Chromatography–Tandem Mass Spectrometry data using deep learning and molecular networking identified over 350 flavonoid peaks with variable distributions in different sweet potato cultivars. These results provide a novel insight into anthocyanin content of purple-fleshed sweet potatoes grown in the northern latitudes, and reveal the large structural diversity of anthocyanins and flavonoids in this popular crop.
