The aim of the study was to evaluate the effect of cultivar, flesh colour, location, year and long-term cold storage on the total anthocyanin content (TAC) in the tubers of 12 potato cultivars with coloured flesh. TAC ranged from 17.0 to 750.1 mg cyanidin/kg fresh matter and was significantly affected by the genotype of the cultivar. The highest TAC was achieved in a three-year average in the cv. Vitelotte (371.0 mg/kg FM, 1.15–8.10 times higher than in the other cultivars). The purple or red colour of the flesh had no significant effect on the TAC. A significantly higher TAC (1.24 times) was determined in the Valečov location with a cooler climate in comparison with the Uhříněves location with a warmer climate. The TAC was significantly influenced by year, the highest values were found at both sites in the year with significant water stress. Storage (4°C, 6 months) significantly affected the TAC in seven out of eight cultivars; the TAC increased in four cultivars and decreased in three cultivars. This is probably due to different disposition of cultivars for the accumulation of sugars during cold storage.

The concentration of anthocyanins in fruits of “Assaria” pomegranate, a sweet Portuguese cultivar typically grown in Algarve (south Portugal), was monitored during storage under different conditions. The fruits were exposed to cold storage (5∘C) after the following treatments: spraying with wax; spraying with1.5% CaCl2; spraying with wax and1.5% CaCl2; covering boxes with 25μc thickness low-density polyethylene film. Untreated fruits were used as a control. The anthocyanin levels were quantified by either comparison with an external standard of cyanidin 3-rutinoside (based on the peak area) or individual calculation from the peak areas based on standard curves of each anthocyanin type. The storage time as well as the fruit treatment prior to storage influenced total anthocyanin content. The highest levels were observed at the end of the first month of storage, except for the fruits treated with CaCl2, where the maximal values were achieved at the end of the second month. The anthocyanin quantification method influenced the final result. When total anthocyanin was calculated as a sum of individual pigments quantified based on standard curves of each anthocyanin type, lower values were obtained.

A comparative study of two corn nixtamalization processes is presented, one in the traditional way of the Michoacan region of Mexico, and the other using solar devices. The corn selected for the process was a nontransgenic endemic dark corn. For the nixtamalization process, a solar concentration oven was used; this process using the solar device is simple and affordable for communities. For characterization, the properties of the antioxidant content of dark corn were analyzed for both processes, and the highest concentration of antioxidants between the two varieties of corn was obtained. The antioxidant capacity in the two varieties of black corn was quantified and determined, and the anthocyanin pigments were extracted with methanol. The total anthocyanin content (CAT) was evaluated by the pH difference method, and the antioxidant capacity by the DPPH method. In the solar nixtamalization process, a higher content of CAT anthocyanins and antioxidant capacity were obtained. Therefore, the solar energy process was proposed as a sustainable energy option, and we concluded that black corn nixtamalized with a solar oven had high antioxidant levels and could be used as a nutritious food.

The aim of the study was to evaluate the effect of genotype, tuber flesh colour, site conditions, year of cultivation and storage on the content of ascorbic acid (AAC) in the tubers of twelve potato cultivars with coloured flesh, compared with the yellow-flesh cv. Agria. AAC ranged from 88.6 to 282.0 mg/kg fresh matter (FM) and it was significantly influenced by genotype. A significantly highest AAC, on a three-year average, was achieved by cv. Rosemarie with red flesh (218.9 mg/kg FM; 1.10–1.84-fold more than the other cultivars). Position number two was achieved by the control cv. Agria (199.4 mg/kg FM). The purple or red colour of the cultivars with coloured flesh did not have a significant effect on the AAC. A significantly higher (1.17 times) AAC was determined at the Uhříněves site with warmer climate and drier weather before the harvest, compared with the other site in Valečov. The AAC was also significantly affected by year of cultivation. Cold storage (4°C, 180 days) resulted in a significant decrease in AAC, which varied in dependence on the genotype of the cultivars (34.6% to 65.1%). However, no link to the colour of the tuber flesh was found.

The aim of this study was to determine that the total anthocyanin content (TAC) and antioxidant activity (AOA) in potato flesh with different colours grown in the Czech Republic. Four yellow- or white-, six purple- and four red-fleshed varieties were grown in 2009 at two different sites (Valečov – highland, seed potato area at 460 m a.s.l., Přerov nad Labem – lowland, new potatoes area at 178 m a.s.l.) in precise field trials. For purple- and red-fleshed varieties, average TAC values ranged from 61.5 to 573.5 cyanidin mg/kg of FM and significant effect of the variety of the TAC was found. High content reached the Violette and Vitelotte varieties with dark purple flesh, and the lowest content the Blue Congo variety with light purple marbled flesh. Significantly higher TAC was found in a lowland area Přerov nad Labem, which is probably related to drought stress. The lowest AOA was achieved by a group of varieties with yellow or white flesh – averaging 82.8 mg ascorbic acid equivalent/kg FM, in a group of red-fleshed varieties it was higher 4.34 times and in a group of purple-fleshed varieties even 5.03 times higher. Also between purple-and red-fleshed varieties significant differences in AOA were found, both high and low values of AOA showed the same varieties as in the case of the TAC. Among experimental sites higher AOA was also demonstrated at Přerov nad Labem. Correlation analysis showed a strong correlation between AOA and TAC (r = 0.8099).

Marmol, Subjibi, and V-17 Angelika cultivars were evaluated under two different growing conditions; Cuautla (average temperature of 24.6 °C, 70% to 80% relative humidity (RH), latitude 18°49', altitude 1,300 msl) and Texcoco (average temperature of 18 °C, 40% to 50% RH, latitude 19°23'40”, altitude 2,250 msl), under greenhouse conditions in 6” pots. Variables considered were: total anthocyanins, carotenoids and chlorophyll content, chlorophyll a, b, and a/b, specific weight and leaf area, to evaluate differences between growing conditions. There were significative differences in total anthocyanin content for `Subjibi' and V-17 `Angelika', being higher in plants grown in Texcoco. In relation to carotenoids and chlorophylls there were differences for plants from the two growing regions, being Cuautla (highest temperature) where these pigments were higher independent of the cultivar. Specific leaf weight was higher for plants grown in Texcoco with significant differences for `Subjibi' and V-17 `Angelika'. Leaf area was higher for the three cultivars in Cuautla throughout the growing period.

This study investigated the effect of hot-air and freeze-drying on the physicochemical, phytochemical and antioxidant capacity of dried pomegranate arils during long-term cold storage (7 ± 0.3 °C, with 92 ± 3% relative humidity) of whole fruit over a single experiment. Extracted arils were processed at monthly intervals during 12 weeks of cold storage of whole fruit. After the 12-week storage period, hot-air and freeze-dried arils showed the least (3.02) and highest (23.6) total colour difference (TCD), respectively. Hot-air dried arils also contained 46% more total soluble solids (TSS) than freeze-dried arils. During the storage of pomegranate fruit, total phenolic content (TPC) steadily increased from 20.9 to 23.9 mg GAE/100 mL and total anthocyanin content (TAC) increased from 6.91 to 8.77 mg C3gE /100 mL. Similarly, an increase in TPC and TAC were observed for hot-air (9.3%; 13%) and freeze-dried arils (5%; 5%), respectively. However, the radical scavenging activity (RSA) reduced by 8.5 and 17.4% for hot-air and freeze-dried arils, respectively, after 12 weeks of cold storage. Overall, the parameters such as colour, TPC and TAC as well as the lower degradation in RSA stability during storage showed distinct differences in quality when using the freeze-drying method, which is, therefore, recommended.

Methyl anthranilate, soluble solids, titratable acidity, pH, and total anthocyanin content of Concord grapes was followed during ripening in the 1970 season. Methyl anthranilate content increased from 0.04 ppm on 27 August to 6.44 ppm on 26 October and declined thereafter. The maximum values for the other components examined were: total anthocyanins, 114 mg/100 g (30 Oct.); soluble solids, 16.4% (13 Oct.); titratable acidity (minimum), 9.45‰ (16 Oct.); and sugar/acid, 16.93 (16 Oct.).

Abstract. The goals of this study were to determine and evaluate the bioaccessibility of total anthocyanin and procyanidin in apple (Amasya, Malus communis), red grape (Papazkarası, Vitis vinifera) and cinnamon (Cassia, Cinnamomum) using an in vitro static digestion system based on human gastrointestinal physiologically relevant conditions. Also, in vitro inhibitory effects of these foods on lipid (lipase) and carbohydrate digestive enzymes (α-amylase and α-glucosidase) were performed with before and after digested samples using acarbose and methylumbelliferyl oleate (4MUO) as the positive control. While the highest total anthocyanin content was found in red grape (164 ± 2.51 mg/100 g), the highest procyanidin content was found in cinnamon (6432 ± 177.31 mg/100 g) (p < 0.05). The anthocyanin bioaccessibilities were found as 10.2 ± 1%, 8.23 ± 0.64%, and 8.73 ± 0.70% in apple, red grape, and cinnamon, respectively. The procyanidin bioaccessibilities of apple, red grape, and cinnamon were found as 17.57 ± 0.71%, 14.08 ± 0.74% and 18.75 ± 1.49%, respectively. The analyzed apple, red grape and cinnamon showed the inhibitory activity against α-glucosidase (IC50 544 ± 21.94, 445 ± 15.67, 1592 ± 17.58 μg/mL, respectively), α-amylase (IC50 38.4 ± 7.26, 56.1 ± 3.60, 3.54 ± 0.86 μg/mL, respectively), and lipase (IC50 52.7 ± 2.05, 581 ± 54.14, 49.6 ± 2.72 μg/mL), respectively. According to our results apple, red grape and cinnamon have potential to inhibit of lipase, α-amylase and α-glucosidase digestive enzymes.

This work studied the effects of centrifugal block freeze crystallization (CBFC) on physicochemical parameters, total phenolic compound content (TPCC), antioxidant activity (AA), and process parameters applied to fresh murta and arrayan juices. In the last cycle, for fresh murta and arrayan juices, the total soluble solids (TSS) showed values close to 48 and 54 Brix, and TPCC exhibited values of approximately 20 and 66 mg gallic acid equivalents/100 grams dry matter (d.m.) for total polyphenol content, 13 and 25 mg cyanidin-3-glucoside equivalents/100 grams d.m. for total anthocyanin content, and 9 and 17 mg quercetin equivalents/100 grams d.m. for total flavonoid content, respectively. Moreover, the TPCC retention indicated values over 78% for murta juice, and 82% for arrayan juice. Similarly, the AA presented an increase over 2.1 times in relation to the correspondent initial AA value. Thus, the process parameters values were between 69% and 85% for efficiency, 70% and 88% for percentage of concentrate, and 0.72% and 0.88 (kg solutes/kg initial solutes) for solute yield. Therefore, this work provides insight about CBFC on valuable properties in fresh Patagonian berries juices, for future applications in health and industrial scale.

Anthocyanins are vital components of plant secondary metabolites, and are also the most important coloring substances in wine. Teinturier cultivars are rich in anthocyanins. However, the differences in anthocyanin accumulation and profiles between teinturier and non-teinturier cultivars have not been reported. In this study, Yan 73 and Dunkelfelder were selected as the experimental materials, and three non-teinturier cultivars were used for comparison. LC-MS and qRT-PCR were used to determine the individual anthocyanin contents and the relative gene expression. The results show that the total anthocyanin content of the teinturier cultivars was considerably higher than that in non-teinturier cultivars, and the levels of individual anthocyanins increased gradually during ripening. Lower ratios of modified anthocyanins were found in the teinturier cultivars, which was not only due to the high expression level of VvUFGT and VvGST4, but also due to the relatively low expression of VvOMT in these cultivars. Cluster analysis of gene expression and anthocyanin accumulation showed that VvUFGT is related to anthocyanin accumulation, and that AM1 is related to the synthesis and transport of methylated anthocyanins. Our results will be useful for further clarifying the pathways of anthocyanin synthesis, modification, and transport in teinturier cultivars.
