Physical-chemical characterization and sensory evaluation of coffees submitted to different post-harvest processing

Coffee is one of the agricultural products whose processing requires special attention, in order to maintain its qualities preserved, in the post-harvest, different grain patterns can be obtained due to the adoption of techniques and the use of equipment that enable the separation of fruits by maturation stage, thus enabling the formation of more  homogeneous coffee batches when compared to the coffee batch without this separation (fruit mixture). The chemical composition of the coffee bean depends on genetic and environmental factors and pre and post-harvest management conditions. The presentwork aimed to characterize the physical-chemical attributes of the different coffee patterns obtained during the post-harvest of the fruits. Thirteen patterns were obtained, being: mix of dried fruits in high wind, mix of dried fruits in low wind, more mature green, natural float, natural raisin, float, natural cane green, natural ripe, natural ripe fermenting in water, natural ripe dried fermented, peeled, ripe peeled and pulped, in three random repetitions. The evaluated attributes were: Brix, total titratable acidity, pH, and ash content. The Natural Mature (MN) treatment was the best processing evaluated, as it provided the highest Brix value and the lowest titratable acidity value. The mature peeled, pulped mature, and natural mature treatments showed better sensory values, so they are recommended for post-harvest management to obtain a good drink quality.

<p>From harvest to consumption, fruit and vegetables suffer a series of mechanical damages which, depending on their sensitiveness, may cause damages that put their final quality at risk. This work had as its objective evaluate the post harvest quality of mechanically damaged &lsquo;Tahity&rsquo; acid limes. The experiment was carried out in a completely randomized design, with 3 repetitions and 7 fruits per treatment, mechanical damages were then evaluated by cutting and impacting in comparison to healthy fruits (control), and maintained for periods of 0, 3. 6, 9, 12, 15 and 18 days, thus obtaining a 3 x 7 factorial experiment. Analyses were made throughout the 18 days, so as to determine the total soluble solids content (expressed in &deg;Brix); titratable acidity (in g of citric acid. 100mL<sup>-1</sup>); ratio (relationsoluble solids and titratable acidity); vitamin C (expressed in mg of ascorbic acid 100mL<sup>-1</sup>) and pH. Os atributos físicos e químicos da acerola podem sem influenciados por vários fatores: genótipo, localização do pomar, tratos culturais empregados nas plantas, índice pluviométrico, irrigação, exposição à luz solar, estádio de maturação dos frutos e época de colheita. O presente trabalho avaliou características químicas e físico-químicas de frutos de diferentes genótipos de aceroleira em duas épocas de colheita. A primeira época no período de fevereiro a março de 2014, e a segunda época de dezembro de 2014 a janeiro de 2015. Os materiais genéticos avaliados foram Olivier, BRS 237 - Roxinha, BRS 236 - Cereja, BRS 238 - Frutacor, BRS 235 - Apodi, Waldy – CATI 30 e Okinawa. O delineamento utilizado foi o inteiramente casualizado (DIC) em esquema fatorial, com 7 cultivares em 2 épocas de colheita, totalizando 14 tratamentos, e a repetição sendo 500 g por amostra de frutos maduros para cada genótipo de aceroleira representado por oito plantas em fase de produção e com oito anos de idade. Avaliaram-se os seguintes atributos físico-químicos: pH e sólidos solúveis (°Brix), e químicos: ácido ascórbico, e acidez titulável (expressa em g de ácido cítrico 100 g-1 de polpa). Também foi determinada a relação °Brix / Acidez titulável. Nas duas épocas de colheita avaliadas, a composição da acerola é mais influenciada pelo genótipo que pelas condições climáticas de precipitação e temperatura do ambiente. The design was a completely randomized design in a factorial scheme, with 7 cultivars in 2 seasons of harvest, totaling 14 treatments, and the repetition being 500 g per sample of mature fruits for each genotype of acerola represented by eight plants in production and eight years of age. The following physico-chemical attributes were evaluated: pH and soluble solids (° Brix), and chemicals: ascorbic acid, and titratable acidity (expressed in g of citric acid 100 g-1 of pulp). The ratio ° Brix / Titratable acidity was also determined. In the two evaluated harvest periods, the composition of the acerola is more influenced by the genotype than by the climatic conditions of precipitation and temperature of the environment. The Pachira aquatica Aublet, belonging to the Malvaceae family, is a tree of variable size, annually produces large quantities of capsule type fruits, in which its seeds remain stored. Even though it is commonly found in southern Mexico and Brazil, there are few studies on its composition. Therefore, the objective of this study is to demonstrate the characteristics of this fruit by means of physical analyzes and to evaluate the bioactive compounds of the almonds in the raw, cooked and roasted forms. Type of research laboratory and quantitative. The almonds showed high content of lipids (above 30%), proteins (above 15%), pH (above 5.66), total soluble solids (above 15º Brix) and total titratable acidity (above 3%). The roasted almond had a higher content of phenolic compounds, flavonoids and carotenoids. In the raw form, a higher content of antioxidant activity, anthocyanins and condensed tannins was obtained. The cooked almond presented intermediate values in all data on bioactive compounds and antioxidant activity.

Yellow mombin and umbu are appreciable fruits with growing demand in the Northeast region of Brazil, used mainly in the form of pulps, juices, and ice cream, having great economic potential. Lyophilized products have high added value for maintaining a good part of their nutritional characteristics. The objective was to produce and characterize yellow mombin and umbu powders by lyophilization, using different concentrations of maltodextrin. The pulps were prepared in five formulations considering the addition of maltodextrin, with 0, 10, 20, 25 and 30% for yellow mombin and 0, 10, 15, 20, and 30% for umbu. Then they were frozen and lyophilized in a model L101 lyophilizer at a pressure at a final pressure of 170 mmHg and a temperature of (-50 ºC +/- 3 ºC). The physical-chemical characterization of the whole pulps and of the yellow mombin and umbu powders was carried out and were determined: water content (%), aw (water activity), protein (%), lipids (%), ash (%), ascorbic acid (mg of ascorbic acid.100g-1), SS (ºBrix), pH, titratable acidity (%), SS/AT ratio, color (L*, a * and b*), solubility (%) and hygroscopicity (%). Only in the formulation with 30% maltodextrin the water content of the powders was less than 5%, as recommended by the legislation for lyophilized fruits. The lower water activity (aw) was also obtained in this formulation, in addition to increased solubility and reduced hygroscopicity, which are factors that favor the quality and conservation of powders, which are more suitable for the production of food products

Abstract Passiflora cincinnata Mast. or Caatinga passion fruit is widely cultivated in the northeastern semi-arid regions of Goiás, Minas Gerais, and Bahia. The system of cultivation and field management of the Passiflora species affects the physicochemical quality of its fruits. In this study, we evaluated the chemical and physico-chemical characteristics of the fruits of 2 progenies (CPEF2220 and CBAF2334) of P. cincinnata species using the vertical and horizontal trellis system. Fruits were collected from the plants at their physiological maturation stage and tested for the fruit skin color and texture and the pH, total soluble solids, titratable acidity, pulp acidity ratio, and the contents of flavonoids, anthocyanins, and polyphenols in the seedless fruit pulp. The experimental design was completely randomized in a 2 x 2 factorial scheme (progenies x conduction system) performed in 3 replications using 4 plants in each. The analysis of variance and the means were compared using the Tukey’s test at 5% probability. The results revealed that the CBAF2334 fruits presented with greener pigments and greater flavonoids. The fruits were characterized by their green color with some yellowish nuances and a low color saturation in both the progenies. The conduction system was not found to affect the physical and physicochemical characteristics as well as the anthocyanin and polyphenol contents of the studied species. The fruits of plants cultivated on vertical trellis presented with 56.73% more flavonoid content than those cultivated on horizontal trellis.

The objective of this work was to perform the physical-chemical characterization of different formulations of the pequi pulp with the addition of different concentrations of whole milk, in order to identify promising products for commercial use. Three formulations of pequi pulp with whole milk were prepared: PL1- 90% pequi pulp and 10% milk, PL2 - 70% pequi pulp and 30% milk, PL3 - 50% pequi pulp and 50% milk. The formulations were evaluated for physical and physical-chemical parameters of color, water activity, water content, ash, total soluble solids (SST), pH, total titratable acidity (ATT), SST/ATT ratio, ascorbic acid, proteins, lipids, total, reducing and non-reducing sugars. The data obtained were subjected to analysis of variance (ANOVA) and comparison between means by the Tukey test at 5% probability. Among the three tested formulations, the best results were obtained for PL3, where it presented lower total titratable acidity, water activity, red intensity, yellow intensity and chromaticity, however, higher content of total soluble solids, ratio SST/ATT, ash, lipids, sugars (total, dimmer and non-dimmer), luminosity and tint angle. The inclusion of milk in the pequi pulp changed the physical and physical-chemical characteristics of the pulp, and it can be an alternative to add nutritional value to the fruit and consequently a promising product for the market.

The umbuzeiro is a native Brazilian semi-arid plant with great agroindustrial potential. The characterization of the fruit, as well as the development or improvement of technologies for value aggregation are fundamental for its conservation, dissemination and culinary expansion. The objective was to characterize physically and chemically fruits of umbu and to define the access with greater commercial potential. A completely randomized design was used, with 10 replications, in a total of 4 accessions of umbuzeiro. The fruits were selected prioritizing uniformity of fruit size and maturation stage. Fruit peel color was analyzed; diameter and length; mass of the fruit, the bark, the pulp and the seed; firmness of the fruit, soluble solids contents; pH; titratable acidity and solids/acidity ratio. The values of the pulp yield and the technological index were determined. Significance was verified for all variables, except for soluble solids and pH. The average value of the titratable acidity was 1.3 mg of citric acid 100 mL-1 of juice. The diameter of the fruits varied between 4.0 and 4.5 cm. Fruit mass varied from 33.00 to 43.62 g and access to EPAMIG-C06 was the heaviest. The accesses EPAMIG-C06 and EPAMIG-C18 presented the highest technological index. Based on the results, it was concluded that the accesses present potential to the pulp industry due to the size and characteristics of the fruits. The umbu accesses under study presented small variation for solubility and pH. For in natura consumption and/or processing, the access EPAMIG-C06 stands out due to attributes of commercial interest.

The association between mineral fertilizer and biofertilizers can contribute to guavas quality. An experiment was carried out in order to assess, over the days, 'Paluma' guavas physical-chemical quality in function of nitrogen fertilizer and biofertilizer doses. It was adopted a randomized blocks with treatments distributed in a factorial 5 x 2 x 5 referring to evaluation days post-harvest (0, 3, 6, 9 and 12), nitrogen fertilization (50 and 100% culture recommendation) and application of bovine biofertilizer doses by fertigation (0.0, 2.5, 5.0, 7.5 and 10.0%). The physical-chemical quality of 'Paluma' guava fruit was influenced by the association between liquid bovine biofertilizer and nitrogen fertilization. This combination increased soluble solids, titratable acidity, ratio, vitamin C, pH, firmness and loss of fresh mass, but did not affect the pulp percentage. The bovine biofertilizer, together with mineral fertilization, is important to increase the post-harvest quality of 'Paluma' guava.
