This article presents the results of a study that examined the effect of Felucen P-2 feed supplement on the growth and development, blood parameters and quality of meat of black African ostriches. The experiment was conducted on two groups of ostriches: the first group received the main diet and the second group received Felucen P-2 added to the main diet. It was found that Felucen P-2 was an effective feed supplement which increased the rate of growth and development of young ostriches. For example, at the age of 90 days, ostriches of the first group had a live weight of 19.15 kg, and of the second group - 20.35 kg; at the age of 120 days, the birds of the first group had a live weight of 29.10 kg and of the second group - 32.05 kg; at the age of 150 days, the birds of the first group had a live weight of 40.35 kg and of the second group - 44.95 kg. In addition, from the age of 120 days, the significant live weight gain was observed. During this period, average daily gains were 332-453 g. The insignificant superiority of ostriches of the second group over the first one by the biological value and meat quality was determined. The ash content in ostriches of the second group was 1.1%, and in the first group it was 0.9%; the moisture content was 75.3 and 77.1, respectively; the protein content was 20.9% and 19.1%, respectively; and the fat content was 2.7% and 2.9%, respectively. It was confirmed in metabolic experiments with 4 individuals of roe deer (2 males and 2 females with the live weight of 20.8 and 17.9 kg, respectively) that due to the animals’ selective choice of a part of feeds there was no significant difference in the intake of lucerne hay of different quality and high-quality meadow hay (515.86 ± 66.97 and 597.82 ± 94.87 g, respectively). However, different quality of lucerne hay influenced the animals’ intake of crude protein and crude fibre. When the animals were fed meadow hay, they took in significantly less crude protein and fibre and significantly more nitrogen-free extract, fat and ash. Digestibility of crude protein was observed to be significantly decreased in hay of lower quality (by 10.1%). Digestibility coefficients for crude protein, crude fibre, organic matter and fat were significantly lower in grass hay compared to lucerne hay. Based on the coefficients of nutrient digestibility it can be stated that meadow hay, even if of excellent quality, is not a suitable supplement for the roe deer.

Underlining the validity problem can only be welcomed, given the conditions that in nowadays there doesnt exist a recipe without preservatives, antioxidants, colorants etc. Modern technology for meat products has a very important role in improving the quality of aliments, level of civilization and the prosperity of a country.In order to determine the validity of food products we have chosen as an example meat product as they have an equilibrated trophyne composition, a high biological value and special nutritional qualities.Using the cold air technologies in obtaining meat products ensures, together with the food additives, keeping of quality and nutritional characteristics of the final products.For this study we have chosen meat products from the group of boiled and smoked products: beer sausage. In the final we have analyzed the results of the experiment from the quality, microbiological and physical-chemical point of view. The quality exam referred to appreciate the aspect, color, taste, smell, consistency etc. The physical-chemical analysis determined humidity, salt, nitrates, Kreiss reaction and mg. NH3/100 g.

One of the most effective ways of removing HM salts that have entered the digestive tract of fattened animals is the technological method of including adsorbent preparations in their diets, which, binding various toxins, excrete them from the body. The study purpose is to develop a method to increase the meat productivity and quality of meat of young cattle for fattening in a technogenic zone by inclusion of ToxySorb adsorbent in their diets with a high content of heavy metal salts in the amount of 1.25 kg/t of compound feed and lecithin in the amount of 10 g/100 kg of live weight. According to study results, it was shown that when these drugs were fed together in the indicated quantities, it contributed to better detoxification of xenobiotics. The calf bulls of experimental group 3 had the best slaughter indicators, as well as the best consumer, sanitary and hygienic properties of meat products.

The article presents the influence of biopreparations containing nanoparticles of cobalt and cuprum on the physiological state of Holstein heifers in a case of adding them to the diet. We have studied parameters of the animals’ growth and development in dynamics of live weight gain, clinical and biochemical blood parameters, the leucogram and amino acid composition of the experiment animals’ blood during the experiment.

The article presents material on the effect of the amino acids lysine and methionine in pig diets. Studies have been carried out to increase the live weight of animals, depending on the content of these amino acids in the diet when fattening up to 100 and 120 kg. Presented research results obtained during testing in certified and accredited laboratories. When growing gilts to live weight from 30 to 50 kg, a deficiency in the level of lysine was found, which reaches up to 29.6%, and methionine with cystine up to 23.1%. When growing animals from 81 to 120 kg of live weight, the lysine deficiency is 14.9%, and methionine with cystine is 8,8%. This necessitated balancing the diet of animals to the required level of amino acid content. The most effective on the growth and development of animals, as well as on indicators of pork quality, was the introduction of feed lysine in combination with methionine in pig diets.

The meat qualities of rams of Kalmyk fat tail breed and crossbreeds (1/2 Kalmyk fat tail fat + 1/2 Dorper) in rapid fattening were studied. It has been established that cross-breeding young animals bred by crossing sheep of the Kalmyk fat tail breed with sheep of the Dorper breed have increased growth energy and are significantly higher than purebred peers of the Kalmyk fat tail breed. The live weight of crossbones (1/2 Kalmyk fat tail + 1/2 Dorper) was 6.19 kg more at the age of four months, 11.18 kg more at the age of six months than that of purebred peers. Cross-breeding animals had higher indices of elongation, pectorality, and massiveness, while pure-bred animals of the Kalmyk breed were characterized by higher indices of long-legged and overgrown. The cross-cut rams had high slaughter and meat qualities. After fattening, they significantly exceeded the purebred peers in terms of pre-slaughter live weight by 11.07 kg, by weight of chilled carcass by 5.37 kg, by slaughter weight by 5.18 kg, and by weight of pulp in the carcass by 4.86 kg and by the area of  the “muscle eye” - by 3.54 cm2. The young meat products were of high quality. The mass of cuts of the first grade in absolute and relative terms is greater in the carcasses of crossbred rams.

Meat has important nutritional characteristics for the diet, being a source of high biological value animal protein, and containing important vitamins for the organism. Ground beef is one of the most consumed meat products, which has an increased surface area, and also a high potential for inadequate storing conditions, which reinforces the relevance of innovative technologies for its preservation, such as the use of propolis – a highly diversified product with antimicrobial and antioxidant activities, seen as a component capable of prolonging shelf life. This study evaluated the effects of the addition of Brazilian red propolis extract to ground beef as a natural antioxidant for 0, 7, 14 and 21 days of storage at a temperature of 7 ºC. The physicochemical parameters of water, protein, lipids and ash content remained stable until the 14th day of storage, while the microbiological ones presented peaks of contamination by Coliforms at 35 and 45 ºC in the same period, however, the absence of Salmonella sp/25g in the meat analyzed, made it suitable for human consumption, thus confirming the effectiveness of using red propolis extract in its conservation.

SUMMARYThree trials, each involving 24 pigs, were conducted to assess the value of Hormonexa as a feed supplement for pigs slaughtered at 90 kg live weight. Rations were compounded from a variety of feeding stuffs to different protein levels and the pigs were fed on various nutritional planes. Hormonexa was added to these rations at the rate of 1·32 kg per 1000 kg meal.In all three trials growth rate and food conversion efficiency were not affected significantly by the addition of the supplement. There was a tendency for the pigs receiving the supplement to be slightly leaner but in only 1 out of 39 measurements of fat thickness was the difference between control and supplemented pigs statistically significant (P< 0·05).No benefit from this feed supplement has been demonstrated in terms of animal performance or carcass quality under a range of feeding systems.

One of the ways to increase meat resources is to improve the condition of livestock on farms in the Russian Federation. This is due to the fact that when the fatness of the animal increases, the meat yield in the carcass increases. The purpose of the researches was to establish the features of the infl uence of the feed protein additive Biovitel on the growth and development of steers of Hereford breed. In order to achieve this purpose two groups of steers-analogs of Hereford breed (control and experimental) at the age of 6 months per 10 head in each have been formed. The time of the experiment was: the preparatory period of 22 days and the main one 275 days. Steers of the control group have received the main farm ration, and steers of the experimental group have received the main ration and feed protein additive Biovitel for 30 days with 10-days interval at the dose of 100 g per head during the sixth month. The results of researches on the infl uence of the feed protein additive Biovitel on the growth and development of steers of Hereford breed have been refl ected in the article. The addition of the feed additive Biovitel to the main ration of the experimental group of steers helped them to achieve a higher live weight and higher average daily gains under the same environments of feeding and housing in all age periods. By the end of the experiment (15 months) the experimental group of steers have reached the live weight of 430,2 kg, which was higher by 19,9 kg or 4,9 % compared to the control group of steers. In order to improve the quality of beef and increase its production more intensive rearing of steers of Hereford breed with the use of feed protein additive Biovitel has been justifi ed. The recommended dose is 100 g per head. This dosage allows you to achieve the average daily gain of 967,5 g and the average live weight of 430,2 kg by 15 months of age, reduce the prime cost and increase the profi tability of beef production.
