<p align="justify">O yacon está sendo considerado um alimento nutracêutico em decorrência dos estudos sobre a diminuição dos níveis de açúcar no sangue após seu consumo repetido por de ser rico em fibras alimentares, especialmente as solúveis ou viscosas, dentre elas inulina e Frutoligossacarídeos (FOS). O crescente aumento da busca no mercado por produtos que apresentem, além de qualidade sensorial e nutricional, benefícios associados à saúde faz com que as pesquisas nesse ramo cresçam. Com isso, o objetivo do trabalho foi elaborar e avaliar um sorvete com extrato aquoso de yacon em diferentes concentrações. Foram elaboradas duas amostras (F1 com adição de 5% de extrato de yacon e F2 com 10%) e realizaram-se análises de composição centesimal (umidade, cinzas, proteínas, lipídeos e carboidratos) e sensoriais (escala hedônica para cor, sabor, textura, aroma e aspecto global), cor e textura instrumental. A composição centesimal não apresentou diferença significativa (p&gt;0,05) para umidade, cinzas e carboidratos. O teor de proteína foi menor para F2 e o teor de lipídeo foi maior para F2. As amostras apresentaram a cor amarela clara com alta luminosidade e não diferiram significativamente na textura expressa em força de compressão. As duas formulações foram sensorialmente aceitas, não apresentando diferença significativa entre si e conferindo um alto índice de aceitação.</p><p align="justify">Abstract</p><p align="justify">Yacon is being considered a nutraceutical food due to studies about the decrease of sugar levels in blood after its repeated consumption, and also for being rich in food fibers, specially the soluble or viscous, among them fructooligosaccharides and inulin. The increasing search in the market for products presenting beyond sensory qualities, nutritional and health benefits, makes the researches in this field grows. The goal of this task was to develop an ice cream with aqueous extract of yacon, in different concentrations. It were prepared two samples, (F1 with addition of 5% of yacon extract, and F2 with 10% of it) and were performed centesimal composition analysis (humidity, ashes, protein, lipids, carbohydrates) and sensory analysis (Hedonic scale for color, taste, texture, flavor and global aspect), beyond color and instrumental texture. The centesimal composition showed no significant difference (p&gt; 0.05) for moisture, ash and carbohydrates. The protein content was lower for F2 and lipid content was higher for F2.Samples displayed a clear yellow coloration, with high luminosity and didn’t differ significantly in texture, expressed in compression force. The two formulations were sensory acceptable, showing no significant difference between it and confirming a high acceptance rate.</p>

Shelf life is the recommended maximum time for which the defined quality of specified characteristics of the goods or products remains acceptable under expected (or specified) conditions of handling, storage and distribution and or display. Stability assessment of a local food supplement consisting of a premix of milled sorghum, ground nut paste, honey and cow ghee (SPB) was conducted from November 2014to January 2015. The study investigate the length of stay of SPB at ambient conditions with desirable sensory quality attributes of taste, color and texture. This was a cross sectional study design with a sensory evaluation questionnaire using a 5-point hedonic scale. Control sample was labeled as (A) and experimental (B). Sample A was freshly prepared once every week while sample B was kept constant. 24 participants with similar demographic characteristics were randomly selected to evaluated the sensory attributes of the porridges made from each sample. Only the investigator was aware of the treatment given to the participants. Sensory scores for all attributes were greater than four on a five-point hedonic scale. There were no significant differences (P>0.05) in all the five attributes between the two samples in the first 5 weeks of evaluation. A significant difference was observed in color during the week 9 (P<0.02), aroma in week 6 (P < 0.01) and taste in week 7 (P< 0.01). There was no significant difference in the texture of the samples throughout the time of the study. Taste and aroma recorded the lowest scores at 3.0 and 3.7 respectively after 9 weeks. Texture did not change during study time. Honey has anti-microbial properties and its inclusion improves water-binding capacity which prolong shelf life. The length of stay of SPB at room temperature with desirable sensory quality attributes of taste, color and texture was 8 weeks. This storage time could further be increased by use of antioxidants.

AbstractA total of 1520 patients with urinary stones from central China were collected and analysed by Fourier transform infrared spectroscopy between October 1, 2016 and December 31, 2019. For all patients, age, sex, comorbidities, stone location, laboratory examination and geographic region were collected. The most common stone component was calcium oxalate (77.5%), followed by calcium phosphate (8.7%), infection stone (7.6%), uric acid (UA) stone (5.3%)and cystine (0.9%). The males had more calcium oxalate stones (p < 0.001), while infection stone and cystine stones occurred more frequently in females (p < 0.001). The prevalence peak occurred at 41–60 years in both men and women. UA stones occurred frequently in patients with lower urinary pH (p < 0.001), while neutral urine or alkaline urine (p < 0.001) and urinary infection (p < 0.001) were more likely to be associated with infection stone stones. Patients with high levels of serum creatinine were more likely to develop UA stones (p < 0.001). The proportion of UA stones in diabetics was higher (p < 0.001), and the incidence of hypertension was higher in patients with UA stones (p < 0.001). Compared to the other types, more calcium oxalate stones were detected in the kidneys and ureters (p < 0.001), whereas struvite stones were more frequently observed in the lower urinary tract (p = 0.001). There was no significant difference in stone composition across the Qinling-Huaihe line in central China except UA stones, which were more frequently observed in patients south of the line (p < 0.001).

Surface sealants are reported to ensure surface smoothness and improve the surface quality of composite restorations. These sealants should also reduce the bacterial adhesion on composite surfaces however, there is not much information regarding their performance on bulk-fill composite materials. The aim of this study was to evaluate the effect of surface sealant application on surface roughness and bacterial adhesion of various restorative materials. Disc-shaped samples were prepared from a compomer, a conventional composite and three bulk-fill composites. Specimens of each group were divided into two groups (n = 9): with/without surface sealant (Biscover LV, [BLV]). Surface roughness values were examined by profilometry and two samples of each group were examined for bacterial adhesion on a confocal laser scanning microscope (CLSM). Bacterial counts were calculated by both broth cultivation and microscopic images. Results were analyzed with one-way ANOVA and Bonferroni/Dunn tests. Following the BLV application, there was a decrease in the surface roughness values of all groups however, only Tetric N-Ceram Bulk and Beautifil-Bulk groups showed significantly smoother surfaces (p < 0.001). There were no significant differences among material groups without BLV application. Evaluating bacterial adhesion after BLV application, conventional composite had the lowest values among all followed by the compomer group. Beautifil-Bulk had significantly the highest bacterial adhesion (p < 0.05), followed by Tetric N-Ceram Bulk group. Without BLV application, there was no significant difference among bacterial adhesion values of groups (p > 0.05). CLSM images showed cell viability in groups. Bulk-fill composites showed higher bacterial adhesion than conventional composite and compomer materials. The surface sealant was found to be highly effective in lowering bacterial adhesion, but not so superior in smoothing the surfaces of restorative materials. So, surface sealants could be used on the restorations of patients with high caries risk.

Purpose The purpose of this paper is to evaluate the influence of the front of a package label and the nutritional claims linked to it over consumers’ expectations as to acceptance, purchase attitude and perception of quality characteristics of a new functional beverage made from cashew nut milk and added with mango juice and prebiotic substances. Design/methodology/approach Three versions of the front label were developed, which differed just by the type of nutritional claim presented (“0 per cent lactose and 0 per cent cholesterol; 0 per cent lactose, 0 per cent cholesterol and source of fibers, 0 per cent lactose, 0 per cent cholesterol and antioxidants”) and were evaluated in two phases, expectation and informed. For the evaluation, consumers used a multi-attribute scale, the nine-point hedonic scale and a nine-point semi-structured buying attitude scale. Findings The labels created a positive expectation on the consumers regarding the quality attributes, overall impression (mean = 6.0 “Like slightly”) and buying attitude (mean = 6.0 “Would probably buy”). After tasting the beverage associated with labels (informed phase), consumers kept a positive evaluation. The t-test performed between the pair of means of both phases showed that there has not been a significant difference regarding the quality attributes (p > 0.05), special, attractive, nutritive, healthy and buying attitude (Label 1, p = 0.26; Label 2, p = 0.18; Label 3, p = 0.26) in all labels. Originality/value The authors evaluated how the influence of label and nutritional claims in regards to a new product, a beverage made from cashew nut, affects its acceptance, buying attitude and characteristics of quality. Until this moment, there are no studies that evaluate how external attributes affect the acceptance of this beverage totally unique in the Brazilian market.

Previous work has not assessed impact of user status (current [CU] vs. past [PU]) or allometric scaling cardiac dimensions for individual differences in fat-free mass (FFM). Purpose To investigate CU and PU of IPED and allometric scaling on LV and RV remodeling in strength-trained athletes. Methods Thirty-four (29 ± 6 years; 82% male) strength-trained athletes were recruited. Fourteen were CU, 9 PU and 11 non-users (NU) of IPEDs.  Participants underwent bioelectric impedance body composition analysis, IPED and training questionnaire and 2D echocardiography with strain imaging. All structural data was allometrically scaled to FFM according to the laws of geometric similarity. Results CU and PU had significantly higher FFM compared to NU (82.4 ± 10.1 kg vs. 72.0 ± 6.3 kg vs. 58.2 ± 14.0 kg). Absolute values of all RV and LV size were larger between CU and NU. LV mean wall thickness (MWT) was larger in CU compared to PU but there were no differences between PU and NU. Allometric scaling eliminated all differences with exception of LV mass and LVMWT. LVEF was significantly lower in CU and PU compared to NU (55 ± 3 vs. 57 ± 4 vs. 61 ± 4) whilst LV GLS was lower in CU compared to PU and NU and LV GCS was lower in CU compared to NU but not PU. There was no significant difference between groups for RV functional indices. Conclusion  Strength-trained athletes currently using IPEDs have bi-ventricular enlargement as well as reduced LV function. Allometric scaling highlights that increased size is partially associated with a larger FFM, with exception of LVMWT which is independently increased through IPED use. PUs demonstrate reverse structural remodeling whilst functional differences partially remain. The analysis of mineralogical composition by quantitative X-ray diffraction (QXRD) is one of the standard research methods used in hydrocarbon exploration. In order to improve it and to obtain better results, the methodology of quantitative analysis used at Well Logging Department is being periodically (more or less) modified. After the introduction of the improvements, comparative analyses were performed on archival samples. Reflections from an unidentified phase which did not occur in the tested Rotliegend sandstone samples were noticed on X-ray diffractograms of archival samples. Reflections of a mineral called simonkolleite were identified in the X-ray diffraction database. Chemically it is a hydrated zinc chloride of the formula: Zn5Cl2(OH)8 × H2O. Analysis of the composition of samples in which simonkolleite crystallised, indicated that the mineral is being formed in the result of the slow reaction of zinc oxide with halite (NaCl) and water vapour. An attempt was made to determine the influence of the presence of this mineral on the results of the quantitative analysis of mineralogical composition. The above methodology was applied on a group of ten samples. The results of the quantitative analysis conducted for archival samples stored with added zincite standard containing simonkolleite and for new, freshly grinded (without artifact) samples were compared. The comparison of the obtained results showed a slight influence of this mineral on the quantitative composition of the remaining components. The difference between the results usually did not exceed the method error. At the same time a significant difference in the calculated content of the internal standard was noted – on average 1% less in archival than in new samples. This shows that the reaction occurring in the archival samples will affect the evaluation of the quality of the obtained quantitative analysis, at the same time excluding the possibility of determining the rock’s amorphous substance content with the internal standard method.

Objective: To evaluate the Knoop hardness, composition, and wear resistance of acrylic-resin artificial teeth exposed to mechanical toothbrushing. Methods: Artificial teeth from three commercial brands - Biotone, Trilux, and Soluut PX - were used. From each brand, 10 teeth were selected for wear evaluation after mechanical brushing, 10 for microhardness testing, and 5 for composition analysis. Specimens underwent 55,000 brushing cycles, under a 200-g load and at a frequency of 250 cycles per minute, using a soft-bristled toothbrush (IndicatorPlus 30, Oral-B) soaked in a 1:1 toothpaste/water slurry (Oral B Pró Saúde). Microhardness testing was performed using a 25-g load for 15 seconds in an HMV-2 hardness tester (Shimadzu). The composition of teeth from different brands was determined by scanning electron microscopy with energy-dispersive X-ray spectroscopy (SEM/EDS) (Jeol JSM 5800). Results: Wear results after mechanical brushing were compared by means of the paired t-test, whereas those obtained in microhardness testing were compared by ANOVA with Bonferroni correction. There was no statistically significant difference between brands in either trial. Conclusion: Composition analysis revealed that all of the artificial teeth analyzed contain carbon and oxygen. Trilux and Soluut PX brand teeth also contain silicon; however, the presence of filler particles did not result in increased resistance.

This article analyzes the development of virtual learning capabilities through massive open online courses (MOOC) on Pancasila Education. The Pancasila Education course has only been delivered in traditionally managed classes by relying on face-to-face meetings. Therefore there needs to be a new approach in Pancasila education to deal with 21st century learning. This research was designed as a research and development education (R&amp;D). Starts with developingthe MOOC Pancasila education platform and conducting tests on students.  The research instrument used in this study was the learning outcomes (scores) of students taking Pancasila education courses. The data analysis used is the independent sample t test, which is a statistical test to find out the differences between two samples that are not interconnected. The result of the development is known that virtual learning through the MOOC platform can increasing students’ score. That are known from the average of virtual class score than traditional classes, but the level of equality is lower values than virtual classes. This average that not all students in one membership can receive virtual classes equally. The traditional and virtual classes of the Pancasila education has a significant difference

Aim: The purpose of this in vitro study is to compare the cyclic fatigue resistance of Reciproc Nickel-Titanium (Ni-Ti) rotary files while operating root canals using in three different reciprocal angles. Methodology: Forty-five pieces of Reciproc R25 canal files were tested using artificial canals with a 60° angle of curvature, 5 mm curvature radius, and 1.5 mm diameter carved into a stainless steel block. The Ni-Ti files were checked with a stereomicroscope and then randomly separated into 3 groups. Group 1 consisted of reciprocal angles CCW 150°–CW 30°, Group 2 consisted of CCW 180°–CW 60°, and Group 3 consisted of CCW 210°–CW 90°. The duration of the cyclic fatigue being measured, elapsed time until a file fractured was determined with a chronometer. The lengths of the fractured pieces were measured with a digital caliper. After the cyclic fatigue test, two samples from each group were examined with a Scanning Electron Microscope (SEM) to determine the signs of cyclic fatigue. Results: One-way analysis of variance (ANOVA) was applied to the normally distributed groups (p<0,05). Since there was a significant statistical difference of file’s cyclic fatigue resistance (p=0,001) between the groups, Tukey’s honestly significant difference (HSD) post-hoc pairwise comparison test were used for determine to between which groups. While there were statistically significant differences between Group 1 and Group 2 (p=0,001), and between Group 1 and Group 3 (p=0,001), there was no significant difference between Group 2 and Group 3 (p=0,376). Group 1 displayed the highest resistance to cyclic fatigue. There were no statistically significant differences between the lengths of the fractured files within the three groups according to the one-way analysis of variance (p=0,847). Conclusion: In our study, it was observed that the reciprocal angles of CCW 150°–CW 30°, which were also suggested by the file manufacturer firms, had the highest fracture resistance against cyclic fatigue.   How to cite this article: Akay A, Adıgüzel Ö, Erkan Akay S, Kaya S. OBJECTIVE: To compare the sensory and mixability characteristics of Flavored Colestid Granules (a new colestipol formulation) with Questran Light (the most recent cholestyramine formulation). METHODOLOGY: Seventy-two nonsmoking adults between the ages of 25 and 64 years were enrolled in the study. Subjects assessed the sensory and mixability characteristics of each product in chilled bottled water and orange juice after at least a one-hour fast. Products were administered in a double-blind, randomized fashion. The sensory characteristics that were rated included overall rating, aftertaste, appearance, aroma, color, consistency, flavor, sweetness, mouthfeel, and thickness. Each characteristic was rated with a nine-point hedonic scale. Mixability of the products was assessed on a five-point scale. Subjects also were asked to choose which product they preferred as to sensory and mixability characteristics in each vehicle. RESULTS: Fifty-three of the 72 subjects preferred the sensory characteristics of Flavored Colestid Granules in water (p<0.001). Questran Light was preferred by 61 subjects when mixed in orange juice (p<0.001). The sensory characteristic rating scores also supported subject preferences for Flavored Colestid Granules in water and Questran Light in orange juice. Mixability of Flavored Colestid Granules was rated significantly better (p<0.001) than Questran Light in water. There was no significant difference for mixability between the products in orange juice. CONCLUSIONS: Questran Light was significantly preferred on a sensory basis when mixed in orange juice. Flavored Colestid Granules was significantly preferred over Questran Light for both sensory and mixability characteristics with water as the vehicle.
