As e-commerce develops in Indonesia, sales of fresh fruit and vegetable products move from physical stores to virtual markets through technological innovation. The adoption of e-commerce is marked by changes in purchasing behavior of fresh fruits and vegetables that originally relied on the senses, now mediated by a screen measuring at least 7 inches. Interaction between seller and buyer, or buyer with buyer also mediated. This condition does not require consumers to be able to see, hold and smell the product they want directly. When compared with conventional methods, the purchase of fresh vegetables and fruit through e-commerce has risks, namely uncertainty such as the physical quality of the product, taste or freshness. Consumers need knowledge and experience to reduce this uncertainty, where this knowledge and experience is obtained through a consumer learning process. This study describes the forms of consumer learning behavior starting from the beginning to get acquainted with adopting e-commerce. The research method used is qualitative with descriptive research type, and the method of data collection in the form of in-depth interviews with informants who are adopters of the Surabaya branch of the E-Commerce Tani Hub. This informant consists of a group of friends who have the same values, namely implementing a lifestyle and eating healthy food. The results of this study are in the form of learning behaviors shown by Tani Hub consumers through the process of information exchange with information sources that they consider credible, namely friendship circles and also primary information from the Tani Hub’ company itself.

Fruits and vegetables are considered as protective foods and received importance in healthy diet plan. Postharvest loss in quality as well as quantity of fruits and vegetables is huge due to seasonal production, high perishability, shorter shelf life and preservation through processing is one of the best methods to minimise the loss. Thermal methods are more popular and these traditional methods of fruit and vegetable preservation often affect the quality of final products in terms of color, taste, flavor and nutritional qualities. Demand for fruit and vegetable products with ‘fresh like’ qualities are increasing and there is a shift of thermal methods of processing to non-thermal methods to improve the quality of processed products. Several non-thermal methods of processing are developed in order to meet the consumer demand of which high pressure processing has proven to be extremely valuable for fruit and vegetable products. It is an emerging technology in juice and beverage sector which allow fruit and vegetable juices as well as smoothies to store safely for a longer time with fresh taste while preserving its nutritional quality.

The article has already analyzed the problem of ensuring the competitiveness of vegetable products in the European market. We have already revealed the need to integrate EU quality standards into Ukrainian legislation. It was determined that one of the mechanisms for increasing the competitiveness of vegetable products is the harmonization of national quality standards with European ones. The aim of work - to reveal the existing problems regarding the quality of vegetable products, to justify the need to integrate EU standards into Ukrainian legislation, to give a comparative description of the quality standards of fresh vegetables in Ukraine and the EU. The quality standards for fresh vegetables in Ukraine and the EU countries are now being analyzed in the context of our country's aspiration to join this organization. In Ukraine, the quality of fresh vegetables is established by national standards (DSTU), as well as harmonized with European ones (DSTU UNECE FFV). Presented were the comparative characteristics of the quality requirements for fresh cabbage, carrots and onions. On the basis of the analysis, obvious differences between national standards and those harmonized with European quality standards for vegetables were outlined. Conclusions. Consequently, the harmonization of national quality standards with European ones is one of the mechanisms for increasing the competitiveness of Ukrainian vegetable products in the European market. From the examples given earlier, common and opposite features of the classification of product standards in Ukraine and the EU countries, an analysis of domestic and foreign regulatory and technical documentation for fresh vegetables, it was found that the quality of vegetable products was assessed according to the same organoleptic properties (appearance, shape requirements, dimensions products, color, taste, smell), as well as physicochemical (content of harmful substances), contained requirements for packaging, labeling, transportation and storage, but there were differences in the norms of individual indicators. In addition, the EU marketing standards do not contain storage requirements, as it is mandatory for the manufacturer/seller. Ukrainian standards for fresh white cabbage, carrots and onions set maximum levels for heavy metals like lead, cadmium, mercury, copper, zinc. For EU producers, maximum levels of pollutants have been given in separate EU regulations. Keywords: fresh vegetables, quality, harmonization, marketing standard, national standard, white cabbage, onion, carrots.

The consumption of minimally processed fresh vegetables has increased by the consumer’s demand of natural products without synthetic preservatives and colorants. These new consumption behaviors have prompted research on the combination of emulsion techniques and coatings that have traditionally been used by the food industries. This combination brings great potential for improving the quality of fresh-cut fruits and vegetables by allowing the incorporation of natural and multifunctional additives directly into food formulations. These antioxidant, antibacterial, and/or antifungal additives are usually encapsulated at the nano- or micro-scale for their stabilization and protection to make them available by food through the coating. These nano- or micro-emulsions are responsible for the release of the active agents to bring them into direct contact with food to protect it from possible organoleptic degradation. Keeping in mind the widespread applications of micro and nanoemulsions for preserving the quality and safety of fresh vegetables, this review reports the latest works based on emulsion techniques and polysaccharide-based coatings as carriers of active compounds. The technical challenges of micro and nanoemulsion techniques, the potential benefits and drawbacks of their use, the development of polysaccharide-based coatings with natural active additives are considered, since these systems can be used as alternatives to conventional coatings in food formulations.
