The market of ready-to-eat salads is experiencing a noticeable growth in Europe. The commercial success of these products is linked to the growing demand for fresh, healthy and nutritionally valuable products that can be consumed without preparation time and are perceived as safe and very high-quality products. Since they are intended to be consumed without additional treatments, these ready-to-eat products are associated with a high microbiological risk. The aim of this work was to evaluate the microbiological quality and safety of ready-to-eat salads sold in widespread supermarket chains in Lazio, Italy, at the packaging date, during shelf-life and during home-refrigeration. The study also aimed to determine the differences between low, medium and high cost products. Salmonella spp., L. monocytogenes were chosen as safety indicators as specified by European regulations while total aerobic mesophilic bacteria and Escherichia coli were chosen as quality indicators as suggested by national guidelines. Analyses were performed following the ISO standards and in parallel, for the evaluation of total aerobic mesophilic bacteria, with an alternative colorimetric system, the MBS method, in order to propose a simple, affordable and accurate alternative for testing the microbiological quality of products, especially suitable for small and medium enterprises and on-site analyses.

The study revealed high, unsatisfactory, total bacterial loads in all analyzed samples at the packaging date and expiring date and a very high prevalence of Salmonella spp. (67%) regardless of the selected varieties and cost-categories; L. monocytogenes was instead not recovered aligning with the results obtained in other studies.

ABSTRACT: The aim of this study was to evaluate the presence of microorganisms in honey produced by the stingless bee (SB) jandaíra (Melipona subnitida) from the semiarid region of Brazil. Thirty-five samples were analyzed and all of them were positive for mesophilic bacteria, coliforms at 45°C, fungi, and yeast. Staphylococcus spp. were identified in 85.7%, while Bacillus spp. were detected in 34.3% of honey samples. DNAs of Clostridium perfringens and C. botulinum were detected in 40% and 2.8% of the samples, respectively. Salmonella spp. and C. difficile were not detected. The present research revealed a great diversity of microorganisms in honey produced by jandaíra.

Marinating is a traditional technology to improve the shelf - life and quality of products. Enriched Viet- namese tamarind fish sauce was prepared and used to marinate green mussels. Subjects of this research were: green mussels (C1), marinated green mussels (C2), and marinated green mussels packaged in modified atmosphere (M1, M2, and M3). A percentage of O :CO :N was 5:50:45 for M1, 5:70:25 for M2, and 5:90:5 for M3. Microbiological, hemical, and sensory qualities of the samples were analyzed during storage at 4°C for 30 days. The results indicate that glycogen, iron, and zinc contents as well as pH values decreased in all the cases during storage. In addition, TVB-N and TBARS values as well as mesophilic and lactic acid bacteria increased with time in all the samples. The number of psychrophilic bacteria in marinated samples was small or not detected at all. Escherichia coli, Staphylo- coccus aureus, Salmonella spp. and Vibrio cholera were below standard values. Based on sensory acceptability, the shelf-life of C1, C2, M1, M2, and M3 samples was 12, 18, 24, 24, and 27 days, respectively.

Small and medium enterprises (SMEs) must continue to combine technology and market adaptation or open innovation to sustain their business. One of these ways is to promote their products and services extensively. This study investigated the best media to promote SMEs in the local agricultural markets of Hungary. This study uses an approach of asking consumers where they receive information about SMEs and their determinants. Research questionnaires were distributed to 156 consumers who purchased agricultural products on the Budapest Central Market Hall. The data were analyzed using a binary logistic model. The studies showed that consumers obtain market information through word-of-mouth and digital media. Older consumers tend to receive information through word-of-mouth, while consumers who rarely interact with others or who are educated or foreign choose digital media. Therefore, SMEs in Hungary’s local agricultural markets have yet to focus on developing promotional activities through these two media. For the future, recommendations are given to SMEs in Hungary to maintain the quality of products and services and to develop two-way communication in digital media (e-WOM).

The purpose of this article examines changes in the technological capabilities of the supplier firms in the automotive sector after the introduction of Industry 4.0. The Industry 4.0 policy has recently been introduced to revive the manufacturing industry and promote competitiveness in the global market. Questionnaire data were collected from 32 supplier firms of the automotive component industry in Indonesia. The questionnaire was designed to measure variables, including production, investment, innovation, and linkage capabilities. The result shows that the Indonesian supplier firms, mainly large firms, are engaged in Industry 4.0, which affects their capabilities. Production capabilities have been improved among most firms, including large, small, and medium enterprises. There is an improvement in the volume of production and the quality of products. However, Indonesian small and medium firms acknowledged the limitation of investment and innovation capabilities. Compared with large firms, small and medium firms have limited resources that hinder them from investing in technology or human capital. During the introduction of advanced technologies, supplier firms' linkage relationship and their customers remain relatively stagnant. Moreover, in terms of linkages, in which the arrangement between assemblers and suppliers has been set, the automotive firms are highly independent.
