Baladi, (B taurus; DAGRIS) a native cattle breed found throughout the entire Southern Mediterranean basin, is known for its high disease resistance and hardiness. Baladi cows in Israel and Southern Mediterranean basin are endangered due to the introduction of larger and more productive European breeds in these regions. In order to promote conservation initiatives of Baladi by stakeholders, the yet unexplored production traits, over their well accepted adaptation to the harsh Mediterranean conditions, were sought in the current study. Aiming at locating the genetic potential of Baladi for meat quality, the allelic and genotypic frequencies of four polymorphisms in CAST, CAPN1, DGAT1, and FASN genes, previously reported to be associated with meat quality traits, were compared to four cattle breeds. The other four breeds included Limousine, Holstein, Simmental and Brahman cattle, which represent beef, dairy, dual-purpose and indicine bovine members, respectively. Relative to the four bovine members, Baladi cattle exhibited high frequencies of the increasing alleles and genotypes in all four SNPs associated with meat tenderness or fat deposition. These findings, along with future phenotyping and genomic profiling of meat quality related markers, and the well-established adaptability to the challenging Mediterranean pasture conditions, may promote conservation initiatives of Baladi cattle by stakeholders.

Abstract The amount of intramuscular fat directly influences the meat quality. However, significant differences in the ability to accumulate intramuscular fat are present among different beef cattle breeds. While Wagyu, a cattle breed that originated from Japan, is renowned for abundant intramuscular fat, Brahman cattle generally have very little intramuscular fat accumulation and produce tougher meat. We identified that bovine intramuscular fat is derived from a group of bipotent progenitor cells named fibro/adipogenic progenitors (FAPs) which also give rise to fibroblasts. Thus, the variation in intramuscular fat development between Wagyu and Brahman is likely attributed to the difference in FAPs between these two breeds. In order to understand the gene expression difference between FAPs of the two breeds, single-cell RNA-seq was performed using total single-nucleated cells isolated from the longissimus muscle of young purebred Wagyu, purebred Brahman, and Wagyu-Brahman cross cattle. FAPs constitute the largest single-nucleated cell population in both Wagyu and Brahman skeletal muscle. Multiple subpopulations of FAPs with different gene expression profiles were identified, suggesting that FAP is a heterogeneous population. A unique FAP cluster expressing lower levels of fibrillar collagen and extracellular remodeling enzyme genes but higher levels of select proadipogenic genes was identified exclusively in Wagyu skeletal muscle, which likely contributes to the robust intramuscular adipogenic efficiency of Wagyu FAPs. In conclusion, the difference in the cellular composition and gene expression of FAPs between Wagyu and Brahman cattle likely contribute to their distinct meat quality.

High meat quality and specifically meat tenderness are desired traits by the consumers, however the environmental impact of meat production is becoming a relevant factor in the industry. Therefore, breeding of dual purpose cattle breeds may answer the high demand of meat production in the future. In this study we identified statistical differences between genotypes of CAST and CAPN1 gene variants with meat quality traits in a dairy breed (Nordic Red Cattle) and compared the results with beef breed (Aberdeen Angus). Our results show that the favorable alleles have not been selected in the studied dairy breed and thus could be used as a tool for improvement of meat quality. The genes were associated with specific meat quality traits (i.e. sensory juiciness, marbling score and meat color) also in the dairy breed. This supports the utility of known meat quality associated genetic variants to improve meat quality in dairy breeds.

Abstract. Organic farming plays a considerable role in Austrian agriculture. Therefore it seems to be worthwhile to make suggestions about a more ecological breeding goal for cattle breeds. Because of the fact that Simmental is the most frequent dual purpose cattle breed in Austria, this breed is chosen to show the impact of selection under an ecological total merit index. With model calculations the effect on selection response in milk production beef production and functional traits under selection with the current economic total merit index and more ecological index variants, e.g. with higher economic values for fitness and functional traits, is shown. As a basis for future decisions the efficiency of more or less ecological indices is compared. The results indicate that an increase of the current economic values of functional traits of about 50 percent does not present a great risk, expected selection responses for milk production traits are still high.

Целью проведенных исследований являлась отработка и адаптация применения методик BLUP AM (Animal Model — модель животного) и TDM (Test-Day Model — модель тестового дня) для прогнозирования племенной ценности быков-производителей и оценки селекционно-генетических параметров на популяции скота симментальской породы четырех регионов РФ. Проведен сравнительный анализ указанных методов с более ранним методом BLUP SM (Sire Model — модель отца). Рассчитана племенная ценность быков и коров симментальской породы по признакам молочной продуктивности: удой за 305 дней, выход молочного жира, выход молочного белка. Анализ полученных средних значений достоверности оценок быков-производителей, рассчитанных на основе сопоставляемых методов, свидетельствует, что достоверность для признака «удой за 305 дней» при переходе от метода SM1 к AM1 увеличивается на 2,4%, а при переходе от SM1 к TDM1 — на 7,8%. Даны варианты генетического тренда по удою с использованием различных уравнений моделей расчета племенной ценности. На основании полученных данных можно сделать вывод о том, что модель тестового дня позволяет не только повысить точность оценок быков, но и более рельефно выявить их ранги, а также несколько уменьшить срок получения достоверных оценок производителей по качеству потомства по продуктивным признакам. The purpose of this research was to develop and adapt the application of BLUP AM (Animal Model) and TDM (Test-Day Model) methods for predicting the sires breeding value and evaluating genetic parameters for Simmental cattle population in four regions of the Russian Federation. A comparative analysis of these methods with the earlier BLUP SM (Sire Model) method is performed. The breeding value for sires and cows of Simmental breed was calculated by milk production traits: milk yield for 305 days; milk fatyield; milk proteinyield. The sires reliability of average breeding value calculated by different methods reveal that milk yield for 305 days when switching from the SM1 to AM1 method increases by 2.4%, and when switching from SM1 to TDM1 — by 7.8%.The variants of the genetic trend for milk yield are given using various equations of BLUP and TDM. Based on the obtained data, it can be concluded that the Test-Day model allows increasing the accuracy of bull’s evaluation and also more clearly identifying their ranks, as well as slightly reducing the time for obtaining reliable estimates of bulls by offspring for production traits.

The objective of the study was to determine the effects of probiotic bacteria Bacillus licheniformis and Bacillus subtilis on microbiological properties of feed mixtures and on the digestive tract content as applicable to production traits and carcass characteristics of fatteners. The experiment was performed on 83,838 fatteners from four successive (insertions) productions in two groups. From the seventy eighth day of age till marketing to the slaughter plant, the pigs were supplied with BioPlus YC probiotic (Chr. Hansen) in the amount of 400 g/t. The preparation contained a complex of probiotic bacteria Bacillus licheniformis DSM 5749, and Bacillus subtilis DSM 5750 spores in a 1:1 ratio. From the fourth insertion, after reaching a body weight of approximately 112 kg, 60 fatteners were selected from each group to measure carcass quality and half of them for meat quality evaluation. Moreover, microbiological analyses in feed and colon were performed. The study showed that BioPlus YC probiotics supplementation resulted in a significantly higher count of B. subtilis and B. licheniformis in the feed, a higher count of B. subtilis, B. licheniformis and LAB, as well as a lower count of Enterobacteriaceae, Enterococcus, Clostridium and Bacillus sp. in the mucosa and in the colorectal content of the test pigs. Our work has shown that supplementation with the BioPlus YC probiotic had a positive effect on the production traits of pigs mainly by reducing mortality (2.83%, p = 0.010), lowering feed conversion ratio—FCR (2.59 kg/kg, p = 0.013), better average daily gain—ADG (0.95 kg/day, p = 0.002) and shorter fattening period (77.25 days, p = 0.019) when compared to the control group (4.19%; 2.79 kg/kg; 0.89 kg/day; 92.8 days, respectively). The addition of the specific Bacillus bacteria did not influence carcass and meat characteristics of the test fatteners.

Objective: The aim of this study was to identify a distribution pattern of meat quality grade (MQG) as a function of carcass yield index (CYI) and the gender of Hanwoo (bull, cow, and steer) to determine the optimum point between both yield and quality. We also attempted to identify how pre- and post-deboning variables affect the gender-specific beef quality of Hanwoo.Methods: A total of 31 deboning variables, consisting of 7 pre-deboning and 24 post-deboning variables from bulls (n = 139), cows (n = 69), and steers (n = 153), were obtained from the National Institute of Animal Science (NIAS) in South Korea. The database was reconstructed to be suitable for a statistical significance test between the CYI and the MQG as well as classification of meat quality. Discriminant function analysis was used for classifying MQG using the deboning parameters of Hanwoo by gender.Results: The means of CYI according to 1+, 1, 2, and 3 of MQG were 68.64±2.02, 68.85±1.94, 68.62±5.88, and 70.99±3.32, respectively. High carcass yield correlated with low-quality grade, while high-quality meat most frequently was obtained from steers. The classification ability of pre-deboning parameters was higher than that of post-deboning parameters. Moisture and the shear force were the common significant parameters in all discriminant functions having a classification accuracy of 80.6%, 71%, and 56.9% for the bull, cow, and steer, respectively.Conclusion: This study provides basic information for predicting the meat quality by gender using pre-deboning variables consistent with the actual grading index.
