The work shows that application of increased doses of nitrogen does not significantly affect the total milling yield and affects the head rice content. The ambiguous nature of the variability of the grain quality of rice varieties under conditions of different doses of nitrogen fertilizers confirms the need for further studies of the varietal reaction to the level of nitrogen nutrition, based on it - the development of rice cultivation technology modes in order to obtain rice yield with high grain quality.

The article studies the technological grain quality traits of rice varieties of Russian breeding Rapan, Flagman, Olimp, Azov, Patriot in the yield of 2017-2019 grown in the Abinsky district, Krasnodar region. Purpose of the research was to study the effect of doses of nitrogen fertilizers on the technological grain quality traits of rice varieties with a low amylose content. Rice varieties were evaluated by mass of 1000 absolutely dry grains, filminess, vitreousity, and fracture when grown with different doses of nitrogen fertilizers N60, N120. With an increase in the dose of nitrogen to N120, "the mass of 1000 absolutely dry grains", "vitreousity", "fracture" remained unchanged or the "filminess" changed. The pattern of changes in grain quality traits may indicate an intensive type of varieties Rapan and Olimp.

An increase in the doses of nitrogen fertilizers applied during the cultivation of new rice varieties Nautilus and Yakhont in the old-deltoid and valley agrolandscape zones led to significant changes in grain quality traits. The grain size of the varieties grown in the Krasnoarsmeysky district did not change due to the level of nitrogen fertilizers, for those grown in the Abinsky district, decreased by 0.3 g in variety Nautilus and increased in variety Yakhont with increased dose of applied nitrogen. The vitreousity of grain increased in Nautilus in the Krasnoarmeysky district by 2%, in Abinsky - by 7%; in the variety Yakhont - increased by 2% and practically did not change, respectively. A tendency toward a decrease in grain fracture in the Krasnoarmeysky district and an increase in head rice content in the variety Nautilus in the Krasnoarmeysky and Abinsky districts was noted.

The article presents the results of evaluation of new rice varieties Veles, Ezhik and Signal on technological grain quality traits. The effect of various doses of nitrogen fertilizers on the main traits of quality indicators is analyzed. It was found that with an increase in the dose of nitrogen nutrition (Background + N30), the mass is 1000 absolutely grains, fracturing, and head rice content decreased or remained unchanged, the filminess increased or remained unchanged. To determine the variability of rice varieties by grain quality traits, depending on the level of nitrogen nutrition, variability and average values of quality traits were calculated. Variety Ezhik has shown itself as the best variety in terms of grain quality based on low variability in terms of grain quality traits.

Rice false smut (RFSm) is a disease of interest globally and in Bangladesh. Its occurrence and spread have drawn attention since 2010 in the country. While many reports are available on the yield loss from the disease, little is known of its effect on grain quality. Besides, there has been no information on how RFSm affects the seed quality with respect to germination. This study attempted evaluation of seed germination and grain quality of rice as affected by false smut disease. Three years’ study provided strong indication of inferior milling outturn and head rice yield in RFSm contaminated seeds. Results further revealed reduced amylose content and increased protein content in the contaminated seeds. Tendency in reduced seed germination, and less cooking time was observed in RFSm contaminated seeds. Future research is suggested to fully understand those causations. Abstract. Regression analyses were performed to determine the storage conditions that exhibited the best outcomes for long-grain, hybrid milled rice yield and quality. This study evaluated mold population on rough rice, milled rice discoloration, and head rice yield (HRY) after storage of rough rice in airtight conditions at moisture contents (MCs) of 12.5%, 16%, 19%, and 21% wet basis and temperatures of 10°C, 15°C, 20°C, 27°C, and 40°C at two-week intervals for 12 weeks. The experiment used a popular long-grain hybrid rice cultivar (XL745). Rice lots were procured from fields with and without conventional treatment of the field with fungicide for plant disease management. Field treatment and no field treatment were considered as a block, and a Mann-Whitney test was conducted to determine effect. The response surface method, an extension of second-order polynomial regression, was used to examine optimal treatment conditions. Mold population and milled rice discoloration from a combination of storage conditions were predicted using regression models. The first-order and second-order terms of temperature indicated a nonlinear relationship between temperature and ln(discoloration). The MC was positively associated with ln(discoloration), but the degree of impact may change with temperature because the interaction term was significant. From the model evaluation (R2 and lack-of-fit test), the discoloration level is expected to be 57% (49% to 66% confidence interval) under conditions of 20% MC, 40°C, and nine weeks of storage for samples procured from fungicide-treated rice fields. This discoloration change is substantial compared to the initial discoloration of 9%. At high temperature (40°C) and MC (21%), discoloration started immediately after two weeks of storage. Anaerobic storage conditions impeded mold growth, especially at high storage temperature (40°C). Low mold populations were observed in rice stored at low MC (16%). According to the regression model, the critical storage temperature that may lead to discoloration is between 27°C and 40°C. Pre-harvest fungicide treatment of rice in the field for disease control significantly improved the HRY but had no significant influence on mold population or discoloration. This study suggests a range of storage conditions to prevent losses in milling yield and quality of rice. In addition, the studied storage conditions mimicked the typical conditions for on-farm, in-bin drying and storage in the U.S. Mid-South, especially for the top layers of rice inside the bin, and therefore provide an important reference for growers and rice processors using in-bin structures to manage the quality of long-grain hybrid rice. Most locally cultivated rice varieties in Ethiopia have low physical (low head rice yield, high broken rice yield, and high percentage of chalkiness) and cooking qualities (low water uptake ratio and swelling ratio). Parboiling, a process which involves soaking, steaming, and drying, has been identified as a key technique to improve cooking and milling quality of rice. The current study is aimed at elucidating the effect of parboiling on physical and cooking qualities of three rice varieties (Gumara, Edget, and Narica4) collected from Fogera National Rice Research and Training Center, Amhara region, Ethiopia. Each rice variety was subjected to different soaking temperatures (40°C, 50°C, 60°C, 70°C, and 80°C) and steaming time (10, 20, 30, 40, and 50 minutes). The treatment effect results indicated that parboiling has a significant effect (P<0.05) on head rice yield and percentage of broken rice with increased soaking temperature and steaming time as compared to the control. For instance, percent head rice yield increased as soaking temperature (from 40 to 80°C) and steaming time (from 10 to 50 min) increased: for Gumara, from 4.07 to 93.6%, for Edget, 9.47 to 96.53, and from 3.20 to 91.67 for Narica4. Percentage chalkiness had decreased as soaking temperature and steaming time increased: 97.33% to 0.00% for Gumara, 97.80% to 0.00% for Edget, and 100.00% to 0.13% for Narica4 as compared to 100% for control of all varieties. The minimum cooking time was identified as 16-23 min for Gumara, 16-23 min for Edget, and 15-20 min for Narica4 rice varieties. The result of the present study clearly showed that parboiling with high soaking temperature and steaming time increased the head rice yield, water uptake ratio, decreased percentage chalkiness, and enhanced the overall quality of the rice varieties.

In modern economic conditions, commodity producers need rice varieties that meet specific production requirements. The highest yields are provided by rice varieties that are most fully adapted to cultivation conditions, primarily to soil and climatic conditions, as well as to the material and technical level of production, the state of the rice irrigation system, and the requirements for environmental protection. The article presents the results of an industrial assessment in the transitional delta agrolandscape area of the rice cultivation zone of Krasnodar region. Analysis of the yield and technological indicators of the rice grain quality made it possible to identify varieties adapted to the conditions of “Kubris” LLC, Krasnoarmeyskiy district: Alliance, Veles, Favorit, Yubileiny 85. The average yield for three years was 84.1 c/ha, 82.7 c / ha, 73.6 c/ a, 85.9 c/ha, respectively. Compliance with the technology of growing, harvesting and post-harvest processing on the farm allows ensuring a high milling yield within the range of 65-69 % with a head rice content of 48-59 %. Growing these rice varieties on the farm will effectively develop production by realizing the potential of the variety and obtain high-quality rice grits.

The productivity of agricultural crops is the most variable and integral indicator of their vital activity, which accumulates their genetic potential, soil fertility, weather conditions and components of agricultural technology. Soybean under optimal growing conditions (the reaction of the soil is close to neutral, sufficient phosphorus and potassium nutrition, the use of nitraginization) assimilates from the air about 70 % of the total nitrogen requirement. Therefore, it is believed that it is enough to apply only a starting dose of nitrogen fertilizers (20–40 kg/ha a. s.), to get a high yield with good indicators of grain quality. The results of studies of the influence of long-term (8 years) application of different doses and ratios of fertilizers in field crop rotation on podzolized chernozem in the conditions of the Right -Bank Forest-Steppe of Ukraine on the yield and quality of soybean seeds preceded by spring barley were presented. It was found that crop yields could be increased by 18–77 % owing to different doses, ratios and types of fertilizers. The highest indicators of seed yields for three years of the research (3,02 t/ha) were obtained under the application of mineral fertilizers at a dose of N110P60K80 per 1 ha of crop rotation area, including under soybean – N60P60K60. Exclusion of the nitrogen component from the complete fertilizer (N60P60K60) reduced its yield by 26 %, phosphorus – by 17, and potassium by 11 %. There was no significant decrease in soybean yield in the variant of the experiment with a decrease in the proportion of potassium in the composition of complete mineral fertilizer (N60P60K30) for three years of study. The largest mass of 1000 soybean seeds was formed at doses of N60К60 fertilizers, and their protein content — under the application of complete mineral fertilizer in doses of N60P60K60 and N60P60K30.

Germinated parboiled rice (GPR) is recognized as a functional food because it is rich in bioactive compounds, especially gamma-aminobutyric acid (GABA). GPR was produced by soaking, incubating, steaming, and then drying using a high-precision hot air dryer. The results indicated that air flow mode and drying temperature had significant effects on the quality of GPR. Drying at higher temperatures and shorter times conserved GABA content. Using through-flow mode decreased drying time and prevented color change. However, a slightly lower percentage of head rice yield was observed. Moreover, using through-flow mode negatively affected the hardness loss after cooking. Keywords: Germinated parboiled rice; Drying mode; Gamma-aminobutyric acid; Head rice yield
