Identification and quantification of biochemical composition and antioxidant activity of walnut pollens

Abstract Lycopene is a carotenoid found in tomatoes with potent antioxidant activity. The aim of the study was to obtain an extract containing lycopene from four types of tomatoes, validate a quantification method for the extracts by HPLC, and assess its antioxidant activity. Results revealed that the tomatoes analyzed contained lycopene and antioxidant activity. Salad tomato presented the highest concentration of this carotenoid and antioxidant activity. The quantification method exhibited linearity with a correlation coefficient of 0.9992. Tests for the assessment of precision, accuracy, and robustness achieved coefficients with variation of less than 5%. The LOD and LOQ were 0.0012 and 0.0039 μg/mL, respectively. Salad tomato can be used as a source of lycopene for the development of topical formulations, and based on performed tests, the chosen method for the identification and quantification of lycopene was considered to be linear, precise, exact, selective, and robust.

The chemical and biochemical composition of olives relies on some agronomical factors, one of which is the cultivar. In this study, fruits and leaves of 11 Greek olive cultivars were examined concerning their phenol and oleuropein concentrations. Fruit antioxidant activity was determined as well. The obtained results showed that significant differences existed among cultivars regardless of the tissue or the measured parameter. In general, leaves had higher total phenol and oleuropein concentrations than fruits. Finally, the highest oleuropein concentration in fruits was recorded in ‘Pikrolia Kerkiras’ followed by ‘Romeiki’, ‘Megaritiki’, ‘Kothreiki’, and ‘Kalamon’. These cultivars may constitute the raw material in the industrial production of oleuropein.

Crackers are widely consumed snack foods and there is an increasing trend in adding functional ingredients to their composition. In the present work, the dried biomasses of four microalgae strains—Arthrospira platensis F&M-C256, Chlorella vulgaris Allma, Tetraselmis suecica F&M-M33, and Phaeodactylum tricornutum F&M-M40—were used as a source of proteins, antioxidants, and other bioactive molecules in artisanal wheat crackers. Two incorporation levels were tested: 2% (w/w) and 6% (w/w). The impact of microalgae addition was evaluated in terms of physical properties, biochemical composition, antioxidant activity, in vitro digestibility, and sensory characteristics. Microalgae crackers presented stable color and texture throughout eight weeks of storage. Microalgae crackers were slightly thinner and lighter than the control but presented a similar density in agreement with scanning electron microscope images, indicating that gas retention was not greatly affected by microalgae addition. Regarding biochemical composition, 6% A. platensis and C. vulgaris crackers presented a significantly higher protein content (13.2–13.5%), for which they could be claimed to be a “source of protein” according to the Regulation (EC) No. 1924/2006. A. platensis crackers showed the highest antioxidant activity and attained better sensory analysis scores. T. suecica and P. tricornutum crackers showed high phenolic content and antioxidant activity but attained low sensory scores mainly because of their unattractive fishy off-flavor.

Theobjective of thisstudyis to investigate the phenotypic and biochemicalparameters of selectedsweet cherry (Prunus avium) from middle region of Morocco. Themain biochemical composition, contentsof total polyphenols, total flavonoids, total anthocyanins and antioxidant activity, were measured in the fruits of four sweet cherry cultivars (ʻBurlat’, ʻVan’, ʻNapoleon’andʻCerisette’) grown in two locations (“Laanoceur”and “Toufselt”) in the MiddleAtlas. The free radical scavenging activity was evaluated spectrophotometrically using 1,1‒diphenyl‒2‒picrylhydrazine (DPPH)and ABTS assay.The fruit weight, and pulppercentagewerestudied and found to range between 237–329 g, 38.14–42.22%, 39.21–44.36g, and 52.27–57.48%, respectively.The total phenolic and total anthocyanin content rangedfrom305.99 and 306.67 mg EqGal/100g D.W, total flavonoid contents were within the range of 481.73-517.67 mgeqRE/100g D.W, and total anthocyanin contents were between 1.09 and 2.89 mg Eqcyanidin 3-glucoside/100g D.W. Antioxidant activity ranged from 17.18 to 18.11 mg EqTrolox/100g D.W for DPPH assayand from 27.97 to 29.60 mg EqTrolox/100f D.W for ABTS method.The highest values of total anthocyanin content and antioxidant activity (DPPH) were recorded in ʻBurlat’. The highest value of total flavonoid content was found in ʻCerisette’. Cherries from “Laanoceur”and “Toufselt” locations are characterized by similar biochemical composition and antioxidant activity, except for total anthocyanin content that shows slightly elevated values in “Laanoceur”. The close correlation between total phenolic contents and antioxidant activities (r2=0.73) show that antioxidant activity of cherry fruit depends on total polyphenols.
