Velva is a type of frozen dessert made from fruit that contains nutrients that help the body's metabolic processes and as a source of energy. The addition of vegetables is done to replace fruits that are more expensive and as a source of antioxidants. The aim is to determine the acceptability and hedonic quality and nutritional content of the best formulas for Velva products. Experimental research using a completely randomized design (CRD) approach to the formulation of the basic material for making dragon fruit Velva with the addition of carrot and pumpkin vegetables that is five treatments and two replications to obtain 10 experimental units, the data were analyzed by One Way ANOVA with Duncan test. The results based on hedonic tests show that F3 (80% Carrot + Yellow Pumpkin 20%) averaged 3,51 best-selected formulas. Whereas the hedonic quality test showed that F1 (Carrot 100%) average value of 3,51 the best-selected formula. Organoleptically selected best Velva showed F5 as the best Velva formula ranging from 3.49 organoleptic average test results and nutrient analysis results with nutrient content values. Water content is 77,4%, fat content is 7,4%, protein content is 2,9%, carbohydrate content is 15.3164% ash content is 4,3%. Conclusion; the best dragon fruit Velva formula, carrot vegetable, and pumpkin are the best in hedonic and hedonic quality in formula F5 (60% carrot and 40% pumpkin) containing low-fat content based on SNI frozen dessert.Velva sejenis frozen dessert terbuat dari buah yang mengandung kandungan zat gizi yang membantu proses metabolisme tubuh dan sebagai sumber energi. Penambahan sayur dilakukan untuk mengganti buah yang harganya lebih mahal dan sebagai sumber antioksidan. Tujuan untuk mengetahui daya terima dan mutu hedonik serta kandungan gizi formula terbaik terhadap produk velva. Penelitian eksperimen menggunakan rancangan acak lengkap (RAL) pendekatan formulasi dari bahan dasar pembuatan velva buah naga dengan penambahan sayur wortel dan labu kuning  yaitu lima perlakuan dan dua kali ulangan sehingga diperoleh 10 unit percobaan, data dianalisis dengan One Way Anova dengan uji Duncan. Hasil uji hedonik menunjukkan bahwa F3  (Wortel 80% + Labu Kuning 20%) rata-rata 3,51 formula terpilih terbaik. Uji mutu hedonik menunjukkan bahwa F1 (Wortel 100%)  nilai rata-rata  3,51 formula terpilih terbaik. Velva terpilih terbaik secara organoleptik menunjukkan F5 sebagai formula velva  terbaik berkisar 3,49 nilai rata-rata uji organoleptik dan hasil analisis zat gizi dengan nilai kandungan zat gizi. Kadar air 77,5%, kadar lemak 7,4%, kadar protein 2,9%, kadar karbohidrat 15,3% kadar abu 4,3%. Kesimpulan; formula velva buah naga, sayur wortel dan labu kuning yang terbaik secara hedonik dan mutu hedonik pada formula F5 (60% wortel dan 40% labu kuning) yang mengandung kadar lemak rendah berdasarkan SNI frozen dessert.

The prevalence of stunting in Indonesia is still high at 30,8%. Low protein intake is one of the causes of stunting. The purpose of this study was to determine the nutritional analysis and organoleptic quality in cork fish sausages. This study used a completely randomized design with 3 repetitions. Nutrient analysis was obtained from the Luff schroll test for carbohydrates, fat test with shoxlet and protein test with micro kjedhall. Organoleptic quality with acceptance of taste, texture, color and aroma by descriptive. Research results with univariate analisis were the highest nutrient content of protein and carbohydrate in formula F1 (100%) is protein (16.71%) and carbohydrate (20.14%) and the highest fat content in formula F3 (60%) is as much as (18.52%). The most preferred organoleptic quality for aroma and taste is in formula F1 (100%), texture is in formula F2(80%) and the most preferred color is in formula F3 (60%). The recommendation for prevent stunting can be used F1 formula.

Meatballs are processed meat products that very popular in Indonesia. Making meatballs is not just using animal material only, but also can be used plant materials such as oyster mushrooms. The meatballs can be made in various forms, such as a round shape or a box shape. This study aims to determine the nutrient content (moisture, ash, fat, protein, and carbohydrates) in several formula meatballs box of oyster mushroom (Pleurotus ostreatus) and find the best formula on the meatballs box oyster mushrooms, the nutrients (fat, protein, and carbohydrates), as well as the ash and moisture content. The study was designed using completely randomized design (CRD), which consists of six treatments and two replications. Parameters measured were as hedonic organoleptic include color, aroma, flavor and texture, using 15 panelists and nutrient analysis includes the levels of fat, protein, carbohydrate, ash content and water content. The results showed that the formulation of meatballs box, panelists preferred the formula II from another formula with a value of 3.06 based on color, aroma, flavor, and texture. The results of nutritional analysis were fat content of 0.77, protein content of 16:28 value, carbohydrate content of 31.4, ash content of 1:46 and water content of 9.44.

ABSTRACT          The aim of this study was to determine the effect of adding dragon fruit skin (Hylocereus polyrhizus) on organoleptic characteristic, nutritional content, and antioxidan activity of tcobfish crackers (Euthynnus affinnis). This study used a Randomized Design) consisting of  3 treatments namely A (23% tuna meat, 60% tapioca flour and dragon fruit skin 17%); treatment B (25% tuna meat, 50% tapioca flour, dragon fruit skin 25%) and treatment C (27% tuna meat, 40% tapioca flour, dragon fruit skin 33%). There were three replications each treatment, so that  there were 9 experimental units. The results showed that the analysis of variance descriptive and hedonic tests. The highest value of appearance was treatment C with descriptive and hedonic values respectively (5,10 and 3,14). The highest values of aroma was treatment A namely (7,26). The highest value of taste was parameters B (7.26), the highest value of textur was treatment B (7.26) and the highest hedonic value of cripness was treatment C (3.32). The addition of dragon fruit skin treatment did not significantly affect to organoleptic value of Cobfish crackers. The highest moisture content was treatment B (1.94). The highest average value of ash was treatment C (1.36). Treatment C with the highest value (22.73). Protein treatment parameters C with the highest value (26.14). The carbohydrate sample A with the highest value. The results of the antioxidant activity test obtained the IC50 value of the US sample with a value (307.30), BS sample (277.00), CS sample (278,57) , s ampel AB (258, 86), BB samples (251.80) and CB samples (225.23). Keywords: Crackers, dragon fruits rind, mackarel tuna, antioxidant activityABSTRAKTujuan penelitian ini adalah untuk mengetahui pengaruh penambahan kulit buah naga (Hylocereus polyrhizus) terhadap sipat organoleptik, kandungan gizi, dan aktivitas antioksidan kerupuk ikan tongkol (Euthynnus affinis). Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari 3 perlakuan yaitu A (daging ikan tongkol  23%, tepung  tapioka 60%, dan kulit buah naga 17%), perlakuan B (daging ikan tongkol 25%, tepung tapioka 50%, kulit buah naga 25%), dan  perlakuan  C (daging ikan tongkol 27%, tepung tapioka 40%, kulit buah naga 33%). Masing-masing perlakuan dilakukan tiga kali ulangan, sehingga diperoleh jumlah satuan percobaan sebanyak 9 unit. Hasil penelitian menunjukkan bahwa analisis ragam uji deskriptif dan hedonik Nilai tertinggi untuk parameter penampakan adalah perlakuan C dengan nilai deskriptif dan hedonik (5,10 dan 3,14. Nilai tertinggi untuk parameter aroma adalah perlakuan A yaitu (7,26). Parameter  rasa tertinggi B (7,26), tekstur tertinggi perlakuan B (7,26) dan kerenyahan nilai hedonik tertinggi perlakuan C (3,32). Perlakuan penambahan secara statisitk tidak berpengaruh nyata terhadap nilai organoleptik kerupuk ikan tongkol. Pada uji kandungan gizi proksimat dengan nilai rata-rata parameter kadar air tertinggi pada perlakuan B (1,94). Parameter abu dengan nilai rata-tertinggi pada perlakuan C (1,36). Parameter lemak perlakuan A perlakuan C dengan nilai tertinggi (22,73). parameter protein perlakuan C dengan nilai tertinggi (26,14). Parameter karbohidrat sampel A dengan nilai tertinggi. Hasil uji aktivitas antioksidan didapat nilai IC50  sampel AS dengan nilai (307,30), sampel BS (277,00), sampel CS (278,57), sampel AB  (258, 86), sampel BB (251,80) dan sampel CB (225,23). Kata kunci: aktivitas antioksidan, Ikan tongkol, kerupuk, kulit buah naga

Edamame milk (Glycin max. L var. edamame) is one product with the advantages; easily produced and highly nutritious. This study aims was to determine the fat content of edamame milk prepared by edamame bean. The method used in this study is the experiment using a completely randomized design with 4 treatments and 5 replications. Fat analysis was done using the Gerber method. The fat levels of edamame milk at the first treatment, the average value of Edamame milk was 5.74% , the second 5.28%, the third 4.56% and the last treatment or the the fourth is fat at 2.0%. The results are compared with the other fat content of the other varieties, then it can be compared the fat content of Edamame varietes lower than the variants of Malika and Grobogan which are variants of Edamame fat content which is 5.74%, Malika fat content was 13.2%, and the Grobogan variance averaged 12.83%. The results of the analysis show that there are significant differences between treatments. For the average edamame fat content that is good is equal to 2.02% and the results close to the standard of soy milk that is equal to 2.0%.Keywords: fat content, edamame milk, Gerber method.ABSTRAKSusu edamame (Glycin max. L var. edamame) merupakan salah satu produk dengan kelebihan; mudah diproduksi dan bergizi tinggi. Penelitian ini bertujuan adalah menentukan kadar lemak susu edamame olahan biji Edamame. Metode yang digunakan dalam penelitian ini yaitu eksperimen dengan Rancangan Acak Lengkap dengan 4 perlakuan dan 5 kali ulangan. Analisis lemak dilakukan menggunakan metode Gerber. Hasil penelitian kadar lemak susu edamame pada perlakuan pertama, nilai rata-rata ulangan lemak susu edamame yaitu sebesar 5,74%, kedua 5,28% ketiga 4,56% dan keempat 2,02% Jika hasilnya dibandingkan dengan kadar lemak varietes lainnya maka bisa di bandingkan kadar lemak varietes edamame lebih rendah dari varietes malika dan grobogan yang mana varietes edamame kadar lemaknya yaitu sebesar 5,74%. Malika kadar lemaknya sebesar 13,2%, dan varietes Grobogan rata-ratanya sebesar 12,83%. Hasil analisis menunjukkan bahwa terdapat perbedaan yang signifikan diantara perlakuan. Rata-rata kadar lemak edamame yang baik yaitu sebesar 2,02%  dan hasilnya mendekati standar susu kedelai sebesar 2,0%Kata kunci: kadar lemak, susu edamame, metode Gerber.

ABSTRACT Dragon fruit is an Indonesian agricultural commodity that contains many essential nutrients for the body. Dragon fruit is known to reduce cholesterol and balance blood sugar levels in the body. Unfortunately, dragon fruit is easily damaged. In addition, dragon fruit also often experiences price declines especially when the amount of harvest is abundant. Therefore, efforts are needed to process dragon fruit into processed products of high economic value; one example is to process them into jelly candies. In this research, jelly candies were made from dragon fruit by using carrageenan as a gelling agent. This study aims to determine the chemical properties and the level of preference of panelists on dragon fruit jelly candy with the addition of carrageenan at different concentrations. The experimental design used in this study is a completely randomized design with 1 treatment factor, namely the difference in carrageenan concentration (3%, 5%, and 7%). The results showed that the water content of dragon fruit jelly candy at all levels of carrageenan concentration had fulfilled SNI-3547-2-2008 with an average value ranging from 4.78 to 6.61% (maximum water content according to SNI was 20%). And the ash content required by SNI-3547-2-2008 for jelly candy is 3% according to the treatment of adding 3% carrageenan with a value of 2.91%. The organoleptic test showed that the best treatment that panelists prefer is the treatment with the addition of 3% carrageenan with an average value of aroma 3.33 (somewhat like), color 3.60 (like), taste 3.53 (like) and texture 3.45 (somewhat like).

Background: Hotong seeds are a growing and fertile plant on Buru Island and have been exploited by local people as an alternative source of carbohydrates. However, its utilization is still very simple as a result of not knowing the pattern of utilization in other form. Hotong seeds are the smallest cereal seeds weighing 15.2 kg each. Hotong seeds have the highest nutrient content, diameter hot seeds at the base of the larger than the tip and center. The color of seeds are varied hot yellow, brownish and red. Method: This study was an experimental study using Completely Randomized Design (RAL) with long storage treatment (0, 6, 8, and 12 months). Each treatment was repeated three times. The parameters observed were fat content in hotong seeds. Analysis of fat content using descriptive analysis method. Results: The results showed that the fat content of Hotong seeds of Waelo Village differed in control and on each treatment of storage duration. In the control of low fat content of 3.3591%, fat content increased in storage of 6 months and 8 months that is 3.5491% and 3.7242% and then decreased at 12 months ie 3.9322%, where from each treatment fat content the highest was obtained at 12 months storage treatment. Conclusion: There are different amounts of fat content in Hotong seeds of Waelo Village on the controls as well as on any storage treatment duration.

Background: Moringa leaves are rich in nutrients and are a source of antioxidants, but are underutilized by the public as a food ingredient because they smell ‘unpleasant '. In an effort to increase the benefits to extend the shelf life of the product and also attract the interest of the community to consume Moringa leaves, Moringa leaves can be processed into flour, then made ice cream with the addition of peanut juice. Method: Implementation of this research was conducted at the Pattimura University Basic Biology Laboratory. This study uses a Completely Randomized Design (CRD). Data from the research results were analyzed using inferential statistics One Way Anova (ANOVA). Results: There was an effect of adding variations of peanut juice (Arachis hypogea) to fat content in Moringa oleifera leaf ice cream ie control of 4,457%, addition of 50 ml peanut juice as much as 5,207%, addition of 75 ml peanut juice as much as 5,956% and the addition of 100 ml peanut juice, fat content of 5.993%. Conclusion: There is an effect of adding variations in peanut juice (Arachis hypogea) to fat content in Moringa oleifera leaf ice cream.

Background: Tempeh gembus is a food that high in protein and fiber but low in fat. The low content of fat in tempeh gembus is good for adolescent with obesity. Tempeh gembus cookies could be the alternative snack for adolescent girls with obesityObjectives: To analyze the effect of the substitution of tempeh gembus flour on the nutrient content of tempeh gembus cookies and the acceptability of the best formula on the tempeh gembus cookiesMethods: This was an experimental research with one factor complete randomized design, which was the formulation of cookies with tempeh gembus flour of 0%, 25%, 50%, and 100% as the variation of substitution, then analyzed the nutrients and acceptance. The statistic method used were One-way Anova test to analyze the nutrients and Friedman test to analyze the acceptanceResults: There were significant effects the formulation of cookies with tempeh gembus flour on total fat, carbohydrate, total crude fiber, ash content, and reducing sugar. In acceptance test, there were significant effects of tempeh gembus cookies formulation on color, appearance, tenderness, aroma, and flavorConclusions: Cookies with tempeh gembus flour formulation of 100% was the best formulation to meet total energy, carbohydrate, low fat and high fiber acceptance which were good for adolescent girls with obesity. Whereas cookies with tempeh gembus flour formulation of 25% and 50% based on acceptance were still acceptable and preferred

Background: Noodle is one of the popular food products in the community. Purple sweet potato contains large amounts of anthocyanin pigment. Seeing the prospect of great benefits and easily obtained, sweet potatoes can be optimized for use as a source of natural dyes. Objectives: The purpose of this study was to determine the nutrient content of wet noodles and the level of preference for noodles from mocaf flour with natural sweet potato dyes. Material and Method: This type of research is an experiment with a completely randomized design (CRD) with 4 treatments and 2 repetitions to produce 8 experimental designs. Results: The hedonic test results obtained the best formula is F1 with a value of 3.67 categories very like while the hedonic quality test obtained the best formula is F1 with a value of 3.68 categories of purplish, slightly aromatic colour, slightly savoury taste and somewhat chewy texture. The nutritional content of wet noodles are 69.02% water content, 3.67% ash content, 1.03% fat content, 9.77% protein content, 0.34% calcium content and 1.493% phosphorus content. Conclusion: The most preferred wet noodle based on hedonic test and hedonic quality is F1 formula. This wet noodle only has a little nutritional content, further research is needed in order to get the best-wet noodle formulation and has a good nutritional content so that it can be produced as an alternative to wet noodle variations.
