`Fuji' apples (Malus domestica Borkh.) were harvested at three maturities for three consecutive seasons. Fruit firmness, soluble solids concentration, starch—iodine index (SI), and internal ethylene concentration were measured at harvest. Fruit were stored in 0 °C air storage for 8 months. Fruit firmness and other maturity indices were measured monthly during storage. Using a stepwise regression procedure, harvest maturity indices were used to predict firmness after air storage. When all maturity indices measured were represented in the model, R2 = 0.29, 0.34, and 0.26 at 4, 6, and 8 months, respectively. Use of only SI and fruit firmness in the model gave R2 values of 0.25, 0.29, and 0.24 for 4, 6, and 8 months, respectively. Although R2 values were low, they were highly significant. The model using fruit firmness and SI resulted in the best fit. Thus, an equation was developed using months of air storage, firmness, and SI at harvest. Actual firmness values correlated fairly well with predicted firmness values, usually within ≈5 N. On Washington apples, predicted values were 4.3 and 3.7 N too low compared to actual firmness values after 3 or 5 months' storage. In 1993, when predicted and actual firmness values were compared for Pennsylvania apples, predicted values ranged from 2.6 to 8.3 N too high after 3 months' storage, depending on harvest date. In 1994, Pennsylvania fruit stored 4 months had predicted values 0.5 N too high to 6.3 N too low, depending on harvest date. It may be possible to develop and refine models for an apple variety that would be applicable to several regions.

Superficial scald is a physiological disorder that develops during cold storage affecting apples and causes substantial market losses. Malus × domestica cv. Ladina, a new scab resistant and fire blight tolerant variety, commercialized in 2012, shows a physiological disorder similar to superficial scald after storage. Here, we used different pre- and postharvest approaches to characterize the occurrence of these superficial scald symptoms in Malus × domestica cv. Ladina. Over a period of seven years, fruits from multiple orchards were stored for five to seven months and the occurrence of superficial scald was assessed in fruits after cold storage and controlled atmosphere (CA) storage. Apples picked at different stages of ripeness within the same year differed in superficial scald development. Additionally, superficial scald differed significantly between years and locations, strongly suggesting that maturity at harvest, weather during the growing season, and orchard management play important roles in scald occurrence. Treatment with 1-methylcyclopropene (1-MCP) after harvest, and storage in a dynamically controlled atmosphere (DCA) significantly reduced the occurrence of superficial scald, whereas storage under ultralow oxygen concentrations (ULO) showed mild but not significant effects. Low calcium concentrations in the fruit flesh and peel were associated with stronger superficial scald occurrence.

‘Honeycrisp’ apple trees are highly prone to biennial bearing and predisposed to bitter pit. The hypothesis that tank mix sprays of ethephon (ETH), naphthaleneacetic acid (NAA), and 1-aminocyclopropane carboxylic acid (ACC) combined with calcium chloride (CaCl2) can mitigate these production problems was tested in a 3-yr study. Mature ‘Honeycrisp’ trees were treated with either three or six summer applications of 150 mg L−1 ETH or 5 mg L−1 NAA, all tank-mixed with and without CaCl2, or two or five applications of 150 mg L−1 ACC (without CaCl2). Treatments were applied at 10-d intervals and initiated between 21 and 26 June. All treatments had little effect on enhancing return bloom of ‘Honeycrisp’. NAA, ETH, and CaCl2 all influenced fruit maturity and quality at harvest to varying degrees and across years. Fruit treated with NAA were firmer compared with untreated fruit in 2 out of 3 yr, whereas overall, fruit treated with six sprays of ETH had lower fruit firmness and were more mature. NAA had less influence on fruit quality attributes at harvest than did ETH, and decreased pre-harvest fruit drop (PFD). PFD increased with ETH in 1 out of 2 yr, whereas ACC and NAA both decreased PFD in 1 out of 2 yr. Overall, ETH and NAA, with or without CaCl2, had significant but inconsistent effects on fruit quality and maturity, all dependent on the year and number of applications. Adding CaCl2 decreased fruit firmness in 2 out of 3 yr.

Polyphenols within fruits and vegetables may contribute to health benefits due to their consumption, with the anthocyanin sub-set also adding colour. The Lemonade™ apple variety has green skin and white flesh, with low anthocyanin content, while some apple varieties have high anthocyanin content in both the skin and flesh. Effects of red compared with white-fleshed apples were studied in healthy human subjects in a randomized, placebo-controlled, cross-over intervention trial. Twenty-five healthy subjects consumed dried daily portions of the red-fleshed or placebo (white-fleshed) apple for two weeks, followed by one-week washout and further two-week crossover period. During the study, volunteers provided faecal samples for microbiota composition analysis and blood samples for peripheral blood mononuclear cell (PBMC) gene expression analysis. Subtle differences were observed in the faecal microbiota of subjects that were fed the different apples, with significant (p < 0.05) reductions in relative abundances of Streptococcus, Ruminococcus, Blautia, and Roseburia, and increased relative abundances of Sutterella, Butyricicoccus, and Lactobacillus in subjects after consuming the red apple. Changes in PBMC gene expression showed 18 mRNA transcripts were differentially expressed between the two groups, of which 16 were immunoglobulin related genes. Pathway analysis showed that these genes had roles in pathways such as immunoglobulin production, B cell-mediated immunity, complement activation, and phagocytosis. In conclusion, this study shows that anthocyanin-rich apples may influence immune function compared to control apples, with changes potentially associated with differences in the faecal microbiota.
