Biochemical assessment of the quality of berries of the genus fragaria in the Orenburg Region

The assessment of the biochemical composition of the berries of strawberry varieties is of undoubted interest for the creation of a new generation of high-vitamin varieties. This article presents the results of three-year studies of the biochemical composition and taste of introduced strawberry varieties. The research was conducted in 2018-2020 on the basis of the Orenburg branch of the Research Center of Horticulture in the Orenburg Region. The aim of the study was to select the best samples by biochemical composition for further use in horticulture and breeding. The evaluation of varieties by chemical composition was carried out in accordance with generally accepted methods. The zoned varieties Orletz and Zenga Zengana served as a control. According to biochemical parameters, the content of soluble solids ranged from 4.0 to 9.1 %, with an average content of 7.5 %; titrated acidity was from 0.57 to 1.07 %, with an average content of 0.88 %; the content of ascorbic acid (vitamin C) was from 31.6 to 62.7 mg%, with an average content of 48.4 mg%.The average tasting rating of the studied varieties was 4.4 points. The control varieties Orletz and Zenga Zengana had 4.0 and 4.2 points, respectively. As a result of the study varieties Kokinskaya Zarya, Pervoklassnitsa, Polka, Troubadour, Tsaritsa were revealed according to individual biochemical parameters and taste and can be used as a valuable source for further breeding work.

Abstract The paper presents the results of a long-term (2015-2020) study into a collection of domestic and foreign strawberry varieties cultivated in the Central Black Region, in terms of biochemical composition (content of soluble solids (SS), sugars, organic acids, ascorbic acid, anthocyanins) and genetic aroma determinants. The varieties with a high SS content (above 12.0%) herewith include Alena, Divnaya, Kupchikha, Olympic hope, Torpedo, Flora; sugars (above 9.0%) – Alena, Lastochka, Olimpiyskaya Nadezhda, Flora, Privlekatelnaya; ascorbic acid (above 80.0 mg/100 g) – Divnaya, Kupchikha, Sudarushka, Festival chamomile; anthocyanins (above 100.0 mg/100 g) – Alena, Fireworks. Among the varieties addressesd, the Kubata, Tsaritsa (domestic selection), Kimberly, Marshall, Red Gauntlet, Vima Tarda (foreign selection) varieties are characterized by a combination of functional alleles of FaOMT and FaFAD1 genes for a complex aroma profile. The selected promising varieties can be used as sources of valuable quality attributes and biochemical composition of fruits.

<p>Este trabalho teve como objetivo avaliar os parâmetros físico-químicos de polpas de fruta produzidas e comercializadas na cidade de Petrolina-PE, tendo como referência a Instrução Normativa nº 1, de 7 jan. 2000, do Ministério da Agricultura que define as características físicas e químicas estabelecendo limites mínimos e máximos específicos para cada polpa de fruta. Foram avaliadas duas marcas (1 e 2) de polpas de abacaxi, cacau, caju, graviola, maracujá e umbu, analisadas quanto aos parâmetros de pH, sólidos solúveis totais (SST), acidez total titulável (ATT), ácido ascórbico, relação SST/ATT e sólidos totais. Os resultados permitem inferir que a marca 2 apresentou qualidade superior na maioria dos parâmetros avaliados quando comparado com a marca 1. Entretanto para alguns sabores de polpa as duas marcas não atenderam os valores padrões. Entre as polpas o único sabor que apresentou os padrões exigidos foi a polpa de caju em ambas as marcas, e a que apresentou resultado de pior qualidade diante dos padrões foi a polpa de maracujá principalmente da marca 1. Dessa forma constata-se que há grandes variações entre as marcas, e entre alguns parâmetros, o que compromete a qualidade das polpas, prejudicando assim o consumidor.</p><p align="center"><strong><em>Physicochemical parameters of fruit pulps produced in Petrolina – PE</em></strong></p><p><strong>Abstract</strong><strong>: </strong>This study aimed to evaluate the physicochemical parameters of fruit pulps produced and marketed in the city of Petrolina-PE, with reference to the Instruction Nº 1 of 7 January 2000 of the Ministry of Agriculture, which defines the physical and chemical characteristics setting minimum and maximum limits specific to each fruit pulp. We evaluated two brands (1 and 2) of pineapple, cocoa, cashew, soursop, passion and umbu fruit pulp, analyzed for pH, total soluble solids (TSS), total titratable acidity (TTA), ascorbic acid, TSS / TTA and total solids parameters. Results show that the brand 2 showed superior in most evaluated parameters when compared to the brand 1. However, for some pulp flavors of both brands did not reached the standards values. Among the pulps, the only flavor that presented the required standards was the cashew pulp in both brands, and presented the results of lower quality on the standards was the passion fruit pulp mainly brand 1. Thus, it appears that there are great variations between brands and between some parameters, which compromises the quality of the pulp, thus impairing the consumer.</p>

The article presents data on the study of the effect of foliar water-soluble mineral fertilizer NOVATEK Solub K-Max 10-5-30 on the biochemical composition and commercial quality of apple fruits. A rise in vitamin C from the introduction of NOVATEK at a rate of 2.5 kg/ha indicates the effectiveness of this drug for optimizing the content of ascorbic acid in fruits. An increase in the content of monosaccharides and a decrease in disaccharides were found for all the studied rates of consumption of agrochemicals. The use of mineral fertilizer “Novatek Solub K-Max” contributed to increase the dry weight of fruits. The application of this mineral fertilizer is recommended for inclusion in the industry regulations for Apple cultivation as one of the elements of the technology.

An experiment was conducted to assess the influence of edible coatings on postharvest quality of mandarin during 20 days of ambient storage. Sorted fruits were washed; fruit surface water was removed and then coated with 100% liquid paraffin wax, 0.5% chitosan, 1.0% chitosan, 1.5% chitosan, and 100% coconut oil. After coating, fruit surface was air dried and kept at ambient condition (25±3 °C, 60–70% RH) and analyzed periodically for weight loss, respiration rate, firmness, decay incidence, TSS, pH, ascorbic acid content, and sensory properties. The results revealed that coconut oil had immense effect on the reduction of the weight loss and respiration rate and preserved firmness, total soluble solids, ascorbic acid, total sugar and reducing sugar and no incidence of moulds & their growth was found up to 16 days of storage.Int. Kiwifruit is very perishable especially at 20 °C. The quality of kiwifruit with 1-MCP treatment stored at 20 °C in modified packages was investigated. Three different polyolefin films, including 0.03mm thickness polyethylene (PE), 0.03mm and 0.05mm thickness poly (vinyl chloride) (PVC) films, were used as packaging films. Kiwifruit were fumigated with 1-MCP to delay ripeness and then packaged with the three films and control (air). O2 and CO2 concentrations in the packages, flesh firmness, soluble solids concentration (SSC), titratable acidity (TA) and ascorbic acid were measured. MAP treatments could postpone the increase of TTS, inhibit the reduction of TA, and avoid the decrease of flesh firmness. Kiwifruit packaged in 0.05mm PVC obtained 33% TA more than control fruit and approximate 25 % retention of initial firmness. However, MAP didn’t maintain more ascorbic acid content of kiwifruit. In conclusion, MAP using polyolefin films combination 1-MCP treatment, especially 0.05mm PVC, might be more effective for preserving the quality of kiwifruit.

As a soil amendment, biochar can significantly improve soil quality and crop growth. Few studies, however, have explored biochar effects on crop quality. This study investigated the amendment effects of bamboo biochar pyrolyzed at different temperatures on plant growth and fruit quality of tomato (Solanum lycopersicum L.). Tomato ‘Micro-Tom’ plants were grown in a sand medium amended with 0, 1, and 3% of biochars produced at 300 °C, 450 °C, and 600 °C, respectively. Plant growth was monitored, and fruit harvested at the red stage was analyzed for color, texture, soluble solids content, sugars, ascorbic acid, and acidity. Results showed that biochars produced at 300 °C and amended at 3% or pyrolyzed at 450 °C and amended at 1% increased plant growth index. Contents of glucose, fructose, soluble solids, ascorbic acid, and sugar-to-acid ratios of fruits produced from the two treatments were significantly higher than the other treatments. The improved plant growth and fruit quality were related to the higher concentrations of NO3, P, Ca, and Mg in the growing media. Our results suggest that optimizing biochar use can be achieved by targeting biochar production conditions and application rate, which resulted in desirable amendment and fruit quality effects.

Mango cv Kent, as grown on the Yucatan Peninsula, despite its satisfactory ripening, pleasant flavour, correct pulp colour and general acceptance, shows a skin without the characteristic red- yellow colour of the regular ripe fruit; it remains green and this makes it slightly unattractive to the consumer. On the other hand, ethylene and some other components such as Ethephon, have been used to homogenize the ripening in many fruits and to improve its colour. This work shows the results of the effect of nine different treatments with Ethephon on the colour, composition and quality of mango cv Kent. Fruit was treated by immersion in solutions of Ethephon at three different concentrations (500, 1500 and 2000 ppm) and for three different lengths of times (3, 6 and 9 min). The colour improvement depended upon the concentration and time of the treatment with Ethephon. In general, it was found that treatment with Ethephon had a significantly posi tive effect on the colour of the mango skin, as it caused the degradation of chlorophyll, which gave the appearance of the characteristic yellow and red colours to 100% of the fruit treated with 2500 ppm. Treatments influenced significantly the chemical composition of the pulp, particularly the concentration of total soluble solids, reducing sugars, carotenoids, vitamin C and acidity. The best sensorial acceptance was obtained from treatments with 1500 ppm.

The aim of study was to compare yield, fruit quality, chemical composition and fruits colour of berries of two blue honeysuckle(Lonicera caerulea L.) cultivars of Polish bred ‘Wojtek’ and ‘Brązowa’ collected at the beginning and at the end of harvest season,respectively. On average, ‘Wojtek’ yielded 1565 g per bush, whereas ‘Brązowa’ 1941 g. During the fruit ripening process, considerablechanges were found in the fruit colour. Fruits of both cultivars became darker and their colour changed from green and yellow to redand blue. With the changes in fruit colour, considerable changes in firmness also occurred. Fruit ripening reduced fruit firmness andpuncture resistance. For both genotypes, the berries of late harvest were bigger and richer in soluble solids and total polyphenol, however,they showed decreased firmness, lower acidity, and L-ascorbic acid content. Nevertheless the time of harvest, ‘Wojtek’ berries surpassed‘Brązowa’ fruit regarding soluble solids, titratable acidity and L-ascorbic acid content (for late-crop berries of both cultivars 14.1>12.6%,3.4>2.7 g citric acid 100 g1, and 76>56 mg 100 mL-1. Further, ‘Wojtek’ berries showed higher total polyphenol content (149.30 and183.66 mg∙100 g-1, for early and late ripening fruit, respectively) compared to that of ‘Brązowa’ (125.51 and 175.67 mg 100 g-1). Amongphenolics, anthocyanins made the substantial group ranging from 94.47 mg 100 g-1 (‘Brązowa’ berries of early harvest) to 141.96 mg 100g-1 (late ‘Wojtek’ fruit).

The article presents the results of studies of the chemical composition, commercial qualities and taste of berries of promising strawberry varieties breeding of the All-Russian Horticultural Institute for Breeding, Agrotechnology and Nursery (Moscow) in the conditions of the Orenburg Urals. The studies were carried out in 2016-2018 on the basis of the Orenburg Experimental Station of Horticulture and Viticulture of the All-Russian Horticultural Institute for Breeding, Agrotechnology and Nursery in specific conditions, where almost annually dry and moderately dry climatic periods were observed during the formation of the yield (May-June). A comparative evaluation of varieties on the content of sugars, acids, vitamin C in berries, taste and attractiveness of appearance is given. The dependence of the studied parameters on the genotype of the variety and vegetation conditions was established. Depending on the variety and year, the content of soluble solids varied from 7.2 to 10.2 %, with an average content of 8.9 %; total acidity varied from 0.8 to 1.2 %, with an average content of 1.0 %; the content of ascorbic acid (vitamin C) was from 45.1 to 78.5 mg/100 g, with an average content of 56.4 mg/100 g. Varieties with high parameters of tasting evaluation (Darenka, Kokinskaya Zarya, Studencheskaya), soluble solids (Rosinka, Studencheskaya) and ascorbic acid (Kokinskaya Zarya, Bereginya) were revealed. They are recommended to be grown to obtain fresh consumption products and as processing products of various directions. Bereginya, Darenka and Rosinka varieties surpass control varieties in certain biochemical parameters and can be used in breeding in the Urals region to obtain new genotypes with an increased content of a specific biologically active substance. The variety Tsaritsa is selected for high commodity qualities of berries (weight, dessert taste, attractiveness of appearance) and is recommended for commercial production of berries and involvement in breeding process. It has been established that the taste of berries is determined by a complex of acids, sugars and aromatic substances. This parameter was greatly influenced by weather conditions, from which air temperature and precipitations were determining.

The object of research in this work is the technology of pastille with the addition of multicomponent fruit and berry paste. Pastille are becoming more and more popular in the world for all segments of the population. Usually, the main ingredients for their manufacture are fruit raw materials, a structurant and egg white, therefore, the products contain practically no fat and have a low calorie content. It is proposed to replace 75 % of traditional applesauce in the recipe with a multicomponent fruit and berry paste made from apples, cranberries, hawthorn. It was found that such a composition makes it possible to obtain products with an increased content of pectin substances, ascorbic acid, polyphenols, including anthocyanins, catechins and flavonols. The work is aimed at studying the application of the principles of qualimetry to determine a complex indicator of the quality of pastille For this, the organoleptic and physicochemical indicators of the quality of the developed pastille were taken from previous studies and the chemical composition was determined and the content of biologically active substances was calculated relative to the average daily human need. The content of pectin substances in new products increases 1.7 times and satisfies the average daily human need by 18.2 %. The content of ascorbic acid is 4.2 times higher, which is 20.5 % of the average daily human need, and polyphenols 3.2 times higher – 579.0 %. The data obtained make it possible to consider the developed product functional. The next step was to determine the complex indicator of products by the qualimetric method. For a more complete disclosure of product properties, a structure of pastille quality indicators has been developed – a «tree of properties». Thus, the comprehensive assessment of the quality of the control sample corresponds to the indicator «good» (0.66), while the integrated assessment of pastille with multicomponent paste corresponds to the indicator «very good» (0.98). On the basis of organoleptic, physicochemical indicators and chemical composition of products, it was established that the indicator of a comprehensive assessment of the quality of a pastille with a multicomponent paste, taking into account all group indicators, is 48 % higher compared to the control.
