The research presents the results of experimental studies of the influence of various physicochemical factors (phonophoresis, electrophoresis, electrospray, diffusion, etc.) on the rate of transport of biologically active substances through the protective layer of hatchig eggs shell of crossbred Haysex Brown. The aim of the study was to compare the effectiveness of the use of physicochemical methods of transportation of biologically active substances through the shell of hatching eggs of chickens. For the experiment, three batches of eggs were formed, which were obtained from layer hens Haysex Brown, 144 pieces in each experimental group. The kinetic parameters of BAS transport through bioceramic protective barriers of eggs were calculated based on the determination of BAS concentration on the surface and inside the egg by mass spectrometric method (mass spectrometer with ionization of 252Cf fission fragments "MSBH", (Ltd "SELMI", Sumy, Ukraine). The degree of permeability of bioceramic layers of the shell relative to the model gas mixture which is identical to the atmospheric air was studied by the method of V. Breslavets et other and the mass spectrometric method (gas mass spectrometer "MX 7304A"). Electron microscopic studies were performed on a scanning electron microscope REMMA-102; Visilog 6.11 (Noesis, Belgium) was used to process the obtained digital images to determine the number of shell microdefects per unit area of the digital image. It has been experimentally proved that to increase the efficiency of transport of biologically active substances (BAS) through the bioceramic layers of the shell of hatching eggs of Loman Brown hens, it is advisable to use ultrasonic treatment (phonophoresis, sonophoresis), substances - enhancers, including plant terpenes (L-menthol), DMSO and cyclodextrin. Phonophoretic treatment of hatching eggs increases the hatchability of eggs by 7.6%. At the same time, the gas permeability of the bioceramic layer increases significantly (by 0.43. 10-4 m3 / m2 s).

In recent years, herbal medicines have become increasingly popular for the treatment of many diseases because they have a complex and multifactorial influence on the body. Fatty and organic acids are important groups of biologically active substances for the improvement of many pathological human’s conditions. Feverfew (Tanacetum parthenium (L.) Schultz Bip.) is a promising source of biologically active substances with many years of success in medicine and insufficiently studied chemical composition. The analysis of fatty and organic acids is one of the directions of our comprehensive study of the feverfew herb grown in Ukraine. The aim of the work was to conduct a study of the qualitative composition and quantitative content of fatty and organic acids in the feverfew herb grown in Ukraine. For the study, we used the feverfew herb, which was grown in the scientific fields of the Botanical Garden of the National University of Ukraine (2019). The studies were carried out by a gas chromatography-mass spectrometric method on an Agilent Technologies 6890N chromatograph with a 5973 mass spectrometric detector. 35 carboxylic acids were found and identified in the samples. Among them 21 acids are saturated, 5 are unsaturated and 9 are aromatic. The total content of carboxylic acids in feverfew herb was 26.54 mg/g. Among the identified fatty and organic acids in the feverfew herb the greatest amount of the following acids was observed: succinic (4.89 mg/g), levulinic (4.34 mg/g), citric (2.73 mg/g), palmitic (2.15 mg/g), linoleic (1.71 mg/g), oxalic (1.53 mg/g) and linolenic (1.07 mg/g) acids. Among the aromatic acids in the feverfew herb the dominant compounds were p-coumaric (2.4%), benzoic (1.89%) and ferulic (1.40%). For the first time, a chromatography-mass spectrometric determination of the qualitative composition and quantitative content of organic and fatty acids in feverfew herb collected in Ukraine was carried out. The data obtained indicate a varied composition and rich content of acids in domestic raw materials and will be used to create medicines based on the feverfew herb.

Determining gas compositions from live well fluids on a drilling rig is critical for real time formation evaluation. Development and utilization of a reliable mass spectrometric method to accurately characterize these live well fluids are always challenging due to lack of a robust and effectively selective instrument and procedure. The methods currently utilized need better calibration for the characterization of light hydrocarbons (C1–C6) at lower concentrations. The primary goal of this research is to develop and optimize a powerful and reliable analytical method to characterize live well fluid using a quadruple mass spectrometer (MS). The mass spectrometers currently being used in the field have issues with detection, spectra deconvolution, and quantification of analytes at lower concentrations (10–500 ppm), particularly for the lighter (<30 m/z) hydrocarbons. The objectives of the present study are thus to identify the detection issues, develop and optimize a better method, calibrate and QA/QC the MS, and validate the MS method in lab settings. In this study, we used two mass spectrometers to develop a selective and precise method to quantitatively analyze low level lighter analytes (C1–C6 hydrocarbons) with masses <75 m/z at concentrations 10–500 ppm. Our results suggest that proper mass selection like using base peaks with m/z 15, 26, 41, 43, 73, and 87, respectively, for methane, ethane, propane, butane, pentane, and hexane can help detect and accurately quantify hydrocarbons from gas streams. This optimized method in quadrupole mass spectrometer (QMS) will be invaluable for early characterization of the fluid components from a live hydrocarbon well in the field in real time.

Background. The deficiency of essential nutrients in the human body is the root cause of reduced efficiency, general resistance of the body to various diseases. That is an urgent problem in the context of the spread of coronavirus infection. In this regard, the search for opportunities to meet the needs of the population in food products that contain biologically active substances (BAS) through the use of high-value and at the same time available plant raw materials is extremely important. Marigolds attract special attention among such raw materials. The aim of the work is to study the chemical composition and evaluate the consumer properties of Tagetes L. varieties, zoned in the Kiev region, to prove the possibility of increasing the biological value of pasta by adding to their recipe powder from marigold inflorescences. Materials and methods. The object of research is pasta of B group (noodles). Inflorescences of marigolds of different varieties gathered during the flowering period in July-September 2019–2020 in the territory of Vasylkiv and Obukhiv districts of Kyiv region, Ukraine were used as enriching plant raw materials. The quality of finished pasta was assessed by organoleptic and physicochemical indexes (moisture content and titratable acidity). The content of mineral elements in the fine powder of marigold inflorescences was determined on the EXHERT-3L device, the quantitative composition and BAS identification – by spectrophotometric analysis on the device Specord-200 Analytic Jena UV-vis. The integrated quality index of pasta products was calculated taking into account the importance factors of individual indexes. Results. Comparing the obtained results, we can state that all the studied varieties – Gold Kopfen, Orange Flame, Hawaii, Equinox are characterized by high biological value, regardless of the area of collection. As a result of calculated and experimental studies it was determined that the addition of 7 % of the supplement does not provide the required supply of vitamins and minerals. Replacing the flour in the recipe by 20 % significantly improves the mineral composition, but deteriorates the taste and aromatic properties of pasta. The most optimal and rational amount of added additive is 15 %, as it improves the organoleptic properties of pasta and enriches their BAS. Conclusion. The usage of non-traditional vegetable raw materials, in particular powder from marigold inflorescences, which is rich in biologically active substances, allows not only to expand the range, improve the quality of finished products, but also increase the biological value of the product. The optimal amount of additive –powder from marigold inflorescences, was defined. It is 15 % by weight of flour in the production of noodles. This concentration allows not only to improve the organoleptic properties, but also to increase the content of biologically active substances – vitamins, micro- and macronutrients. The usage of non-traditional natural raw materials (powder from marigold inflorescences) allows to abandon artificial colorsand give the finished pasta a pleasant colorand aroma.

Background. Taking into consideration the intense rhythm of life, the development of technologies for instant food products of increased nutritional value is urgent. Typically, food concentrates for desserts include fruit or fruit and berry fillings and require cooking to prepare ready-made meals. In this case, heat treatment of the mixture (boiling) negatively affects the thermolabile biologically active compounds. The aim of the work was to develop a recipe for instant food jelly concentrates of increased nutritional value based on encapsulated powdery hibiscus extract. Materials and methods. To encapsulate the aqueous-alcoholic extract of hibiscus and obtain a powdered semi-finished product, swelling potato starch was used. Rheological studies were carried out using a "REOTEST-2" rotational viscometer. Results. In order to enrich food concentrates of instant kissel with biologically active substances, we studied a method for extracting dry hibiscus flowers with aqueous-alcoholic solutions of various concentrations. It was found that the extractivity and the transfer of polyphenolic compounds, including anthocyanins, to the extract are improved when a water-alcohol mixture with an ethyl alcohol concentration of 30 % is used as an extractant. For the preparation of a powdery hibiscus extract, modified swelling starch was used, which has the property of swelling in cold water, which makes it possible not to subject the mixture to prolonged heat treatment for preparing a ready-made dish and to preserve the biologically active substances of the hibiscus extract. In addition, this starch is an effective solid carrier that plays a protective role for thermolabile vitamins and bioflavonoids. On the basis of experimental studies, formulations of instant jelly have been developed, which include fructose, powdered hibiscus extract, apple pectin and ascorbic acid. The study of the rheological properties of semi-finished products based on hibiscus extract, as well as ready-made jelly, testifies to the receipt of a finished dessert with a delicate creamy consistency. Conclusion. A method for obtaining a powdery encapsulated hibiscus extract based on swelling potato starch and a composition of a food jelly concentrate using this semi-finished product have been developed. It was found that for the extraction of raw materials it is better to use a water-alcohol mixture with an ethanol content of 30 %, since most of the anthocyanins are converted into the extract under these conditions. The developed semi-finished product of dry hibiscus extract can be used as a thickener, acidifier and colorant in recipes for food concentrates for instant dessert dishes. Due to the use of swelling starch, food concentrates of jelly do not need to be boiled, and the presence of vitamins, organic acids, flavonoids and especially anthocyanins in the hibiscus extract increases the nutritional value of the finished product.

AbstractThe main dissociation channels of the CH5+ ion, i. e. have been investigated by a mass spectrometric method. The pressure dependences of the ratios I14,90/I17 and I13,26/I17, in the range from 4,4·10-4 to 1·10-4 Torr, were plotted. The two ratios depend linearly on the pressure in the mass spectrometer analyzer. Since the two straight lines do not pass through the origine the conclusion is drawn that, for both dissociation channels of the CH5+ ion, besides the collision-induced transitions, spontaneous transitions, i. e. pure metastable transitions, take place. The spontaneous dissociations constants (λ1 = 7,5·105 sec-1 , λ2 = 5,2·104 sec-1) and collision-induced dissociation cross-sections (σ1 = 5,25 · 10-16 cm2 , σ2 = 3,2·10-16 cm2) have been estimated. These results are discussed and compared with those reported by other authors.

This paper presents the results of experimental studies the influence of biologically active substances of propolis on micromorphometric parameters of the ileum in young pigs. The results of the experiment make it possible to ascertain a change in the functional activity of the studied organ after the use of the drug from propolis. Since the most active process of absorption of monomeric hydrolysis products, especially amino acids and carboxylic acids, occurs in the ileum. Hydrolysis of intermediate products to monomers and preparation of the transition to absorption is carried out by enzymes fixed on the intestinal cell membranes. And the level of bioconversion of feed and retention of nutrients depends on their shape and structure, which ultimately affects the payment for feed with products. Therefore, the study of the histology of the small intestine and especially the ileum is of great importance. So, as a result of the study, it was found that the most characteristic histological changes in the structural components of the intestinal wall are observed in young animals of the experimental groups. The thickness of the main lamina of the mucous membrane of the ileum in piglets in the control group is 308.28 ± 2.81 µm, in piglets in the experimental group – 255.49 ± 0.75 µm. The height of the villi of the ileum, in the animals of the control group, is significantly lower and amounts to 193.89 ± 2.66 µm versus 280.97 ± 3.37 µm in the experimental group. Similar changes are observed in young animals of the older age group. The height of intestinal villi in pigs of the experimental group significantly exceeds the indicator of the control group and is 256.89 ± 1.62 µm and 163.96 ± 0.61 µm, respectively. The muscle plate of the intestinal mucosa of the pigs in the experimental group is significantly thicker than the control and is 17.8 ± 0.2 μm and 8.89 ± 0.08 μm, respectively. The obtained experimental material substantially supplements the information on the biological properties of propolis preparations. In practical veterinary medicine, research results can be taken into account when prescribing propolis for medicinal and prophylactic purposes. Since histological analysis of intestinal sections did not reveal destructive or pathological changes in any of the compared groups. In feeding, using the obtained practical material, we can specify the stimulating effect of the propolis preparation to intensify the growth of animals depending on the age of the pigs.

Introduction. There are over 12 000 medicinal plants encountered nowadays which are a biogenetically formed complex of biologically active compounds (BAC) and are extensively used in scientific as well as folk medicine. The plants which are used as food products and contain a large number of biologically active compounds are of great importance. Artichoke (Cynara scolymus L.) from Asteraceae family belongs to the group of plants which due to the presence of different groups of BAC is widely used as cholagogue, hepatoprotective, diuretic, antisclerotic, anti-inflammatory, analgesic, hypoglycaemic agent. BAC of artichoke is represented by carbohydrates, hydroxycinnamic acids, flavonoids, essential oil etc.The aim of the study – identification and determination of the quantitative content of inulin in the artichoke inflorescences collected inUkraine andFrance.Methods of the research. The presence of inulin in the studied plant material was confirmed using the Molisch’s test. The quantitative content of inulin in the artichoke inflorescences was determined spectrophotometrically (method 1) and by the means of GC chromato-mass-spectrometric method (method 2).Results and Discussion. The appearance of the dark-violet coloring confirmed the presence of inulin in both samples of the plant material studied. The content of fructosanes’ sum, determined spectrophotometrically, was found to be 2.31 % in the artichoke inflorescences collected inUkraine, and 2.77 % in those collected inFrance. The content of inulin determined by the means of GC chromato-mass-spectrometry comprised 119.30 mg/ml and 147.60 mg/ml respectively.Conclusions. The presence of inulin was confirmed using the Molisch’s test in both samples of artichoke inflorescences.The content of inulin in the artichoke inflorescence collected inUkraineandFrancewas determined by the means of spectrophotometric and GC chromato-mass-spectrometric methods of analysis, and comprised 2.31% and 119.30 mg/ml respectively in the artichoke inflorescences collected inUkraine, and 2.77% and 147.60 mg/ml respectively in the artichoke inflorescences collected inFrance. The results obtained allow considering the plant material of artichoke of Ukrainian and French origin interchangeable for the biologically active substances obtaining.
