Today scientific-practical bases of technologies of structured food products allow to create a principally new segment of products at the food market. Introduction of new principles of processing raw materials and ingredients, practical production methods allows to get food products with a new commodity and consumption form. There were studied technological aspects of producing structured food products of a round form on the example of the structured olive technology. Experimental studies and practical achievements in structuring (capsulation) allowed to create a product-analogue with quality and safety parameters, maximally approximated to the natural product. Principles of extruding formation with the synchronous combination of principles of external gel-creation allow to get a three-phase structure of a product (skin, internal content, filler), high organoleptic indices and target food value. At the same time the developed technology allows to involve in the technological process low-value parts of an olive-fruit and raw materials with decreased commodity-technological properties. In its turn, it allows to increase profitability indices and economic capacity of the new technology.

This article highlights the problems associated with the peculiarity of the classifi cation of food flavorings in accordance with the commodity nomenclature of foreign economic activity of the Eurasian Economic Union. As it is known, food flavorings are now becoming increasingly important: they are massively added to almost all food products on the modern food market to improve the properties of these products: to add, change or enhance taste (aroma). In this regard, there is a need to unify regulatory documents for their classification, which directly affects the determination of the reliable code of the EAEU Commodity Nomenclature of Foreign Economic Activity and the corresponding customs duty rate.

Quinoa is an unconventional agricultural crop for Russia, however, experiments on its cultivation have successfully completed in the Krasnodar Territory. A study of the possibility of using this cereal in Russian catering enterprises is under development. Quinoa cereal surpasses traditional Krasnodar rice in almost all indicators of nutritional and biological value: in the content of essential amino acids, polyunsaturated fatty acids, vitamins and minerals. Studies have shown that quinoa cereal differs from Krasnodar's rice in the increased content of all amino acids: essential – by 3.38, replaceable – by 3.38 g per 100 g of product. The following amino acids are present in the largest amount in quinoa: arginine (6.8%), lysine (6.2%), isoleucine (6.8%), aspartic acid (12.8%), glutamic acid (11.4%) , proline (6.9%), glycine (6.8%). The share of the daily rate of fat (84 g) for rice and quinoa is 0.2 and 2.3%, respectively. Quinoa cereal contains more vitamin A, thiamine, riboflavin, pantothenic acid, pyridoxine, folates, tocopherol, and betaine in rice. An increased content of iron, manganese and zinc was also noted. After analyzing the biological and physico-chemical parameters, we can conclude the feasibility of introducing new raw materials into the assortment of catering products, since quinoa cereal is not inferior to traditional rice cereal in its technological properties, it can improve the quality indicators of ready-made dishes. An analysis of the assortment showed that in the Yekaterinburg market in health food stores and online stores specializing in the delivery of healthy food products, the quinoa assortment is represented quite widely.

The paper analyzes the features of agri-food market functioning in Ukraine. Taking into account the importance of the agri-food sector in Ukraine, the authors develop the model for determining the optimal structure of production, processing and export of agricultural products. The purpose of the study was to define the optimal relation of agri-food industries in Ukraine that would provide a balance of production, processing, and export in Odessa, Mykolaiv, and Kherson regions of Ukraine while maintaining the maximum economic productivity of the regional agricultural system. The multi variant model based on the methodology of mathematical modelling in economics was developed to define the optimal structure of production, processing, and export of agricultural products. The model was developed based on the statistical data of Mykolaiv, Odessa, and Kherson regions of Ukraine. Using the model matrix, the authors analyze the statistical information as the input data to forecast the trends for the domestic agri-food market in Ukraine. The authors develop the system of variables and constraints indices that includes the sets of regions; agricultural and processed industries; planted areas in a corresponding region; numbers of cattle in the regions; processing and distribution of agricultural products; production of processed outcomes; agricultural and processed products sales in the domestic market; agricultural and processed products export; general needs in different kinds of resources; additional feed; production capacity; raw materials; general expenses on production and processing of agri-food products; general expenses of labor resources; general cost of final agri-food products in the domestic market; processed products costs in the domestic market; export agri-food products costs. Considering the developed system of 9 structural groups of constrains, the model deals with such coefficients and parameters as planted area, raw materials, production and sales volumes of agri-food products, and export volumes of these products. The paper allows to conclude that optimization of the parameters reflected in the model will allow to increase the productivity and export potential of agri-food industries in Ukraine. Although these industries are influenced by climate and political risks, the model can be used to optimize the relation of important components of Ukrainian agri-food market in order to improve its competitiveness and productivity. Thus, by optimizing the relation of planted area for growing cereals, industrial crops, vegetable crops and melon fields, the raw material base for processing industry and feed, numbers of cattle for regional needs, and the export potential for agricultural and processing industries higher productivity of Ukrainian agri-food industries can be achieved.

The aim is to analyze the state and development prospects of the regional agri-food market. Methods - economic and statistical, systematic approach, comparative analysis. Results - consumption expenditures of the population of the region and their structure, situation on livestock market are determined. A distinctive feature of livestock farms is their diversified nature. It was revealed that tendencies of food market functioning are influenced by the remoteness of rural areas from the places of sale of raw materials and agricultural products, agricultural machinery; underdevelopment of production and social infrastructure. The emphasis is made on the fact that in order to increase the volume of food and saturate regional market with food products, it is necessary to improve management of production and sale of food products. It is shown that one of the components of regional policy should be the development of a model of marketing management in food market, which defines it as a system of economic ties between subjects regarding the distribution of resources and meeting the needs of the region's population in food products. The further development of trade in food products in the context of growth in effective demand of the population, trends in the world economy and strengthening of the position of foreign trade due to cross-border cooperation has been justified. It is noted that there is a potential for growth in added value based on positive changes in production structure. Conclusions - the local role of the consumer market for products of the processing industry is determined by the nature of economic relations in the region, and its further development is possible only by optimizing the use of resources, increasing the information security of agricultural producers and applying marketing methods in management process.

The article raises the problem of ensuring metrological traceability of the measurement results of indicators of quality and nutritional value for food products and food raw materials: water (moisture), nitrogen (protein, crude protein), fat, ash and carbohydrates. The problem under consideration can be solved by applying reference materials of food composition, traceable to state primary measurement standards GET 173-2017 and GET 176-2019 and primary reference measurement procedures (PRMP), for attestation of measurement procedures and accuracy checking of measurement results. The article discusses the results of the PRMP development of mass fraction of fat, ash and carbohydrates in food products and food raw materials, as well as mass fraction of crude fat (oil content) in oil crops seeds and products based on them. The paper also presents metrological characteristics of reference materials of composition of dry dairy products, grain-milk dry porridges for nutrition of babies, grain dry porridges for nutrition of babies, egg powder, freeze-dried meat products, animal feed. The results of the work allow for building a chain of metrological traceability from GET 173-2017, GET 176-2019 and PRMP to routine measurement procedures, thereby ensuring the uniformity of measurements of nutritional value of food products.

Spreads are used widely for making the fast foods more amazing and tasty. Varieties and cross combinations of ingredients are used to make many flavours of fast foods. Different restaurants prepare their signature spreads for attracting people but this can cause opposite result if not prepared using high quality raw materials and proper hygienic conditions are not maintained. Current study was conducted on ten different types of spreads (pesto, cilantro, queso, tomato sauce, peanut butter, honey, mustard, cream cheese, chocolate sauce and butter) which are used by the local restaurants in Dhaka city, Bangladesh. Almost all the samples (nine out of ten) harbored total viable bacteria exceeding the standard limit. Four spread samples showed high fungal count (102 cfu/gm). Four samples showed to be positive (˃101/ml recommended acceptable count) for Escherichia coli and Klebsiella spp. which indicates that these spread cannot be recommended for public consumption. Among all the samples examined, only chocolate sauce showed acceptable result without the presence of coliforms, Staphylococcus spp. and Pseudomonas spp. This finding suggests proper maintenance of sanitation in spread preparation and selling area. The indicators that determine the change in the macroeconomic situation in the economy of Azerbaijan in 2010–2017, as well as the conditions for increasing the effectiveness of state intervention in solving economic problems are analyzed. It is noted that it is not the size of the public sector that becomes important, but its qualitative component (management and redistribution of resources and revenues, coordination of government intervention in economic relations). The main reasons limiting economic growth are identified, and the mechanisms for overcoming them are disclosed, since economic growth is of particular importance in the transformational period of state development. It substantiates the assertion that the forms and methods of state regulation should be the result of a reasonable combination of the private and public sectors of the economy to more effectively achieve the goal of economic development of the country and increase the welfare of the population. To this end, it is advisable to limit the actions of market forces and find a rational ratio of market and government measures that stimulate economic growth and development.It is shown that in the near future the development of the economy of Azerbaijan should be focused on the transition to the integration of various models of economic transformation; at the same time, “attraction of investments” should be carried out by methods of stimulating consumption, and the concept of a socially oriented economy, which the state also implements, should prevail, thereby ensuring social protection of the population and at the same time developing market relations. Disproportions in regional and sectoral development are also noted, which are the result of an ineffective distribution of goods produced, inadequate investment in human capital, a low level of coordination and stimulation of economic growth and development.
