Information on phytochemicals in the cob and husk of field corn is important for the use of corn waste in the production of value-added corn products. The objectives of this study were to evaluate the variation in monomeric anthocyanin content (MAC), total phenolic content (TPC), and antioxidant activity, as determined by 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical scavenging activity and Trolox equivalent antioxidant capacity (TEAC) in 53 purple field corn genotypes, and to study the correlations of these traits with color parameters. Fifty-three corn genotypes were planted in a randomized complete block design with three replications in two locations in the dry season of 2015/2016. The effects of genotype, location, and the interaction between genotype and location were significant for most characters. Genotypic variation contributed to a large portion of the total variance for all traits, accounting for 63.9–86.9%. Corn genotypes were classified into six groups based on MAC, TPC, and antioxidant activity determined by the DPPH and the TEAC methods. The highest MAC, TPC, and antioxidant activity were obtained in TB/KND//PF3 and TB/KND//PF8 for husk, and only TB/KND//PF8 for cob. They should be used as parental lines to develop corn varieties with high phytochemicals. Chroma (C*) and hue (H°) of color parameters could potentially be used as an indirect selection criterion for improving MAC, TPC, and antioxidant activity in cob. The information is useful for the improvement of phytochemicals in cob and husk of field corn.

Improvement of anthocyanin levels in husks and cobs of field corn may add economic value to corn coproducts in commercial production. This study aimed to evaluate the response to four cycles of modified mass selection (MMS) for yield, agronomic traits, total anthocyanin yield (TAY), total anthocyanin content (TAC), total phenolic content (TPC) and antioxidant activity determined by 2,2-diphenyl-1-picrylhydrazyl free radical scavenging activity assay (DPPH) and trolox equivalent antioxidant capacity assay (TEAC) in corn husk and cob of five purple field corn populations. The improved populations and check varieties were evaluated at two locations for two seasons in 2017/2018. Selection cycle contributed to a large portion of the total variations for TAC, TPC, DPPH and TEAC in corn husk and cob. All tested populations showed progress for days to anthesis, TAY, TAC, TPC, DPPH and TEAC across four cycles of selection. Lack of significant correlation between agronomic traits and anthocyanin concentrations suggested the independent segregation of these traits. MMS was successfully used to develop field corn populations with improved anthocyanin, antioxidant activities and early flowering without significant yield loss. The populations with the highest selection gains for anthocyanin in husk and cob were identified. Visual selection for dark purple husks and cobs boosted anthocyanin levels and antioxidant activity in selected populations.

Manufacturing beer with a high biological value requires identifying new methods for increasing the health-enhancing compounds level. The aim of this study was to increase the biological value of beer by adding antioxidant-rich eggplant (Solanum melongena L.) peel extract (EPE). The total phenolic content (TPC), total flavonoid content (TFC), and total monomeric anthocyanin content (TMA) were determined. Moreover, the antioxidant activity was evaluated by different radical scavenging assays. The addition of different levels of EPE resulted in a significant increase of TPC and TFC of beer samples from 0.426 to 0.631 mg GAE/mL, and from 0.065 to 0.171 mg CE/mL, respectively. The EPE-supplemented beer samples developed a reddish color because of the presence of anthocyanin pigments. The TMA content of beer varied from 0.011 to 0.083 mg D3G/mL with the level of added EPE. The HPLC analysis indicated that the anthocyanins prevailing in the eggplant peels were delphinidin-3-rutinoside, delphininidin-3-glucoside and delphinidin-3-rutinoside-5-glucoside. The radical scavenging assays indicated a linear increase of the antioxidant activity following EPE addition, without altering the physicochemical parameters of the beer. These results are promising for using the EPE as a functional ingredient for beer production.

Corn tassel is a by-product from hybrid corn seed production and a new source of phytochemicals including compounds with antioxidant activity. Four tassel development stages were evaluated in eight commercial corn varieties. Corn varieties and tassel developmental stages showed significant variations (P0.01) for all parameters. Total phenolic content and antioxidant activity were highest in field corn. KGW1, a purple waxy variety, had the highest anthocyanin content and carotenoid content at tassel development stages at 50% and 75% of pollen shed, whereas the tassel developmental stages at the 1st day of pollen shed and 50% of pollen shed had the highest of anthocyanin yield and carotenoid yield. The most suitable time for tassel harvest should be between the 1st day of pollen shed to 50% of pollen shed. Phytochemicals and antioxidants that are extracted from corn tassel can be used as a functional food supplement, natural pharmaceuticals and cosmetic products.

Corn tassel is a byproduct from hybrid corn seed production. It is also a new source of phytochemicals, including compounds with antioxidant activity. The aim of this study was to evaluate the phytochemical content and antioxidant potential of different corn tassel development stages. A 4 × 8 factorial experiment consisting of four tassel development stages and eight commercial corn varieties was carried out with a randomized complete block design with three replications. Data were collected for tassel weight, concentration and yield of total phenolics, total anthocyanin concentration, total carotenoid concentration, and antioxidant activity, as determined by the 2,2-diphenyl-1-picrylhydrazyl(DPPH•) radical scavenging assay and Trolox equivalent antioxidant capacity(TEAC) assays. Corn varieties and tassel developmental stages showed significant variations (p ≤ 0.01) in all parameters. P4546 presented the best variety for the total phenolic content (15.8 mg GAE/g DW sample), whereas Hibrix3 had the highest phenolic yield (6.78 kg GAE/ha). KGW1, a purple waxy variety, had the highest anthocyanin content (1528.0 µg CGE/g DW sample), anthocyanin yield (753.0 g CGE/ha), carotenoid content (74.9 µg/g DW sample), and carotenoid yield (53.7 g/ha). P4546 had the highest antioxidant activity: 92.4% for DPPH• and 76.1 µmol TE/g DW sample for the TEAC assay, respectively. The most appropriate time for tassel harvest to ensure the production of phytochemicals with high antioxidant activity should be from the 1st day of pollen shed until 50% of pollen shed. Phytochemicals and antioxidants that are extracted from corn tassel can be used as a functional food supplement, as natural pharmaceuticals, and in cosmetic products.

The green bean is an important crop worldwide, because it is rich in protein, dietary fiber, vitamins, and minerals, as well as bioactive compounds that provide it with important functional properties; however, the composition of many landraces is still unknown. The purpose of this project was to characterize Phaselus vulgaris and coccineus L. landrace green beans on pH, titratable acidity, total soluble solids, total sugars, color parameters, total phenols, monomeric anthocyanins, and in vitro antioxidant activity (DPPH and FRAP). Regarding the content of total sugars, differences were registered between both species, as opposed to results observed in total soluble solids. Color parameters showed higher reddish tones for P. vulgaris landraces, though P. coccineus had a higher total phenolic content, especially the reddish landraces, which correlated directly to a higher antioxidant activity by DPPH and FRAP. In the protein content, the species P. vulgaris registered the highest content. These results could contribute to a greater use and even promote the genetic improvement of the outstanding pods that serve as one of the main food products in rural regions for higher benefits.

The brewing industry produces high quantities of solid and liquid waste, causing disposal issues. Brewing spent grains (BSGs) and brewing spent hop (BSH) are important by-products of the brewing industry and possess a high-value chemical composition. In this study, BSG and BSH, obtained from the production process of two different types of ale beer (Imperial red and Belgian strong beer) were characterized in terms of valuable components, including proteins, carbohydrates, fat, dietary fiber, β-glucans, arabinoxylans, polyphenols, and phenolic acids, and antioxidant activity (Ferric Reducing Antioxidant Power Assay (FRAP), 2,2-Diphenyl-1-picrylhydrazyl (DPPH) and 2,2′-Azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS)). Significant concentrations of total polyphenols were observed in both BSH and BSG samples (average of about 10 mg GAE/g of dry mass); however, about 1.5-fold higher levels were detected in by-products of Belgian strong ale beer compared with Imperial red. Free and bound phenolic acids were quantified using a validated chromatographic method. A much higher level of total phenolic acids (TPA) (about 16-fold higher) was found in BSG samples compared with BSHs. Finally, their antioxidant potential was verified. By-products of Belgian strong ale beer, both BSG and BSH, showed significantly higher antioxidative capacity (about 1.5-fold lower inhibitory concentration (IC50) values) compared with spent grains and hop from the brewing of Imperial red ale. In summary, BSG and BSH may be considered rich sources of protein, carbohydrates, fiber, and antioxidant compounds (polyphenols), and have the potential to be upcycled by transformation into value-added products.

Currently, there have been lots of interests in phytochemicals as bioactive components. The roles of fruit, vegetables, and red pigments in preventing diseases have been partly accredited to the antioxidant properties of their constituent polyphenols, flavonoid, anthocyanins, and etc. Biochemistry parameters including the relative levels of antioxidant activity, total phenolic content, total flavonoid, total anthocyanin, soluble and insoluble sugar content of Ribes khorasanicum, have been calculated in this project. The total anthocyanin content of the investigated Ribes khorasanicum measured to be 62.9 mg/g in dry weight, while displaying high levels when compared to other components, which indicates that the anthocyanin content was the predominant antioxidant components in the investigated plant. This particular plant has the potential to serve as the important source of antioxidant that can be utilized in different biological and medical applications.

Commercial blueberry production has been a viable industry throughout the world for 95 years; because of blueberry is a good source of antioxidant. Blueberries are especially rich in anthocyanin, a flavonoid with potent antioxidant capacity. The aim of this study was to compare the phenolic quantities, antioxidant activities, anthocyanin, sugar and phenolic compounds of blueberries produced in Turkey with those of similar blueberry varieties produced around the world. As a result of the conducted analysis, the total phenolic content (TPC) amount found in the berries was 77.26-215.12 mg GAE/100 g, the total flavonoid content (TFC) was 30.44-91.69 mg QE/100 g and the total anthocyanin content (TAC) was 43.03-295.06 mg c3-GE/100 g. Examining the antioxidant activities of the berries, DPPH between 1.10-5.65 mg/ml, FRAP between 454.93-36832.96 µmol troloks/100 g, β-Carotene between 40.66-86.48%. It was determined that the natural berries contained much more phenolic compounds and higher antioxidant activity than that of the cultivars The result of HPLC analysis, chlorogenic acid is determined to be the dominant compound in all berries. Furthermore, fructose and glucose are found in all fruits in different quantities while sucrose is found in certain varieties of berries as well. At the end of the performed study the data indicate that wild and cultivars of blueberries are rich sources of antioxidants for local as well international industries importing this fruit for food processing and enormous products.

This study compared the mineral content and bioactive properties of flowers and fruit coming from wild elderberry plants with those of flowers and fruit harvested from elderberry cultivars grown in an orchard. Elderberry fruit and flowers were analyzed for the content of selected minerals, phenolic compounds, and anthocyanins, as well as for antioxidant activity. Mineral content was determined by the atomic absorption spectrometry method, while antioxidant activity and the content of polyphenols and anthocyanins were determined by spectrophotometric methods. Flowers were found to contain more total ash and much higher content of most of minerals, except magnesium which was present in high concentrations in fruit. Fruit showed significantly higher antioxidant activity than flowers, whereas the total phenolic content varied depending on the growing location or cultivar. The material obtained from selected cultivars growing in an orchard had higher antioxidant activity and polyphenol and anthocyanin content than the material obtained from wild plants. Fruit of the ”Haschberg” cultivar and flowers of the ”Sampo” cultivar had the best bioactive properties of the studied samples.

Plant extracts are a rich source of natural compounds with antimicrobial properties, which are able to prevent, at some extent, the growth of foodborne pathogens. The aim of this study was to investigate the potential of polyphenolic extracts from cladodes of Opuntia ficus-indica (L.) Mill. to inhibit the growth of some enterobacteria and the biofilm formation by Staphylococcus aureus. Opuntia ficus-indica cladodes at two stages of development were analysed for total phenolic content and antioxidant activity by Oxygen Radical Absorbance Capacity (ORAC) and Trolox equivalent antioxidant capacity (TEAC) (in vitro assays) and by cellular antioxidant activity in red blood cells (CAA-RBC) (ex vivo assay). The Liquid Chromatography Time-of-Flight Mass Spectrometry (LC/MS–TOF) analysis of the polyphenolic extracts revealed high levels of piscidic acid, eucomic acid, isorhamnetin derivatives and rutin, particularly in the immature cladode extracts. Opuntia cladodes extracts showed a remarkable antioxidant activity (in vitro and ex vivo), a selective inhibition of the growth of Gram-positive bacteria, and an inhibition of Staphylococcus aureus biofilm formation. Our results suggest and confirm that Opuntia ficus-indica cladode extracts could be employed as functional food, due to the high polyphenolic content and antioxidant capacity, and used as natural additive for food process control and food safety.
