Influence of different level of Camelina presscake on the quality composition of broiler chickens muscle tissue

In Russian market of meat products production of poultry meat occupies more than 47 %. At the same time, the share of poultry products in the total volume of animal protein consumed is 42,1 %, including poultry meat – 27,8 %, eggs – 14,3 %. The quality of the resulting meat is significantly influenced by feeding (feed ingredients, biologically active additives). The purpose of the investigations was to study the influence of compound feed containing Camelina presscake on the chemical composition of broiler muscle tissue. The investigations have been carried out on the basis of the Siberian Scientific and Research Institute of Poultry Farming – a branch of the Federal State Budgetary Scientific Institution “Omsk Agricultural Research Center” (Morozovka village, Omsk region) on broiler chickens of the cross Sibiryak-2. The results of the investigations on the influence of compound feed with Camelina presscake obtained from seeds of the Siberian selection on the qualitative composition of the muscle tissue of broilers have been presented in the article. The research has been conducted on four groups of broiler chickens from 1 to 42 days of age, in each group there were 100 heads. Camelina presscake was introduced instead of another traditional protein feed to the 1st experimental group – 12,5 %, the 2nd – 15 % and the 3rd experimental group – 20 % with the preservation of the total energy and protein nutrition of the compound feed. It has been found that in the muscles of broiler chickens of the experimental groups the protein content was higher by 0,06–0,73 abs.%, fat by 0,03–0,57 abs.%, energy nutrition higher by 0,03–0,29 MJ/kg. When comparing the amount of macro- and microelements in muscle tissue, the advantage has been noted for most of the studied indicators of poultry of experimental groups that received compound feed with Camelina presscake.

It established that when receiving a mixed feed of own production using feed raw materials grown on a farm without the use of pesticides, a statistically significant decrease in potentially dangerous substances for animal health is recorded. Compared with factory feed, it has reduced the content of pesticides by 14 times, and mercury and arsenic by 24 times, cadmium by five times, and lead by ten times. The results of the study of economic indicators of growing Hubbard RedBro cross broiler chickens, as well as the chemical composition and quality of carcasses, indicated that there was no significant difference between the floor and cell conditions of keeping. Still, the use of a diet based on eco-feeds contributed to a statistically significant decrease in the concentration of toxic metals in the muscles of the poultry of the experimental groups. As a result, it found that the use of the studied compound feed in the diets of broiler chickens increased the indicators of Biosafety and ensured the production of environmentally safe ("organic") poultry meat products.

This study was carried out to assess the quality of some RTE (ready to eat) chicken meat products collected from different poultry meat processing plants in Menofia and Gharbia governorate. a A total of 60 commercially produced RTE poultry products such as chicken ham, chicken shawarma, chicken with herps, smoked turkey and turkey smoked lobes (12 each) were collected from supermarkets and examined for sensory, deterioration criteria and bacteriological quality. The results revealed that the sensory panel scores of all examined RTE poultry meat products samples were generally low especially in chicken with herps, chicken ham and smoked turkey RTE poultry meat products. Moreover, pH values of most of the examined samples were relatively alkaline whereas the lowest value was recorded in smoked turkey samples and highest value was observed in chicken with herps samples. In addition, higher thiobarbituric acid (smoked turkey) and slightly increases of total volatile basic nitrogen values (chicken with herps) were recorded in most of the examined samples. All investigated bacterial counts were significantly high in all examined RTE poultry meat products samples. Staph. aureus was isolated from chicken ham and E. coli strains were isolated from chicken shawarma, smoked turkey and turkey smoked lobes. However, E. coli O157:H7 and salmonella strains failed to be isolated from all the examined samples. It could be concluded that all the examined RTE poultry meat products were deteriorated in terms of sensory, chemical and bacteriological terms and exceeded the limit described by E.S. (3493/2005) for cooked poultry meat products. In addition, these samples were probably produced and prepared under bad hygienic measures which could be responsible for lowering their quality and reduce shelf life.

In order to increase the meat productivity of poultry scientists around the all world are working to improve the breeding traits and technologies of housing and feeding. However, the efficiency of poultry meat production on an industrial basis depends not only on the strengthening and inheritance of breed qualities, but also on a complete and balanced feeding, including the use of new feed additives. All this generally affects the duration of rearing, the average daily and absolute live weight gains, the biological value and nutritional value of poultry meat produced in industrial conditions. The purpose of the work was to study the effect of the amino acid complex and silicon dioxide on the productivity and quality of broiler chicken meat. The paper scientifi cally substantiates and experimentally proves the effectiveness of using a rational dose of ultrafine silicon dioxide (300 mg/kg of feed) and the complex of amino acids (arginine – 7 g/kg, lysine – 6 g/kg, methionine – 2 g/kg) in the rearing of broiler chickens. Data on the positive influence of the studied factor on the consumption, digestibility and use of feed nutrients, as well as meat productivity and quality of broiler chicken meat have been obtained. The dependence of meat productivity and quality of chicken meat on physiological and biochemical parameters has been proved. Analysis of the results of the production experiment has been shown that the livability of poultry in the experimental group was higher than the control group by 1,4 %. This made it possible to reduce feed consumption to 100 g/head, and feed consumption per 1 kg of chicken growth in the experimental group by 9,2 %. Activation of metabolic processes of the body of broiler chickens of the experimental group contributed to the increase in their live weight, which increased the weight of the gutted carcass, the yield of meat by 13,8 %, and meat with off al for sale by 18,0 %. The efficiency of the complex application of amino acids and silicon dioxide in the production of poultry meat is economically justified.

Abstract. The purpose of the research is to study the effect of a probiotic supplement on the productivity of broiler chickens of the fast-growing Cobb 500 cross and the quality of poultry meat. Research methods. To study the parameters of meat productivity of broiler chickens, slaughter and anatomical cutting of poultry carcasses were carried out, the morphological composition of individual parts of carcasses was evaluated, the chemical composition of poultry meat was analyzed by determining moisture (GOST 9793-74), fat (GOST 23042-86), protein (GOST 25011-81), the level of essential amino acids (capillary electrophoresis method), organoleptic parameters of poultry meat and broth were studied. Research results. It was found that the introduction of a fodder additive into the poultry diet contributes to the improvement of meat characteristics of the Cobb 500 cross, improves the quality properties of poultry meat, as well as the bio-value of poultry meat products. When studying meat productivity, it was revealed that in experimental groups the mass of the gutted carcass was higher than in the control by 1.45.3 %, the slaughter yield was higher by 0.31.4 %, the mass of all breast tissues of broiler chickens of experimental groups exceeded this indicator in the control by 1.78.2 %, the mass of all femoral tissues was higher by 2.07.8 %, and the mass of all shin tissues by 1.56.8 %. The results of the chemical analysis of muscles of broiler chickens showed that the protein content was higher in experimental groups compared to the control group by 0.180.60 %, with a decrease in fat by 0.060.16 %, and there was also a decrease in meat quality index in all experimental groups by 4.510.5 %. A positive statistically significant difference was revealed when analyzing the amino acid score in the muscles of birds of experimental groups compared with the control group. The organoleptic evaluation of boiled broiler chicken meat and broth from them in experimental groups showed superiority over the poultry meat of the control group and averaged 4.9 versus 4.8 points. Scientific novelty. For the first time, the meat productivity and meat quality of broiler chickens were evaluated when using a microbial additive based on autochthonous microorganisms of the genus Lactobacillus isolated from the contents of the gastrointestinal tract of wild quails in their diet.

В статье приведён анализ влияния препарата Абиопептид на показатели качества и безопасности мяса цыплятбройлеров кросса Кобб500. Абиопептид это биологически активный препарат, представляющий собой панкреатический гидролизат соевого белка средней степени расщепления. В состав данного препарата входят 18 аминокислот (валин, изолейцин, лейцин, фенилаланин, аланин, лизин, метионин, треонин, триптофан, аргинин, аспарагиновая кислота, гистидин, глицин, глутаминовая кислота, пролин, серин, тирозин, цистин) и короткие пептиды. Содержание пептидов составляет 7080, аминокислот 2030. Содержание триптофана в 100 мл 25го раствораконцентрата не менее 20 мг. Объекты исследования бройлеры кросса Кобб500, выращиваемые на птицефабрике, из которых были сформированы 2 группы, опытная и контрольная, по 35 голов. Опытной группе выпаивался препарат из расчета 1 мл/кг живой массы птицы. Хозяйству была предложена индивидуальная схема выпаивания препарата с пятисуточного возраста: через день в питьевую воду вводили препарат до 35 суток выращивания цыплятбройлеров. Продукты убоя (тушка и внутренние органы) оценивались в соответствии с требованиями нормативной документации по органолептическим показателям, проводилась товароведческая оценка тушек, были установлены физикохимические показатели мяса, микробиологические показатели, токсичность, биологическая ценность мяса, также были отобраны пробы для гистологического исследования. По результатам проведенных органолептических, физикохимических, микробиологических и гистологических исследований отрицательного влияния препарата Абиопептид на качество получаемой продукции цыплятбройлеров не установлено. Также были сделаны выводы, что применение препарата Абиопептид в дозе 1 мл/кг живой массы цыплятбройлеров способствовало увеличению живой массы на 6 по отношению к контролю.The article presents an analysis of the effect of the drug Abiopeptide on the quality and safety indicators of broiler chicken meat of the Cross Cobb500. Abiopeptide is a biologically active drug, which is a pancreatic hydrolyzate of soy protein of the average degree of cleavage. The preparation contains 18 amino acids (valine, isoleucine, leucine, lysine, methionine, threonine, tryptophan, phenylalanine, alanine, arginine, aspartic acid, histidine, glycine, glutamic acid, proline, serine, tyrosine, cystine) and short peptides. The amino acid content is 2030, peptides 7080. The content of tryptophan in 100 ml of 25 solutionconcentrate is not less than 20 mg. The objects of the research were broilers of the crosscountry of Cobb500, grown at the poultry farm, of which 2 groups of 35 heads were formed. The experimental group was given a preparation at the rate of 1 ml / kg of live weight of the bird. The farm was offered an individual scheme of feeding the drug from fiveday to 35 days of broiler chickens. Slaughter products (carcass and internal organs) were evaluated in accordance with the requirements of regulatory documentation for organoleptic indicators, carcasses were assessed, the physicochemical indicators of meat, microbiological indicators, toxicity, biological value of meat were determined, and samples for histological examination were also taken. According to the results of organoleptic, physicochemical, microbiological, and histological studies, the negative effect of the drug Abiopeptide on the quality of the production of broiler chickens has not been established. It was also concluded that the use of Abiopeptide in a dose of 1 ml / kg of live weight of broiler chickens contributed to an increase in live weight by 6 relative to the control.

The study aimed to assess the effect of herbal additions with antioxidant properties (pepper, thyme and oregano) on the microbiological and oxidative stability as well as the sensory quality of minced poultry meat. Meatballs treatments without additives and treatments with the addition of three types of spices in two forms—dry spices and industrial extracts were examined. Popular seasoning additives of oregano (Origanum vulgare), thyme (Thymus vulgaris) and black pepper (Piper nigrum) at 0.3% of dry herbal or 0.003% as industrial extract were added to minced meat. The microbiological, chemical and sensory tests were performed at specified times and storage temperature. Based on the studied criteria, products maintained constant and adequate quality by up to 10 days while stored in 4 °C. In the case of all tested samples, the overall sensory quality began to deteriorate after 10 days of storage. The preservative role of herbs and extracts in meat products during processing and storage was observed. Oregano and black pepper in both forms maintained good microbial quality and showed their inhibitory effects on the growth of psychrotrophic bacteria. It was observed that dried herbs revealed a stronger antioxidant effect than additives in the form of extracts. The studied dried herbs played an antioxidant, antimicrobial and preservative role in meat products during processing and storage.

In order to increase the meat productivity of broiler chickens, increase production volumes and reduce the prime-cost of poultry products, it is necessary not only to ensure balanced feeding and compliance with production technology but also to include in the poultry diet non-traditional additives, biologically active substances that contribute to the normalization of metabolic processes and improve the digestibility of feed nutrients. One of these dietary additives is Betulin extracted from birch bark, which has antioxidant and immunomodulatory properties. In this regard, the purpose of the research was to study the influence of compound feed with the introduction of 2 % feed additive based on a synthetic microspherical nanoporous carbon carrier containing biologically active Betulin in its composition on the productivity of broilers. The results of studies on broiler chickens using compound feed with 2 % feed additive have been presented in the article. It has been found that the feed consumption per 1 kg of live weight gain in poultry of the experimental group have been lower by 9,5 % due to better absorption of nutrients, the live weight of broiler chickens of the experimental group at the age of 42 days was 2625,6 g and it was higher than the control group by 3,68 %. The digestibility of crude protein and fat reached 92,73 and 88,03 %, which exceeded the control group by 1,03 and 3,03 abs.%, respectively. It has been found that the use of compound feed with 2 % of the feed additive with the biologically active substance is of practical importance in connection with the increase in the productivity of broilers and the level of profitability of meat production by 8,2 abs.%.

The reliability of the results obtained in scientific and economic experiments on the study of the effectiveness of the use of various feed components, including biologically active substances in the rearing of broilers needs to be confi rmed in production conditions. The purpose of the research was to study the joint use of enzyme drugs and lecithin in the rearing of broiler chickens. The results of production experiment on the study of the effectiveness of the joint inclusion of enzyme drugs Sunzyme and Sunfyse 5000 as well as lecithin in the diet of broiler chickens of the cross Ross-308 have been presented in the article. Production tests have been carried out under the conditions of the breeding farm “Achkhoy– Martanovsky” in the Chechen Republic. The duration of the experiment was 45 days. For research on the principle of analog groups two groups have been formed: a control group and an experimental group of 1000 heads in each. The broilers of the control group have been fed compound feed prepared in accordance with the growing period and consisting mainly of grain components of local production. The broilers of the experimental group have been fed the same compound feed, but with the addition of two enzyme drugs Sanzyme and Sanfyse 5000 (100 g/t of feed) as well as lecithin (10 g/kg of feed). The results of the production experiment fully confi rmed the data obtained in the scientific and economic experiment. The positive effect of the joint use of the studied enzyme drugs and lecithin has been manifested in all the studied productive traits. In particular, the increase in live weight of broilers increased by 12,1 %, slaughter yield by 3,5 %, the yield of carcasses of the 1st category by 3,0 %. The main economic indicators also found their confirmation: feed consumption per unit of growth decreased by 11,7 %, additional profit was received in the amount of 27308,2 rubles, the level of profitability of broiler rearing increased by 18,4 %.
