To date, studies on the role of Balinese women in the tourism industry have looked mainly at women as ordinary workers or professionals. In fact, Balinese women operate as culinary entrepreneurs who have not only been successful in introducing Balinese cuisine to the world of tourism but have opened up job opportunities for men and women alike. The data presented in this article was collected through observation of four leading Balinese women who run successful local culinary outlets or restaurants offering local dishes, and is complemented by interviews and other published sources relating to their business activities. The four pioneering women surveyed are Men Tempeh of Gilimanuk (West Bali) serving chicken betutu, the suckling pig restaurant manager Ibu Oka in Ubud, the owner of Made’s Warung Ni Made Masih, and the catering company owner Ibu Warti Buleleng, based in Denpasar. This article concludes that these four Balinese culinary heroines or srikandi have successfully managed to preserve and promote Balinese dishes to the world of tourism while contributing to the sustainable development of Balinese tourism by providing opportunities for tourists to experience local cuisine.

Meanwhile we can note very superficial and simplified understanding of the concept of sustainable development in tourism, when they simply proclaim the necessity of taking into account natural, social limitations, and interests of the local economy, but at the same time, the Russian researchers and teachers do not have enough awareness of all the possible refractions of this problem. Passed at the 22nd of September 2016 in RSUTS scientific-practical seminar «Sustainable rural tourism in Russia» was drafted to help resolve the identified problems. Leading international and Russian experts in the field of sustainable tourism development gave the examples of their own researches which demonstrate the breadth and multi-dimensionality of sustainability in tourism. These and other aspects of sustainable tourism development were the subject of extensive discussion at the scientific-practical seminar, which resulted in a more complete understanding of the paradigm of sustainability in the current realities of the Russian tourism industry. The article presents views, concepts and elements of academic debate, which took place during the seminar from representatives of five countries: Russia, Norway, Australia, Sweden and Iceland. The purpose of this publication consisted in the systematization of the academic content of the reports and scientific messages, and the explanation of how they can contribute to strengthening the concept of sustainable tourism as a comprehensive and productive paradigm in tourism research and education-conceptual approach.

The journey of Collaboration for Sustainable Tourism Development has aimed high by keeping heads in the clouds and feet on the ground, to visit critical and optimistic possibilities for what sustainable tourism development was, is, and may become. This chapter gives substance to the potential of collaboration for sustainable tourism development by indicating the significance of imagina- tion. Envisaging tourism futures implies that tourism researchers, students, practitioners, policy makers – all stakeholders – engender other kinds of relationships, interactions and conversations to imagine what could be. It is a feasible process of designing with as an ethical, ongoing involvement of others through a respect for their ways of being in the world, their sense of values and aspirations for better tourism futures in a better world. In this chapter, we do so by leveraging the variations of interpretation represented in the making of this book and the previous fourteen chapters. This book encompasses philosophical, conceptual and empirical research to expose conditions, empirical circumstances and underpinning values. The contributions meet in the application of the concept of collaboration to uncover what sustainable tourism development was, and presently is, and signposts how unknown futures can be imagined. Imagining collaborative tourism futures is predicated on epistemological and mutually shared responsibilities. These obligations cannot alone be captured by academics engaged in a persistent quest for knowledge, critical dialogue and thinking tourism into the future. Responsibilities are intimately connected to a holistic understanding of collaborative engagements with the wider world in shaping desirable futures. Imaginations of collaborative tourism futures are a response to current limitations of sustainable tourism development, where we charter the contours of tourism futures to tackle wider societal problems.
