Genotypic and environmental variation in grain, flour, dough and bread-making characteristics of Western Canadian Spring Wheat

Wheat (Triticum aestivum L.) grain, flour, dough and bread quality characteristics are strongly influencedby growing-season weather conditions. Understanding the impact of genotype, environment, and their interactions on Canadian wheat quality is important for Canada to maintain its high standard for delivery of consistent quality wheat to domestic and international customers. The effects of genotype, environment and genotype by environment (G × E) interaction on numerous grain, flour, dough and bread-making characteristics were assessed. The Canadian Western Red Spring (CWRS) cultivars were AC Barrie, Superb, AC Elsa, and Neepawa; the Canadian Prairie Spring (CPS-white) cultivar was AC Vista; and the Canadian Western Hard White Spring (CWHWS) cultivar was Snowbird. These genotypes were grown at five locations across the Canadian prairies in 2 yr to provide a total of 7 site-years of milling quality wheat for analysis. Genotype, environment and their interactions had significant effects on most parameters tested. The relative magnitude of the environmental contribution to wheat quality variance, depending on the trait, was considerably larger (14 to 89%) than the variance contribution of either genotype (0 to 33%) or G × E interaction (0 to 17%). The greatest environmental contribution to total variance (83%) was, on average, for grain traits including yield. Genotypic contribution to variation was greatest (~15%) for flour characteristics. The G × E interaction contributed relatively little to total variance and was comparable for flour, dough and bread properties (~6.5% on average). This large difference in variance between environmental and genotypic influences clearly demonstrates the importance of growing-season weather impacts on yield and quality for adapted bread wheat genotypes and strategies to mitigate these effects are discussed. Quinoa is a trend and a promising functional food ingredient. Following previous research into the impact of incorporating quinoa flour on the polyphenol content and antioxidant activity of bread, this study aimed to bridge an existing gap about the qualitative and quantitative polyphenolic profiles of such bread. The UPLC-MS/MS analysis showed that quinoa bread, made with 25% quinoa flour of a black variety, presented more compounds than refined-wheat bread, and levels were remarkably higher in many cases. Consequently, the quinoa bread presented clearly improved polyphenolic content than the wheat bread (12.8-fold higher considering the sum of extractable and hydrolyzable polyphenols), as supported by greater antioxidant activity (around 3-fold). The predominant compounds in the extractable fraction of quinoa bread were p-hydroxybenzoic acid and quercetin (50- and 64-fold higher than in wheat bread, respectively) and rutin (not detected in wheat bread), while ferulic and sinapic acids were the most abundant compounds in the hydrolyzable fraction (7.6- and 13-fold higher than in wheat bread, respectively). The bread-making impact was estimated, and a different behavior for phenolic acids and flavonoids was observed. Extractable phenolic acids were the compounds that decreased the most; only 2 of 12 compounds were enhanced (p-hydroxybenozoic and rosmarinic acid with increments of 64% and 435%, respectively). Flavonoids were generally less affected, and their concentrations considerably rose after the bread-making process (7 of the 13 compounds were enhanced in the extractable fraction) with especially noticeably increases in some cases; e.g., apigenin (876%), kaempferol (1304%), luteolin (580%) and quercetin (4762%). Increments in some extractable flavonoids might be explained as a consequence of the release of the corresponding hydrolyzable forms. The present study provides new information on the suitability of quinoa-containing bread as a suitable vehicle to enhance polyphenols intake and, hence, the antioxidant activity in daily diets.

This study evaluated the contamination of water samples from Cadeia and Feitoria rivers (Rio Grande do Sul State, Brazil), affected by tannery activities. From July 1999 to April 2000, four sampling campaigns were performed at ten sites in order to evaluate selected metals and ancillary physicochemical variables. Sample preservation and analyses followed recommendations of the Standard Methods. Factor analysis was used to obtain statistical indexes representing the contamination degree of waters evaluated. The information was summarized in two principal components. The first, which accounted for 50% of the total variance, was associated to a tannery contribution and generated a contamination index. Total, Suspended and Dissolved Solids, Dissolved Oxygen, Conductivity, Chromium, Manganese, Copper, Nickel, Sodium, Calcium, Potassium, and Magnesium were the well-correlated variables with this first component. The water quality decreased from headwaters up to mouth along both streams, but the most contaminated sites were located at the lower reach of Feitoria river (Ivoti and Lindolfo Collor cities), where tanneries are concentrated. After the entrainment of Feitoria waters (São Sebastião do Caí municipality), Cadeia river also presented an increased contamination degree. The application of statistical randomization tests highlighted these same sites as significantly distinct from the others. Water contamination also showed association to flow variations, and a poorer water quality was observed during the dry period (January). The second component, in which Iron, Aluminum, and Suspended Solids were the relevant variables, was loaded with 15% of the total variance. It was linked to natural events, since higher factor scores in this component were obtained during a period of increased water discharge (October), which caused resuspension and entrainment of solid material to the rivers bed. As a final result of the study, sampling stations were classified according to the contamination degree, and graphically represented on a basin map, which synthesized the environmental diagnosis.

Recycling of by-products from the food industry has become a central part of research to help create a more sustainable future. Brewers’ spent grain is one of the main side-streams of the brewing industry, rich in protein and fibre. Its inclusion in bread, however, has been challenging and requires additional processing. Fermentation represents a promising tool to elevate ingredient functionality and improve bread quality. Wheat bread was fortified with spray-dried brewers’ spent grain (BSG) and fermented brewers’ spent grain (FBSG) at two addition levels to achieve “source of fibre” and “high in fibre” claims according to EU regulations. The impact of BSG and FBSG on bread dough, final bread quality and nutritional value was investigated and compared to baker’s flour (BF) and wholemeal flour (WMF) breads. The inclusion of BSG and FBSG resulted in a stronger and faster gluten development; reduced starch pasting capacity; and increased dough resistance/stiffness. However, fermentation improved bread characteristics resulting in increased specific volume, reduced crumb hardness and restricted microbial growth rate over time. Additionally, the inclusion of FBSG slowed the release in reducing sugars over time during in vitro starch digestion. Thus, fermentation of BSG can ameliorate bread techno-functional properties and improve nutritional quality of breads.

The aim of the presented article is to evaluate the impact of climate change on the sugar content of grapes in the Czech Republic during the period 2000–2019 through selected indicators on the basis of available secondary sources. Attention is focused on the developments in both the main wine-growing regions of Moravia and Bohemia. In the field of viticulture and wine-growing, the sugar content of grapes, as a basic parameter for the classification of wines, plays an important role. In the Czech Republic, the average sugar content of grapes has had a constantly growing trend. This trend is evident both in the wine-growing region of Bohemia and in the wine-growing region of Moravia. The impact of climate change, especially the gradual increase of average temperatures in the growing season, cannot be overlooked. It greatly affects, among other things, the sugar content of grapes. Calculations according to the Huglin Index and the Winkler Index were used to determine the relationship between climate and sugar content. These indexes summarize the course of temperatures during the entire vegetation period into a single numerical value. The results show that both indexes describe the effect of air temperature on sugar content in both wine regions of the Czech Republic in a statistically significant way. The Huglin Index shows a higher correlation rate. The Winkler Index proved to be less suitable for both areas. Alternatively, the Winkler Index calculated for a shorter growing season was tested, which showed a higher degree of correlation with sugar content, approaching the significance of the Huglin Index.

Striped Skunks (Mephitis mephitis) are important predators of duck eggs in the Canadian prairies. We estimated the impact of individual Striped Skunks on duck nests by intensive observations of foraging movements and depredation of duck nests in southern Saskatchewan, 1993-1994. Nightly, skunk movements were variable (range 0-20 km per night), and did not differ among seasons for females, or between males and females during the parturition/rearing season. Overall, nightly movement of Striped Skunks averaged 7.4 km for females (SD = 5.9 km, n = 20 females) and 6.7 km for males (SD = 3.2 km, n = 5 males). During 1,873 h of radio-tracking, we observed depredation of 10 duck nests by 8 skunks (7 F, 1 M). Using our observed estimate of one depredation for every 187 h, and averaged nightly activity of 8-10 h per night, we estimated that individual skunks find one duck nest every 19-23 nights. Thus, during the 60-day nesting season for ducks (mid-May to mid-July), individual skunks probably find 2-3 duck nests. These observations reinforce the growing evidence that, at normal duck nest densities (<2.5 nests/ha), depredation of eggs by Striped Skunks is opportunistic, and the impact of Striped Skunks on duck nests is a direct function of Striped Skunk abundance.

Perennial shrub-annual plant interactions play key roles in desert regions influencing the structure and dynamics of plant communities there. In the present study, carried out in northwestern Saudi Arabia, we examined the effect of Haloxylon salicornicum shrubs on their associated understory annual species across four consecutive growing seasons, along with a record of the seasonal rainfall patterns. We measured density and species richness of all the annual species in permanent quadrats located beneath individual shrubs, as well as in the spaces between shrubs. During wet growing season H. salicornicum shrubs significantly enhanced the density and species richness of sub-canopy species, whereas in the relatively dry seasons they exerted negative effects on the associated species. In all growing seasons, the presence of shrubs was associated with enhanced soil properties, including increased organic carbon content, silt + clay, and levels of nutrients (N, P and K). Shrubs improved soil moisture content beneath their canopies in the wet growing season, while in the dry seasons they had negative effects on water availability. Differences in effects of H. salicornicum on understory plants between growing seasons seem due to the temporal changes in the impact of shrubs on water availability. Our results suggest the facilitative effects of shrubs on sub-canopy annuals in arid ecosystems may switch to negative effects with increasing drought stress. We discuss the study in light of recent refinements of the well-known “stress-gradient hypothesis”.

Climate change and its impact on agriculture are challenging issues regarding food production and food security. Many researchers have been trying to show the direct and indirect impacts of climate change on agriculture using different methods. In this study, we used linear regression models to assess the impact of climate on crop yield spatially and temporally by managing irrigated and non-irrigated crop fields. The climate data used in this study are Tmax (maximum temperature), Tmean (mean temperature), Tmin (minimum temperature), precipitation, and soybean annual yields, at county scale for Mississippi, USA, from 1980 to 2019. We fit a series of linear models that were evaluated based on statistical measurements of adjusted R-square, Akaike Information Criterion (AIC), and Bayesian Information Criterion (BIC). According to the statistical model evaluation, the 1980–1992 model Y[Tmax,Tmin,Precipitation]92i (BIC = 120.2) for irrigated zones and the 1993–2002 model Y[Tmax,Tmean,Precipitation]02ni (BIC = 1128.9) for non-irrigated zones showed the best fit for the 10-year period of climatic impacts on crop yields. These models showed about 2 to 7% significant negative impact of Tmax increase on the crop yield for irrigated and non-irrigated regions. Besides, the models for different agricultural districts also explained the changes of Tmax, Tmean, Tmin, and precipitation in the irrigated (adjusted R-square: 13–28%) and non-irrigated zones (adjusted R-square: 8–73%). About 2–10% negative impact of Tmax was estimated across different agricultural districts, whereas about −2 to +17% impacts of precipitation were observed for different districts. The modeling of 40-year periods of the whole state of Mississippi estimated a negative impact of Tmax (about 2.7 to 8.34%) but a positive impact of Tmean (+8.9%) on crop yield during the crop growing season, for both irrigated and non-irrigated regions. Overall, we assessed that crop yields were negatively affected (about 2–8%) by the increase of Tmax during the growing season, for both irrigated and non-irrigated zones. Both positive and negative impacts on crop yields were observed for the increases of Tmean, Tmin, and precipitation, respectively, for irrigated and non-irrigated zones. This study showed the pattern and extent of Tmax, Tmean, Tmin, and precipitation and their impacts on soybean yield at local and regional scales. The methods and the models proposed in this study could be helpful to quantify the climate change impacts on crop yields by considering irrigation conditions for different regions and periods.
