Dehydrated plums are distinguished by a pleasant taste, but at the same time they are also distinguished by a special nutritional value, which brings many benefits to human health. After apples, plums are the most cultivated fruits in Romania. Quality as a notion is a general and specific characteristic being represented by certain features that condition both the marketing and the use of the finished product. The physical condition of dehydrated plums is determined by the anatomical structure, structural firmness, water content and appearance. The composition of the soluble dry matter is influenced by the variety, the degree of maturation, at which the raw material has been processed and by the qualitative changes undergone by each component, during dehydration. In this paper, we followed the influence of blanching treatment on 4 varieties of plums, dehydrated in a stream of warm air, at a temperature of 70 °C. The fruits taken into analysis were characterized by a water content of 75-84%, soluble dry matter 9-24%, total sugar 7-13%, acidity 0.45-0.98% and 2-17 mg ascorbic acid. After dehydration, the analyzed parameters were as follows: 16-24% water, total sugar 31-51%, total acidity 1.1-2.3%.

With a look to apple industrialization in Argentina, apples were analyzed to evaluate them as a raw material. The 9 more important varieties harvested in 1967 were: Red Delicious, Granny Smith, Rome Beauty, Delicious, Black Wine-sap, King David, Yellow Newtown Pippin, Jonathan, and Golden Delicious. They were analyzed for: specific gravity, pH, total acidity (as malic acid), soluble solids, total sugar, reducing sugar, pectin, tannin, ascorbic acid, moisture, starch (qualitative test), dry matter, and texture. Analysis were made on fruit harvested at the picking date, and on samples from the same tree held 1, 2, 4 and 6 weeks (the latter for Delicious and Red Delicious only). All analyses were completed within 24 hr of harvesting time. A review is made of similar data from other countries. Argentinian apples are similar to those grown in other countries.

In the present study the authors investigated the effect of sunburn injury on fruit quality parameters (cover colour, depth of tissue damage, fruit flesh firmness, dry matter content) of apple. The symptoms of sunburn injury appeared as concentric rings, differing in colour from each other and the cover colour. This can be connected with the ratio of the injury. The authors observed the following colours on the fruit surface (from the epicentre of spots on the surface of the fruit) dark brown (strongly damaged), light brown (moderately damaged), pale red transition (weakly damaged), red surface cover colour (not damaged).Sunburn of apple fruits is a surface injury caused by solar radiation, heat and low relative humidity. In the initial phase, a light corky layer, golden or bronze discolouration and injuries of the epidermal tissue appear on the surface exposed to radiation. Thus, it detracts from the fruit’s appearance, but in most of the cases it would not cause serious damages in the epidermal tissue. The depth of tissue damage is not considerable, its values are between 1.5-2.0 mm in general. It is commonly known, that tissue structure of the apple fruit is not homogeneous. Accordingly, the degree of injury shows some differences under the different parts of the fruit surface. On the basis of the flesh firmness studies, it can be stated that the flesh firmness of the damaged parts increases due to the sunburn effect. This is due to the fact that the damaged plant cells die, the water content of the tissue decreases and it hardens. However, due to this reduction in the water content the dry matter content will increase.

Background. Representatives of the genus Allium L. are valuable food and medicinal plants that have long been used for nutrition and human health. Modern research has proved their high biological activity. Earlier, we investigated the aboveground organs of a number of wild onion species in the consumer ripeness phase. Higher content of secondary metabolites has been observed in the hemiephemeroid species A. aflatunense B. Fedtsch., A. microdictyon Prokh., and A. rosenbachianum Regel. The aim of this work was to determine the content of bioactive compounds in the green biomass of Allium species during flowering.Materials and methods. We studied the freshly harvested raw materials – leaves and flower scapes. Dry matter content was measured by drying 1 g of raw material at 100–105°C to constant weight. The amounts of phenolic compounds, pectic substances, total sugars and carotenoids were assessed spectrophotometrically using the SF-56 (Russia) and SF Agilent 8453 (USA) instruments, and ascorbic acid was measured by the titrimetric method. The result was taken as an average of three measurements for each indicator calculated on absolute dry weight of raw material (except ascorbic acid). Results and conclusions. The green biomass of Allium species was found to contain 8,2–16,2% of dry matter; 4,5–12,0% of phenolics (catechins, flavonols and tannins); 6,9–32,4% of total sugars; 9,5–12,6% of pectic compounds (pectins and protopectins); 20,8–102,5 mg% of carotenoids, and 38,0–197,7 mg% of ascorbic acid (wet weight). A significant range of variation in the content of secondary metabolites was due to the species’ characteristics and weather conditions of the growing season. A. microdictyon had a higher content of dry matter, flavonols and tannins, whereas A. aflatunense and A. rosenbachianum were rich in ascorbic acid and sugars. The findings testify to the prospects of using Allium spp. as a source of bioactive compounds.

Aims: The aim of the study was to evaluate the nutritional content of various cultivars of taro acquired from All India Co-ordinated Research Project (AICRP) on tuber crops. Study design:Completely randomized design (CRD) at 5% level of significance. Place and duration of study: Department of Post Harvest Technology, faculty of Horticulture, Bidhan Chandra KrishiViswavidyalaya, West Bengal, India, between December 2019 and February 2020. Methodology: 8 cultivars of taro were evaluated for their nutritional contents in this study and their physical attributes such as cormel girth, length, specific gravity, number of cormels per plant and weight of cormel as well as yield per hectare was calculated. Chemical attributes such as titratable acidity, starch, ascorbic acid, total phenol and total sugar as well as reducing sugar content in each cultivar was also studied. Results: Analysis of variance showed significant variation among all the tested cultivars. Moisture content, total sugar and starch was recorded to be highest in the cultivar TTR-17-6 (72.233 %, 5.007 % and 31.805 % respectively). Total phenol (188 mg GAE 100 gm-1) and reducing sugar (2.817%) was found to be highest in TTR-17-5. Total soluble solids was highest in TTR-17-7 (3.867 0Brix). Dry matter content was highest in TTR-17-4 (37.333 %) and ascorbic acid was highest in TTR-17-2 (70.093 mg 100 gm-1). Conclusion: The eight cultivars of taro studied were found to be rich in sugars, ascorbic acid, total phenols and starch. They were observed to vary in cormel girth, length, weight, specific gravity, yield, moisture, dry matter content, TSS and titratable acidity. The cultivar TTR-17-6 was found to be very high in starch, total sugar and moisture content. Therefore, this cultivar may be of considerable importance in ameliorating malnutrition in poorly resourced areas of the developing countries. Cultivar TTR-17-2 was found to be high in ascorbic acid and hence can be further used by the plant breeders to develop more cultivars of taro that are rich in such phytochemicals.

In agricultural sector, maturity is the main decision criterion for starting the harvest. This criterion is usually revealed by a number of parameters such as pH, sugar, dry matter, water and vitamin C, which are informative but technically tedious to measure. The cashew apple is the hypertrophied peduncle which is attached to the cashew nut. It is a nutritious (very juicy fruit (85 to 90% water), sweet (7 to 13% carbohydrates), acidic and vitamin C content) fruit with high therapeutic and medicinal properties. The cashew apple is used as a raw material for many industrial applications (juice and alcohol). This research was conducted as a preliminary step towards the development of a real-time remote sensing technique for assessing the quality of tropical fruits. Spectral acquisitions were carried out from intact cashew apple using optical system composed reflector coupled with spectrometer USB 4000 FL from Ocean Optics (350-1100 nm). Immediately after spectral acquisition, the samples were analyzed by using chemical methods (sugar content, dry matter content, water content, vitamin C and pH). Preprocessing treatment method, bootstrap method was required to create statistical new samples and to increase the number of samples required. This method was used to improve the predictive performance of calibration model. Statistical models of prediction were developed using an artificial neural network (ANN) method. The results obtained from the models built by ANN showed strong relationships between predicted and experimental values: (Rsquare = 0.9870, RMSE= 0.0262) for pH, (Rsquare=0.9869, RMSE=0.1392) for Sugar, (Rsquare=0.9726, RMSE=0.3333) for water content, (Rsquare=0.9703, RMSE=0.3464) for vitamin C and (Rsquare=0.9922, RMSE= 5.0304, RMSE=5.0304) for dry matter. These results confirm the potential of visible spectroscopy to predict quality parameters of cashew apples remotely and make decisions about best harvest time

The objective of this study was to determine influence of different soil type on apple yield and quality. To investigate the variation in fruit quality, apples were harvested at commercial maturity on two different soil type. The investigations was conducted in experimental apple orchards located in Focsani region on two different soil type: luvic  brown typical and  luvic brown pseudogleizate. Fruits of Jonathan and Golden Delicios cultivars were tested for color, soluble solids content, total acidity, ascorbic acid, anthocyanins content and chlorophyls content with specific analytrical methods. At harvest yield, dry matter, soluble solids content, ascorbic acid and acidity were affected by soil type. In this study, no significant soil effect was found on color, anthocyanins and chlorophyll fruit content. The results obtained in this study suggest that luvic brown pseudogleizate soil leading to increased yields and enhanced fruit quality.

Influence is investigated of the main components of the newly developed assortments of phytojems - fruit part, vegetable ingredients, fertilizers, sweeteners and organic acids on the sensory evaluation. The main tasks in the development of the phytojams are to preserve the consistencе upon addition of pectin; increasing the nutritional value of the main raw material by introducing dry and thickened plant extracts and lowering the energy value of new assortment products at the expense of reducing the amount of sugars in the recipes or replacing them with fructose. By physicochemical parameters the studied variants differ from the traditionally produced low-caloric jams with the higher content of phenolic compounds. Sensory evaluation was conducted at the ten ball system. Five model variants have been evaluated with a total sugar content of less than 10%. They have better organoleptic qualities, appearance and functionality.
