Yogurt can be made from homogenized milk, low-fat milk or skimmed milk with the addition of powdered milk. Starter culture commonly used in yogurt is Lactobacillus bulgaricus and Streptococcus thermophillus can not survive in environments with high acidity, so probiotics needed. One of the fruits that can be used in the process of making yogurt is red fruit (Pandanus Conoideus L). The purpose of this study was to analyze the physical and organoleptic properties of probiotic yogurt given the addition of red fruit. The observed physical characteristics consist of pH, viscosity, total acid concentration and water activity (aw) and organoleptic arachnids observed consisting of color, flavour, aroma and consistency. This research was using a complete randomized design (RAL). The results showed that the addition of red fruit has a real effect (P<0.05) on pH, viscosity and total acid titrated and organoleptic test shows the addition of red fruit has a noticeable effect on color, flavour, aroma and viscosity in hedonic quality tests, then in hedonic tests affect aroma and flavour. Based on the results of yogurt testing with the addition of 2.5% this is the closest to control and acceptable to Indonesian National Standards (SNI).

As with all transport modes, the maritime sector is undergoing a drastic transition towards net zero, similar to the path in which Aviation is already engaged through global decarbonization programs such as CORSIA for the International Civil Aviation Organization, or the Emission trading Scheme of the European Union). Maritime indeed shares with Aviation a common element: the difficulty of shifting to electric in the short to medium term. Therefore, the use of sustainable fuels represents the main and only relevant option in this timeframe. As sustainable biofuels will be used as blend components in the case of large-scale deployment, it is necessary to investigate the behavior of bio- and fossil-based fuels when mixed in various percentages, in particular for low quality products such as HTL (HydroThermal Liquefaction) and fast pyrolysis oils from lignocellulosic biomass and waste. Biocrude from subcritical hydrothermal liquefaction of undigested sewage sludge, produced at reaction conditions of 350 °C and 200 bar in a continuous HTL pilot scale unit, was manually mixed at 70 °C with residual marine fuel (low-sulphur type F-RMG-380 per ISO 8217) at two different nominal biocrude shares, respectively 10 wt.% and 20 wt.% in the mixture. While the former blend resulted in the technically complete dissolution of biocrude in the fossil component, the latter sample formed biocrude agglomerates and only partial dissolution of the biocrude aliquot in marine fuel could be achieved (calculated between 14–16 wt.%). The blend with 10 wt.% of SS biocrude in the mixture resulted in compliance with limits of total acid number (TAN), inorganics (in particular vanadium, sodium, silicon and aluminum) and sulphur content, while only the ash content was slightly above the limit.

Microorganisms in pit mud are the essential factor determining the style of strong flavor Baijiu. The spatial distribution characteristics of fungal communities and aroma in the pit mud for strong flavor Baijiu from Xinjiang, China, were investigated using Illumina MiSeq high-throughput sequencing and electronic nose technology. A total of 138 fungal genera affiliated with 10 fungal phyla were identified from 27 pit mud samples; of these, Saccharomycopsis, Aspergillus, and Apiotrichum were the core fungal communities, and Aspergillus and Apiotrichum were the hubs that maintain the structural stability of fungal communities in pit mud. The fungal richness and diversity, as well as aroma of pit mud, showed no significant spatial heterogeneity, but divergences in pit mud at different depths were mainly in pH, total acid, and high abundance fungi. Moisture, NH4+, and lactate were the main physicochemical factors involved in the maintenance of fungal stability and quality in pit mud, whereas pH had only a weak effect on fungi in pit mud. In addition, the fungal communities of pit mud were not significantly associated with the aroma. The results of this study provide a foundation for exploring the functional microorganisms and dissecting the brewing mechanism of strong flavor Baijiu in Xinjiang, and also contributes to the improvement of pit mud quality by bioaugmentation and controlling environmental physicochemical factors.

Peaches (Prunus persica L.) are a popular and sought-after dessert fruit. This is mainly due to their flavour, aroma, attractive appearance, and high content of substances that play an important role in human nutrition. The present study was carried out to determine some important analytical properties (sugars/sucrose, glucose, fructose and sorbitol), total acid, total phenolics, flavonoids, antioxidant capacity, carotenoids and anthocyanins of 34 selected peach varieties. The analyses are also complemented by colorimetric measurements of peach skin colour using CIELAB and other chromatic parameters. The results show, for example, that all peach varieties are good sources of phenolic compounds (9.43–577 mg gallic acid equivalent (GAE).100 g−1), flavonoids (1.12–95.1 mg catechin equivalent (CAE).100 g−1), and antioxidant capacity (136–462 mg Trolox equivalent (TE).100 g−1).

Solenostemon monostachyus P. Beauv (Lamiaceae), it’s ethnomedical uses include anti-plasmodial, anti-pyretic, antiulcerogenic, antioxidant, anti-inflammatory and anti-nociceptive activities. The aim of this study was to employ the quality control parameters in the evaluation of the leaf and stem of Solenostemon monostachyus to aid in the identification and standardization of the medicinal plant. The plant leaves and stems were collected, identified, air-dried, pulverized and stored in separate glass containers. Standard procedures were employed to obtain the microscopic features of the fresh and powdered samples, micromeritic, chemomicroscopy, fluorescence properties, moisture contents, ash values and soluble extractive values. The results of the microscopic studies using fresh and powdered leaf samples revealed the presence of diacytic stomata on both the abaxial and adaxial surfaces (amphistomatic), with stomatal index of 27.9% and 14.8% respectively. The result of the micromeritics properties of the powdered leaf and stem samples showed angles of repose of 38.0o and 46.0o, Carr’s index of 23.7% and 32.5% and Hausner’s ratios of 1.3 and 1.5 respectively. Results for the moisture content, total, acid-insoluble and water-soluble ash values were 11.7%w/w, 13.7%w/w, 1.8%w/w and 9.4%w/w for the leaf and 13.3%w/w, 17.3%w/w, 1.8%w/w and 9.2%w/w for the stem respectively. Extractive values for water-soluble, methanol-soluble and ethanol-soluble were 26.5%w/w, 32.3%w/w, 14.5%w/w and 15.5%w/w, 15.8%w/w and 14.5%w/w for the leaf and stem respectively. Chemomicroscopy indicated the presence of lignin, calcium oxalate crystals and protein in the leaf and stem. The results obtained therefore could be used to establish pharmacopoeial standard for the fresh and powdered drug products of Solenostemon monostachyus, thus preventing adulteration.

Abstract For reservoirs containing oil with a high total acid number, alkali-cosolvent-polymer (ACP) flood can potentially increase the oil recovery by its saponification effects. The enhanced oil recovery performance of ACP flood has been studied at core and reservoir scale in detail, however, the effect of ACP flood on residual oil saturation in the swept area still lacks enough research. Medical computed tomography (Medical-CT) scan and micro computed tomography (Micro-CT) scan are used in combination to visualize micro-scale flow and reveal the mechanisms of residual oil reduction during ACP flood. The heterogeneous cores containing two layers of different permeability are used for coreflood experiment to clarify the enhanced oil recovery (EOR) performance of ACP food in heterogeneous reservoirs. The oil saturation is monitored by Medical-CT. Then, two core samples are drilled in each core after flooding and the decrease of residual oil saturation caused by ACP flood is further quantified by Micro-CT imageing. Results show that ACP flood is 14.5% oil recovery higher than alkaline-cosolvent (AC) flood (68.9%) in high permeability layers, 17.9% higher than AC flood (26.3%) in low permeability layers. Compared with AC flood, ACP flood shows a more uniform displacement front, which implies that the injected polymer effectively weakened the viscosity fingering. Moreover, a method that can calculate the ratio of oil-water distribution in each pore is developed to establish the relationship between the residual oil saturation of each pore and its pore size, and reached the conclusion that they follow the power law correlation.

Summary Low-salinity water (LSW) flooding is an attractive enhanced oil recovery (EOR) option, but its mechanism leading to EOR is poorly understood, especially in carbonate rock. In this paper, we investigate the main reason behind two tertiary LSW coreflood tests that failed to demonstrate promising EOR response in reservoir carbonate rock; additional oil recovery factors by the LSW injection were only +2% and +4% oil initially in place. We suspected either the oil composition (lack of acid content) or the recovery mode (tertiary mode) was inappropriate. Therefore, we repeated the experiments using an acid-enriched oil sample and injected LSW in the secondary mode. The result showed that the low-salinity effect was substantially enhanced; the additional oil recovery factor by the tertiary LSW injection jumped to +23%. Moreover, it was also found that the secondary LSW injection was more efficient than the tertiary LSW injection, especially in the acid-enriched oil reservoir. In summary, it was concluded that the total acid number (TAN) and the recovery mode appear to be the key successful factors for LSW in our carbonate system. To support the conclusion, we also performed contact angle measurement and spontaneous imbibition tests to investigate the influence of acid enrichment on wettability, and moreover, LSW injection on wettability alteration.

Kombucha is a plant-based fermented beverage that contains probiotic bacteria such as lactic acid bacteria (LAB). This research was conducted to prove the potential of probiotics in LAB isolates of kombucha tea leaves and robusta coffee leaves with various concentrations. This research used a completely randomized design (CRD). The variables tested were the measurement of total lactic acid bacteria, total acid, and probiotic characterization of LAB isolates (LAB resistance to low pH and bile salts, and antibacterial activity test). The results were analyzed and discussed using ANOVA with a significance level of P < 0.05 only for total acid and descriptive analysis on microbiological response. The best probiotic potency was selected using the multiple attribute method. The results showed that LAB isolates from kombucha tea leaves and robusta coffee leaves with various concentrations had resistance to pH 2 and pH 3, resistance to bile salts 3%, and antibacterial activity against Staphylococcus aureus and Escherichia coli bacteria. The LAB isolate of kombucha robusta coffee leaves at a concentration of 0.6% has the best probiotic potential. Kombucha merupakan minuman fermentasi berbasis tanaman yang mengandung bakteri probiotik seperti bakteri asam laktat (BAL). Penelitian ini dilakukan untuk membuktikan potensi probiotik pada isolat BAL kombucha daun teh dan daun kopi robusta dengan berbagai konsentrasi. Penelitian laboratorium menggunakan rancangan acak lengkap (RAL). Variabel yang diuji adalah pengukuran total bakteri asam laktat, total asam, ketahanan BAL terhadap pH rendah dan garam empedu, serta uji aktivitas antibakteri. Hasil penelitian dianalisa dan dibahas menggunakan ANOVA dengan signifikansi P < 0.05 hanya untuk total asam dan analisa deskriptif pada respons mikrobiologis. Potensi probiotik terbaik dipilih menggunakan metode multiple attribute. Hasil penelitian menunjukkan bahwa isolat BAL dari kombucha daun teh dan daun kopi robusta dengan berbagai konsentrasi memiliki ketahanan terhadap pH 2 dan pH 3, ketahanan terhadap garam empedu 3%, serta aktivitas antibakteri terhadap bakteri Staphylococcus aureus dan Escherichia coli. Isolat BAL kombucha daun kopi robusta pada konsentrasi 0,6% mempunyai potensi probiotik terbaik.

Soluble sugars, malic acid, and ascorbic acid in 17 apple cultivars (Malus domestica Borkh.) and three wild forms (M. pumila ‘Saiwaihong’, M. prunifolia (Willd.) Borkh. and M. micromalus Makino) from three major apple cultivation regions in China were quantified using gas chromatography equipped with flame ionization detector (GC-FID). Fructose was the most abundant sugar, followed by sucrose, glucose, and sorbitol. Wild apples contain more sorbitol and less sucrose and were significantly more acidic than cultivated fruits. The total sugar content varied from 110 to 160 mg/g fresh fruits, total acid content from 2 to 6 mg/g, with a strong influence of genetic background and growth location. Overall, ‘Gala’, ‘Xiali’, ‘Liuyuehong’, ‘Lihong’, ‘Starking Delicious’, and ‘Starkrimson’ were characterized by higher sugar/acid ratio indicating sweeter taste compared to other cultivars. The wild apples had the highest content of ascorbic acid (0.6–0.96 mg/g). Compared to other cultivars, ‘Zhongqiuwang’, ‘Qinguan’, and ‘Nagafu No. 2′ were richer in ascorbic acid. The ascorbic acid content in the commercial cultivars was highly dependent on growth location. The content of malic acid and sucrose positively correlated to altitude, and that of glucose negatively. Malic acid positively correlated with ascorbic acid and sucrose, glucose content with ascorbic acid.

Engine oil condition and tribological performance are strongly interrelated. Accordingly, oil condition monitoring is common in various applications. This is especially important, as oil condition depends on the fueling and utilization profile of an internal combustion engine. Common practice involves the measurement of various parameters, such as the total acid number and total base number, oxidation, nitration, viscosity, and elemental composition; thus, it can be time-consuming and resource-intensive. This study provides a methodology for rapid analysis for large vehicle fleets or sample sizes, using only Fourier-transformed infrared spectroscopy and the subsequent multivariate data analysis offers a rapid alternative to commonly available methods. The described method provides a rapid, cost-efficient, and intuitive approach to uncovering differences in the oil condition. Furthermore, understanding the underlying reasons in engine construction and the resulting chemical degradation is also possible.
