In this work, chemical parameters such as sugar (glucose and fructose) content, organic acid (total acids, malic and tartaric acids), total phenolic content and the antioxidant activity of 12 white wines (chardonnay, pinot blanc and pinot gris) from various wine regions in Slovakia were studied in order to identify differences among the varieties and wine-growing regions. The wine samples were examined by Fourier-transform infrared spectroscopy (FTIR) and UV-VIS spectrophotometry (for determination of total polyphenolic content (TPC) and total antioxidant activity (TAA)) methods. Content of alcohol ranged between 11.50% and 13.80% with the mean value 12.52%. Mean content of total acids varied between 4.63 ± 0.09 and 6.63 ± 0.05 g.L−1, tartaric acid varied between 1.62 ± 0.09 and 2.93 ± 0.03 g L−1, malic acid was found in the concentrations ranged from 0.07 ± 0.05 and 2.50 ± 0.08 g L−1 and lactic acid was present between 1.53 and 0.01 g L−1. The content of fructose was, in general, higher in the samples from the Južnoslovenská and Nitrianska wine regions and glucose was higher in the Malokarpatská wine region. Chardonnay wines showed the highest content of total polyphenols and the antioxidant activity in the samples ranged from 51.06 ± 027 to 72.53 ± 0.35% inhibition of DPPH. The PCA analysis based on chemical descriptors distinguished the Nitrianska and Stredoslovenská wine regions. According to similarities among the wine samples, four main classes were formed by cluster analysis.

The influence of fattening conditions on the digestive and metabolic processes in animals is actively studied to increase the production of animal food. The aim of the study was to estimate the total amount of water-soluble antioxidants in the blood serum of Duroc boars depending on the duration of fattening. Experiments were conducted on 102 animals to confirm the results of laboratory studies, as well as determination of the total antioxidant activity of pig blood serum by amperometric method. For the first time, a significant difference in antioxidant activity was found in blood samples of Duroc boars with the duration of their fattening from 81 to 101 days.

Validation of modified FRAP method to determine total antioxidant content in mango and rambutan sample have been done. Total antioxidan content in sampel is presented as Gallic Acid Equivalent (GAE). Modified FRAP method using FeCl3asoxidizing agent and ortho-phenantroline as complexan, which produce complex compounds of [Fe (C12H8N2)3]+2 sorrel coloured. Validation parameters are obtained in this research are r = 0.999, R2 = 0.998, LoD 3.13 x 10-6 M and LoQ 1.04 x 10-5 M. While RSD and recovery in the sample mango and rambutan were 1.15%, 1.34% and 96.31%, 97.72%, respectively. Based on the value of the validation parameters, it can be concluded that this method can be used for determination of total antioxidant content in the mango and rambutan samples.

Abstract: The objective of this research is to determine the antioxidant activity of the extracts of black rice cultivars Pare Ambo, South Sulawesi. Black rice Pare Ambo cultivars, South Sulawesi extracted with 70% ethanol by maceration. After that, the extract tested antioxidant activity using DPPH with concentration 50, 100, 200, 400, 500 ppm, and methods FRAP for the determination of total content of antioxidants at concentrations 600, 700, 800, 900, 1000 ppm. Research results using DPPH antioxidant test showed a concentration of 50 ppm has an activity that is the lowest free-radical scavengers 22% and 400 ppm had a prophylactic activity of free radicals highest 84,60%. While FRAP method showed a concentration of 600 ppm had the lowest total antioxidant that is 177,64 mmol/g and a concentration of 1000 ppm has the highest total antioxidant that is 272,94 mmol/g. Results of this research concluded that the extract of black rice cultivars Pare Ambo, South Sulawesi has a good potential antioxidant activity.Keywords: black rice, extract, antioxidants, DPPH, FRAPAbstrak: Tujuan penelitian ini adalah untuk menentukan aktivitas antioksidan dari ekstrak beras hitam kultivar Pare Ambo, Sulawesi Selatan. Beras hitam kultivar Pare Ambo, Sulawesi Selatan diekstrak dengan pelarut etanol 70% dengan cara maserasi. Setelah itu, ekstrak diuji aktivitas antioksidan menggunakan metode DPPH dengan konsentrasi 50, 100, 200, 400, 500 ppm, dan metode FRAP untuk penentuan kandungan total antioksidan dengan konsentrasi 600, 700, 800, 900, 1000 ppm. Hasil penelitian pengujian antioksidan menggunakan metode DPPH menunjukkan konsentrasi 50 ppm memiliki aktivitas penangkal radikal bebas terendah yaitu 22% dan konsentrasi 400 ppm memiliki aktivitas penangkal radikal bebas tertinggi yaitu 84,60%. Sedangkan metode FRAP menunjukkan konsentrasi 600 ppm memiliki total antioksidan paling rendah yaitu 177,64 mmol/g dan konsentrasi 1000 ppm memiliki total antioksidan paling tinggi yaitu 272,94 mmol/g. Hasil penelitian ini menyimpulkan bahwa ekstrak beras hitam kultivar Pare Ambo, Sulawesi Selatan memiliki potensi aktivitas antioksidan yang baik.Kata kunci: beras hitam, ekstrak, antioksidan, DPPH, FRAP

AbstractThe aim of the study was to assess the effect of three weeks of storage on the chemical and rheological properties of apple juices obtained from Idared and Jonatan apples variety. Total antioxidant activity, levels of bio-active compound groups and the viscosity were measured to characterize the investigated juices. The method applied for the determination of ascorbic acid concentration was with 2, 6-diclorophenolindophenol. Total phenols (TP) in apple juices were determined using the Folin-Ciocalteau method and antioxidant activity by the use of DPPH free radical method. The viscosity of apple juices was investigated by a rotational viscometer, Brookfield viscometer (Brookfield Engineering Inc., Model RV-DV I Prime) with RV spindles. During three weeks of storage, different rates of all measured properties have been observed decreasing for both studied apples varieties juices. The juices from Jonatan apples have higher antioxidant activities that are correlated with the higher content in polyphenols and lower values of viscosity.

The quantification of a plant, which is vital in medication bearing antioxidant activity of the North West area of the province Balochistan Ebenus Stellata family Fabaceae is explained in this paper. The plant composition was determined chemically through well-known four analytical tests and sensitive EMR operating techniques. The crude extract was obtained from the plant by using methanol, and the antioxidant activity of that extract was measured. Additionally, with the help of spectrophotometer, antioxidant potentials were determined through the DPPH (2, 2-Diphenyl-1-Picrylhydrazyl) assay, Ferric ion (Fe+3) reducing antioxidant power assay, Ferric (Fe+3) reducing antioxidant potential (FRAP) assay, and total antioxidant capacity (TAC) of the phosphomolybdenum assay. The potency of the DPPH assay ofEbenus Stellatawas 179 mg/g ofascorbic acid concentration. Moreover, the FRAP and TAC values were 9.2mg and 35 mg of ascorbic acid/g ofEbenus stellate extract, respectively. Furthermore, RP denotes 2.6 mg/g of ascorbic acid concentration. The concerned plant showed high antioxidant activity.
