Avaliou-se a qualidade microbiológica de 30 amostras de queijo prato e parmesão ralado, coletadas em diferentes supermercados da cidade de Caxias do Sul, Rio Grande do Sul (Brasil). Os resultados mostraram índices de contaminação acima do permitido pela legislação em 11 amostras de queijo prato e em 4 de queijo parmesão. Em uma amostra de queijo prato fatiado foi detectada a presença de Salmonella arizonae. Abstract The microbiological quality of 30 samples of Soft and grated parmesan cheeses were evaluated, samples were collected in different supermarkets of the city Caxias do Sul in Rio Grande do Sul (Brasil). The results showed contamination indexes above of the allowed by the legislation in 11 samples of soft cheese and 4 of grated parmesan. In one sample of sliced soft cheese was detected the presence of Salmonella arizonae.

The objective of the work was to evaluate the presence of Salmonella spp. during the slaughter and processing of swine giblets (Pork Liver) in a slaughterhouse in Rio Grande do Sul, identifying which stages have the highest occurrence of contamination. The research was carried out in a pig slaughterhouse in the state of Rio Grande do Sul. The collections were carried out on the surfaces of the carcasses, utensils, equipment, tables and gloves of the handlers during the slaughter process and collection of the final product. In the study carried out of a total of 72 samples from the analyzed carcasses, 18 presented the presence of Salmonella spp., Resulting in a frequency of 25% of samples with the presence of the bacterium and 75% with the absence of Salmonella spp. The results presented may be related to contamination of the raw material or cross contamination during the process, which occur in the slaughterhouse along the slaughter line. It is determined that the critical stages with prevalence of Salmonella spp. are the bleeding, before the scalding tank and in the evisceration. Scalding and buckling proved to be effective operations in reducing the bacteria in the carcasses. The level of contamination after evisceration is at risk of cross contamination. It is essential to hygienic sanitary care in the processing steps, maximizing the microbiological quality of the final product.

In West Frontier region of Rio Grande do Sul production and industrialization of rice is quite intense , assuming a position of prominence on the national scene . However, to ensure the quality of these grains and competitiveness of products, factors such as storage, processing and transportation are key as infrastructure deficiencies can substantially reduce the competitive potential of these products in the Brazilian agribusiness. In this context, this paper analyzes the system of logistics and transportation of grain harvest, identifying marketing channels adopted by rice processing companies in the municipality of Itaqui, checking the main destinations of the product and the critical points highlighted by marketing organizations. To do s o, through a case study, we analyzed the choices made by four major companies. The results of this work show that the surveyed companies operate significantly to the national scene. It was found that the Southeast Region as the main and most competitive market by companies absorbing on average about 80 % of processed rice in the city , which represents approximate volume of 1,041,102 tons in 2012. In coordinating the chain points to the important role of industry as to connect farmers with retailers, making the governance chain.

Sinopse: Em meio ao colorido de goiabas, batatas e flores mais que cheiros e sabores, descobrir pessoas. Agricultoras e agricultores que com suas histórias e lutas, estão representados nas varandas e nas mesas da cidade. Trazer a imagem não de uma feira, mas de cada pessoa que diariamente se dedica ao cultivo e à produção de alimentos. Encontrar o rosto e as escolhas de outros modos de fazer agricultura, de outros modos de se alimentar. De assentados e suas lutas pela preservação de sementes crioulas, de jovens universitários e sua determinação em permanecer no campo e de fumicultores aposentados dispostos a limpar suas terras dos venenos de mais 30 anos de cultivos agressivos, é feita a Feira Sabores da Terra. Feira da agricultura familiar do município de Canguçu, Rio Grande do Sul, que acontece todas as segundas-feiras à tarde e reúne cerca de 18 produtores. Em um pavilhão de madeira no centro da cidade são expostos doces coloniais, panificados, frangos congelados, farinhas, feijões, legumes, verduras, frutas e flores, em variedade conforme a estação do ano. Produtos que são vendidos entre boas conversas, rodas de chimarrão e é claro, uma melancia bem gelada ou uma deliciosa rapadura. Para a permanência e continuação da feira, que se realiza há pouco mais de um ano, os feirantes têm enfrentado e superado dificuldades. A distância de suas propriedades até a cidade, muitas das vezes são mais do que duas horas de viagem. A demanda, pelos consumidores, por produtos conforme padrões estéticos dos alimentos produzidos com veneno. O cansaço de mãos que, com mais de 40 anos de trabalho, ainda enfrentam a roça durante toda a semana e o frio, a chuva e o calor de uma feira praticamente ao ar livre. O conciliar o trabalho agrícola e a feira com os estudos, cujo acesso limitado pela distância das universidades, das oportunidades de estágios e pela dificuldade de ascender ao ensino público superior. Apesar de tão próximos, rostos e mãos muitas vezes invisíveis em escolhas alimentares. Gente que oportuniza uma alternativa à alimentação. Objetivo: Compreender a dor de clientes submetidos à revascularização do miocárdio, no intuito de inter-relacionar esta condição com a qualidade de vida. Método: Qualitativo, descritivo e exploratório, realizado com 10 clientes no terceiro dia de pós-operatório de revascularização do miocárdio, de um Hospital de grande porte da região central do Rio Grande do Sul. Resultados: Evidenciam que (05) entrevistados apresentaram limiar de dor 7, (01) apresentou limiar  2, e outros (04) entrevistados apresentaram limiar 9, sendo estas as categorias que emergiram na aplicação da Escala visual analógica . Além disso, cinco entrevistados classificaram a dor como uma sensação desagradável, outros quatro a consideraram horrível/terrível e apenas um a referiu como ardida. Conclusões: Essas categorias detectadas pela maioria dos usuários levam a pensar que esses sinais podem interferir consideravelmente na qualidade de vida, bem como limita-los em suas funções cotidianas, podendo retardar a sua recuperação. The strawberry cultivation is an important economic activity in the Rio Grande do Sul State, Brazil, however the number of offered cultivars to the growers is reduced. The yield and quality of strawberry (Fragaria x ananassa Duch.) cultivars Camarosa, Galexia, Earlibrite, Festival, Plarionfre and Sabrosa was evaluated under the climatic conditions of Pelotas, Rio Grande do Sul State. We determined the number, mass, total soluble solids (TSS ºBrix), total titratable acidity (TTA), antocianin level and fresh fruits produced in an experimental unit. We also determined the production of fruits per hectare and per plant. The statistical design used in the experiment was of completely randomized blocks with 6 treatments (cultivars) and 4 replicates where the experimental unit was composed of 8 plants. The harvest began in the first half of August, extending to the second half of December, totalling 20 weeks. Plarionfre, Earlibrite and Festival cultivars showed higher production from the first half of October until the end of the first half of November. Camarosa reached higher productivity, mass of plants and fruit weight. There were no differences between the evaluated cultivars in the levels of TSS, antocianin, ATT and pH during the period of evaluation.

O texto compreende uma discussão sobre o processo de modernização na cidade de Porto Alegre em vários momentos de sua história, articulando as transformações e modificações havidas no espaço urbano com uma paralela segregação social operada e/ou desejada na cidade. São recolhidos vários exemplos para demonstrar a vontade de se construir uma “cidade una”, na qual não se admite o convívio com os indesejados sociais. A combinação modernização/exclusão social, tantas vezes já abordada em diversos estudos da historiografia brasileira, encontra neste artigo mais um exercício de aproximação, a partir do qual pode-se vislumbrar momentos distintos – sem traçar uma linha de continuidade – desta operação específica da modernidade. Abstract The text discusses the process of modernization in the city of Porto Alegre during various moments of its history, debating both transformations and modifications in the city’s urban space along with a social segregation that was either going on or being wished for at that time. Many exemples are given so as to demonstrate the desire to build a “united city” in which those who were socially unwished were not allowed. The combination of modernization with social exclusion, so often discussed in many other studies of Brazilian history, is shown in this article as another approach to the issue of modernization with its distinct moments. O queijo Minas frescal é um dos mais populares do Brasil, porém o alto teor de umidade associado ao métodode processamento, muitas vezes artesanal, e de armazenamento desse produto o tornam muito perecível.Este trabalho teve como objetivo avaliar e comparar a qualidade microbiológica de queijo Minas frescalcomercializado na cidade de Curitiba (PR) nos anos de 1999 e 2009, verificando a evolução na qualidadehigiênico-sanitária desse produto no período de 10 anos. Foram analisadas 11 marcas comerciais de queijo Minas frescal disponíveis no comércio varejista da cidade de Curitiba, sendo amostradas cinco unidades de cada marca, totalizando 55 amostras. Os queijos foram submetidos à pesquisa de Salmonella spp., contagem de coliformes totais e Escherichia coli, contagem de Staphylococcus coagulase positiva e contagem de aeróbios mesófilos, com resultados expressos em UFC/g. Das 55 amostras de queijo, 41,82% e 78,18% apresentaram contagem de E. coli e de coliformes totais acima do limite permitido, respectivamente. Somente uma amostra (1,82%) do total avaliado mostrou-se em desacordo com os padrões para S. coagulase positiva e uma para Salmonella spp. Ambas as amostras foram adquiridas em 2009. Todas as amostras avaliadas em 2009 apresentaram elevada contagem de aeróbios mesófilos, revelando alta carga microbiana. Comparativamente, os queijos avaliados em 1999 mostraram qualidade microbiológica superior aos queijos avaliados em 2009 (p < 0,05). Destes, 100% apresentaram no mínimo um parâmetro microbiológico em desacordo com a legislação vigente, indicando que a qualidade dos queijos Minas frescal avaliados em 2009 apresentou-se inferior a dos queijos avaliados em 1999.

This work explores the experience of team participation the University of Cruz Alta Cruz Alta Rio Grande do Sul, Rondon Project. With goal to integrate the student to reality Brazil, and develop political, economic, and health care activities education for the poor, in January 2012, teachers and students visited the city of Aguiarnópolis, state of Tocantins in Brazil. The project is the intellectual effort of research and understanding of the process history, involving the saga of Brazilian Cândido Mariano Rondon and his legacy to the formation of anthropologists. This study proposes a reflection on Rondon Project while the university democratization of space public, considering it essential to approach institution with society. The Rondon Project is an extension activity that aims to consolidate the sense of social responsibility in university, knowledge on different Brazilian realities and production local collective projects.  It is intended, finally, contribute through this study to highlight the importance of alliance between scientific knowledge and empirical in everyone's life citizens, and the contribution of the Rondon Project to provide this exchange of knowledge between students and underserved communities.

Objective. The study aimed to determine the physico-chemical and microbiological quality of ice blocks sold in selected wet markets located in the city of Manila. Methods. Twenty-eight samples were collected from three markets. Microbiological quality was analyzed in terms of the presence or absence of coliforms with E. coli as indicator organism. Physico-chemical quality was determined by measuring turbidity, apparent color, pH, iron, and residual chlorine. Measurements obtained were compared with the 2007 Philippine National Standards for Drinking Water (PNSDW). Results. Results showed that all samples tested positive for coliforms while 25 out of the 28 samples were positive for E. coli. Mean turbidity was 2.74 ± 3.68 NTU; for both apparent color and iron tests, all samples complied with the PNSDW standard limit set; mean pH was 6.15 ± 0.64; and mean residual chlorine was 0.06 ± 0.02 mg/L. Average values of apparent color and iron comply with the PNSDW standards. Six out of 28 samples had turbidity values exceeding the standards. All samples were found to have residual chlorine levels below the standards. Conclusion. Ice in markets do not comply with key 2007 PNSDW standards and findings warrant strict compliance of ice quality from manufacturers to the point of distribution to protect consumer health.

This article analyzed, from the perspective of six graduates of the Course of Pedagogy (FACED / UFRGS), the effects of the obligatory curricular internship and its role in the formation of teaching identities. This qualitative research carried out in 2014 involved listening to the voices of graduates in the period of compulsory curricular traineeship in a municipal public school system located in the city of Porto Alegre (Rio Grande do Sul, Brazil). By means of a focal group, the authors addressed themes of stage and professional identity, concepts developed by Maurice Tardif and Danielle Raymond, António Nóvoa, Selma Garrido Pimenta and Maria Socorro Lima. Drawing on the discursive perspectives of Michel Pêcheux, and highlighting contributions offered by Eni Orlandi, the discourse analysis of the graduates’ speech produced several themes that influenced the formation of the graduates’ educational identities, including teaching as collaborative work, “human teaching”, and experiences of autonomy and transition, and that referred to the obligatory curricular stage as a space for learning, reflection about practice, and the space of praxis. In addition, six trainees perceived their internship as an experience that produced changes in their ways of thinking and becoming teachers. Thus, discursive analysis of internship graduates within the time and spaces of teacher formation may can contribute to other designs for schooling and education, considering the relevance of the dynamic conditions of dialogue at this specific stage.
