The situation with the virus Covide-19 worldwide, in addition to the many questions of how to best protect ourselves, drew the attention of people and professional community, to the significance and the importance that a healthy nutrition has in preserving and building up immunity, and thus also in the prevention and protect the organism from various negative agents. Due to increased consumer concern for their own health and the environment the organic food market is one of the fastest growing markets in the food industry. The main goal of the current research is to examine determinant factors influencing organic foods purchase in our region. The sample consisted of 571 subjects from Serbia and the region. The data were processed by the SPSS program, and the obtained results show that in our country, as well as anywhere in the world, the price is the most common barrier in the situation of buying organic food. Gender of our subjects was not a significant factor in making the decision and realization of the purchase, while their marital status and age had an influence in making the mentioned decision. In general, our research showed that younger respondents, who are not married, are the most common buyers of organic food.

The geospatial Web enables virtually everyone to contribute to the growing col-lection of geographically referenced information on the World-Wide Web. In this chapter, we present a Google Maps-based tool that enables Web users to contribute two types of informa-tion: annotations and their reference locations. We further differentiate annotations into obser-vations and opinions regarding specific places. The potential of this approach for integrating lo-cal knowledge into environmental planning was assessed by conducting an online map-based discussion of organic farming among expert stakeholders in the Kawarthas area in Central On-tario, Canada. The discussion contents shed light on the participants’ perceptions of the organic food market. Moreover, the experiment demonstrated how a map-based discussion forum can be useful for obtaining public input on planning and policy issues.

Spirulina is one of the most highly-demanded and popular dietary supplements in the world. It is widely used in healthy nutrition both as a colorant and as a nutrient additive containing a large number of useful trace elements and vitamins. Spirulina is also used to create photosensitizers for photodynamic therapy, which is used to treat cancer and other diseases. Our objective was to conduct experiments and evaluate the eff ect of Spirulina solutions on the histological characteristics of Danio rerio organs. We tested the eff ect of Spirulina on adult fi sh Danio rerio in an acute 96-hour experiment at concentrations of: 0,1; 1,0, 10,0; 30,0; 100,0 mg/l. Afterwards, the histological micro-preparations obtained from the liver, intestines, kidneys, ovaries, and gills of the striped Danio were examined. The studies of the preparations have shown that the maximum allowable concentration of Spirulina solution for fi sh is 3 mg/l. These data can be used in hydrobiology for water disinfection methods, in ichthyopathology for fi sh treatment, and in food industry toxicology. Therefore, when using it for disinfection of water in the reservoir, aquatic invertebrates and fi sh will not be aff ected and sharp changes in the biocenosis of the reservoir are not expected.

Background: The organic food market has grown rapidly worldwide in the past 15 years. However, evidence concerning the health effects of organic foods is scarce. We evaluated the cross-sectional association of organic food purchase, as a proxy of organic food consumption, with diabetes in a nationally representative population. Methods: We included 8199 participants aged ≥20 years from the National Health and Nutrition Examination Survey 2007–2008 and 2009–2010. Organic food purchase and frequency were ascertained by questionnaires. Diabetes was defined as a self-reported physician diagnosis or a hemoglobin A1c level ≥6.5% or both. We used logistic regression with sample weights to estimate the odds ratios (ORs) and 95% confidence intervals (CIs). Results: Individuals who reported purchasing organic foods were less likely to have diabetes compared to those who did not report organic food purchase. After adjustment for age, gender, race/ethnicity, family history of diabetes, socioeconomic status, and dietary and lifestyle factors, the OR of diabetes associated with organic food purchase was 0.80 (95% CI 0.68–0.93). The association remained significant after additional adjustment for BMI with OR of 0.80 (0.69–0.94). Conclusions: In a nationally representative population, frequent organic food purchase was inversely associated with diabetes prevalence in adults in the United States.

Organic foods are grown using the principles of organic agriculture that are produced, processed and packaged without using chemicals. They have been accepted due to their several perceived benefits over the conventional food. Health aspects of organic food are, in addition to the ethical, environmental, hedonic and “feel good” aspects, the main benefits that the consumers appreciate in organic food. This paper presents the results of a quantitative survey in the Czech organic food market. By using the factor analysis, it showed that the consumer perception of the health benefits of organic food can be viewed from several different angles. There were found three factors that explain 58.42% of variability, which are, based on their relationship with the original items, interpreted as the “knowledge and responsibility”, “being aware, but lax” and “health is important, but not related to food”. The first factor contains enough knowledge related to the health care, the conviction of the importance of food choice regarding health and the active interest and effort to do something for one’s health. The second factor contains enough knowledge related to health care, but is lacking the interest to apply the knowledge and to do something for one’s health, and the third factor contains the conviction that health is an important asset, but the perception of the connection between one’s health and food is absent.

AbstractBackground: With environmental pollution increasing, interest in organic farming and organic foodstuffs has been growing all over the world. Data on organic food consumption by Lithuanian athletes is not yet available. This lack of data determined the aim of this study: to identify the particulars of organic foodstuff consumption among athletes. Methods: In September–November 2012, we polled 158 of the best-performing athletes of the Olympic sports team through direct interviews. An approved questionnaire was used to identify the specifics of organic foodstuff consumption among athletes. Results: The survey results showed that 97% of athletes consume organic foodstuffs, and 80% of athletes highlighted the positive impact of organic food on health. Nevertheless, a slim majority of athletes (51.7%) consume organic foodstuffs seldomly, 2–3 times per week. The range of organic foodstuffs consumed depends on the gender of athletes, and the consumption of some products depends on monthly incomes. Conclusions: Survey results confirm the need for the production and expansion of the variety of organic foodstuffs. In the course of the development of the organic food market, it should be beneficial for manufacturers to target high-performance athletes and physically active people.

Competitiveness is the main driving force to the stable prosperity of a country and the increase of its citizens’ welfare. Agriculture is an important part of the economy of any country. The processing industries are a powerful driving force for rural development. The necessary prerequisite to ensure food security of any country is the successful development of the food market. In Ukraine approximately 10 thousand companies are involved in the food production. The food industry is among the leaders in terms of foreign direct investment into the industry of Ukraine. Transnational corporations are actively operating in the field of food production in Ukraine. Today's food industry is under great consumer attack. Consumer demands have served to increase the number of food products to 7,800; about 3,300–3,500 new products are introduced annually. Nearly all new products can be classified as convenience foods. With such a rapidly changing market, consumer confidence in the food industry has been lost and, because of confusion created, the consumer has become increasingly fearful of chemically contaminated foods. This fear is substantiated by increased public interest in so-called organic foods or organically-grown foods, proliferation of health food stores, and introduction of health food sections into supermarket chains. It is estimated that there are some 7 million organic food consumers, and that sales of natural foods (organic) will reach $500 million in 1972. Today only a limited number of organic farms and wholesalers of organic foods exist. The opportunity for fraud is great. A sign over an organic food section, or a label claiming “organic,” does not guarantee that the food was produced by organic methods. Since there is nothing unique about organic foods that differentiates them from products grown by conventional means, governmental agencies are reluctant to issue standards controlling movement of these products.

A substantial literature demonstrates how social movements pioneer new economic spaces, engaging in activities that create the conditions for new markets. This article applies this insight to the creation of the organic food market in Australia. In doing so, it makes three contributions. First, it highlights the importance of judgement devices – notably a certification scheme – in the making of this market, given that organic and non-organic produce are visually indistinguishable. Second, it describes how judgement devices for organic foods draw commodity markets for mainstream agricultural foods into the symbolic realm, where health, ethical and aesthetic considerations inform value. Third, it demonstrates the socio-political construction of judgement devices, over and above their functional purposes. Specifically, it describes the struggle between challenger social movements and incumbent businesses in creating and promoting competing judgement devices directed towards the designation of value in new markets.
