The quality of frozen foods can be negatively affected if improper storage and distribution temperatures are allowed. The objective of this study was to investigate the effect of freeze-thaw cycles, which may occur in the cold chain, on colour (Lab, Total Colour Differences (TCD), chroma and hue angle) and vitamin C (ascorbic and dehydroascorbic acids) content of frozen strawberries (Fragaria ×ananassa, Duschesne, cv. Selva). A plan of temperature abuses (TAs) was established, based on a real situation, and applied to frozen strawberries during a four month frozen storage period. The results showed that the lightness (L) was the only parameter that was not significantly affected by range of TAs studied. The colour showed some variation on the parameters a, b, TCD, chroma and hue angle. During TAs, ascorbic acid decreased about 75% and dehydroascorbic acid increased 73%. The non-abused strawberry samples showed better overall appearance than the abused samples.This work contributes to an understanding of the quality changes of frozen strawberries that might occur during frozen storage and cold chain distribution.

Purpose More than 50 per cent of all German households own a freezing appliance and so far the market of frozen foods is constantly increasing (1 per cent from 2017 to 2018). Despite frozen foods playing an important role in our everyday life, little is known about the consumer’s habits at home. The purpose of this paper is to uncover gaps in the knowledge about consumer behaviour when handling frozen food. Moreover, the impact of consumers on the quality of frozen products should be assessed. Design/methodology/approach A representative online survey was carried out to investigate different aspects of consumer behaviour concerning frozen foods. Respondents (n=2,053) were questioned about their general handling habits regarding eight different food groups: fruit, vegetables, meat, fish, bread, pastries, ready-to-eat meals and leftovers. The focus was on freezing, pre-handling, packaging and thawing – depending on the age of those questioned and combined with best practice advice regarding quality storage of frozen products. Findings Most Germans have the opportunity to freeze food and keep their freezers full or medium loaded. Older participants act more efficiently towards quality storage, but more education about freezing and frozen storage would be generally helpful to maintain quality of frozen foods and increase utilisation of freezers, using their full preservation potential. Research limitations/implications No open questions were asked due to the scope of more than 2,000 participants, which, in retrospect, would have been instructive. Originality/value Consumer handling of frozen food in Germany was investigated in a representative way for the first time, covering age groups from 18 to 69 and household sizes from 1 to >4 people, focussing on eight major food groups.

As a new social e-commerce model, community group purchase of fresh agricultural products has been gradually welcomed by the public. However, its development and operation still face homogeneous competition problems. In order to enhance competitive advantages of operators, this paper proposes a collaborative optimization mechanism, including a new pricing model and a new cold chain vehicle route planning model. It aims to ensure the quality of fresh products, reduce logistics costs, and improve enterprise profitability. The model takes into account not only the quality of fresh products and their impact on price and demand but also the impact of quality changes on total distribution costs. A two-layer programming method is applied to realize the collaborative optimization mechanism, and then the upper and lower models are solved by mathematical derivation, proof methods, and optimization procedures, respectively. Finally, the feasibility and effectiveness of the model are verified by combining with specific examples, and the following conclusions are obtained: price, delivery quality, and total profit increase with the increase of potential market demand rate. The lower the refrigeration temperature of the vehicle we choose within a certain range, the higher the quality can be obtained. In order to obtain the highest profit, community group purchase operators can choose a higher distribution temperature on the premise that they can guarantee that the quality of fresh agricultural products can be at an appropriate level.

Wine flavor undergoes major changes during bottle aging and can be influenced by the type of closure. The interaction between wine, the type of closure and the external environment has the potential to significantly influence the overall quality of bottled wines, especially when the storage period is relatively long (more than five years). Therefore, the choice of closure (cork, synthetic or screw cap) deserves special attention in order to establish the ideal sealing conditions for optimizing wine flavor attributes. The contribution of different closures to the quality of bottled wine is through mass transfer phenomena, including permeation, sorption (scalping) or desorption of chemicals between closure materials and wines. Thus, this article aims to review the impact of different closures on the flavor composition of wines during post-bottling conditions. The implications of closures on wine sensory properties are also discussed.

A study was conducted to evaluate the proximate composition of fresh and salt-boiled prawn stored at -200 C. The study was focused on comparative study on proximate composition, nutritional status and quality of the prawn in wet matter basis. The collected fresh prawns were boiled in 2.5% brine for 15 minutes followed by freezing at -200 C to evaluate the quality of prawns at 16 weeks period of frozen storage. The sample was stored separately in individual boxes for every experimental uses. The proximate composition of the sample during frozen storage (16 weeks) was evaluated by studying organoleptic assessments, protein, lipid, ash, moisture and TVBN. The fresh prawn during frozen storage was organoleptically accepted up to 12 weeks but unaccepted after 16 weeks of storage whereas the salt-boiled frozen prawn was remained acceptable after 16 weeks of frozen storage at -200C. The initial protein content of fresh prawn was decreased gradually with the storage period. At the end of the 16 weeks of frozen storage, initial protein content of fresh prawn was decreased from 22.36 ±0.45% to 16.24 ±0.27% and protein content of salt-boiled prawn was decreased from 29.69 ±0.28% to 22.89 ±0.29%. The initial lipidcontent of fresh prawn decreased gradually with the storage period and at the end of the 16 weeks frozen storage it decreased from 2.4±0.16% to 1.24 ±0.13% and for the salt-boiled frozen prawn it decreased from2.56 ±0.11% to 1.68 ±0.26%. The initial ash content of fresh prawn decreased gradually with the storage period and at the end of the 16 weeks frozen storage, it decreased from 2.42±0.21% to 1.52±0.23%, whereas for salt-boiled prawn it decreased from2.89 ±0.19% to 1.93 ±0.18%.The initial TVB-N content increased gradually with the storage period and at the end of the 16 weeks of frozen storage it increased from 10.23±0.26 mg/100g to 32.01±1.36 mg/100g in fresh frozen prawn, where in the salt-boiled prawn, it was increased from 8.35 ±0.28 mg/100g to16.82 ±1.09mg/100g. From the findings it can be concluded that, the quality & nutritional composition of the salt-boiled prawn remains better than that of fresh un-boiled one during long storage period. So, the process for frozen storage of salt-boiled prawn at -200 C can be considered as a new approach in fish preservation.Res. Agric., Livest. Fish.3(1): 241-250, April 2016

This study aim was to determine the effect of washing and raw materials on frozen storage on the quality of surimi and kamaboko from raw material of tilapia (Oreochromis sp). There were three types of raw materials used, namely minced fish, surimi, and surimi with addition of sorbitol, with three washing treatments and four weeks frozen storage period observed every week. The method used consisted of measurements of pH, water content, bite test, and folding test. Then the results obtained for the best kamaboko tilapia (Oreochromis sp) were obtained from fillet raw materials compared to the raw material of Minced fish and raw materials of Minced Fish + Sorbitol, with a frequency of washing once and frozen storage for 3 weeks.

Feedstock degradation is a major source of financial risk for cellulosic biorefineries. To assess the impact of the feedstock loss and quality during storage, this study explored interactions of moisture content and temperature on the degradation of biomass. Specifically, this study evaluated the dry matter loss and compositional change of corn stover during storage conditions common at industrial biomass storage facilities. This lab-scale study allowed for increased measurement precision associated with quantifying how biomass degradation changes the quality of stored biomass. Results of this work define stable biomass storage moisture content of less than 20% in which there is low risk for degradation over time. At moisture levels above 20%, biomass degradation will be prevalent with hemicellulose being the most degraded fraction of the feedstock. Additionally, results demonstrate that temperature has a minimal impact on biomass degradation in non-frozen storage conditions.

Rumour and speculation abound within the dental profession about practitioners withdrawing from the NHS to deliver more private dentistry. Due to an absence of effective monitoring or research into this issue the real situation is unclear. We decided to find out what proportions of the gross incomes of general dental practitioners in the East Riding Health Authority were generated by private dentistry. We also sought to establish if they perceived any differences between the quality of their private and NHS work. Our findings and the issues raised are considered for general dental practitioners, for people residing in the authority, and for managers and policy makers. We conclude that the effective management of the supply of NHS dentistry should include a method of systematic monitoring of trends in the delivery of private dental services and the impact on the availability of NHS care. Effective measures are also needed to influence the number and location of dentists in health authorities in England and Wales to ensure adequate and equitable access to NHS dentistry.

The objective of this study was to determine the quality of meat (Longissimus thoracis et lumborum) from 10 female roe deer (Capreolus capreolus L.), which was vacuum-packaged, frozen-stored (−26°C) for 6, 10, and 12 months, and compared with fresh, nonfrozen meat. Roe deer (aged 3 to 5 years) were hunter-harvested in north-eastern Poland in December and January during the same hunting season. Frozen storage did not affect the proximate chemical composition of meat (except for ash content). An analysis of the physicochemical properties of meat revealed that frozen-stored meat was characterized by a darker color, a higher hue angle, lower ability to bind its own and added water, and lower cooking loss compared with nonfrozen meat. The values noted for meat samples that were stored in the freezer for 12 months (increase in pH, considerable decrease in water-holding capacity, and first symptoms of flavor deterioration) indicate that frozen roe deer meat should be stored for no more than 10 to 12 months to maintain its high quality.

This study compares between different selenium forms (sodium selenite; SeS, selenomethionine; Met-Se or nano-Se) and levels on growth performance, Se retention, antioxidative potential of fresh and frozen meat, and genes related to oxidative stress in Ross broilers. Birds (n = 450) were randomly divided into nine experimental groups with five replicates in each and were fed diets supplemented with 0.3, 0.45, and 0.6 mg Se/kg as (SeS, Met-Se), or nano-Se. For overall growth performance, dietary inclusion of Met-Se or nano-Se significantly increased (p < 0.05) body weight gain and improved the feed conversion ratio of Ross broiler chicks at the level of 0.45 and 0.6 mg/kg when compared with the group fed the same level of SeS. Se sources and levels significantly affected (p < 0.05) its concentrations in breast muscle, liver, and serum. Moreover, Se retention in muscle was higher (p < 0.05) after feeding of broiler chicks on a diet supplemented with Met-Se or nano-Se compared to the SeS group, especially at 0.6 mg/kg. Additionally, higher dietary levels from Met-Se or nano-Se significantly reduced oxidative changes in breast and thigh meat in the fresh state and after a four-week storage period and increased muscular pH after 24 h of slaughter. Also, broiler’s meat in the Met-Se and nano-Se groups showed cooking loss and lower drip compared to the SeS group (p < 0.05). In the liver, the mRNA expression levels of glutathione peroxidase, superoxide dismutase, and catalase were elevated by increasing dietary Se levels from Met-Se and nano-Se groups up to 0.6 mg/kg when compared with SeS. Therefore, dietary supplementation with 0.6 mg/kg Met-Se and nano-Se improved growth performance and were more efficiently retained than with SeS. Both sources of selenium (Met-Se and nano-Se) downregulated the oxidation processes of meat during the first four weeks of frozen storage, especially in thigh meat, compared with an inorganic source. Finally, dietary supplementation of Met-Se and nano-Se produced acceptable Se levels in chicken meat offered for consumers.
