Currently, Strategy for Improving the Food Products Quality in the Russian Federation until 2030 identifies the need to develop new food products as one of the important state tasks; the quality improvement of raw materials used, the nutritional and biological value of finished products and expanding its range are an urgent area of scientific research. Flour culinary products are no exception. These products made from traditional wheat flour of the highest grade have low nutritional value, high calorie, lack of vitamins and minerals. In order to increase the biological value of flour culinary products, a man adds food additives and biologically active substances; uses non-traditional raw materials for the production. The article considers the possibility of using non-traditional flour types mixtures instead of wheat flour of the highest grade in the production of flour culinary products (pancakes). The researchers developed the optimal dosage for adding mixtures of rice and corn, rice and amaranth, rice and soya flour to the product formulations. They studied comprehensively the regulated indicators of product quality and safety: organoleptic, physical and chemical, microbiological; run the comparative analysis of samples from non-traditional types of flour with a control sample. The authors developed the pancakes technology in the form of baking it in a convection steamer with a complete replacement of wheat flour with a mixture of rice and corn, rice and amaranth, rice and soya flour. They compiled technological maps and formulated a technical document package on the products range.

The purpose - improve the quality of pig farming production through the use of functional feed additive at the final stage of feeding. The additive ingredients (in %): vitamin E - 0,32; vitamin D₃ - 0,30; vitamin C - 0,30; vitamin B₄ - 1,56; vitamin B₁₂ - 0,004; betaine - 10,00; %; bentonite - 77,166; Omek J – 0,15%; selen - 0,2 %; soya flour (filling substance) - 10,00. Components activity: vitamin E-50,0 of %; D₃ - 0,15,0 thousand ME in 1g; B₄ - 60,0 %; B₁₂ - 1,0%; Omek J - 2,0%; seleno-KI - 0,2 %. The functional feed additive is approved on fattened pigs of large white breed. Animals from control group received the mixed fodder constantly used in a factory, skilled - same as well as control, but the containing 1 % of the additive within 10 days before slaughter. Growth, some indicators of a metabolism, quality of meat are studied.

A research on developing a technology of iodine-enriched soya flour has been conducted. The technology developed will allow the body to receive organic forms of this micronutrient, the deficiency in which causes thyroid disorders in 40% of Ukrainians and 35% of people throughout Europe. The research has shown that promising soya bean varieties to be enriched with iodine are the early-ripening varieties Almaz, Anzhelika, Kyivska 98, Faeton, Medeya, PSV 808, Podyaka, Khortytsya, Yug 30, Rusa. They are the highest in protein (42.75% on average), the maximum content of which is necessary for iodine accumulation. Besides, their cropping period is short (up to 95–105 days), which is cost-effective for a manufacturing enterprise, because there is no overlapping with the winter crops sowing time and thus, there are no periods when cultivation areas remain idle. The following parameters of steeping soya beans have been found rational: the iodine concentration in the solution 98-100 μg/g, the duration of steeping 48 hours. The mass fraction of iodine in the steeped soya beans is 126 μg/g. Longer steeping leads to microbiological spoilage of sprouted soya beans. It has been determined how iodine is distributed in cotyledons, sprouts, seed coats, and whole sprouted soya beans. This has allowed establishing that in a whole sprouted soya bean of the early-ripening soya variety Almaz, the iodine content is 126 μg/g, of which 123 μg/g is accumulated in the cotyledons of a seed, and 3 μg/g in the sprouts and the seed coats. This indicates a high level of iodine conversion into the organic form when soya seeds are steeped in potassium iodide solution. A technology of manufacturing iodine-enriched flour from sprouted soya beans has been developed. It differs from the control one in that soya seeds, washed and disinfected, are soaked in potassium iodide solution (with the iodine concentration 98–100 μg/g and the hydromodulus 1:2) for 48 hours at the solution temperature 14-16°С. Flour from sprouted soya beans contains 126 μg/g of iodine. The technology suggested can be used at hotel and catering enterprises, in sanatoria and health centres, to treat iodine-deficiency disorders, and to make food for people who need special dietetic nutrition.

The study of effectiveness of the use of protein feeding bees was carried out in the conditions of the apiary ALLC “Volodymyr” in village Shershni Tyvriv district of Vinnytsia oblast. According to the principle of analogous groups were selected bee colonies for the formation of experimental groups. Protein feed was moistened with 50% sugar syrup and filled in the honeycomb. According to the experimental scheme during the preparatory period the bee colonies of the experimental groups II, III and IV were fed a feed mixture in an amount of 25 g per day. According to the experimental scheme during the main period bee colonies were fed a feed mixture of 70 g per day. Accounting of bees brood on the set dates was carried out at the expense of a grid frame every 12 days. Commercial honey was determined by weighing after pumping from each bee colonies separately. Forage honey was determined by weighing the honeycomb and then subtracting the conditional mass of the honeycomb. During the experimental Ukrainian breed bee colonies were involved which they were kept in long hive. Care and maintenance for bee colonies were the same. It was studied the effectiveness of using combined protein feeds in bee feeding. It is proved that in the spring during the harvesting honey use protein feeds (defatted soya flour with soy peptides and pollen) for feeding bees has a positive effect on the brood rearing by bee colonies and the production of honey and wax in the following sequence: defatted soya flour and pollen (50 % + 50 %) defatted soya flour and soy peptides (50 % + 50 %) defatted soya flour (100 %).

The good use of food is one of the fundamental points of the food security of the populations especially in the developing countries. Therefore, for convincing results, the methods of strengthening nutritional knowledge by improving the culinary practices of vulnerable populations must take into account the dietary habits of the targets. The objective of the present study was to contribute to the consumption of the project crops to develop food formulations. In practice, eight (8) cornmeal formulas using soybeans and orange-fleshed sweet potatoes have been proposed and submitted to the grantees. The different proportions of ingredient to be mixed were obtained by the Pearson's Square method. Analysis of the sensory evaluation data was possible to the Statistical Package for Social Sciences (SPSS) software version 21 and the different results were presented in the form of radar graphs. The results showed that simultaneously flours and “kabato” accepted by the populations of the study area were formulations of: - E: 72.26 percent of maize flour and 27.74 percent of sweet potato flour - F: 53.76 percent of corn flour and 46.24 percent of sweet potato flour - G: 89.3 percent of composite flour (maize and sweet potato) and 10.7 percent of soya flour - H: 78.09 percent of composite flour (maize and sweet potato) and 21.91 percent of soya flour So, it can be envisaged to implement a strategy for a better vulgarization of these methods.

Poultry meat is a valuable source of protein for human consumption. It plays an important role in countries with poor ungulate meat production, including the Republic of Kazakhstan. The intake of fibre by the Kazakh population also remains low, while the intake of saturated fatty acids is excessive. Therefore, it is recommended to combine meat with plant products, e.g. soya flour. In the present research, we developed and evaluated a new meatball product containing different amounts of soya flour. The meatballs proved to be a semi-finished high-protein product. They also demonstrated a good fatty acid and mineral profile. The product with 30% of soya flour showed the best results: 27% of protein, low content of saturated fatty acid, and shelf life of 48 h. To extend the shelf life of the meatballs under refrigerator conditions, new disinfection methods should be developed.
