PurposePrevious research has shown that in contemporary societies, women have a healthier dietary intake than men. However, no research has examined how this gender gap develops over the long term. The present study examined how gender differences in fresh vegetable intake frequency have evolved from 1979 to 2017 in Finland and whether differences are affected by age or educational level.Design/methodology/approachThe data were derived from annually repeated, nationally representative “Health Behaviour and Health among the Finnish Adult Population” and “Regional Health and Well-being (RHW)” surveys on the health habits of the Finnish population. The dataset is a time series of repeated cross-sectional surveys. In total, the data sample comprised 161,996 Finns aged 20–64 years. Descriptive methods and logistic regression were used for the analysis.FindingsDuring 1979–2017, the prevalence of daily vegetable intake increased from 12 to 35% among men and from 18 to 56% among women. Thus, the magnitude of the gap between genders doubled across the study period. The increased vegetable intake was partly explained by the changing education and age structures of society. Potential explanations and avenues for future research are also discussed. Policy implications depend on whether the findings are interpreted as a case of health differences or health inequality.Originality/valueThis study used a long time series to analyse how gender differences in vegetable intake have evolved in a Nordic welfare state context. It showed that the gap in fresh vegetable intake between men and women has widened.

Fresh vegetables are frequently used to prepare fresh salad dishes widely consumed in the world. They are known to be the main source of pathogenic intestinal parasites. In this context, the present work aimed to (a) detect the pathogenic intestinal parasites (PIP) in washed fresh vegetables, and (b) assess the exposure to PIP in the city of Ain Témouchent (Algeria). In fact, 26 samples belonging to six groups of fresh vegetables (cabbages, lettuces, leeks, radishes, peppers and tomatoes) were collected, washed (similarly to domestic wash with or without vinegar addition), then examined for PIP contamination. The results indicated that 90% of the examined vegetable samples were contaminated with intestinal parasites showing higher prevalence in lettuce (70.85%) while the lowest contamination (23.52%) was reported in pepper. In addition, Cryptosperidium (72%) has been found to be the most dominant parasite in all vegetables while Toxocara (8%) was less present. These finding are a preliminary report to conduct a risk assessment of PIP linked to vegetable feeding

The desire for a healthy lifestyle and faster mode of preparation has supported the consumption of ready to eat fresh salad. Street vended salads are recognized as a source of pathogenic transamination in different parts of the world. The present study was designed to evaluate the safety status of fresh vegetable and Russian salads being sold at various food outlets of Faisalabad. Samples of freshly prepared salads were collected from representative selected different areas of Faisalabad city divided into four different zones (zone 1, zone 2, zone 3 and zone 4). Prevalence and enumeration of Listeria was done through microbial testing via the spread plate method. Among samples of vegetable salad, highest prevalence of Listeria was found in the zone 2 (75%) whereas Russian salad samples from zones 1 and 3 exhibited 62% prevalence, the highest among all 4 zones of study. On the whole, the lowest prevalence of Listeria was found in zone 4 (50% vegetable salad and 58% Russian salad). Biochemical conformation of Listeria done through different tests for the identification of various Listeria species, exhibited that Listeria monocytogenes and Listeria innocua were highly prevalent in samples from zones 1 and 3 respectively. The results will help to improve safety concerns associated with street vended foods.

Listeriosis is a foodborne infectious disease caused by Listeria monocytogenes and is considered a serious health problem, due to the severity of symptoms and a high mortality rate in worldwide This study aims to identify and determine the prevalence of Listeria species through prs gene screening of fresh vegetables distributed in several markets of Makassar City. A total of 57 fresh vegetable samples were collected from February to May 2019 in four traditional markets Makassar. The isolates is examines to phenotypically and genotypically Vitek and Multiplex PCR with prs and lmo1030 primer. Phenotype analysis did not show the presence of Listeria species, but the results of genotypic was found 8 positive prs gene samples (14.03%), consisting of 31.2% long beans, 18.2% cabbage, and 9.1% cucumber and. All Listeria species found in this study is Listeria monocytogenes. This study also provide information and additional data that prs genes can be used as screening genotype for identify Listeria species in fresh vegetables.

Objective: The objective of the study is to explore the prevalence of mild to severe depressive symptoms in elderly stroke survivors and its associated factors.Methods: We did data analyses of 335 elders with stroke history. Data were collected in a survey conducted between 2014 and 2015, among permanent residents aged 60 and older in Zhejiang Province, China. Prevalence of mild to severe depressive symptoms among stroke survivors were calculated, and univariate analyses and multilevel logistic regression were used to explore its associated factors.Results: Prevalence of mild to severe depressive symptoms was 22.09% (95% CI: 17.65–26.53%) in elders with stroke history, more than twice compared to their counterparts not suffering stroke (9.77%, P < 0.001). In multilevel logistic regression, we found that elderly stroke survivors who were illiterate (OR = 2.33, p = 0.008), or had limitation in activities of daily living (OR = 3.04, p = 0.001) were more likely to be present with mild to severe depressive symptoms, respectively, while those with more fresh vegetable consumption were at lower odds (OR = 0.82, p = 0.047).Conclusions: Prevalence of mild to severe depressive symptoms was high in elderly stroke survivors. Targeted screening might be needed for those being illiterate, disabled in activities of daily living, and having little consumption of fresh vegetable. The association between fresh vegetable consumption and depressive symptom in stroke patients calls for further research.

The effect of steam and sous-vide oven procedures on liposoluble antioxidants of colored cauliflower (orange and purple) was assessed for the first time and compared with domestic practice (boiling). In raw samples, the total carotenoid content was 10-fold higher in Cheddar than in Depurple (20.9 ± 2.1 vs. 2.3 ± 0.5 mg/kg dry weight), whereas the level of tocopherols was similar (28.5 ± 4.4 vs. 33 ± 5.2 mg/kg dry weight). The Cheddar liposoluble antioxidant matter contained violaxanthin, neoxanthin, α-carotene and δ-tocopherol, not detected in Depurple. All tests increased the bioactive compounds extractability with steam oven and sous-vide displaying similar effects, lower than boiling. In boiled Cheddar cauliflower, the total carotenoids and tocopherols contents increased with cooking time until they were 13-fold and 6-fold more than in raw cauliflower, respectively. Conversely, in the Depurple variety, contents increased by half with respect to the orange variety. However, from a nutritional point of view, no differences were revealed among the three different cooking treatments in terms of vitamin A and E levels expressed in μg/100 g of fresh vegetable because of the higher water content of boiled samples that must be considered when evaluating the effect of thermal treatment on cauliflower nutritional traits.

Abstract. This paper investigates the spatial differences in fresh vegetable spending in Guilford County, North Carolina. We create a geo-coded spatial-temporal database for both human factors and natural factors to understand why food deserts have become a serious issue in a county with many farming activities. We find that residents living in food deserts do not buy enough fresh vegetables compared with their counterparts, even when they are shopping at full-service grocery stores. Social-economic factors are most sensitive and are important determinants of fresh food demand. Using an agent-based toy model, we find that fresh vegetable demand in each census tract in Guilford County varies to a large extent. The results suggest that the formation of food deserts may root from the demand side.

IntroductionPoor diet is the leading cause of poor health in USA, with fresh vegetable consumption below recommended levels. We aimed to assess the impact of medical prescriptions for fresh (defined as picked within 72 hours) vegetables, at no cost to participants on cardiometabolic outcomes among adults (predominantly Mexican-American women) with or at risk of type 2 diabetes (T2D).MethodsBetween February 2019 and March 2020, 159 participants (122 female, 75% of Mexican heritage, 31% with non-insulin treated T2D, age 52.5 (13.2) years) were recruited using community outreach materials in English and Spanish, and received prescriptions for 21 servings/week of fresh vegetable for 10 weeks. Pre-post comparisons were made of weight; waist circumference; blood pressure; Hemoglobin A1c (HbA1c, a measure of long-term blood glucose control); self-reported sleep, mood and pain; vegetable, tortilla and soda consumption. After obtaining devices for this study, 66 of 72 participants asked, agreed to wear blinded continuous glucose monitors (CGM).ResultsPaired data were available for 131 participants. Over 3 months, waist circumference fell (−0.77 (95% CI −1.42 to 0.12) cm, p=0.022), as did systolic blood pressure (SBP) (−2.42 (95% CI −4.56 to 0.28) mm Hg, p=0.037), which was greater among individuals with baseline SBP >130 mm Hg (−7.5 (95% CI −12.4 to 2.6) mm Hg, p=0.005). Weight reduced by −0.4 (−0.7 to –0.04) kg, p=0.029 among women. For participants with baseline HbA1c >7.0%, HbA1c fell by −0.35 (-0.8 to –0.1), p=0.009. For participants with paired CGM data (n=40), time in range 70–180 mg/dL improved (from 97.4% to 98.9%, p<0.01). Food insecurity (p<0.001), tortilla (p<0.0001) and soda (p=0.013) consumption significantly decreased. Self-reported sleep, mood and pain level scores also improved (all p<0.01).ConclusionsMedical prescriptions for fresh vegetables were associated with clinically relevant improvements in cardiovascular risk factors and quality of life variables (sleep, mood and pain level) in adults (predominantly Mexican-American and female) with or at risk of T2D.Trial registration numberClinicalTrials.gov Identifier: NCT03940300.
