In August 2020, 377 anthracnose strains were isolated from anthracnose-infected peppers collected from 25 farms in Sunchang-gun, Jeollabuk-do. Inhibition rate of mycelial growth of 11 pepper anthracnose fungicides registered in Korea was investigated for 62 strains selected by region and the degree of susceptibility to each fungicide was investigated. As a result of the fungicide susceptibility test of anthracnose to the fungicide, no resistant strains were observed in fluazinam, prochloraz manganese, and benomyl, but resistant strains appeared in at least three areas for other fungicides, and all strains in all regions were resistant to dithianon. Through this, it was confirmed that the fungicide resistance was expressed in the strain group due to the continuous treatment of the fungicide in some areas. By region, resistant strains to seven pesticides appeared in Sunchang-eup and Paldeok-myeon, and resistant strains to six pesticides appeared in Geumgwa-myeon, Bokheung-myeon, Ssangchi-myeon, Yudeung-myeon, and Pungsan-myeon. There was no significant correlation between fungicide registration time and emergence of resistant strains.

Dried red peppers are frequently contaminated with mycotoxins during storage. To determine the effect of storage environments on fungal occurrence and subsequent mycotoxin accumulation in dried red peppers, we monitored red pepper powder and whole fruit samples for fungal occurrence under various temperatures and relative humidity (RH) conditions during 340 days. Fungal occurrences fluctuated in both pepper forms throughout the storage but they were higher in pepper powder than whole one, higher under low temperatures (-20°C, 0°C, or 4°C) than others (10°C, 25°C, or 30°C), and higher under RH 93% than RH 51% and 69% in both peppers. The samples exhibiting high fungal occurrences were associated mainly with dominant species such as Aspergillus sydowii, Penicillium solitum, P. roqueforti, P. polonicum, or P. chrysogenum. Mycotoxigenic species, including A. flavus, A. ochraceus, A. westerdijkiae, A. tubingensis, and P. citrinum, were also detected throughout the samples. Although mycotoxins were not detected in the samples, mycotoxigenic potential of A. flavus, A. ochraceus, and A. westerdijkiae isolates were confirmed. These results show that low temperatures (-20°C, 0°C, or 4°C) and/or high surrounding RH (>93%) are not safe environments for storage of dried red peppers as fungal growth can occur under these conditions.

This pilot study was conducted to compare eco-physiological responses to starfish (SF)-treated red peppers (Capsicum annuum L.) in organic open-field (OF) and greenhouse (GH) cultivations in commercial farmhouses, South Korea in 2019. Treatments included starfish-liquid fertilizer (LF) applied in OF (SF-OF) and GH (SF-GH) plots, and SF + seaweed in OF (SFS-OF) and GH (SFS-GH). Weekly pH levels in SFS-LF were fluctuated for a 16-week storage period at room temperature due to having higher soluble salt levels than those of SF-LF. All experimental plots were ranged on soil pH between 7.1 and 7.4. SF- and SFS-GH plots resulted in increased soil electrical conductivity, organic matter, and increased concentrations of total nitrogen, phosphorous pentoxide, potassium oxide, and magnesium oxide, as well as exhibiting a richer and more diverse bacterial community. Leaf width and length and plant height increased in plants cultivated in GH, with low canopy width and stem diameter also observed to have increased. Total fruit yields were approximately two times higher for peppers cultivated in GH compared to OF cultivated peppers.

Functional food consumption is shown to have a positive effect on anthropometric parameters and human health promotion. In addition, consumers seem to be more interested in food choices, that may have a positive effect on their health. The current study aimed to identify the antioxidant and phenolic content of naturally functional foods from the Mediterranean diet and to investigate consumer behavior towards their consumption in terms of their weight control, as well as their purchasing behavior and knowledge of functional foods. For this purpose, blueberries, cranberries, pomegranate, grapefruit, red peppers, almonds and mountain tea were analyzed for their phenolic content and antioxidant capacity, using the Folin-Ciocalteau and Ferric Reducing Antioxidant Power assays, respectively. Furthermore, nine hundred forty-nine healthy Greek adults participated in an epidemiological study, by completing a validated food frequency questionnaire, for the consumption of the above investigated functional foods. Five hundred and fifty participants also completed an online questionnaire investigating factors that consumers evaluate when purchasing functional foods. Study results showed that the analyzed functional foods were high in antioxidants and phenolic compounds, especially the mountain tea. The increased consumption of cranberries, pomegranate, grapefruit, red peppers and mountain tea was significantly correlated with a decreased Body Mass Index, suggesting a possible positive role, in weight control. Participants seemed to be aware of the beneficial role of these specific investigated Mediterranean functional foods to human health. They evaluated the price, taste and nutritional value, as critical factors to buy these food products. A combination of factors seems to lead them to purchase and consume these functional foods. Future epidemiological and clinical studies should be conducted in order to further evaluate consumer preferences and bioactivity mechanisms related to Mediterranean functional food consumption.

The use of pesticides is a common practice in modern agriculture. To increase and to ensure the security in people nutrition, two comparative chromatographic methods (GC-MS and HPLC-DAD) for fungicide residues detection and monitoring in some fruits and vegetables were tested. Some vegetables, eggplants, cucumbers, red potatoes, white potatoes, red peppers and fruits, plums, apples, lemons, grapes, clementines, were analyzed for fungicide residues quantification. The presence of Tebuconazole, Boscalid, Iprodione and Imazalil was followed and quantified in the tested samples. These analyses are important for environment and end-consumers protection. Generaly, both techniques are very sensitive and selective for the analysis of pesticides at low concentrations. GC-MS presents better linearity characteristics for Tebuconazole and Imazalil, but HPLC-DAD was the most rapid method. The tested products do not contain large fungicides quantities.

Red pepper is a spice vulnerable to fungal growth and mycotoxin contamination while in the field and post-harvest during storage. Storage fungi are omnipresent and colonize fast when moisture levels go up, ultimately leading to mycotoxin production. Stored samples of the whole, crushed and ground red pepper in the Southern Indian States and Maharashtra, India were examined to isolate and characterize the prevalent contaminant fungal species. The average moisture content was below 10% for all the red pepper samples and the average total fungal load was less than 1×104 CFU/g. Crushed red pepper showed higher fungal counts than ground and whole red pepper. The identified contaminant mycoflora belonged to the group; Aspergillus, Eurotium sp., Cladosporium sp., Eupenicillium sp., Penicillium sp., Miscellaneous fungi, Neosartorya sp., Curvularia sp., and Hyphopichia sp. Aflatoxigenic Aspergillus flavus was present only in 8.3% of the crushed and 2.54% of whole red pepper samples stored for more than two months.

Abstract Background Productivity and quality of crops can be increased through polyploidy plants induced by colchicine. The use of colchicine has never been applied to Katokkon pepper, a local red pepper variety from North Toraja Indonesia. This pepper is characterized by its unique shape like the small-bell pod type of paprika and its strong spicy taste. Therefore, this study aimed to determine the effects of colchicine treatment on the ploidy level and morphological characters of Katokkon pepper. Results Flow cytometer analysis showed that all colchicine concentration treatments ranging from 0.025 to 0.1% with 24 h immersion time generated two plant groups based on their ploidy level; 50% of the total treatment plants was diploid while the rest plants were mixoploid. All colchicine treatment plants were significantly different in their width of stomata guard cells from the control plant. The effect of colchicine was also significantly on the plant height, thickness of fruit flesh, and the number of fruits per plant. Conclusions The results of this study showed that colchicine treatment had a significant effect on the ploidy level and several morphological characters of the Katokkon pepper. The colchicine treatment increased the number of fruits per plant and thicker flesh of fruits but reduced the size and weight of Katokkon pepper. Our findings provide essential information to obtain tetraploid Katokkon plants through colchicine treatment in further research. This study benefits as a preliminary step for increasing the productivity and quality of the local red peppers in Indonesia.
