Assistance robotics is presented as a means of improving the quality of life of people with disabilities, an application case is presented in assisted feeding. This paper presents the development of a system based on artificial intelligence techniques, for the grip of a glass, so that it does not slip during its manipulation by means of a robotic arm, as the liquid level varies. A faster R-CNN is used for the detection of the glass and the arm's gripper, and from the data obtained by the network, the mass of the beverage is estimated, and a delta of distance between the gripper and the liquid. These estimated values are used as inputs for a fuzzy system which has as output the torque that the motor that drives the gripper must exert. It was possible to obtain a 97.3% accuracy in the detection of the elements of interest in the environment with the faster R-CNN, and a 76% performance in the grips of the glass through the fuzzy algorithm.

Data-intensive technologies, such as artificial intelligence, imply huge opportunities for transforming the delivery of healthcare and social services, improving people’s quality of life and working in the health and welfare system. The aim of this paper is to present examples of the implementation of artificial intelligence techniques in healthcare and social services and to sketch the trends and challenges in the adoption of artificial intelligence techniques, with an emphasis on the public sector and selected public services. Analysis is based on a realistic assessment of current artificial intelligence technologies and their anticipated development. Besides the benefits and potential opportunities for healthcare and social services, there are also challenges for governments. Understanding the huge potential of artificial intelligence as well as its limitations will be a key step forward, but it is essential to avoid the trap of an overestimation of artificial intelligence potential.

Development of nutrient-dense foods is one of the most important goals of today’s food industry. High protein content of foods helps to provide energy and aminoacids for human body. In our study protein enriched filling was developed for doughnuts. The main ingredients of the product were pudding powder and egg white product (TOTu, ToTu milk, ToTu cream, and ToTu cream extra). The texture of samples was analyzed by Anton Paar Mcr 92 rheometer and the quality of products was evaluated by sensorial tests. Microbiological decontamination of HHP was investigated (500 MPa, 5 min). Our results show that high protein content did not influence the sensorial quality of filling, as long the microbiota of the products is highly improved by HHP treatment. Rheological properties is highly influenced by the concentration of egg proteins. The overall quality will be better, if egg white products are used for the product.

The growing competitiveness of the market, coupled with the increase in automation driven with the advent of Industry 4.0, highlights the importance of maintenance within organizations. At the same time, the amount of data capable of being extracted from industrial systems has increased exponentially due to the proliferation of sensors, transmission devices and data storage via Internet of Things. These data, when processed and analyzed, can provide valuable information and knowledge about the equipment, allowing a move towards predictive maintenance. Maintenance is fundamental to a company’s competitiveness, since actions taken at this level have a direct impact on aspects such as cost and quality of products. Hence, equipment failures need to be identified and resolved. Artificial Intelligence tools, in particular Machine Learning, exhibit enormous potential in the analysis of large amounts of data, now readily available, thus aiming to improve the availability of systems, reducing maintenance costs, and increasing operational performance and support in decision making. In this dissertation, Artificial Intelligence tools, more specifically Machine Learning, are applied to a set of data made available online and the specifics of this implementation are analyzed as well as the definition of methodologies, in order to provide information and tools to the maintenance area.

It has been determined that the investment activities and its strategic planning must take a leading place in the socio-economic activities and the development of food enterprises in general terms by the action of uncertainties and cyclical financial crises. This is needed to find sources of investment finance companies to maintain or improve their competitiveness, investment restructuring provision as a factor of improving the efficiency, modernization and development of new product samples as a response to the demands and challenges of the external and internal environment of the food market. Investment activity is the key for solving environmental problems and socio-economic problems that accompany the development of the food industry. Investments are needed to improve the quality of products, its standardization and certification.

The Industry 4.0 technologies are in ascension in the worldwide market, in Brazil still needs to be explored. It was made a Systematic Review to measure the application of IoT in the food industry. Some platforms were used to select works, applying the string “IoT AND Raspberry Pi AND Cheese”. It was possible to evidence the majority of IoT applications in the food industry, focus on the control of temperature, humidity, color, traceability of productive chain, and enlargement of sustainability in the food industry. The most difficulties faced in the conventional application of IoT are related to the high cost of proprietary arquitectures, qualified manpower and obstacles of data security implementation. There are alternatives that aim to reduce the costs of implementation, like the utilization of Raspberry Pi. The food industry presents potential application of technologies that aim for the quality of products, being an excellent opportunity.

Transformation is being observed in almost every sphere of life. Industries accept technological advancements by accepting artificial intelligence and automation to improve the quality of products and services and to have errorless processes. The industry has a large number of human resources, and it functions on the concept of human touch, also known as the essence of hospitality; however, with the advent of artificial intelligence, fear of losing the human resources and human touch in the industry is paramount. The authors of the chapter detail the significance of the human touch in the tourism and hospitality industry. The chapter also highlights the usage of artificial intelligence in tourism through predictive analysis, travel experiences through virtual assistance, and the digital transformation tourism and hospitality have observed mainly in the coronavirus pandemic. It ends with a discussion on artificial intelligence in tourism and hospitality as support system for human resources or enhanced service quality and customer experience.
