Defining optimal dietary intakes of Cu and Zn throughout the life cycle continues to present a considerable challenge for nutrition scientists. Although the daily intake of these micronutrients is below that currently recommended for many groups, traditional biochemical indicators of nutritional status for these trace metals largely remain within the normal range. Thus, it is unclear whether the recommended daily intakes may be unnecessarily high, or if the commonly-used markers simply lack the necessary sensitivity and specificity that are required for accurately assessing Cu and Zn status. The increasing number of reports that daily supplements with these trace metals enhance the activities of selective metalloenzymes and specific cellular and organ processes further points out the need to differentiate between meeting the requirement and providing optimal nutriture. Results from recent studies suggesting that alternative molecular and functional markers possess sufficient sensitivity to better assess Cu and Zn status are discussed. Likewise, recent studies evaluating the impact of very low and excessive levels of dietary Mn and Mo on selective biochemical and metabolic indicators are reviewed.

Daily intakes of 17 metals (boron, aluminium, chromium, manganese, nickel, copper, zinc, arsenic, selenium, molybdenum, cadmium, antimony, lead, uranium, magnesium, calcium, and iron) via drinking water and total diet were investigated in six cities in Japan. The daily metal intakes were estimated and compared with tolerable daily intake (TDI) values proposed by the WHO or Joint FAO/WHO Expert Committee on Food Additives for toxic metals and with recommended dietary allowances (RDAs) or adequate intake (AI) values proposed for essential metals by the Japanese Ministry of Health, Labour and Welfare. Among the 13 toxic metals, mean dietary intakes of 10 (except arsenic, selenium, and molybdenum) were less than 50% of TDI, suggesting that for these 10 metals the allocation of intake to drinking water in establishing guidelines or standards could possibly be increased from the normal allocation of 10–20% of TDI. For the 13 toxic metals, the contribution of drinking water to TDI was 2% or less in all six cities. Mean dietary intakes of the essential elements magnesium, calcium, and iron were less than the RDA or AI values. Drinking water did not contribute much to essential metal intake, accounting for less than 10% of RDA or AI.

The objective of this work was to quantify the impact of the voluntary fortification of foods on dietary intakes of vitamins and minerals of Irish adults. Foods that were voluntarily fortified were identified and pre- and post-fortification levels of micronutrients were determined from data supplied by manufacturers and food composition tables. Using food consumption data in 1379 adults aged 18–64 years, estimated using a 7-d food diary during the North/South Ireland Food Consumption Survey, intakes of micronutrients were determined, both including and excluding the fortification component in foods. Of approximately 3000 foods recorded as consumed, 1·9 % were fortified, mainly breakfast cereals and beverages. Median micronutrient content of fortified foods (FF) ranged from 18–33 % EC RDA per typical serving. Among consumers (65 % of men, 68 % of women), FF contributed, on average, 3·9 % (men) and 5·0 % (women) to mean daily intake (MDI) of energy. Relative to their contribution to MDI of energy, FF contribute a greater % MDI for Fe (men 16, women 19), folate (men 18, women 21), vitamins B1(men 14, women 16), B2(men 16, women 18), B6(men 12, women 15), D (men 5, women 11), B12(men 5, women 7) and niacin (men 10, women 12). Fortification significantly improved the adequacy of intake of some micronutrients, particularly of riboflavin, folate, vitamin D and Fe in women and did not contribute to an increased risk of adverse effects from excessive intake of any micronutrient.

Phytoene (PT) and phytofluene (PTF), colorless carotenoids, have largely been ignored in food science studies, food technology, and nutrition. However, they are present in commonly consumed foods and may have health-promotion effects and possible uses as cosmetics. The goal of this study is to assess the most important food sources of PT and PTF and their dietary intakes in a representative sample of the adult Spanish population. A total of 62 food samples were analyzed (58 fruit and vegetables; seven items with different varieties/color) and carotenoid data of four foods (three fruits and one processed food) were compiled. PT concentration was higher than that of PTF in all the foods analyzed. The highest PT content was found in carrot, apricot, commercial tomato juice, and orange (7.3, 2.8, 2.0, and 1.1 mg/100 g, respectively). The highest PTF level was detected in carrots, commercial tomato sauce and canned tomato, apricot, and orange juice (1.7, 1.2, 1.0, 0.6, and 0.04 mg/100 g, respectively). The daily intakes of PT and PTF were 1.89 and 0.47 mg/person/day, respectively. The major contributors to the dietary intake of PT (98%) and PTF (73%) were: carrot, tomato, orange/orange juice, apricot, and watermelon. PT and PTF are mainly supplied by vegetables (81% and 69%, respectively). Considering the color of the edible part of the foods analyzed (fruit, vegetables, sauces, and beverages), the major contributor to the daily intake of PT and PTF (about 98%) were of red/orange color.

Abstract BackgroundAlthough tubers play a significant role in Brazilian agriculture, very little is known about the intake of tubers among the Brazilian population. The objective of this study was to characterize the intake of tubers across Brazil. The types of tubers consumed were quantified, and the impact of geographic and sociodemographic factors was assessed. MethodsThis cross-sectional study is based on dietary intake data of 33,504 subjects obtained from the Brazilian National Dietary Survey. All tuber containing foods were identified, and the contribution of different tubers to overall tuber consumption in Brazil was quantified. Descriptive analyses assessed the impact of macroregion and sociodemographic characteristics on tuber consumption, and differences in intake were assessed using statistical tests. Lastly, the dietary intakes of tuber consumers and non-consumers were compared after adjusting for energy and covariates to determine if there were any major differences in dietary intakes between the two groups. ResultsFifty-five percent of the Brazilian population consumed tubers, which differed by macroregion. The intake of tubers among consumers also differed between macroregions. Overall, rural areas reported significantly higher mean daily intakes of tubers (127 g/day) among tuber consumers than urban areas (96 g/day). Mandioca and potato were the most commonly consumed tubers (59 and 43% prevalence, respectively, on any of the two days), while the highest daily intakes amongst tuber consumers across Brazil were noted for sweet potato (156 g/day) and potato (95 g/day). On a macroregion level, among tuber consumers, mandioca had the highest prevalence of consumption in the North (94%), Northeast (83%), and Central-West (68%), while consumption of potatoes was most prevalent in the Southeast (63%) and South (62%). Compared to women, small but significantly higher tuber intakes were noted for males (108 vs. 85 g/day). Amongst tuber consumers, children aged 10 to 12 consumed fewer tubers than the individuals aged 19 onwards. The highest mean daily intakes were noted amongst tuber consumers in the first income quintile (low earners) and lowest in the fifth quintile (high earners) (P<0.001). After adjusting for energy and other covariates, nutrient intakes between tuber and non-tuber consumers were not meaningfully different, with the exception of sodium (+6.0% comparing non-tuber to tuber consumers), iron (+6.1%), zinc (+5.7%), vitamin C (+8.3%), riboflavin (+9.0%), and folate (+7.9%).ConclusionsTuber consumption is influenced by regional and sociodemographic characteristics of the Brazilian population. When looking at energy-adjusted nutrient intakes, diets of tuber consumers have resulted in somewhat lower intakes of some micronutrients, namely riboflavin, folate, vitamin C, iron, sodium, and zinc

1.A total of 179 duplicate diets were collected by twenty-three women consuming their habitual diet. Twelve of the subjects were living in a residential hall for students, the others were living in their own homes or in flats. Collection periods varied from 3 to 21 d.2.Average daily intakes were: manganese 2.7 mg; copper 1.5 mg for diets not containing liver, 7.6 mg for fifteen diets containing liver; zinc 10.0 mg; cadmium 21 μg for diets not containing liver, 27μg for fifteen diets containing liver.3.The intakes were compared with values for adults from other countries and with current recommended dietary allowances or estimated minimum requirements. Mn intakes were typical for non-vegetarian Western diets. Cu and Zn intakes may have been marginally low. The intakes of Cd were low.4.Daily intakes of protein (71 g), fat (83 g), carbohydrate (224 g) and energy (8.1 MJ) from 129 of the diets were similar to recent values obtained for New Zealand women.5.Subjects living in the residential hall had higher intakes of all nutrients than subjects living in their own homes or flats.

Consumption of plant extracts can be a source of essential elements or a route of human exposure to toxicants. Metal concentrations in leaves, leaf brew, and infusion of L. javanica collected from five sites were determined by atomic absorption spectrometry after acid and aqueous extraction. Estimated daily intakes of metals in extracts were compared with recommended dietary allowances. Total metal concentrations in leaves varied with sampling sites (p<0.05): Mn > Fe > Cu > Cr > Pb for sites SS2–SS5. The highest metal concentrations in leaves were recorded for SS3 (Cu: 15.32±4.53 and Mn: 734.99±105.49), SS5 (Fe: 210.27±17.17), SS2 (Pb: 3.11±0.21), and SS4 (Cr: 4.40±0.75 mg/kg). Leaf infusion appeared to release higher Cu and Mn concentrations in leaves across sites (Cu: 21.65; Mn: 28.01%) than leaf brew (Cu: 11.95; Mn: 19.74%). Lead was not detected in leaf extracts. Estimated dietary intakes of Cr, Cu, Fe, and Mn were below recommended dietary allowances. A 250 ml cup of leaf infusion contributed 0.30–1.18% Cu and 4.46–13.83% Mn to the recommended dietary allowances of these elements per day. Lead did not pose any potential hazard when consumed in tea beverage made from brew and infusion of leaves of L. javanica.

The present study provides the dietary intakes of macro elements (Ca, Mg, Na, K, P) and trace elements (Fe, Zn, Cu, Se) from the Italian total diet. The contribution of the most representative food groups of the total diet (cereals and cereal products, vegetables, fruit, milk and dairy products, meat and meat products, fish) to the daily intakes of these nutrients was also evaluated. The Italian total diet was formulated following the ‘market-basket’ approach. Cereals represented the primary sources of Cu (35 %), Fe (30 %) and Mg (27 %). About 89 % of the total daily intake of Fe was derived from plant foods. The vegetables food group was the main source of dietary K (27 %). Most of the Ca (59 %) and P (27 %) was derived from the milk-and-dairy food group. Of the dietary Zn, 41 % was provided by meat, which, together with the fish food group, was the primary source of Se (20 %). The adequacy of the Italian total diet with respect to nutritional elements was assessed by comparing the daily intakes with the average requirement values of the Italian recommended dietary allowances. The present findings indicated that the dietary patterns of the Italian total diet were generally consistent with current Italian dietary recommendations for both macro and trace elements. The major concern was for Ca, for which daily intake was 76 % of the average recommendation for the Italian population. It should not be ruled out that there could be a potential risk of inadequate Fe intake in some segments of the population.

This study was undertaken to estimate the contribution of meat and meat products consumption to the daily intakes of trace elements (Fe, Zn, Cu, Se), heme iron, and selected B vitamins (thiamine, riboflavin, niacin) in Italy. Meat and meat products were selected on the basis of their consumption frequency reported by the most recent nationwide dietary individual survey carried out in Italy (INN-CA study). The daily intakes of total iron and heme iron were 1.65 and 1.13 mg/person/day. Zinc intake was 3.65 mg/person/day. Beef made the main contribution to iron, heme iron, and zinc daily intakes. Copper daily intake was 107.3 mug/person/day, with meat products provided the highest contribution (40 mug/person/day). Daily intake of selenium (7.14 mug/person/day) was provided mainly by poultry consumption. Thiamine intake was 228 mug/person/day, and meat products were the main source (110 mug/person/day). Riboflavin intake was 136 mug/person/day, with both beef and meat products as the main contributors (40 mug/person/day). Niacin intake was 7.53 mg/person/day, and poultry was the main source (2.28 mg/person/day). Meat and meat products were a valuable source of micronutrients, supplying 47, 48, and 24% of zinc, niacin, and thiamin daily requirements, respectively, and over 10% of iron, copper, selenium, and riboflavin daily average requirement values of the italian RDAs calculated for the population involved in the survey (INN-CA study).

A significant flux of heavy metals, among other toxins, reaches the lungs through smoking. This study reports Cd, Pb, Cu and Zn contents in tobacco of 11 brands of cigarette commonly sold in Ethiopia. The heavy metals were determined by atomic absorption spectrophotometry after wet digestion of cigarette tobacco using HNO3 and H2O2. The concentration of trace metals in the cigarettes ranged (mean) (μg/g), Cd: 1.3−7.6 (2.48±0.32), Pb: 0.50−12.50 (6.24±2.2), Cu: 2.89−25.35 (13.70±4.12) and Zn: 24.40−62.55 (36.22±7.50) while Ni was not detected in all the eleven brands of cigarettes. Comparable levels of trace metals were obtained in the tobacco of both imported and Ethiopian cigarettes. The average trace metal contents of cigarettes available in Ethiopia were Cd 1.82±0.39, Pb 4.23±0.97, Cu 10.2±3.1 and Zn 28.2±7.8 μg/cigarette and a person who smokes 20 cigarettes per day is estimated to increase his/her daily Cd, Pb, Cu and Zn retention by approximately 0.036, 0.085, 0.204, 0.564 mg/day, respectively. The results indicate that smoking and exposure to cigarette smoke is a serious problem to be taken into account when carrying out epidemiological studies on human exposure to trace metals.
