Smallholder dairy production in Kenya is one of the developing world’s success stories. Kenya's improved dairy cattle herd of more than 3 million is the largest in Africa, and significantly is held mostly by smallholders. As a result, dairy production is a major part of the agricultural sector and an important source of livelihoods for at least an estimated 600,000 smallholder farm families in Kenya (Omore et al., 1999). Compared to its neighbours, the country has a welldeveloped dairy production and processing industry, and the country has broadly managed to be self-reliant in dairy products, so that except during extreme dry years, imports are negligible.

The livestock sector, as a part of the traditional food system in Georgia, occupies a considerable portion of the national economy. Though smallholder farmers are the key suppliers at the primary stage in the food value chain, the empowerment of smallholder farmers in the dairy production system in Georgia is a questionable matter. This research study reports the results of changes in the dairy sector in Georgia (Caucasus) after becoming independent from the Soviet Union (literature survey) and how these changes are seen by experts in the dairy value chain. In addition, this study aimed to look in-depth at the dynamics of the value chain of dairy in Georgia and examine the current dairy production policies. Qualitative research was applied as the methodology for expert interviews in 2019. The findings showed the difficulties experienced by the local and national dairy market sectors in Georgia nowadays. Where these difficulties were analyzed by the parameters of the value chain, it states the impact of the current regulations and policies on the safety and the quality of dairy production in the country and the depth of social, economic, and ethical impacts on the marketing of dairy products for smallholders. Furthermore, the Sustainable Development Goals on the dairy value chain are described.

Dairy products play a significant role in the human diet, but they are often associated with high freshwater resource depletion. In Italy, the dairy sector represents more than 12% of the total turnover of the agri-food sector. Trentino Alto Adige is the first Italian region in terms of number of dairy farms, but it does not register a quantitatively consistent dairy production. Notwithstanding, it is characterized mostly by small-scale farms whose strengths are the Protected Designations of Origin and typical mountain productions. The present study aims at: (i) accounting for the virtual water VW of the main dairy products (milk, butter and cheese) produced in Trentino Alto Adige; (ii) estimating the renewable water resources based on the water flow assessment of the study area; (iii) assessing water sustainability comparing the virtual water consumption of the dairy sector at a regional level to the water availability. The findings show that the consumptive virtual water related to dairy production represents about 1% of the water availability in Trentino Alto Adige. Italy’s domestic dairy production is expanding to meet the growing demand, but the expansion of dairy farming in water-stressed regions should be avoided, preferring instead suitable mountain regions where small-scale farms represent a lively entrepreneurial substrate.

Introduction. The article describes the market and globalization exacerbate the problem of competitiveness of products, enterprises, states. The role of accounting-formation support is increasing for the management, socioeconomic and environmental basis of the competitiveness of enterprises in the livestock sector. Accounting in the agrarian sector has unquestionable success. It is demonstrated clearly by the identification of transaction and transaction costs in the livestock industry today. The importance of accounting are achievements in the agricultural sector. The accountants' attention and therefore at all levels of management are not isolated in accounting standards for these costs in the economic activity of an agricultural enterprise. Purpose. The task is to substantiate: The need to isolate the composition of transaction costs in accounting accounts. We must to ensure competitiveness in the new economic environment. It is requires accounting and information management of agricultural enterprises engaged in the livestock industry. Results. Scientists are suggest: transaction costs depend on the institutional environment in which the agrarian business operates. It makes impossible to directly influence such costs. The problem of competitiveness transaction costs are of great importance.We must require greater control at all levels of management. Изучены потребительские предпочтения молочных продуктов жителей Кемерово. Социологическое исследование проведено выборочным методом сбора информации – анкетированием взрослого населения Кемерово. Объем выборки 550 чел. Установлено, что молочные продукты употребляют ежедневно 80% респондентов, при этом 96% предпочитают отечественную продукцию. Наиболее значимыми критериями выбора для женщин являются полезность (98%), состав (78%), низкая калорийность (80%). Информированы о значимости обогащенных продуктов 83% респондентов, в основном женщины от 35 лет и старше. Необходимость обогащения молочных продуктов дефицитными компонентами осознают 57% опрошенных старше 36 лет. Приобретают и готовы употреблять молочные продукты с натуральными растительными компонентами 42%. Тыква присутствует в рационе 92% респондентов. Готовы употреблять творожный продукт с хорошими потребительскими характеристиками на основе тыквы 51%, затруднились с ответом 23%. В результате исследований составлен целевой портрет потребителя (женщина, 25–49 лет), определены критерии выбора продукта. Продукт на основе натурального сырья выбрали 78% опрошенных, продукту на основе местного растительного сырья отдали предпочтения 22% респондентов. Consumer preferences of the residents of Kemerovo regarding dairy products have been studied. The sociological research was conducted by a selective method of collecting information (questionnaires) of the adult population of Kemerovo. The sample size is 550 people. It is established that 80% of respondents use dairy products daily, while 96% prefer domestic products. The most important selection criteria for women are utility (98%), composition (78%), low calorie value (80%). 83% of respondents were informed about the importance of enriched products, mostly women aged 35 and over. 57% of respondents over 36 years old are aware of the need to enrich dairy products with scarce components. 42% are ready to eat dairy products with natural plant components. Pumpkin is present in the diet of 92% of respondents. 51% of respondents are ready to use a curd product with good consumer characteristics based on pumpkin, 23% of respondents found it difficult to answer. As a result of the research, a target portrait of the consumer (women from 25 to 49 years of age) was drawn up, and the criteria for selecting the product were determined. 78% of respondents chose a product based on natural raw materials and 22% of respondents gave preference to the product based on local plant material.

Abstract This chapter discusses the theories of demand and supply, including the factors affecting the demand for commodities (the price of the commodity itself, the incomes of consumers, the price of competitive (or substitute) goods, the price of complementary goods, and the tastes of consumers) as well as the factors affecting supply (the price of the good, the prices of other goods that firms could produce or do produce, the prices of factors of production, the state of technology, and the goals/objectives of firms). The significance of the price and income elasticities of demand to the agricultural sector is highlighted.

The relevance of macroeconomic theory to the analysis of economic behavior in the agricultural sector is a recurring theme in applied research in this area. On the one hand, it is possible to find the view that the agricultural sector should be treated in isolation as an independent market or set of markets not subject to the influences of changes in monetary and fiscal policy or (other) changes in aggregate demand and supply. On the other hand, it is also possible to find literal acceptance of the usefulness of macroeconomics—perhaps in the form of a particular version of the theory—with the controversial part surfacing in the particular view of macroeconomics and how it bears on (and is influenced by) agricultural markets. The fact that this dichotomy exists is highlighted by the contrasting views expressed recently by Breimyer (1981) and Tweeten. At the same time that Breimyer advocated that “macro-economics should be struck from the lexicon,” Tweeten chose to devote his AAEA Presidential address to a discussion of the implications of current developments in macroeconomic theory and policy for the agricultural sector; his particular emphasis is on the important role of “supply-side” macroeconomics.

Global trends in world economy intervene into each sector of national economy. In the article, we focused on the dairy industry. The research was oriented at the national market of dairy products with the goal to assess the current situation on the market with these commodities. According to the acquired data, we compiled an overview of the current situation in the market and we pointed out the direction that should be followed by producers. The implementation of information systems is a necessary requirement to increase competitiveness in accordance with the specifics of dairy production.
