The aim of future beef production is healthier, tastier products which consumers will find attractive. Combinations of breed and feeding system are required to fulfil these aims. In this project we compared the Holstein- Friesian (HF) breed, an allegedly inferior beef producer, with Welsh Black (WB), a traditional beef breed. Of particular interest was the role of polyunsaturated fatty acids (PUFA) in flavour development.Thirty six steers, 18 HF and 18 WB, were reared on grass silage plus one of three concentrates. The concentrates contained different fat sources at 0.03 of intake: 1. megalac (control, C16:0); 2. formaldehyde-protected whole linseed (Lin, C18:3 n-3); and 3. an equal mix on a fat basis of protected linseed and fish oil (Lin/fish, C20:5 and C22:6 n-3). The animals were slaughtered after 90 days consumption of the diets. Fortyeight hours after slaughter, three forequarter muscles (M. supraspinatus, M. infraspinatus and M. triceps brachii caput longum) were trimmed of fat, minced and displayed in modified atmosphere packs (0.8 02:0.2 CO2, 4°C in 1000 Lux) for 3 or 10 days.

The aim of this study was to evaluate beef production potential and meat quality in young crossbred bulls and steers raised indoors and fed grass-based diets. One half of 96 bull calves were castrated at 2–3 wk of age. The calves were fed standard diets, and starting at 7 mo of age, they received grass silage supplemented with concentrates. At the end of the fattening period (18 and 21 mo of age), the animals were slaughtered, carcass quality was evaluated, and samples of musculus longissimus thoracis were collected to determine the proximate composition and meat quality. The semi-intensive feeding system contributed to higher daily gains (0.835 kg) in Holstein-Friesian (HF) × Hereford (HH) crosses. In comparison with steers, bulls were characterized by a higher dressing percentage (+1.33%), higher weight of five most valuable primal cuts (+6.7 kg), and higher lean meat content of three-rib cuts (+7.54%). Meat from steer carcasses, which had higher fat content was more tender and had desirable aroma, juiciness, and flavor. In semi-intensive production systems, steers performed better than bulls, and HF × HH crosses were more suitable than HF × Limousin (LM) and HF × Charolais (CH) crosses. Dairy-beef crosses should be slaughtered at 21 mo of age to improve carcass quality.

The study was conducted on 32 hybrids of (Polish Large White × Danish Landrace) × Duroc breeds fed similar energy content feed, however differing in fat diet supplements. The animals were divided into four groups in which the following fat supplements were added to the feed: A – rapeseed and linseed oils, B – rapeseed and fish oils + swine fat, C – linseed and fish oils, D – rapeseed and linseed oils + lard. The carcass slaughter value was estimated and physicochemical and sensory traits of longissimus lumborum (LL) and triceps brachii (TB) muscles were determined. The content of fatty acids in the subcutaneous fat of the loin as well as in the raw LL and TB muscles was estimated as well. It was shown that there were no significant differences in the range of slaughter value traits and meat quality between the groups. However, it was found that different kinds of supplemented fat had a different effect on the content of the polyunsaturated fatty acids in the backfat and in the raw LL muscle. The lowest level of fatty acids characterized the group of pigs fed with supplements consisting of rapeseed and fish oils + lard. The highest values were detected among fatteners supplemented with linseed. The kind of supplemented fat affected the changes in the level of PUFA n-3 fatty acids, especially the linolenic acid C18:3 in backfat. The n-6/n-3 ratio in pigs fed with a greater share of linseed (C and D groups) was better (about 3) than in pigs which obtained a greater portion of rapeseed and fish oils (about 5.5). In both the muscles and fat of fatteners from groups B and C the DHA content was 2–3 times higher than in A and D groups. Higher EPA content was found in the TB muscle.

This paper determined the impact of gender and feeding intensity on the profile of fatty acids in different types of fat deposits. The studies were conducted with 20 young bulls and 20 steers, which were Polish Holstein-Friesian and Hereford crossbreds fattened intensively – grass silage ad libitum and concentrate covered 50% of the net energy requirement in fattened cattle or semi-intensively – concentrate covered 30% of the net energy. The fatty acid profile in intramuscular, intermuscular, external and internal fat was determined. The content of intramuscular fat was lower (P < 0.001) in the longissimus muscle in the bulls (1.74%) than in the steers (3.71%). In fat of steers, the proportion of monounsaturated fatty acids was higher whereas in fat of bulls, the content of polyunsaturated fatty acids was higher. Generally the impact of the location of fat depots on the profile of fatty acids was statistically significant (P < 0.001) but there was no effect of feeding intensity.

AbstractBased on the potential benefits ofcis-9,trans-11 conjugated linoleic acid (CLA) for human health there is a need to develop effective strategies for enhancing milk fat CLA concentrations. In this experiment, the effect of forage type and level of concentrate in the diet on milk fatty acid composition was examined in cows given a mixture of fish oil and sunflower oil. Four late lactation Holstein-British Friesian cows were used in a 4 × 4 Latin-square experiment with a 2 × 2 factorial arrangement of treatments and 21-day experimental periods. Treatments consisted of grass (G) or maize (M) silage supplemented with low (L) or high (H) levels of concentrates (65 : 35 and 35 : 65; forage : concentrate ratio, on a dry matter (DM) basis, respectively) offered as a total mixed ration at a restricted level of intake (20 kg DM per day). Lipid supplements (30 g/kg DM) containing fish oil and sunflower oil (2 : 3 w/w) were offered during the last 14 days of each experimental period. Treatments had no effect on total DM intake, milk yield, milk constituent output or milk fat content, but milk protein concentrations were lower (P< 0.05) for G than M diets (mean 43.0 and 47.3 g/kg, respectively). Compared with grass silage, milk fat contained higher (P< 0.05) amounts of C12:0, C14:0, trans C18:1and long chain ≥ C20 (n-3) polyunsaturated fatty acids (PUFA) and lower (P< 0.05) levels of C18:0and trans C18:2when maize silage was offered. Increases in the proportion of concentrate in the diet elevated (P< 0.05) C18:2(n-6) and long chain ≥ C20 (n-3) PUFA content, but reduced (P< 0.05) the amount of C18:3(n-3). Concentrations oftrans-11 C18:1in milk were independent of forage type, but tended (P< 0.10) to be lower for high concentrate diets (mean 7.2 and 4.0 g/100 g fatty acids, for L and H respectively). Concentrations oftrans-10 C18:1were higher (P< 0.05) in milk from maize compared with grass silage (mean 10.3 and 4.1 g/100 g fatty acids, respectively) and increased in response to high levels of concentrates in the diet (mean 4.1 and 10.3 g/100 g fatty acids, for L and H, respectively). Forage type had no effect (P> 0.05) on total milk conjugated linoleic acid (CLA) (2.7 and 2.8 g/100 g fatty acids, for M and G, respectively) orcis-9,trans-11 CLA content (2.2 and 2.4 g/100 g fatty acids). Feeding high concentrate diets tended (P< 0.10) to decrease total CLA (3.3 and 2.2 g/100 g fatty acids, for L and H, respectively) andcis-9,trans-11 CLA (2.9 and 1.7 g/100 g fatty acids) concentrations and increase milktrans-9,cis-11 CLA andtrans-10,cis-12 CLA content. In conclusion, the basal diet is an important determinant of milk fatty acid composition when a supplement of fish oil and sunflower oil is given.

This study was aimed to obtain oil and the exact saponification with different NaOH concentration to protect unsaturated fats, which does can result in good production performance and lamb meat quality with low saturated fatty acid. Stage one studied the performance of sheep production on supplementing lemuru fish oil (LFO) protected with different saponification optimization. Twenty lambs aged 5-6 months early weighing 8-14 kg were divided into 4 treatments, namely P0 basal feed (50% elephant grass + 50% concentrate), P1 (basal feed + soap LFO NaOH 10%), P2 (basal feed + soap LFO NaOH 20%) and P3 (basal feed + soap LFO NaOH 30%) with completely randomized design and 5 replication for performance and 3 replication for meat quality. The results showed that the treatment effect was not significant (P>0.05) on the consumption of dry matter (DM), crude protein (CP), ether extract (EE), total digestible nutrien (TDN), daily gain and blood cholesterol. P2 yield the highest daily gain 130.95 ± 19.29 g/head/day of cholesterol at the same time low of 58.67 mg/dl. Stage two studied the criteria of lamb carcass and meat quality in supplementary feeding LFO protected with different saponification optimization. Twelve sheeps were slaughtered for P0, P1, P2 and P3. The results showed that the treatment effect was not significant (P> 0.05) to slaughter weight, carcass weight and carcass percentage, the physical quality of meat (pH, water holding capacity, cooking losses and tenderness), and chemical quality of the meat (DM levels, CP , EE, saturated fatty acids and unsaturated fatty acids) except in EPA and DHA increased very significantly (P<0.01). Conclusively, giving soap LFO with different optimization did not significantly affect the appearance and quality of sheep meat production, except in EPA and DHA which were significantly increased

Abstract. Many factors affect ruminant carcass and meat quality, and among the genetic and environmental factors, feeding plays an important role in the determination of quality. In a large study, sixty-four German Holstein and German Simmental bulls were randomly allocated to either an indoor concentrate feeding system or periods of pasture feeding following by a finishing period. During this period the animals got a concentrate containing linseed to improve the meat quality for the consumer and enhance the contents of beneficial fatty acids in beef. German Simmental bulls grew faster in both feeding groups (concentrate and grass-based) compared to German Holstein bulls. Because of that significantly more days of fattening were necessary to reach the slaughter weight of 620 kg. The feeding system did not affect the carcass weights of both breeds. The results of cutting according to the regulations of the Deutsche Landwirtschaftsgesellschaft (DLG-Schnittführung für die Zerlegung der Schlachtkörper von Rind, Kalb, Schwein und Schaf) showed diet effects for different cuts. Pasture feeding significantly decreased the weights of flank, flat ribs and brisket of both breeds. The intramuscular fat content of longissimus muscle was affected by the diet in the case of German Simmental bulls, only. The intramuscular fat content of longissimus muscle of pasture-fed German Simmental bulls was decreased to 1.5 % compared with concentrate-fed bulls (2.6 %). No diet effect was found in the intramuscular fat content of longissimus muscle of German Holstein bulls. The colour investigations of both muscles (longissimus and semitendinosus) showed that the beef produced by pasture feeding is darker. The Warner- Bratzler shear force values (WBSF) of pasture fed bulls were significantly higher compared to the concentrate fed bulls. Pasture feeding resulted in a significant increase in the concentration of n-3 fatty acids up to a factor of 2.8 in longissimus muscle of bulls compared with the concentrate feeding system.
