Quality of meat from three muscles of farmed fallow deer (Dama dama)

The quality of three muscles (supraspinatus, longissimus, semimembranosus) were studied in a group of 12 farmed fallow deer bucks (Dama dama) aged 28 months. The aim was to compare the selected quality traits of these muscles and to assess the extent to which these traits change after 14 days of being stored in vacuum packaging. Both the pH and the temperature were significantly affected by the muscle (P < 0.0001) and the time of storage (P < 0.0001). The supraspinatus muscle had the highest initial and final pH (pH0.5 h = 6.95; pH15d = 5.93), while m. semimembranosus showed the greatest drop in temperature (by 37.5°C) 24 h postmortem. The colour parameters differed among muscles. Only lightness (L*) was not influenced by the duration of storage (P = 0.081). The 14-day storage in a vacuum bag caused a decrease in the drip loss (P = 0.002), free water (%; P = 0.001), free water (cm2; P < 0.0001) and a cooking loss (P = 0.050). The duration of time in storage caused an increase in the dry-matter (P = 0.049) and crude-protein (P = 0.044) contents and a decrease of the water to protein ratio (W : CP; P = 0.014). There was a significant effect of muscle on the dry-matter (P < 0.0001) and crude-protein (P < 0.001) contents and W : CP (P < 0.0001). The highest contents of dry matter (P ≤ 0.01) and crude protein (P ≤ 0.01) were found in m. longissimus. The highest W : CP was observed in m. supraspinatus (W : CP24 h = 4.02; W/CP15d = 3.92). The results indicated a different technological quality of the analysed muscles, and, thus, a need to further explore the background of these differences in the early postmortem period and after meat maturation.

Muscles (m. supraspinatus, SP; m. longissimus thoracis et lumborum, LTL; m. semimembranosus, SM) of 16 farm-raised fallow deer were analysed to study the effect of normal and high pH on the quality of venison. While 60% of analysed SP muscles were characterised with an ultimate pH (pHu) of ≥6.0, the pHu of LTL and SM was of a normal level (pH ≤ 6.0) for most of the analysed fallow deer. The SP with a normal and high pH had the highest pHu among the analysed muscles (P = 0.009). High pHu resulted in redder meat (P = 0.004). LTL and SM with a high pHu were characterised with the lowest value of H° (P = 0.006). The drip loss and the percentage of total water were higher for SP than for the other analysed muscles (P = 0.001 and P &lt; 0.0001). The free water and the free-water share in total water were most affected by the pHu (P = 0.001) among the analysed traits related to water-holding capacity of meat, and were lower for venison with a high pHu than for that with a normal pHu. The high-pHu venison was related to a lower cooking loss (P = 0.002) and a slightly higher meat plasticity (P = 0.027) than was the meat with a normal pHu. The proximal chemical composition of the fallow deer muscles was not influenced by the pHu (P = 0.817–0.983) nor by the carcass weight (P = 0.121–0.964). From the present results, it can be concluded that high-pH and normal-pH venison have different qualities. This also means different culinary and technological characteristics depending on the pHu value. The incidence of high pHu was the highest in the SP.

The research was carried out in the irrigated trial areas of Atatürk University Faculty of Agriculture in 2009 and 2010. 7 different local sunflower varieties (Edirne-black-seeded, Edirne-white-seeded, Erzurum-black-seeded, Erzurum-white-seeded, Kırklareli-black-seeded, Kırklareliwhite-seeded and Tekirdağ) from 3 different harvest times (table formation, full flowering and seed filling) were examined for silage. In the study, silage was carried out using 5 different additives (additive-control, 10% barley, 10% straw, 5% molasses, 1% salt). Dry matter ratio, crude protein ratio, ADF ratio, NDF ratio, relative feed value and pH values ​​were determined in silage. The results showed that local varieties, form times and additives have important effects on silage quality of sunflower. Using barley and molasses as additives significantly improves silage quality. Although the delay in form time decreased the crude protein ratio and increased the ADF and NDF ratios, it improved the dry matter ratio and silage pH.

The aim of this research is to know the extraction method of caterpillar pupa without detrimental to chemical composition to know the amount of pupa production of German caterpillar with two extraction methods per 100 grams of pupa To know the content of dry matter, organic matter, crude protein, crude fat, crude fiber and amino acid lysin, methionine, and vitamin E pupa oil of German caterpillar. The study was conducted from February to April 2017, at the Lab. Central University Tribhuwana Tunggadewi. Oil extraction analysis was conducted in the chemistry laboratory of Tribhuwana Tunggadewi University and chemistry laboratory of Poltek Malang. German caterpillar research material, German caterpillar pupa, pupa caterpillar germany extracted by maceration and sokletasi. German caterpillar pupa is obtained from German caterpillar breeders in Amadanom, Dampit, Malang Regency. This research uses two different extraction methods, namely cold extraction method (maseration method) and using heat method (soxhlet method). The conclusions of both research methods are known that the quantity of German caterpillar yield using soxhlet extraction method is more than the maceration extraction method. However, for the quality of the two methods it is still necessary to do further analysis to know the exact comparison of the two methods.

The effects of spring-applied nitrogen (0, 56, 112 and 224 kg/ha) and phosphorus (0 and 27.4 kg/ha) on the dry matter (DM) yield and forage quality of successive harvests of meadow foxtail (Alopecurus pratensis L.) were investigated. Nitrogen increased DM yield, crude protein, Cu, K and Zn contents and decreased P, Ca, Mg and Mn contents. Application of P in combination with N increased K content in the first cut and arrested the decline of P content due to N application in all cuts. The levels of dry matter digestibility and Cu declined in successive cuts whereas Mn content increased. At low N rates, Ca and Mg contents increased as the season advanced.

Abstract This study highlights the effect of drought and ambient temperature on performance and herbage quality of legume monocultures and grass-legume mixtures. In a field experiment, the total dry matter yield, seasonal pattern of dry matter yield distribution, content of crude protein and crude fibre of monocultures of red clover and alfalfa and grass-legume mixtures were investigated during two consecutive dry years (2011-2012). Alfalfa cultivars Kamila and Tereza grown as monocultures or as mixtures with Festulolium braunii (cultivar Achilles) outperformed the red clover cultivars Fresko and Veles and provided a well-balanced total and seasonal dry matter yield during both years. Across all experimental years, crude protein content was significantly higher at alfalfa monocultures and mixture when compared with clover monocultures (P < 0.05). However, considerable lower content of crude fibre at clover monocultures in comparison with alfalfa ones was found. Responses of nutritive parameters of both legume species to weather variables were different. Crude protein content in red clover was independent of rainfall and temperature. In contrast, the crude fibre content correlated with temperature whereby the alfalfa monocultures showed stronger correlations (P < 0.05) than red clover monocultures.

The </em><em>experiment used </em><em>15 </em><em>lactating PFH were assigned into three treatments of diets and</em></p></div><em><br clear="all" /> </em><p class="Style1"><em> </em><em>five replication, three treatments of diets were </em><em>: </em><em>1) T1 (CP </em><em>12% dan TDN 65%); 2) T2 (CP 14% dan TDN 70%) dan 3) T3 (CP 16% dan TDN 75%).</em></p><p class="Style1"><em>The results of this experiment showed that the average of dry matter (DM) intake on Tl, T2 and T3 treatments were </em><em>8,59; </em><em>10,03 and </em><em>10,94 </em><em>kg/d, respectively </em><em>(P&lt;0,01). The average of crude protein intake (CP) on T1, </em><em>T2 and T3 treatments were 1,06; 1,44 and 1,71 kg/d (P&lt;0,01), also the average of TDN intake on T1, T2 and T3 treatments were 5,52; 6,86 and 8,02 kg/d (P&lt;0,01). The average of Hemoglobin (Hb) concentration on T1, T2 and T3 treatments were 10,21: 11,18 and 10,44 g/dl (P&gt;0,05), also the average of eritrosit value on TI, T2 and T3 treatments were 3,37; 3,73 and 3,48 million/mm<sup>3;</sup>, respectively (P&gt;0,05). The average of milk yield on T1, T2 and T3 treatments were 8,12; 11,29 and 13,42 l/d (P&lt;0,05). The average of liveweight gain on TI, T2 and T3 treatments were 81,66; 117,71 and 320,00 g/d (P&gt;0,05). </em></p><p class="Style1"><em>The conclusions of this research was the highest level of CP and </em><em>"1'DN </em><em>in </em><em>diets (CP 16% and </em><em>TDN 75%) showed that feed intake (DM, CP and TDN) and milk yield gave the best than other treatments. Midas marrowstem kale (Brassica oleracea L.) was grown in different row width associations with United 106 corn (Zea maize L.) in two studies and ensiled in different moisture blends with corn stover in another. Highest dry matter yields were obtained where a single row of kale was grown at 30 cm to the side of a corn row. This combination also provided the lowest moisture content feed and the highest in vitro digestibility and crude protein content. Changing the corn row width had no significant effect upon yield, plant height, in vitro digestibility, kale leaf or corn ear content. Blending kale with corn stover to provide a silage of about 70% moisture increased the digestibility and protein content of the feed and provided a silage that kept well in storage.

In addition to the results published in the first communication (Opitz von Boberfeld et al., 2006) this paper presents crude protein, energy (ME) and ergosterol concentrations of autumn saved herbage at different sites in Central Germany, Poland, Hungary and the Czech Republic. Within these sites, the influence of the factors pre-utilisation and winter harvest date was tested over three consecutive years. Related to the different climatic conditions of the sites, crude protein concentrations of the growths pre-utilised in July varied from 149 g/kg in November to 134 g/kg of dry matter (DM) in January. The influence of climatic conditions was different on each location and varied depending on the year. Generally, the consistent effect of the factor &ldquo;site&rdquo; related to altitude could not be observed. While the energy concentrations decreased with advancing winter and partly reached the values below 6 MJ&nbsp;ME/kg of DM in January, the ergosterol concentrations increased. The results demonstrate that under Central European conditions autumn saved herbage, pre-utilised in July, could provide adequate quantity and quality for suckler cows until December. Afterwards, the utilisation of preserved forages becomes essential. &nbsp;

The effect of the incorporation of various types of residual chia flour (whole, semi-defatted and defatted, with or without mucilage) on the technological quality of bread was investigated. The various types of chia flour were used to substitute 5 and 10% wt/wt of wheat flour in the bread formulations. The water absorption, dough development time and stability of blends with the presence of mucilage and the incorporation of 10% wt/wt of chia flour demonstrated the highest values in comparison with the other ones. The specific volume of the flour variants with 5% wt/wt of chia flour with mucilage were similar to the control bread; while those formulated with chia flour without mucilage exhibited a lesser volume. The incorporation of 10% wt/wt of chia flour in the formulations caused a decrease in the technological quality of the bread as expected. The bread crust and crumb colour parameters were mainly influenced by the level of chia flour substitution, which resulted in a decrease in lightness and h values. The substitution of wheat flour with 5% wt/wt of chia flour counterparts with mucilage improved the technological quality of the breads. The different oil content of the chia flours did not show any significant influence on overall quality or texture.

Herbage yield increased with elevation from 2200 to 2600 m and then declined until 2800 m. Altitude did not affect herbage fat, acid detergent fibre, calcium or sulphur concentrations, but did influence herbage organic matter, crude protein and phosphorus concentrations. It is recommended that livestock should be rotationally grazed along an altitudinal gradient on Xiaowutai Mountain to meet their dry matter (DM) and nutrients requirements in summer grazing systems.
