Background: Meat quality in pigs is an extremely important economic trait. The Shaziling pig is representative of good meat quality but has been scarcely utilized because of the unpleasant growth rate and lean percentage. Methods: The differences of muscle chemical composition, amino acids profile and antioxidative capacity were evaluated among [(Berkshire × Shaziling) × (Berkshire × Shaziling) (BS × (B × S)], (Berkshire × Shaziling) × Shaziling [(B × S) × S], Shaziling × (Berkshire × Shaziling) [S × (B × S)] and Shaziling (S × S) pigs. Result: Four groups had plentiful contents of mineral elements (Ca, Zn, Na, K, Cu, Mg, Mn) and abundant amino acids content and no obvious differences in diameters of myofibers and adipocytes were found among four groups. In addition, (B × S) × S pigs had the highest crude protein content, possessed comprehensive nutrient in amino acids and showed preferable antioxidative capacity, suggesting that the meat of (B × S) × S pigs has optimal shelf life.

This research was carried out to determine feed quality parameters of leaves and stems of different alfalfa genotypes. A total of 12 alfalfa genotypes was used as the plant material for the study. Alfalfa plants were harvested at the flowering stage. The plants were dried at 70°C and grinded in a hand-mill with 1 mm sieve for chemical analysis. In leaf, the acid detergent fiber (ADF) content of genotypes varied between 21.62 - 27.40%, the neutral detergent fiber (NDF) content between 33.98 - 39.95%, and crude protein content between 24.68 - 28.45%, whereas in stem ADF content of genotypes varied between 50.99 - 57.72%, NDF content between 66.96 - 76.79 %, crude protein content between 8.46 - 11.00%. The RFV ranged from 159.18 to 197.27% and 53.22 to 67.06% for leaf and stem respectively. The leaf to stem ratio of genotypes ranged from 0.72 to 1.60. Considering current results from different genotypes, genotype has a high effect on feed quality. In addition, the rate of leaf to stems is also effective on feed quality. While the protein ratio of the leaves was higher than the stems, the ADF and NDF contents were found to be lower than the stems. So, in the selection of alfalfa genotypes, attention should be paid to the leaf to stem ratio as well as the yield.

The objective of the present study was to determine grain feed quality of different broad bean cultivars and lines. For this purpose, Eleven different cultivars and five lines (Emiralem, Histal, Sorgun, Kitik 2003, Sakiz, Eresen 87, Sevil, Reina Mora, Filiz 99, Salkim, Luz De, Otonoto, Seher, EU 4446, Canakkale, Antalya, EU319) were used as the plant material. Experiments were conducted in randomized blocks design with three replications. Effects of genotypes on grain feed quality were found to be highly significant (P≤0.01) Current findings revealed that crude oil content between 0.62 - 1.58%, crude ash content between 1.89 - 3.30%, crude protein content varied between 22.30 - 32.14%, acid detergent fiber (ADF) content between 7.45 - 14.94% and neutral detergent fiber (NDF) content between 16.08 - 28.05%. Seher, EU 4446, Canakkale, Antalya, Filiz 99 and Histal were found to be prominent for hight crude protein and crude oil, thus these genotypes were recommended for animal feeding.

Исследования фракционного состава белков и жирнокислотного состава масел безалкалоидных и малоалкалоидных сортов люпина для производства кормов и продуктов питания являются актуальными в современных социально-экономических условиях, когда требуется найти альтернативу соевым продуктам. В данной работе изучались фракционный состав белков и жирнокислотный состав масла семян 11 образцов малоалкалоидных сортов люпина отечественной селекции трех видов: белого, желтого и узколистного. Самое высокое содержание сырого протеина выявлено в образцах семян желтого люпина, в семенах белого люпина содержание сырого протеина было немного ниже, а все исследованные образцы сортов узколистного люпина характеризовались самым низким содержанием сырого протеина. Суммарное количество растворимых белков в семенах люпина было высоким и изменялось от 84,21 до 92,45 %. Во всех исследованных образцах сортов белого люпина преобладала альбуминовая фракция, в семенах сортов узколистного и желтого люпина – глобулиновая фракция. Содержание сырого жира в семенах разных сортов изменялось от 4,62 до 9,28%. Обнаружены различия в жирнокислотном составе масла семян люпина разной видовой принадлежности. Жирнокислотный состав семян характеризовался преобладанием олеиновой кислоты в масле семян сортов белого люпина, при явном преобладании линолевой кислоты в сортах желтого и узколистного люпина. Researches of protein fractional composition and fatty-acid composition of nonalkaloid and low-alkaloid lupine varieties oils for food production are actual in modern social and economic conditions, when it is required to find an alternative for soybean products. In the present work, the protein fractional composition and fatty acid composition of seeds of 11 low-alkaloid lupine varieties of domestic selection of three species: white, yellow and narrow-leaved lupine were investigated. The highest content of crude protein was detected in seed samples of yellow lupine, the crude protein content in white lupine seeds was slightly lower, and all the studied samples of narrow-leaved lupine were characterized by the lowest crude protein content. The total amount of soluble proteins in lupine seeds was high and varied from 84,21 to 92,45 %. In all examined samples of white lupine varieties the albumin fraction dominated, while in seeds of narrow-leaved and yellow lupine varieties the globulin fraction dominated. The crude fat content in the seeds of the different varieties varied from 4,62 to 9,28%. Differences were found in the fatty acid composition of lupin seed oil of different species. The fatty-acid composition of seeds was characterized by the predominance of oleic acid in the oil of white lupine varieties, with a clear predominance of linoleic acid in yellow and narrow-leaved lupine varieties.

Germinated brown rice (GBR) is brown rice (BR) that has been germinated. GBR accumulates more nutrients and has a softer texture than BR. The aim of this study was to ferment GBR and BR using Bacillus natto and to investigate the functionality of the fermented products compared with white rice (WR) as a control. After fermentation with B. natto, the crude ash, total essential amino acids, and fat contents of each sample increased, while the crude protein content decreased. Moreover, the γ-aminobutyric acid and γ-oryzanol contents decreased, while the 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical scavenging increased significantly in all fermented samples. The nattokinase activity (FU/g) of the fermented products was highest for GBR (43.11), followed by BR (19.62), and lowest for WR (12.24). Collectively, these results indicate that GBR fermented with B. natto yields better nutritional value and functional properties than fermented BR or WR.

Abstract Kikuyu grass (Pennisetum clandestinum Hochst. ex Chiov) is tropical grass originates from Eastern Africa, that has been introduced in other tropical and subtropical areas including in Indonesia. Kikuyu used as forage with high protein content and palatable. In Indonesia, Kikuyu still rarely exists, and no data reported yet about Kikuyu growing in Indonesia except data about when it was introduced to Indonesia. The aims of this study were to know the biodiversity of Kikuyu in Indonesia and to compare its morphology and nutrition contents between accession. Exploring Kikuyu accessions was done around West of Java province area. The morphology of each accession was observed with parameters and nutrition content of each accession was analyzed using proximate analysis. The results showed 3 accessions of Kikuyu from Burangrang, Tangkuban Perahu and Bukit Tunggul location. Morphology of the 3 accessions shows not significant different in all parameters. Nutrition contents between accessions namely dry matter, water contents, and fat contents shows not significant different. Crude protein content of Kikuyu accessions was ranged between 18.18 to 21.48 % DM. In this study, Burangrang accession had higher crude protein (21.48%) than other accessions, for that it has potential to be developed as superior variety.

In Se-deficient populations, Selenium- (Se-) enriched wheat is a source of Se supplementation, and Se content can be improved by agronomic biofortification. Thus, black-grained wheat (BGW) and white-grained wheat (WGW) (as the control) were grown in Se naturally contained soils at different concentrations (11.02, 2.21, 2.02, and 0.20 mg·kg−1). Then, a field experiment was conducted to assess agronomic performance, the concentration of microelements and heavy metals, and the uptake and distribution of Se in the BGW under the application of Se ore powder. The results showed that the grain yield and grain Se concentration of wheat respectively show a significant increase and decrease from high Se to low Se areas. Higher grain yield and crude protein content were observed in Se-rich areas. The soil application of Se ore powder increased wheat grain yield and its components (biomass, harvest index, grain number, and 1,000 kernels weight). The concentrations of Zn, Fe, Mn, total Se, and organic Se in the grains of wheat were also increased, but Cu concentration was decreased. The concentrations of Pb, As, Hg, and Cr in wheat grains were below the China food regulation limits following the soil application of Se ore powder. Compared with the control, Se ore powder treatment increased the uptake of Se in various parts of wheat plants. More Se accumulation was observed in roots following Se ore powder application, with a smaller amount in grains. In addition, compared with the control, BGW had significantly higher concentrations of Zn, Fe, and Mn and accumulated more Se in grains and shoots and less Se in roots. The results indicate that wheat grown in Se-rich areas increases its grain yield and crude protein content. The soil application of Se ore powder promotes wheat growth and grain yield. Compared with WGW, BGW accumulated more Se in grains and had a higher concentration of organic Se in grains. In conclusion, the application of Se ore powder from Ziyang as Se-enriched fertilizer could be a promising strategy for Se biofortification in the case of wheat, and BGW is the most Se-rich potential genotype.

The declaration of lupine supplements is mandatory to avoid lupine allergy for sensitive individuals. However, reliable detection methods against lupine allergen remain critical to prevent the unintended consumption of allergen contaminated food. In this study, we have immunized an alpaca with lupine protein extracts and retrieved nanobodies (Nbs). Nevertheless, the target antigen has been recognized as Lup an 1, which has been classified as β-conglutin, and confirmed to connect with lupine allergy. After selection of the best Nb-pair, a sandwich enzyme-linked immunosorbent assay (ELISA) has been developed providing a linear range of 0.036–4.4 μg/mL with detection limit of 1.15 ng/mL. This immunoassay was confirmed by detecting the samples with spiked allergen, and a recovery from 86.25% to 108.45% with coefficient of variation (CV) less than 4.0% has been determined. Generally, this study demonstrated the selection of Nbs against allergen with crude protein content to develop the immunoassay for lupine surveillance in foods.

The objective of this study was to evaluate the production and chemical composition of three forage species at different regrowth intervals. A 3 x 4 randomized-block factorial design with three forage species (Andropogon, Buffel, and Massai) and four regrowth intervals (21, 35, 49, and 63 days) was used. There was no interaction (p > 0.05) between forage species and regrowth interval on any of the chemical components evaluated. The crude protein content decreased but the contents of neutral detergent fiber, acid detergent fiber and hemicellulose increased with increasing regrowth interval (p > 0.05). Only the contents of crude protein and ether extract were similar (p > 0.05) among grasses. A significant interaction was observed (p < 0.05) between forage species and regrowth interval on forage mass. Andropogon grass had the highest forage mass at 63 days (3,270.1 kg ha-1 DM cut-1) and the highest productivity regardless of the regrowth interval (19.1 t ha-1 DM year-1). Therefore, Andropogon grass was the most productive forage among the tested species. Pastures should be managed with shorter growth intervals due to the highest crude protein level and the lowest contents of neutral detergent fiber and acid detergent fiber.
