Toward a Healthy and Environmentally Sustainable Campus Food Environment: A Scoping Review of Postsecondary Food Interventions

ABSTRACT Interventions are urgently needed to transform the food system and shift population eating patterns toward those consistent with human health and environmental sustainability. Postsecondary campuses offer a naturalistic setting to trial interventions to improve the health of students and provide insight into interventions that could be scaled up in other settings. However, the current state of the evidence on interventions to support healthy and environmentally sustainable eating within postsecondary settings is not well understood. A scoping review of food- and nutrition-related interventions implemented and evaluated on postsecondary campuses was conducted to determine the extent to which they integrate considerations related to human health and/or environmental sustainability, as well as to synthesize the nature and effectiveness of interventions and to identify knowledge gaps in the literature. MEDLINE (via PubMed), CINAHL, Scopus, and ERIC were searched to identify articles describing naturalistic campus food interventions published in English from January 2015 to December 2019. Data were extracted from 38 peer-reviewed articles, representing 37 unique interventions, and synthesized according to policy domains within the World Cancer Research Foundation's NOURISHING framework. Most interventions were focused on supporting human health, whereas considerations related to environmental sustainability were minimal. Interventions to support human health primarily sought to increase nutrition knowledge or to make complementary shifts in food environments, such as through nutrition labeling at point of purchase. Interventions to support environmental sustainability often focused on reducing food waste and few emphasized consumption patterns with lower environmental impacts. The implementation of integrated approaches considering the complexity and interconnectivity of human and planetary health is needed. Such approaches must go beyond the individual to alter the structural determinants that shape our food system and eating patterns.

Discussions on the health consequences of the consumption of ultra-processed foods (UPFs) are wide-ranging, but little has been addressed under systemic aspects, human rights, sovereignty and food and nutrition security, and socio-environmental sustainability. For this reason, the aim of this article was to analyze the systemic implications of children's access to UPFs. Secondary data from a cross-sectional survey conducted with pre-school students of two private schools in a capital city in the Northeastern region of Brazil were analyzed through the analysis of lunch boxes for three consecutive days. The most frequent UPFs had information about the manufacturing location, ingredients, and brand collected from their labels and subsequently studied. We noticed that most of the products were manufactured in other states, being transported for long distances, had little ingredient diversity, and belonged to sub-brands that conglomerate into “big players”. In this sense, we conclude that children are having their right to food violated and that access to UPFs by this public supports a hegemonic and unsustainable food system from a socio-environmental point of view that contributes to food and nutrition insecurity.

To reduce environmental burdens from the food system, a shift towards environmentally sustainable diets is needed. In this study, the environmental impacts of the Swedish diet were benchmarked relative to global environmental boundaries suggested by the EAT-Lancet Commission. To identify local environmental concerns not captured by the global boundaries, relationships between the global EAT-Lancet variables and the national Swedish Environmental Objectives (SEOs) were analysed and additional indicators for missing aspects were identified. The results showed that the environmental impacts caused by the average Swedish diet exceeded the global boundaries for greenhouse gas emissions, cropland use and application of nutrients by two- to more than four-fold when the boundaries were scaled to per capita level. With regard to biodiversity, the impacts caused by the Swedish diet transgressed the boundary by six-fold. For freshwater use, the diet performed well within the boundary. Comparison of global and local indicators revealed that the EAT-Lancet variables covered many aspects included in the SEOs, but that these global indicators are not always of sufficiently fine resolution to capture local aspects of environmental sustainability, such as eutrophication impacts. To consider aspects and impact categories included in the SEO but not currently covered by the EAT-Lancet variables, such as chemical pollution and acidification, additional indicators and boundaries are needed. This requires better inventory data on e.g., pesticide use and improved traceability for imported foods.

The sugarcane industry is one of the industries that generated negatives impact on the environment. Therefore, it can be concluded that the sugarcane industry is not environmentally sustainable. The results of this research show that the use of electricity from bagasse cogeneration becomes the main contributor to all of damage categories. Meanwhile, the highest contribution to damage categories is human health with a total score of 59%. The results of this research are expected to reduce the environmental impact produced by PT. X so that PT. X will be more environmentally sustainable.

Despite South Africa’s celebrated constitutional commitments that have expanded and deepened South Africa’s commitment to realise socio-economic rights, limited progress in implementing right to food policies stands to compromise the country’s developmental path. If not a deliberate policy choice, the persistence of hunger, food insecurity and malnutrition in all its forms is a deep policy failure.  Food system transformation in South Africa requires addressing wider issues of who controls the food supply, thus influencing the food chain and the food choices of the individual and communities. This paper examines three global rights-based paradigms – ‘food justice’, ‘food security’ and ‘food sovereignty’ – that inform activism on the right to food globally and their relevance to food system change in South Africa; for both fulfilling the right to food and addressing all forms of malnutrition. We conclude that the emerging concept of food sovereignty has important yet largely unexplored possibilities for democratically managing food systems for better health outcomes.

This article highlights the dynamics of geothermal energy in the Kamojang nature reserve in Indonesia. A nature reserve is a conservation area that must be protected and preserved, because it has unique flora and fauna, and rare ecosystems whose existence is threatened with extinction. After going through a long study process by an integrated team, the government finally made a policy to change the function of the nature reserve into a Nature Tourism Park. Changes in policy changes to the function of nature reserves cause pros and cons in the community, and cause conflicts between government and environmental activists. The purpose of this study is to identify the factors that cause changes in the function of nature reserves into natural tourism parks in the Kamojang conservation area of Indonesia, as well as to identify appropriate communication models in the management of geothermal energy through communication and environmentally sustainable approaches. Research findings show that the factors that cause changes in the function of nature reserves into tourist parks include; the interests of geothermal energy to meet national energy needs and electricity infrastructure, accommodate the needs of surrounding communities that utilize water resources in conservation areas, and restore ecosystems. The communication model for geothermal energy management that we propose at the same time is also a novelty namely; ecopopulism approach, negotiation approach, collaboration, and equating meaning and orientation to environmental sustainability. The first purpose of this chapter is to highlight the impact of the food system on environmental and human health. The delivery of secure affordable food is a political imperative. Unfortunately, the food system that delivers it is environmentally blind. Food prices do not effectively reflect the value of food and often seriously mislead on the costs and impacts of food production. For example, actual food production takes place in a failed market—the value of environmental services such as water and the supporting ecosystems are not taken into account. The second purpose is to summarize and expose the political economy of the different ‘market’ modes of the food system. It is shown that there are weak players such as underrewarded and undervalued farmers who support society by producing food and stewarding our unvalued environment. The inadequacies of accounting systems are also critiqued.

Background: Provision of paediatric palliative care is complex and optimally covers meeting the individual needs of a heterogenous population of children and their parent caregivers throughout a life-limiting illness. It is unclear whether existing approaches comprehensively address parent caregivers’ needs. Aim: To examine support needs of parents caring for children with life limiting illnesses and identify specific approaches used to identify and address needs. Design: A scoping review Data sources: MEDLINE, EMBASE, PsycINFO, CINAHL and ProQuest Central, were searched for peer reviewed English language full text research published from 2008 to 2019. Study quality appraisal was undertaken. Fourteen quantitative, 18 qualitative and 12 mixed methods studies were synthesised and themed using summative content analysis and mapped to the Parent Supportive Care Needs Framework (PSCNF). Results: Themes were communication, choice, information, practical, social, psychological, emotional and physical. Communication and choice were central and additional to domains of the PSCNF. Unmet were needs for supporting siblings, for respite care, out of hours, psychological, home and educational support. Six articles reported using instruments to identify parent carer support needs. Conclusion: Support needs of parent caregivers of children with life limiting illnesses are substantial and heterogenous. While studies report evidence of burden and distress in parent caregivers, this rarely translates into improvements in practice through the development of interventions. A systematic and regular assessment of individual parent caregiver support needs is required by using instruments appropriate to use in clinical practice to move the focus to palliative care interventions and improved services for parents.

Food production is a major contributor to environmental damage. More environmentally sustainable foods could incur higher costs for consumers. In this review, we explore whether consumers are willing to pay (WTP) more for foods with environmental sustainability labels (‘ecolabels’). Six electronic databases were searched for experiments on consumers’ willingness to pay for ecolabelled food. Monetary values were converted to Purchasing Power Parity dollars and adjusted for country-specific inflation. Studies were meta-analysed and effect sizes with confidence intervals were calculated for the whole sample and for pre-specified subgroups defined as meat-dairy, seafood, and fruits-vegetables-nuts. Meta-regressions tested the role of label attributes and demographic characteristics on participants’ WTP. Forty-three discrete choice experiments (DCEs) with 41,777 participants were eligible for inclusion. Thirty-five DCEs (n = 35,725) had usable data for the meta-analysis. Participants were willing to pay a premium of 3.79 PPP$/kg (95%CI 2.7, 4.89, p ≤ 0.001) for ecolabelled foods. WTP was higher for organic labels compared to other labels. Women and people with lower levels of education expressed higher WTP. Ecolabels may increase consumers’ willingness to pay more for environmentally sustainable products and could be part of a strategy to encourage a transition to more sustainable diets.
