Abstract The effects of live yeast (Saccharomyces cerevisiae) and ruminal environment on in vitro true digestibility of dry matter, organic matter, and fiber components were evaluated. Ruminally-cannulated beef steers (n = 4; BW = 520 ± 30 kg) were used in a cross-over design to serve as donors of ruminal content. In vitro substrates (6 grower and 6 finisher diets) and individual ingredients (steam-flaked corn, wet corn gluten feed, and old-world bluestem hay) were dehydrated (55o C), ground (1 mm), and incubated using a 2 × 2 factorial arrangement of treatments: a) the presence or not of yeast (8×109 CFU/animal-daily adjusted to a 70 L ruminal content volume), and b) two ruminal inoculums collected from donors fed a grower (50:50) or a finisher (92:08) diet (concentrate:forage). Four incubation batches (experimental unit) were performed, in which the initial two batches were performed followed by another two after animals switched diets and were adapted again during 21d. A Daisy in vitro incubation system was used, and samples incubated for 48h (39°C). The GLIMMIX procedure of SAS was used for the statistical analysis. No 3-way interactions (P ≥ 0.71) or 2-way interactions with substrate were observed (P ≥ 0.25). The in vitro true digestibility of DM, OM, NDF, and hemicellulose increased when yeast was added to the incubator containing a 50:50 ruminal content (Rumen × Yeast; P ≤ 0.02). The ADF digestibility increased (P = 0.02) with yeast addition regardless of ruminal content type (50:50 or 92:08). As expected, finisher substrate diets were more (P < 0.01) digestible than grower diets. The combination of live yeast and a specific ruminal environment seemed to be more important than substrate type, in which live yeast improved in vitro digestion within a 50:50 ruminal inoculum more evidently.

Abstract The effects of a nutritional packet fed to beef steers during the final 64 d of the feedlot finishing phase on apparent total tract nutrient digestibility were evaluated. Angus-crossbred steers (n =120; initial BW = 544 ± 52 kg) were assigned to 30 pens (4 steers/pen; 15 pens/treatment; pen = experimental unit) in a randomized complete block design. A steam-flaked corn-based finishing diet was fed ad libitum and treatments applied as follows: 1) control and 2) 30 g/steer-daily (DM-basis) of the nutritional packet [containing live yeast (Saccharomyces cerevisiae; 8.7 Log CFU/g), vitamin C (5.4 g/kg), vitamin B1 (13.33 g/kg), NaCl (80 g/kg) and KCl (80 g/kg)]. The nutritional packet used ground corn as a carrier and was included at 1% of diet DM. Orts were quantified daily (if any) and subtracted from the total dietary DM offered to calculate DM intake. Fecal samples were collected twice daily (0700 and 1700 h) for 5 consecutive days (d 47 to 51) from at least 3 steers within pen. Feed samples were collected daily at time of feeding (0630 h). Fecal and feed samples were composited to represent the collection period, dried (55oC), ground (1 mm), and analyzed to assess DM, OM, NDF, ADF, and hemicellulose. In situ (288 h) iNDF was used as an internal marker to measure apparent total tract nutrient digestibility. Data were analyzed using the GLIMMIX procedure of SAS. Intake of DM, OM, and fiber components during the digestibility period was not affected (P ≥ 0.44) by treatment. Steers fed the nutritional packet had increased apparent total tract digestibility of OM (P = 0.02), DM (P = 0.01), NDF (P = 0.02), ADF (P = 0.01), and hemicellulose (P = 0.08; tendency). Improved nutrient digestibility without affecting nutrient intake may warrant an enhanced energy deposition in the carcass.

Abstract The presence of reactive oxygen species has been associated with the differentiation of pre-adipocytes into lipid filled mature adipocytes in vitro. We hypothesized offering a diet without supplemental antioxidant minerals (Cu, Mg, Zn, and Se) to steers during the growing phase, a time when intramuscular fat cells are believed to be proliferating, would promote differentiation of pre-adipocytes, leading to more desirable marbling scores compared with steers supplemented to meet their mineral requirements. After adaptation to the feedlot, 168 Sim-Angus steers were divided into four weight blocks, placed in one of twenty-four pens, and randomly assigned a dietary treatment. Dietary treatments were: 1) no supplemental (Cu, Mg, Zn, and Se) minerals; 2) control diet with supplemented minerals to meet the mineral requirements of growing beef steers (NRC, 2016); 3) Cu, Mg, Zn, and Se concentrations supplemented at twice the concentration of the control diet. After dietary treatments were applied for the 4-wk long growing phase, steers were offered a common finishing diet until reaching a similar backfat thickness until harvest. Feedlot performance and carcass data were analyzed in SAS with pen as the experimental unit in the following model: Yij = μ+Di+wj+eij, where Di was the fixed effect of diet, wj was the random effect of weight block, and eij was the random error. No significant (P > 0.35) treatment effects were found for feedlot performance and carcass measurements. The feedstuffs in the basal diet may have contained sufficient concentrations of antioxidant minerals to meet the mineral requirements of the steers and mask differences in marbling. Additionally, offering a similar diet during the finishing period may have resulted in compensatory marbling growth, which offset marbling differences after the growing phase and resulted in uniform marbling accumulation across dietary treatments.

Abstract The effects of a nutritional packet on performance and carcass characteristics of feedlot beef steers were evaluated. Thirty Angus-crossbred steers (BW = 542 ± 8.4 kg) were used in a randomized complete block design and allocated into pens with SmartFeed (C-Lock; 15 steers/treatment). Steers were consuming a steam-flaked corn-based finishing-diet, ad libitum, for the last 65-d on feed prior to slaughter, in which treatments were: 1) control and 2) a nutritional-packet [0.29% DM basis; live yeast (Saccharomyces cerevisiae; 8.7 Log CFU/g); Vitamin C (5.4 g/kg); Vitamin B1 (13.33 g/kg); NaCl (80 g/kg); KCl (80 g/kg)]. Individual BW was recorded every 14 d and carcass quality data was collected at slaughter. Steer was considered the experimental unit. The MIXED procedure of SAS was used with the fixed effect of treatment and the random effect of block. Total DMI was unaffected (P = 0.610) by treatment from d 0–65; however, control steers had greater (P = 0.030) DMI from d 54–65. The G:F was unaffected (P = 0.830) by treatment from d 0–35; however, it was greater (P ≤ 0.001) for steers fed the nutritional packet from d 0–50, and 0–65. Treatment did not affect (P = 0.920) ADG from d 0–35, however it increased (P ≤ 0.001) ADG from d 0–50 and tended (P = 0.060) to increase ADG from d 0–65. Carcass adjusted final BW tended (P = 0.060) to increase by 28% for treated cattle, whereas the Longissimus dorsi area tended to decrease (P = 0.090). No differences (P = 0.240) were observed for fat thickness, while yield-grade (P = 0.03) increased for treated cattle. The nutritional packet appears to improve performance in the final days of feeding steers under intensive management, and energy partitioning may be altered to fat deposition.

Purpose The purpose of this paper was to develop a loaf bread enriched with naranjilla (lulo) fruit (shells, seeds and pulp) and determine the technical quality, sensory acceptability and bioavailability (by in vitro digestion) of antioxidant components. Design/methodology/approach Loaf bread was prepared by using a no-time bread-making process. The crumb moisture, specific volume, crust and crumb color, texture profile analysis, analysis of the crumbs' alveoli, sensory evaluation, in vitro simulation of gastrointestinal digestion and antioxidant capacity were determined. Data were analyzed with one-way ANOVA (α = 0.05). Findings The specific volume was reduced by 21% (4.62 cm3/g, p < 0.0001), and the hardness was increased by 70% (2.9 N, p < 0.0001). Enrichment of the bread with naranjilla fruit (NF) contributes a yellowish coloration to the bread, which was very well accepted by the consumers and could be considered a natural colorant alternative. Moreover, the sensory evaluation indicated that the analyzed attributes (appearance, color, odor, taste, firmness and overall quality) of the naranjilla bread presented scores higher than 6.5 of 9 points hedonic scale. Naranjilla in the bread formulation had good acceptability by consumers. Naranjilla-enriched bread had an increase in total phenolic (TP)compounds and total carotenoids. In the product without digestion, naranjilla bread increased 1.7 times for TP, 50 times for CT and 1.3 times for TEAC, compared to the control bread (p < 0.0001). The percentage of bioaccessibility for fresh bread without digestion was 39.2 and 53.9% for the control and naranjilla bread, respectively. The addition of NF contributes to a higher TP compounds content and favors its bioavailability. Practical implications For bread production, fruits that do not meet the quality standards to be consumed as a natural fruit can be used. In this way, these fruits can contribute as a potential use to reduce agro-industrial waste and as a natural colorant. Originality/value Naranjilla is a native fruit from the subtropical Andean regions, which has high ascorbic acid concentrations, making it a fruit rich in antioxidants. Naranjilla-enriched bread contributes with beneficial compounds for the consumer.

Abstract This experiment evaluated replacing dietary corn (50:50 blend of dry-rolled and high-moisture) with corn bran plus condensed distillers solubles (CBCDS) on finishing phase growth performance, efficiency of dietary net energy (NE) utilization, comparative NE value, and carcass trait responses in finishing beef steers. This study used 30 pens of 8 steers/pen assigned to one of three treatments in a randomized complete block design (initial BW=401±43.2 kg); pen served as the experimental unit. Treatments included: 1) finishing diet that contained no corn co-product (Control); 2) finishing diet that contained a dry-corn milling bio-refinery product (20% DM basis inclusion) that replaced corn in the diet: CBCDS; 3) finishing diet that contained a wet-corn milling co-product (20% DM basis inclusion) that replaced corn in the diet: wet corn gluten feed (WCGF). For all analyses, an α of 0.05 determined significance and an α of 0.06 to 0.10 was a tendency. No differences were detected (P ≥ 0.58) among treatments for carcass-adjusted final BW (HCW/0.6433), ADG, or G:F. Observed NE for maintenance and gain was not impacted (P ≥ 0.28) by treatment. No appreciable influence for treatment was detected for the ratio of observed to expected dietary NE for maintenance or gain (P ≥ 0.40). Replacement NEm and NEg values (Mcal/45.4 kg) were determined to be 93.5 and 62.3 for CBCDS and 91.5 and 60.5 for WCGF. There was no influence (P ≥ 0.16) of treatment on DP, HCW, REA, RF, USDA Marbling, KPH, EBF, or final BW at 28% EBF. Treatment tended to influence (P = 0.10) YG, where steers fed WCGF had lesser YG than Control; however, CBCDS diet was intermediate, not differing from WCGF or Control. Distribution of USDA Quality and Yield Grade did not differ (P ≥ 0.29) among treatments. Substitution of corn for CBCDS at 20% of dietary DM can occur without detriment to growth performance or carcass traits.

Abstract A 45-d backgrounding study was conducted to compare animal performance, forage nutritive value, digestion dynamics, and diet costs of conserved forage systems for weaned beef calves. One hundred and eight weaned Angus × Simmental beef calves (initial BW 279 ± 34 kg) were randomly assigned to one of three diets (n = 3 pens/treatment): 1) free-choice annual ryegrass (RB; cv. ‘Marshall’) baleage and 4 kg of a 50/50 mixture of pelleted soybean hulls and corn gluten feed, 2) free-choice Tifton 85 bermudagrass (BH) and 3 kg of a 50/50 mixture of pelleted soybean hulls and corn gluten feed, or 3) free-choice corn silage (CS; cv. Pioneer P1662YHR) and 2 kg of a 85% cracked corn and 15% cottonseed meal mixture. Diets were formulated to achieve a target gain of 0.9 kg/d based on the NRC (2000) requirement for a 270 kg growing calf. Animal performance (initial BW, final BW, and ADG) was measured on days 0 and 45 of the study. Forage nutritive value and an in vitro digestion trial were conducted to evaluate supplementation effects on forage diet digestion dynamics. Data were analyzed using PROC Mixed in SAS 9.4 as a completely randomized design. Pen was the experimental unit. Mean initial and final BW of the animals did not differ (P = 0.50 and P = 0.99, respectively) across treatments. Calf ADG for RB, BH, and CS diets were 0.61, 0.72, and 0.72 kg/d, respectively, and did not differ across treatments (P = 0.57). Based on these results, these forage options supported a similar level of gain when used for backgrounding beef calves. Forage in vitro DM digestibility differed 48 h after digestion, and BH + 50:50 had greater 48-h digestibility than when unsupplemented, which may be related to complementary forage-supplement interactions. In diets containing RB and CS, digestibility was greater with no supplementation at the 48-h time point. These data support the observation that supplementation type and level influence conserved forage diet digestibility compared with forage alone. The cost of feeding a baleage-based diet in this system was higher ($1.37/d) than CS or BH diets ($1.02 and $0.95/d, respectively). Results suggest that RB baleage-based diets may support a similar level of gain to BH or CS diets in growing beef calves, but supplement type, level, and ration costs should be evaluated when determining cost-effective backgrounding options in the Southeastern United States.

Two experiments were conducted to assess the effects of media pH and mixtures (SCEF) of live yeast (Saccharomyces cerevisiae; SC) and lactic acid bacteria (Enterococcus faecium; EF) on gas production (GP), dry matter disappearance (DMD) and volatile fatty acid (VFA) concentrations in batch culture using either high-forage (HF) or high-grain (HG) diets. Diets were evaluated in separate experiments, each as a complete randomized design with 2 (media pH, 5.8 and 6.5) × 5 (control, 3 SCEF, monensin) factorial arrangement of treatments. The SCEF had varying ratios of SC:EF: 0:0 (control), 1.18:1 (SCEF1), 1.25:1 (SCEF2) and 1.32:1 (SCEF3), added on a log10 basis. For the HF diet, supplementation of SCEF had greater GP (P = 0.03) at pH 6.5, and greater DMD (P = 0.03) and VFA concentration (P < 0.01) at pH 5.8 and 6.5 than control. For the HG diet, acetate:propionate (A:P) ratio at pH 6.5 was greater (P = 0.05) for SCEF than control. Increasing ratio of SC to EF in SCEF linearly (P < 0.01) decreased GP and DMD and linearly increased acetate percentage at pH 6.5. These results suggest that optimizing the SC:EF ratio in a mixture of SCEF can help improve rumen fermentation.

Feeding behavior activities were visually assessed by trained personnel twice (d 27 and d 63) for 24 h, when time spent on each activity was recorded every 5 min. Data were analyzed using the GLIMMIX procedure of SAS. Treatment × period interactions (P ≤ 0.03) were observed for eating time (min/d) and eating rates (min/kg of consumed DM, OM, fiber, and digestible DM, OM, and fiber), in which steers fed the nutritional packet spent less time in such activities on d 27 and more time during the assessment on d 63, compared with control. Regardless of period, steers fed the nutritional packet tended (P = 0.07) to spend less time chewing per kg of digestible ADF. Rumination (P ≥ 0.28), drinking (P ≥ 0.40), active (P ≥ 0.92), and resting (P ≥ 0.53) times were not affected by treatment. The nutritional packet affected eating behavior more intensively during the first 27 d of treatment, and digestible ADF seems to be the main feed-fraction inducing such effect.

Abstract The effect of a nutritional-packet was evaluated on time spent ruminating, eating, and chewing (ruminating + eating) by intensively managed beef steers consuming a finishing diet during the final 65 d of feeding prior to slaughter. Furthermore, the influence of behavior on CH4 production was determined. Twenty-four Angus-crossbreed steers were distributed into pens with SmartFeed (C-Lock) technology in which they were treated with: control or nutritional-packet [0.29% DM basis; live yeast (8.7 Log CFU/g); Vitamin C (5.4 g/kg); Vitamin B1 (13.33 g/kg); NaCl (80 g/kg); KCl (80 g/kg)]. An ear tag containing multiple accelerometers (CowManager) was placed on steers, and such device continuously recorded rumination and eating time (min/day). Enteric CH4 emissions were measured for 15 d using the SF6 tracer technique. Feeding behavior data were analyzed as a randomized complete block design using the MIXED procedure of SAS. The model included the fixed effect of treatment and the random effect of block. Steer was considered experimental unit. The GLM procedure of SAS was used for regressing behavior and CH4 production data. There were no differences between treatments for time (within 24 h) spent ruminating, eating, or chewing (P ³ 0.197). When nutrient intake was taken into account, no differences (P ³ 0.139) were observed between treatments for time spent ruminating, eating, and chewing per kg of dry matter, organic matter, neutral detergent fiber intake, and acid detergent fiber intakes. The production of CH4 was not affected by time spent ruminating (0.93 g/min; R2 = 0.0003; P = 0.935), eating (3.34 g/min; R2 = 0.03; P = 0.409), or chewing (0.69 g/min; R2 = 0.006; P = 0.728). The feeding behavior of intensively managed beef steers during the final 65-d of feeding was not driven by the nutritional-packet supplied, neither was CH4 production associated with feeding behavior variables measured.
