Purpose The purpose of this paper is to analyze perceptions of quality in the chicken meat supply chain. Design/methodology/approach This survey covered 74 different farms, slaughterhouses, meat processors, and retailers and 500 consumers, using two methods. From the farm to retail, analysis covered “customer – supplier” viewpoints in different stages of the supply chain. From the consumers to the farms, the quality function deployment method was used. Five houses of quality have been developed using the Delphi method to synthesize the opinions of experts. Findings Farm-slaughter comparison shows that final weight at farm gate and animal welfare are the most important quality attributes. The quality aspect important for slaughterhouses and meat processors is the cold chain. Retailers and meat processors highlight the portfolio of various chicken meat products as their most important quality attribute. At the points of sale, shelf illumination and product placement are prevailing. Research limitations/implications The results suggest that there are different views on quality by all actors in the supply chain, from quality of chicken meat, food safety and quality of service in retail to profitability and animal welfare. Practical implications The paper enhances simplicity in analyzing quality aspects of different types of meat supply chains. This methodology enables a synergy of value chain promotion with other quality development approaches. It also creates possibilities for policy makers to improve competitiveness strategies. Originality/value Application of a similar approach to other parts of the food chain could offer a better insight into the transformation of quality.

Purpose:This research shows how the perception of quality differs through the table egg chain and highlights the main quality characteristics for each studied chain participant (farm, retail, consumer).Design/methodology/approach:Observing the change in perception starts from the farm, through retail to the end consumer using the customer–supplier interaction, while looking back from the consumer to the farm, the application of the quality function deployment (QFD) was used. The study included 30 farms, 50 retail stores, 1,000 customers and 300 households.Findings:The farm–retail comparison highlights the type of production as the dominant factor affecting egg quality for both of these participants, followed by hen diet and the type of laying hen hybrid from the farmer's point of view, while retail focuses on packaging and egg damage. Egg quality aspects from the retail–household perspective emphasize the shell appearance and the origin of the eggs, while shelf life and egg class are equally important characteristics for both participants. The application of the QFD throughout the entire egg chain emphasizes quality vs price as the most important characteristic.Originality/value:This study could serve to food policy makers as an introduction to further research and production orientation in relation to the set of quality requirements associated with the egg supply chain.

PurposeThe purpose of this paper is to analyze the perception of the cold chicken meat value in its supply chain and how to manage the influence of quality demands in this supply chain. It is based on the views that retails and restaurants have about the main quality aspects required to meet their end customers.Design/methodology/approachThis paper surveyed 135 respondents from restaurants, butcheries, supermarkets, and convenience stores located in the Southern Brazilian metropolitan area. Principal component analysis followed by quality function deployment was performed to analyze the data.FindingsThe principal component analysis results in seven factors: product quality and flexibility of delivery; supply flexibility; responsiveness to market changes and product assortment; measurements of the inventory and competitiveness; product specificity; product availability and specificity cost; and delivery frequency. The comparative study on the steps of the process between restaurants and retailers shows that distribution, cutting and packaging are the key process steps in this chain.Practical implicationsThe results show what process steps must be prioritized to comply with the customers’ quality requirements. Since the most important process steps are different for different customers, companies may elect what steps require more attention to satisfy the most profitable customer types.Originality/valueSeveral studies are found in the literature that present a theoretical discussion on the quality demands of perishable products. The management of factors related to the process steps can help members of the supply chain in their decision-making processes. The contribution of this research is to identify, by an applied study, how the demanded quality aspects should be considered by the poultry industry to satisfy customers in different market segments.

Purpose The objective of the present study is to identify and analyze a set of critical success factors (CSFs) for ice-cream industry [cold chain management (CCM)] that helps in increasing the efficacy, quality, performance and growth of the supply chain organization. Design/methodology/approach A questionnaire survey with companies in ice-cream sector and a panel study with experts were conducted to identify and validate CSFs and their associated sub-factors. Eight CSFs identified from the cold chain domain vetted for the ice-cream industry and then prioritized by using one of the most well-known decision-making frameworks, Decision-Making Trial and Evaluation Laboratory. The general verdicts of the modelling and its application to the real-world case have been tested through an ice-cream company supply chain. Findings The result shows that the significant CSFs accountable for the growth of the ice-cream industry are the infrastructure and capacity building, consistent product improvement and operational efficiencies of the value chain. Subsequently, it was identified that the use of IT and related technologies and improved processes for operations also play a considerable role in the performance of ice-cream industry. Practical implications The study successfully outlines the effective CCM practices for critical issues. The proposed methodology and factor modelling case demonstration might be useful in analyzing the logistic chains of products such as fruits, drugs and meat. Originality/value The meritorious identification of critical areas and executing mitigation plans bring notable benefits to the firms such as improved operational efficiencies, improved time to market performance and product innovation, which bring additional benefits to the producers.

Purpose The purpose of this paper is to examine the role and contribution of San Martin and Chazuta subnational governments in promoting development and internationalization of the cocoa and chocolate value chain from the stakeholders’ perceptions. This work was based on a qualitative approach in which information triangulation method, information processing with evaluation rubric and WebQDA software were used. The results showed that stakeholders of both value chains perceive that the subnational government’s actions taken to develop and internationalize these value chains are poorly valued and insufficient. Likewise, six internationalization barriers were identified in which two are perceived as the main limitations: low productivity levels and access to innovations and technology. These results contribute to enrich the decision-making process of political authorities and public officials from the San Martin subnational governments. Moreover, they provide information, according to the Peruvian national requirements, on the perceptions needed to rethink and improve the governmental services available, especially productive activities in the rainforest area (Presidencia del Consejo de Ministros, 2015; Wiener Fresco, 2010). This can improve or create new extension services to increase the quality of the Chazuta’s cocoa and chocolate products and to facilitate their entry into more demanding and profitable markets (Shapira, y otros, 2015). Design/methodology/approach This paper has been developed by using a qualitative approach with an exploratory and descriptive scope. The objective was to examine a study case of how subnational governments contribute in the promotion of development and internationalization of agro-industrial value chains as alternatives to illicit crops (Hernandez, Fernandez, & Baptista, 2010). The Chazuta case was selected because it is representative of the region in terms of coca eradication and is located between two regions of high biodiversity – Cordillera Escalera Regional Conservation Area and Cordillera Azul National Park. Findings One of the issues hindering the ability of the Chazuta cocoa and chocolate producers is based on their perception that the subnational governments’ efforts are focused on meeting already-established goals and little emphasis is placed on solving productive problems. On the other hand, at an articulation level, the most relevant efforts have been connecting the cocoa and chocolate customers to Chazuta producers through events. In spite of this, such events are not considered a permanent activity and the producers do not perceive that these mechanisms enable them to maintain these long-term trade relationships. This can be explained by the fact that Chazuta cocoa and chocolate organizations recognize that they still have incipient productive capacities to meet the foreign market’s demand. Furthermore, associations, cooperatives and SMEs are not able to maintain constant levels of production quality, except the family-based business. Knowledge and techniques provided by subnational governments and private organizations are not fully used or implemented by the associations’ members. This low level of knowledge application can be explained by cultural factors and also because the producers receive multiple and sometimes contradictory information from various providers of technology extension services. This leads to inadequate use or non-implementation of productivity improvements, thus generating a virtuous circle in which production and quality of the goods remain at low levels, which hinders their entry into demanding and profitable markets. Research limitations/implications This paper has been developed with a qualitative approach considering an exploratory and descriptive scope. Chazuta case was selected because it is representative of the region in terms of eradication achievements and it is located between two regions of high biodiversity. A rubric is an evaluation method of individuals or organizations performance, taking into consideration the evaluator’s pre-established criteria to determine if the objectives and goals are being met. Based on these criteria, evidence and performance information is collected. Following, performance is graded based on the researcher’s predetermined criteria and finally a merit-based judgment is made on the performance. Practical implications The results contribute to enrich decision making of political authorities and public officials from San Martin subnational governments. They provide information, according to Peruvian national requirements, on the perceptions needed to rethink and improve provided government services, especially in rainforest area productive activities. This adds up to improvement or creation of new extension services to increase the quality of Chazuta’s cocoa and chocolate products, and to facilitate their entry into more demanding and profitable markets. Social implications The situation of San Martín region and Chazuta district is contextualized and emphasis is given to socioeconomic conditions and the value of cocoa as an alternative crop to coca. From 1980 to early 2000, Peru lived a period of generalized violence due to narcoterrorism, which had large-scale outreach in southern highland and rainforest areas. To deal with this situation, subnational governments in collaboration with international cooperation decided to consolidate agro-industrial value chains in order to generate legal income for rural populations. For this purpose, alternative crop policies were implemented and San Martin region achieved the best results. Originality/value This fieldwork was carried out as part of the undergraduate thesis but after fieldwork, with the use of online software tool WebQDA, codes were created to systematize and quantify the collected information in the content manager. The codes were created taking into account assessment and evaluation variables. Each value represented a code referred to a performance level as perceived by Chazuta cocoa and chocolate value chains stakeholders.

Purpose This paper aims to review the healthcare supply chain (HSC) literature along various areas and to find out the gap in it. Design/methodology/approach In total, 143 research papers were reviewed during 1996-2017. A critical review was carried out in various dimensions such as research methodologies/data collection method (empirical, case study and literature review) and inquiry mode of research methodology (qualitative, quantitative and mixed), country-specific, targeted area, research aim and year of publication. Findings Supply chain (SC) operations, performance measurement, inventory management, lean and agile operation, and use of information technology were well studied and analyzed, however, employee and customer training, tracking and visibility of medicines, cold chain management, human resource practices, risk management and waste management are felt to be important areas but not much attention were made in this direction. Research limitations/implications Mainly drug and vaccine SC were considered in current study of HSC while SC along healthcare equipment and machine, hospitality and drug manufacturing related papers were excluded in this study. Practical implications This literature review has recognized and analyzed various issues relevant to HSC and shows the direction for future research to develop an efficient and effective HSC. Originality/value The insight of various aspects of HSC was explored in general for better and deeper understanding of it for designing of an efficient and competent HSC. The outcomes of the study may form a basis to decide direction of future research.

Purpose The purpose of this paper is to investigate the agility of oil and gas value chains in the United Arab Emirates (UAE) and to understand the impact of implementing supply disruption (SD) strategies, outsourcing strategies (OS) and management strategies (MS) on oil and gas value chain agility (VCA). The results can support the oil and gas industry across the UAE to build resilience in the value chain. Design/methodology/approach The research design consists of a comprehensive literature review, followed by questionnaire-based survey responses of 106 participants and comprehensive statistical analysis, thus validate the developed theoretical framework and contribute to both practical and methodological approaches. Findings The findings indicate that oil and gas value chain in the UAE has moderate a significant degree of SD, when OS in place that are synchronized with the overall MS. Among the hypotheses developed, two were accepted thus warranting both SD strategies (r=+0.432) and MS (r= +0.457) found to have a positive moderate effect on VCA. The third hypothesis was rejected by revealing OS (r=+0.387) found to have a positive moderate relationship with VCA. Therefore, implementation of all three strategies has a positive moderate effect on the agility of the value chain and, therefore, supports to sustain competitive position. Research limitations/implications Some of the limitations of this research include the geographic coverage of the study region and other methodological limitation. Practical implications The research provides guidance for oil and gas supply chain managers to better understand the critical factors that impact and determine VCA. The paper also describes relevant strategies that should be taken into consideration by these managers in order to build their agile value chains. Social implications The research contributes to the social dimensions of supply chain sustainability of how resilient is the oil and gas value chain during uncertain conditions, so that it can respond to uncertain changes in order to contribute to corporate social responsibility. Originality/value This research is the first of its kind in the UAE region to assess the link between dimensions of agile value chain, OS, SD strategies and MS primarily from the Emirates of Abu Dhabi and Dubai.

PurposeThe reduction of food wastage at every stage of a fresh produce supply chain helps in achieving balance among all three dimensions (social, ecological and economic) of the sustainability and helps in stimulating the growth and development in the agricultural domain. The purpose of this paper is to address the causal factors of post-harvesting losses (PHLs) occurring in the transportation phase.Design/methodology/approachThrough exhaustive literature survey and expert opinions, 12 crucial barriers to sustainable transportation of fruits and vegetables (F&V) are identified. The interpretive structural modeling (ISM) methodology, a multi-criteria decision-making (MCDM) approach, is employed for developing a structural model of the identified barriers.FindingsThe results of the analysis highlighted that two factors, namely, the non-availability of refrigerated vehicles, and excessive loading on the vehicles, are the most significant barriers to sustainable transportation which are found to have the highest driving power.Research limitations/implicationsThe results of the present research are applicable to the F&V supply chains only. The established interrelation among the identified factors depends on the judgments given by the experts which could be biased. The developed ISM model is intended to guide the policy and decision makers for formulating the policies for the performance improvement of the fresh produce value chain.Originality/valueIt is the first research of its kind focusing on the model development of critical factors causing PHLs in the transportation phase of the agricultural fresh produce supply chain using MCDM process.

Purpose The paper aims to research the current understanding of Slow Food in the Indian hospitality sector and to identify how the industry can embrace the concept and its sustainability. To begin, underpinnings are considered in relation to traditional, locally produced food for patrons that is actually “farm to fork” in terms of its delivery model as evidenced by backward integration in the supply of key ingredients. The economics of the backward integration is analysed to measure its impact on businesses’ bottom-line in the context of an inflationary economy. Design/methodology/approach Existing published literature is reviewed with reference to the “Slow Food movement” from both an international and Indian perspective. Vedatya’s approach to sustainable culinary value chain creation and its applicability for industry adoption with an intent to offer Slow Food on commercial menus is documented and discussed. A round table discussion with key food and beverage leaders is also documented and analysed to establish the current state of awareness and readiness of the sector to offer “Slow Food” through an integrated supply chain in India. Findings Slow Food as a concept is new to India; there is a huge shift in many parts of the world towards food that is fresh, traditional and drawn from locally available ingredients. This research shares Vedatya’s experience in developing an integrated value chain that can provide a sustainable Slow Food model for the Indian hospitality and restaurant sector to deploy with a positive impact on profitability too. Research limitations/implications There is need for more research to better understand the feasibility of hospitality businesses working on supply chain with backward integration, to offer “Slow Food” to consumers. While there seems to be a demand for traditional food, this paper does not research that aspect; further research is required to ascertain the potential demand for Slow Food in India. Practical implications The popularity of Slow Food is global; however, the Indian hospitality sector is yet to warm up to this potential. The customer focus on healthy, traditional, fresh food opens an opportunity to innovate, and businesses that build capacity to offer real farm-to-fork menus can become market leaders and will reap bottom-line benefits through lower input costs because of supply chain integration. Originality/value This paper is unique in terms of offering a discussion on the potential of Slow Food as the next realm of culinary innovation in India. It also adds value by sharing the Vedatya experience in terms of developing an integrated supply chain that facilitates the Slow Food offering in a farm-to-fork format. The model can be emulated by commercial hospitality businesses resulting in cost advantages and higher satisfaction levels of customers.

Purpose – The purpose of this paper is to develop a conceptual framework to understand the influence that the social era is having on the value chain of the local news industry. The authors theoretically advance value chain theory by, firstly, considering the influence of community type and age on consumption and, secondly, exploring the role that consumers can play in value-adding activities. The theoretical contribution of this study lies in moving from a transactional approach towards consumer relationships in the value chain towards managing consumers as a source of relational value (e.g. co-creation and integrated perspectives). Design/methodology/approach – The conceptual framework is theoretically positioned in relation to community and digital community practices in the social era. A series of research questions are presented, then these questions are explored drawing on empirical data from the Pew database. The authors then advance the framework further to consider news firm strategy towards its consumers. Fifteen in-depth executive interviews were conducted with local news organizations in the Manchester area of the UK. Findings – The authors illustrate that different types of communities (merging cohorts and locations) are influencing levels of technological and social connectivity within the value chain. The authors also found that the news industry is experimenting with reconfiguring its consumer relations from a purely transactional to a co-created and participatory value-added activity in the social era. In terms of its policy impact, the findings in this paper show that the whole strategic value chain ideology of the news industry needs to change radically; away from its largely transactional (and lack of trust) approach in the ability of consumers to create value in the supply chain (other than to buy a product) and, move towards much greater consumer involvement and participation in value chain processes (creation, production and distribution of news products and services). Originality/value – The change associated with social media and connectivity is changing the way that different community types and consumer groups are now consuming and participating in news content creation. Unlike previous studies, the authors show that there is variance and complexity in the levels of consumer participation by community type/age group. Using the Pew data, the authors contribute to knowledge on the value creation strategy of news firms in the social era, by identifying how communicative, social and communicative logics influence value and co-creation activities in the local news supply chain. Through interviews, the authors advance value co-creation theory from its strategic and marketing origins to operational and supply chain implementation.

Purpose The purpose of this paper is to propose a balanced scorecard (BSC)- and strategy map-based quantitative framework for assessing the lean and green performance of the supply chain (SC). As the SC competitiveness demands efficient and effective utilization of resources throughout the value chain, not only adoption of lean and green SC paradigms but simultaneously its performance evaluation is also vital. Design/methodology/approach The lean and green SC performance measures are classified into four categories of BSC. A fuzzy decision-making trial and evaluation laboratory (DEMATEL) methodology combined with analytical network process is proposed for examining the causal relationships between BSC perspectives and respective assessment criteria. The application of the proposed assessment framework is demonstrated for the case of Indian textile SC. Findings The research delivers a quantitative assessment framework for evaluating lean and green performance of the SC. The results obtained for a typical case of Indian textile SC revealed that “delivery performance,” “profitability” and “operational cost” are the most crucial performance measures. The perspective of “internal processes” is the most significant of all BSC perspectives while “learning and growth” perspective acts as the driving force to improve lean and green SC performance. Originality/value The paper makes two contributions in the domain of lean and green assessment of SC performance. First, it proposes an evaluation framework to investigate into the causal relationships among the BSC perspectives and related factors. Second, it undertakes an empirical investigation for Indian textile SC to develop key managerial insights and provide policy-related recommendations.
