Background. Cost is a commonly reported barrier to healthy eating. This is a secondary research analysis designed to examine the food expenditures of young adults on a university campus following the United States Department of Agriculture (USDA) MyPlate guidelines for fruits and vegetables. Methods. Meal receipts and dietary intake were recorded weekly. Anthropometrics and clinical assessments were recorded before intervention. Researchers rated compliance based on the participant’s dietary food log, receipt matching, food pictures, and reports during weekly 1-hour consultations. Results. Fifty-three young adults (18–30 years old) at-risk of, or diagnosed with, metabolic syndrome (MetS) were enrolled in the study, with 10 excluded (n = 43) from analyses due to enrollment in a fixed cost university campus dining meal plan. A two sample t-test assessed differences in food costs and regression analysis determined associations between food cost and diet compliance while controlling for confounding factors of age, sex, and body mass index (BMI). Diet compliant subjects (n = 38) had higher weekly food cost at $95.73 compared to noncompliant subjects (n = 5) who spent $66.24 (p=0.01). A regression analysis controlling for age, sex, BMI, and geographical region also indicated cost differences based on diet compliance (p<0.0001). Conclusion. Results indicate an ∼$29.00 per week increase in food cost when eating the recommended amount of fruit and vegetables. These findings can contribute to research incentive design, program planning cost, and determining effective interventions to improve diet in this population.

Using data from the United States Department of Agriculture (USDA) Nationwide, Food Consumption Survey (NFCS) conducted from April 1987 through Summer 1988, 1-day intakes of fruits and vegetables by 10, 138 individuals are described. Mean intakes and percentages of individuals using total fruits, citrus fruits and juices, apples, bananas, other fruits and mixtures mainly fruit, noncitrus juices and nectars, total vegetables, white potatoes, tomatoes, dark-green and deep-yellow vegetables, and other vegetables are presented. Fruit and vegetable consumption patterns by age and sex (18 groups), by race (black and white), by region (Northeast, Midwest, South, and West), and by income level as a percentage of poverty (under 131%, 131-300%, and over 300%) are illustrated.

Food deserts are identified by the United States Department of Agriculture as areas where asignificant proportion of the population lack access to quality food choices. The purpose of this study was toassess the availability of quality fruits, vegetables, dry good, and meats at corner store locations in a south-central Minnesota county designated a food desert. Corner stores (n=22) were audited for the presence of20 fresh fruits and vegetables, low-fat meats, and whole grain dry goods. Results indicate more than three-quarters of corner stores did not provide sufficient access to healthy foods, and were not provide sufficientaccess to quality food for residents in the county.

Diet is a key factor of human health, and additional research is needed in order to understand the psychological causes, consequences, and moderators of dietary behavior. Participants in two studies in the United States completed a 21-day intervention that involved either self-monitoring their fruit and vegetable consumption or self-monitoring combined with earning monetary incentives for behavior. Each day, participants reported their stress, affect, and consumption of fruits and vegetables. Hierarchical linear mixed effects model results suggest that on average, daily reports of higher stress were associated with fewer fruits and vegetables consumed on that day. This effect was moderated by incentive condition, such that the relationship between stress and fruit and vegetable consumption was reduced among incented participants. There was also a marginal negative effect of time on consumption of fruits and vegetables, but this was also significantly moderated by condition, such that those participants who did not receive incentives decreased their daily servings, while incented participants did not decrease over the course of the intervention. These studies suggest that incentives may be a novel method for buffering against the negative effect of daily stress on eating a healthy diet.

ABSTRACT Objective To estimate the usual consumption of fruits and vegetables by Brazilian adolescents. Methods We used 24-hour dietary recall data from the Study of Cardiovascular Risk in Adolescents conducted in 2013-2014 with 71,740 adolescents between 12 and 17 years old. The usual consumption of fruits and vegetables was estimated in the Statistical Analysis Software using the model of the United States National Cancer Institute, and evaluated according to sex, age, place of residence, economic class, and nutritional status of the participants. Results The mean of usual fruit and vegetable consumption was estimated at 171g/day, mostly fruits (128g/day), mainly in the form of fruit juice (64.8%). The minimum fruit and vegetable consumption of 400g/day recommended by the World Health Organization was reached only by 2% of the adolescents. The adolescents’ socioeconomic class or nutritional status had no impact on the usual fruit and vegetable consumption, but adolescents from northern Brazil had a significantly lower consumption than those from the midwestern region. Orange was both the most consumed fruit on a daily basis (mean of 42.6g/day, 90% as juice) and the most reported fruit (by 12.7% of the adolescents), followed by apples (10g/day; 5.6%) and bananas (8.4g/day; 8.3%). Tomato was the most consumed vegetable (9.2g/day), reported by 11.5% of the adolescents. Conclusion Public health policies are necessary to encourage fruit and vegetable consumption among Brazilian adolescents, including of pure juice, essential foods to prevent chronic diseases in adulthood.

Purpose Young adults frequently engage in sub-optimal dietary behaviours, such as inadequate intakes of fruits and vegetables and excessive consumption of take-out meals. Theory-based interventions are suggested to promote dietary change. The transtheoretical model is an example that stages an individual’s readiness to change behaviours as precontemplation, contemplation, preparation, action and maintenance, and includes a series of processes that help people move between stages. The purpose of this study is to investigate whether self-reported usual dietary intakes of fruits and vegetables and take-out foods differ by reported stage-of-change. Design/methodology/approach Cross-sectional data from 250 overweight young adults, aged 18-35 years, who enrolled in a lifestyle intervention to prevent weight gain are analysed. Participant’s stage-of-change for increasing fruit and vegetable intakes and reducing take-out foods is determined using staging algorithms. This is compared with self-reported dietary intakes over the past month using a food frequency questionnaire. Differences in intakes and variety by stage-of-change are compared for fruits, vegetables and take-out foods. Findings Take-out foods differed between stages (p < 0.0001), with lower weekly intakes in action (309 g) and maintenance (316 g) compared with preparation (573 g). Daily fruit intakes and variety scores varied by stage-of-change (p < 0.0001), being highest for action and maintenance (261 g and 263 g, respectively, and variety scores of 1 and 2) compared with precontemplation, contemplation and preparation (all = 100 g and 0 for variety). Daily vegetable consumption and variety scores differed by stage (p = 0.009 and p = 0.025, respectively) being highest for action/maintenance (204 g and 2 for variety) versus precontemplation and preparation (<110 g daily and Variety 1). Practical implications The finding of no differences in intakes between precontemplation, contemplation or preparation stages implies that the adoption of the dietary behaviours is not a continuum but a move from pre-action to actioning the target intakes. This means that for planning health promotion and dietary counselling, assigning people to the three different pre-action stages may be unnecessary. Originality/value This study is the first to examine the congruence of self-reported readiness to change behaviour with dietary intakes of take-out foods as well as variety of fruit and vegetables in overweight young adults.

Abstract Objectives To reduce sugar-sweetened beverage (SSB) consumption, public health campaigns have focused on soda. However, intake of other SSBs has increased, perhaps due to perceptions that they are healthier. Thus, we sought to examine differences in health perceptions between soda and four types of SSBs among young adults and determine if socioeconomic characteristics were associated with perceptions. Methods In a cross-sectional study, 1339 undergraduate students from three universities participated in an online survey in August-November of 2018. Items used 7-point Likert scales to assess 1) perceived healthfulness of daily consumption of soda, sweetened tea, Vitamin Water, fruit-flavored drinks and sports drinks and 2) agreement or disagreement that these beverages increase risk of diabetes. Surveys also assessed demographic characteristics and food insecurity as a proxy for socioeconomic status. Analyses used Chi-square tests with dichotomized outcomes and linear regression models adjusting for race/ethnicity, university, gender and age. Results Students were more likely to perceive daily consumption of fruit-flavored drinks, sweetened tea, sports drinks, and Vitamin Water as healthy compared to soda (9%, 5%, 6%, and 14% vs. 2%, respectively, all P-values < 0.05) and were less likely to agree that these SSBs increase risk of diabetes compared to soda (67%, 67%, 61%, and 46% vs. 95%, respectively, all P-values < 0.001). Food insecure students rated all SSBs (except Vitamin Water) as healthier than did food secure students (P-values < 0.05). Food insecure students were also less likely than food secure students to agree that soda and Vitamin Water increase risk for diabetes (P-values < 0.05). Conclusions To reduce SSB consumption, public health policies and programs should focus on all types of SSBs, not just soda. Policies like SSB warning labels, which apply to all SSBs, may help correct misperceptions of SSB healthfulness and potentially reduce health disparities. Abstract Objectives Health advocates recommend 20 minutes of seated lunch time. Yet, no federal policy ensures adequate time for school lunch across the US. The objective of this study is to assess the impact of meeting the 20-minute seated lunch time recommendation on child food consumption and waste. Methods Using a crossover design, seated lunch time was randomly assigned each day to be either 10 or 20 minutes. Menus conformed to the National School Lunch Program nutrition standards and were matched to short and long lunch days to control for menu. Elementary and middle school-aged students attending a university summer camp participated in the study. Children could enroll in 1 to 4 weeks of the camp and had varying lengths of participation in the study. Researchers weighed individual child meals to assess consumption and waste. Mixed models assessed the differences in food consumption and waste between students with greater or less than 20 minutes of seated lunch time, accounting for repeated measures and menus. Results A total of 38 students participated (mean: 10.9 years old, 60.5% female) and attended 6.3 study days on average. Students with less than 20 minutes of seated lunch time consumed on average 8.4% less (P = 0.010) of their selected fruit and 11.5% (P = 0.006) less of their selected vegetable compared to students with at least 20 minutes. For each additional minute of seated lunch time, student consumption of fruit increased on average 0.9% (P = 0.003) while vegetable consumption increased on average 1.3% (P = 0.001). Student consumption of entree items and milk did not significantly differ across short and long lunches. Conclusions These findings suggest that shorter lunch periods differentially impact rates of child fruit and vegetable consumption, as compared to entree and beverage consumption. These results also support policies requiring 20 minutes of seated lunch time to improve child diet quality and reduce food waste. Higher fruit and vegetable consumption is associated with a reduced risk of certain cancers and chronic diseases. The 5-a-Day for Better Health community studies are evaluating population-based strategies to achieving dietary behavior change using the stages-of-change model and associated theories. The authors present baseline comparisons of stages of change for fruit and vegetable consumption among adults and young adults in eight study sites representing diverse regions of the United States and diverse populations and settings. Three dominant stages, precontemplation, preparation, and maintenance, were found across sites. Women and those with college degrees were more likely to be in action/maintenance. Fruit and vegetable consumption, self-efficacy, and knowledge of the 5-a-Day recommendation were positively associated with more advanced stages of change in all study sites. The authors discuss the findings in relation to possible limitations of this and other dietary stages-of-change measures and suggest directions for future research.

Food safety information campaigns are more likely to be most effective if the messages are tailored to the needs of a specific audience. Designing effective campaigns involves careful study of the target population and working with them using a community-based participatory research model. Thus, the development of the campaign materials for a university campus–based food safety media campaign for young adults followed intense efforts of working with the target audience to gather the baseline data needed to characterize this audience, to identify the most salient messages for college students, and to create materials and events that would resonate with them. This campaign was implemented and evaluated on eight university campuses in the United States. The results indicate that the campaign significantly increased self-ratings of food safety knowledge and skill, actual food safety knowledge, food safety self-efficacy, stage of change for safe food handling, and reported hand washing behaviors of a geographically and racially diverse group of college students. The positive study outcomes support the value of engaging in these research and development efforts and reflect the usefulness of the audience-specific materials and activities developed for the campaign. The findings also demonstrate the versatility and utility of the materials on different campuses. Developing health media campaigns specifically for unique populations is key to ensuring health messages reach the target audience and, even more importantly, appeal to them. The detailed overview of the development of a food safety media campaign aimed at young adults presented in this article illustrates how health professionals can work with their target population to develop a focused, effective health promotion campaign.
