The research was carried out with the aim of comparative assessment of varieties and selected forms of sour cherries by the chemical composition of fruits to identify the best genotypes with their subsequent use in breeding, as well as industrial, farm and collective gardening. The experiments were carried out in 2016–2019 in triplicate. The garden was laid out in 2004-2005 and is located in the southwestern part of the Republic of Tatarstan. The material for the study was 20 varieties and selected hybrids of sour cherries of different ripening periods of the breeding of Tatar Research Institute of Agriculture. On average, over the years of research in fruits of different varieties, the content of soluble solids varied within 16.69 ... 26.49%, sugars - 3.72 ... 6.35%, organic acids - 0.96 ... 2.64%, vitamin C - 11.70 ... 15.90 mg per 100 g. The variability of the content of soluble solids and vitamin C was average (V = 15.1 ... 19.3 and 10.3 ... 14.3%, respectively). The amount of sugars, organic acids and the sugar acid index changed more significantly - V = 20.9… 25.2, 22.0… 25.8 and 29.0… 37.7%, respectively. The genotype had a greater influence on the variability of the content of soluble dry substances, sugars and organic acids in sour cherry fruits (30.2 ... 65.9%) than the conditions of the year (3.0 ... 24.7%) and the interaction of these factors (11.4 ... 29.2%). A positive relationship was noted between the content of soluble solids in fruits and the sugar-acid index (r = 0.85), the content of sugars (r = 0.76), acids (r = 0.50), the sum of positive summer temperatures (r = 0.69 ); an insignificant negative relationship with vitamin C (r = -0.45) and summer precipitation (r = -0.60). Sources of a high content of soluble solids in fruits (21.84 ... 26.49%) in the breeding can be Shelangovskaya, Pamyat Sakharova, Sevastyanovskaya varieties, selected forms - Chereshnevaya No. 1, 1-11-31, 80-8, 1-10 -30 and 37-8; high content of vitamin C (15.16 ... 15.90%) - varieties Shelangovskaya, Low-growing and selective form Chereshnevaya No. 1. In industrial, farm, collective gardening it is recommended to use varieties Shelangovskaya, Pamyat Sakharova, Sevastyanovskaya.

One of the most important components of the human diet is the berries and stone fruits. They are rich in sugars, organic acids and biologically active substances - antioxidants. Together, the presented indicators (chemical composition and antioxidant activity) are important for the stable operation of the human body and the technological process when processing plant materials. When analyzing the chemical composition of berries and large fruits from the collection of the Research Institute "Zhigulevskie Gardens", it was revealed that the grade of raw materials influences the determined indexes.The highest value of soluble solids is occupied by the samples of apricot (leading Krugly variety), Black currant (leading Orloviya variety), raspberry (Balzam is leading).The lowest value of soluble solids was observed in strawberry varieties Kama. Analyze berries and fruits differ in the content of organic acids slightly. The maximum content of sugars in apricot, and the minimum for black currant. In the studied fruits, the highest content of phenols was recorded in the black currant. The varieties of flavonoids are different: strawberry Festivalaya, black currant Perun, apricot Khabarovskiy and raspberry Balzam. Low results showed apricot (grade Krugly, Pogremok). The high antioxidant activity was shown by the raspberry varieties Lyubetovskaya and Balzam. The chemical composition and antioxidant activity of fruits and berries play an important role not only for the human body, but also for the technological process during their processing. For this reason, analysis of the feedstock is an important stage in the development and manufacture of food products with a directed antioxidant effect.

The work summarized the literature data on the content of chemicals in blackberries grown in various regions of Russia and foreign countries. Much attention is paid to the level of accumulation of biochemical components: soluble solids, sugars, organic acids, vitamins C (ascorbic acid) and P (phenolic compounds). In the studied regions, a high accumulation of anthocyanins (307-651 mg / 100 g) and ascorbic acid (23.4-54.0 mg / 100 g) in blackberries was noted in the Republic of Adygea. The highest sugar content (9.9%) was in blackberries grown in the middle zone of Russia. The average content of the studied components depends not only on the region of cultivation, but, first of all, on the varietal composition of the crop. The study of 25 blackberry varieties bred in the USA, England and Australia in the Krasnodar Territory allowed us to identify the most adapted of them for cultivation in the south of Russia,the most promising varieties are Thornfree, Smoothstem and Black Satin. In the Republic of Belarus, blackberries are grown on personal subsidiary plots, the most common is the American Agavam variety, which is noted for its high sugar content and the content of P-active substances. At the Maikop Experimental Station. N.I. Vavilov, as a result of studying the biochemical composition of blackberry berries, the following varieties were identified: by the content of dry matter – Oregon, Black Satin, Thornfree; sugar content – Oregon, Silvon, Black Satin, Thornfree, Young; by the content of organic acids – Derrow, Raven (1.67%), Cherokki (1.87%); by the content of ascorbic acid – Himalaya (54.6 mg / 100 g), Derrow (45.8 mg / 100 g), Raven (45.4 mg / 100 g) and Cherokki (47.8 mg / 100 g).

Mango cv Kent, as grown on the Yucatan Peninsula, despite its satisfactory ripening, pleasant flavour, correct pulp colour and general acceptance, shows a skin without the characteristic red- yellow colour of the regular ripe fruit; it remains green and this makes it slightly unattractive to the consumer. On the other hand, ethylene and some other components such as Ethephon, have been used to homogenize the ripening in many fruits and to improve its colour. This work shows the results of the effect of nine different treatments with Ethephon on the colour, composition and quality of mango cv Kent. Fruit was treated by immersion in solutions of Ethephon at three different concentrations (500, 1500 and 2000 ppm) and for three different lengths of times (3, 6 and 9 min). The colour improvement depended upon the concentration and time of the treatment with Ethephon. In general, it was found that treatment with Ethephon had a significantly posi tive effect on the colour of the mango skin, as it caused the degradation of chlorophyll, which gave the appearance of the characteristic yellow and red colours to 100% of the fruit treated with 2500 ppm. Treatments influenced significantly the chemical composition of the pulp, particularly the concentration of total soluble solids, reducing sugars, carotenoids, vitamin C and acidity. The best sensorial acceptance was obtained from treatments with 1500 ppm.

Abstract The study assessing biochemical components (sugars and organic acids) in mandarin fruits after pest control was carried out in matured plantings of cv. Unshiu mandarin in the Republic of Abkhazia in 2019-2020. The treated fruits contained a greater amount of soluble carbohydrates than the fruits in control. The predominant form of monosaccharides is fructose (17.78-17.85 g/l, with 11.89 g/l in the control) in the fruits from the standard treatment and in variant 6 (with a combination of Metamax, Vermitek and Karate Zeon), which is preferable, since it has the greatest sweetness (173 units), providing a sweeter taste of the fruit. According to the content of organic acids, variants 6 and 8 (four treatments with Diatomite, 6%) were distinguished, the content of citric acid on which was 11.86-11.3 mg/l. A more balanced taste of the fruit was in variants 6, 7 (four treatments with Diatomite, 3%) and 8 (sugar-acid index from 7.7 to 7.9 units). Taking into account the content of basic acids and sugars in mandarin fruits, it is possible to predict the impact of insecticides and their combinations on their basic taste properties.

 The paper analysed three-year data (2017–2019) for chemical composition of fruit in promising selected strawberry seedlings (totally-more than 100 forms) from genetical pool of the I. V. Michurin Federal Scientific Center. Average values and the range of variation in the content of the main food and biologically active substances have been determined: soluble solids percentage varies from 8.7–17.0 % (mean 12.4 %), total sugars 5.8–13.2 % (mean 8.8 %), titrable acids — 0.54–1.34 % (mean 0.56 %), ascorbic acid — 44.0–110.4 mg/100 g (mean 72.9 mg/100 g), anthocyanins — 7.3–145.4 mg/100 g (mean 56.8 mg/100 g). In 2019 year the following selected forms 915-104 (298-22-19-21×Feyerverk), 20-8 (Prazdnichnaya×Dedanka), 28-19 (Lakomaya×Maryshka), 921-7 ([(516-167×Cardinal)×Feyerverk); 30-5 (Feyerverk×Privlekatelnaya) are characterized by high sugar accumulation (up to 10.0 %). In 2018 year the high vitamin C content (more over 100.0 mg/100 g) was observed in selected seedlings 914-27, 91459 (Festivalnaya×Privlekatelnaya), 56-9, 56-12 (Gigantella Maxim×Privlekatelnaya); high anthocyanin content (over 100.0 mg/100 g) was demonstrated (in selected seedlings 928-12 (298-19-9-43×Privlekatelnaya), 35-16 (922-67×Maryshka), 25-1 (Rubinovy Kulon×Maryshka), 21-44 (Urozhainaya CGL×Rubinovy Kulon). High and stable content of soluble solids, sugars and optimal acidity of fruit are registered in selected seedlings 26-5 (Rubinovy Kulon×298-19-9-43), 56-9 (Gigantella Maxim×Privlekatelnaya). The selected seedlings 914-9, 914-27 (Festivalnaya×Privlekatelnaya), 25-1 (Rubinovy Kulon×Maryshka), 56-8, 56-9 (Gigantella Maxim×Privlekatelnaya) exhibited the stable level of vitamin C content. High and stable anthocyanin content was confirmed in selected seedlings 914-9, 914-27 (Festivalnaya×Privlekatelnaya), 21-14 (Urozhainaya CGL×Rubinovy Kulon) and 25-1 (Rubinovy Kulon×Maryshka). According to the complex of biochemical characteristics the following selected forms were identified from the hybrid combination Festivalnaya×Privlekatelnaya: 914-27 (ascorbic acid — 90.2 mg/100 g, anthocyanins — 81.6 mg/100 g, sugars — 9.4 %), 914-9 (ascorbic acid — 89.8 mg/100 g, anthocyanins — 90.3 mg/100 g, sugars — 8.4 %).

Phenolic compounds and anthocyanins content in grape juices varies in the cultivar, ripening and climate characteristics. The objective of this work was to characterize and evaluate antioxidant activity of grape juices produced in southwestern Minas Gerais. Grapes were harvested, sanitized and the juices from cultivars 'Bordô', 'Isabel Precoce', 'BRS Violeta' and 'BRS Rúbea' were produced in artisanal equipment by steam extraction and stored for 120 days. The following analyzes were performed during storage: color (L *), pH, soluble solids, titratable acidity, anthocyanins, antioxidant activity (DPPH and β-caroteno/linoleic acid), total phenolics, vitamin C and organic acids. Among the cultivars evaluated, the consumption of grape juice from cultivar 'BRS Violeta' is suggested due to its higher content of vitamin C, antioxidant activity, total phenolics, anthocyanins, and also due to a better physicochemical characteristic showed, when compared to the juices of the other cultivars.

The study was concerned with the chemical composition of two varieties hog-plum Pulp collected from Mymensingh and Barishal and developed jelly and leather. Cabinet dryer, model OV-165 (Gallen Kamp Company) was used for dehydration of two types of hog-plum pulp and leather. The fresh and dried hog-plum and hog-plum products were analyzed for their moisture, ash, vitamin-C, pH, total soluble solids and sucrose contents. The moisture content, ash, vitamin C, pH, total soluble solid (TS), reducing sugar and non-reducing sugar of Barishal hog-plum’s was 83.84% (wb), 0.81% , 33.00 mg/100g, 2.62, 8.5%, 5.02% and 1.6% respectively; Mymensingh hog-plum’s was 86.69% (wb), 0.78%, 30.90 mg/100g, 2.7, 6.5%, 4.7% and 1.3% respectively. The chemical composition of Mymensingh and Braishal hog-plum showed that Barishal hog-plum contained higher solid content, ash, Vitamin C than Mymensingh hog-plum. It was found that Barishal hog-plum had higher flesh (67.59%) than Mymensingh hog-plum (62.60%). The chemical composition of hog-plum leather was analyzed for moisture, Ash, Vitamin C, TS, Titrable acidity, total sugar and protein content. The ash and sugar content of developed leathers from Barishal and Mymensingh hog-plum was very similar but the vitamin C content for developed products was very low. It was also found developed products contained higher amount and sugar and protein. It was found that the chemical compositions of developed jelly were more or less similar to the fresh hog-plum; only the vitamin C was decreased significantly. These studies indicate that, developed products viz. lather and jelly would contain significantly higher amount of nutrients and energy then the fresh fruits. Organoleptic taste testing using 1-9 hedonic scale showed that jelly made from mechanically dried Mymensingh hog-plum was the most acceptable product and was ranked as “like very much”. Leather made from Mymensingh hog-plum (pulp+4.5% sugar+ 0.15% KMS) was the best among other samples and was ranked as “like very much”.DOI: http://dx.doi.org/10.3329/jesnr.v5i2.14598 J. Environ. Abstract The study is aimed at assessing the suitability of plum varieties cultivated in Tambov region for the production of dried fruits (prunes). Large-fruited (average weight of more than 31 g) varieties were identified. Renklod by Kharitonovoy, Etude, Vengerka by Kursakov and Nochka are characterized by intense violet and dark purple integumentary colors. A combination of high skin strength, pulp hardness and good stone separation was found in Renklod by Kharitonov, Renklod Tambov, Etude, Vengerka by Kursakov and 23-135 Elite. A high accumulation of soluble solids, sugars, a low content of organic acids, as well as a high sugar-acid index were found in Renklod by Kharitonov, Renklod Tambov and Elite 23-135. Prunes produced from Renklod by Kharitonov, Renklod Tambov and 23-135 Elite were characterized by high commercial and consumer qualities, which makes it possible to recommend these varieties for the production of dried fruits.

There are presented the results of comparative evaluation of sour cherry varieties of different ecological-geographical and genetic origin on the main biochemical parameters of fruits, condioning the taste of the fruit: dry substances, sugars, vitamins, anthocyanins. It was revealed the dynamics of content of biochemical parameters in fresh fruits depending on weather conditions of year, stresses of various type and biological peculiarities of cherry varieties. According to the obtained data in the conditions of southern horticulture (the Kuban zone of fruit growing of Krasnodar Territory) in the fruits of sour cherry varieties on average 14.5-17.0 % of dry substances, 6.4-8.4 % of sugars, 7.0-8.0 mg/100 g of vitamin C, 117.5-160.1 mg/100 g of substances with P-vitamin activity, 207.8-275.3 mg/100 g of anthocyanins accumulate. It was determined that fruits of sour cherry-sweet cherry hybrids and varieties of local breeding are characterized by higher content of biochemical parameters. It was established that the influence of a number of stresses – high positive temperatures, long periods of drought, surplus of rainfall during the period of fruits formation – causes an increase or decrease in content of some biochemical parameters, a decrease in weight, and deterioration in taste. It was determined that domestic varieties Kazachka, Kirina, Shalun`ya and Igrushka are distinguished by a high content of soluble solids (16.0-17.9 %) and carbohydrates (8.4-9.1 %). Cherry varieties Vstrecha, Alexa and Nord Star are characterized by an increased vitamin C content (8.3-9.7 mg/100); cherry varieties Kirina, Kazachka, Nefris, Vstrecha and the Shalun`ya – by a high content of anthocyans (247,0-333,8 mg/100) and P–vitamin activity (187.0-201.0 mg/100); varieties Alexa, Kirina, Shalun`ya and Igrushka are characterized by relatively large fruits (5.5-6.5 g). According to the optimal and harmonious combination of biochemical parameters, high taste (tasting score 4.6-4.8 points) and to the commodity qualities of fruits, sour cherry varieties Kirina, Alexa, Shalun`ya and Igrushka were recommended for laying raw plantings and production of fresh fruits and various types of processing in the conditions of southern horticulture.

The taste characteristics of berries of 26 cultivars, elite and selected forms of blackberries grown in Central Russia are presented: dry matter, monosaccharides, sucrose acid the total amount of sugars. The sugar-acid index has been calculated. The best genotypes have been identified according to the content of dry matter and sugars - Brzezina and Agawam cultivars, elite seedlings LN-4, LN-13, LN-14 and selected seedlings LN-5, LN-7, LN-8, according to the content of organic (titrated) acids and sugar-acid index - Brzezina, Black Satin, Loch Tau, seedlings of Black Satin, Cheyenne, Loch Ness - LN-6, LN-10, EV LN-13 and control cultivar Agawam. A high traits’ conjugation was established: the sugar-acid index and the content of monosaccharides, the total amount of sugars, soluble solids, as well as a high inverse dependency between the content of organic acids and the sugar-acid index. Low unreliable correlation coefficients (r = - 0.28 … + 0.13) were obtained, indicating the absence of links between the fruit weight and the content of biochemical components responsible for the taste characteristics of genotypes, which is a positive fact when creating new cultivars with high taste and a significant weight of fruits, indicating their independent inheritance.
