Pineapple guava (Acca sellowiana [O. Berg] Burret) is a fruit with export and production potential in Colombia. However, there are few reports about its composition concerning physiological behavior throughout the different ripening phases. Intending to confront this situation, a study was proposed in order to evaluate the physicochemical properties and the nutritional composition of pineapple guava fruits in three different phases of ripening, determined by the weeks elapsed after anthesis, considering it undeveloped for week 17 (W17), ripe for week 20 (W20) and overripe from week 21 (W21). Pineapple guava fruits were preliminarily characterized, they underwent a bromatological analysis and their content of vitamin A and C content was established. The results showed a significant content of crude fiber and total carbohydrates in the three evaluated phases. There was also a decrease in the neutral detergent fiber of 38% between W17 and W21. The highest level of vitamin C was reported in W17 (67.82 mg ascorbic acid/g dry sample), as well as for vitamin A (12.65 mg β-carotene/g dry sample). In a physical-chemical characterization, the existence of a particular physiological behavior is possible because of the development in size and mass of the fruit after physiological ripening. Additionally, the calcium and reducing carbohydrate content can be associated with the pulp browning phenomenon. Clearly, pineapple guava is a promising fruit thanks to its nutritional properties, according to the current consumption tendencies.

The aims of the research were to find out nutritional composition of seaweed Sargassum crassifolium J. Agardh i. e. concentration of protein, amino acids, mineral (ash), mineral elements (Ca, Fe, and P), vitamin C, vitamin A, lipid, fatty acids and alginates. S. crassifolium is a species of brown seaweed that is consumed as source of food, however, it have not optimally used due to the nutritional composition information does not complete yet. The measurement of protein concentration was done according to Lowry method, while amino acids concentration was measured using High Performance Liquid Chromatography (HPLC). Mineral (ash) was measured by dry ash processing, and mineral elements of Ca, Fe, and P were measured using atomic absorption spectrophotometer (AAS) and UV-Vis spectrophotometer. Vitamin C concentration was measured by titration method, while vitamin A was measured using UV-Vis spectrophotometer. Lipid was measured by extraction method using soxhlet, fatty acids by fatty acids methyl esters (FAMEs) method, and alginates were measured by extraction method. The results indicate that the thallus of S. crassifolium contain protein in the average of 5.19% (w/w), and 17 amino acids (in Î¼mol amino acid/g wet weight) varies from 13.77 of glutamic acid to 0.83 for hydroxilicine concentration. Mineral/ash content was 36.93% (w/w), Ca: 1540.66 mg/100 g, Fe: 132.65 mg/100 g, P: 474.03 mg/100 g, vitamin C: 49.01 mg/100 g, vitamin A: 489.11 μg RE/100 g, lipid: 1.63% (w/w), fatty acids concentrations were: 1.45%, 3.53%, 29.49%, 4.10%, 13.78%, 33.58%, 5.94% for lauric acid, meristic acid, palmitic acid, palmitoleic acid, oleic acid, linoleic acid, and linolenic acid subsequently. The concentration of alginates was 37.91% (w/w).

Blackcurrant is a healthy, affordable, and traditionally gardened berry that, thus far, has been underused in food applications. From the consumers’ point of view, the acidic taste of blackcurrants is a challenge; therefore, these berries have mainly been utilized for sugary juice production. This research study aimed to develop a frozen vegan blackcurrant product with pleasant sensory properties and potential probiotic function. A candidate probiotic, Lactoplantibacillus plantarum Q823, was used in the manufacturing process. The physicochemical properties, nutritional composition, and consumer preference for the developed product were assessed, as was the viability of L. plantarum Q823 during storage time and in an in vitro gastrointestinal model. Consumers (n = 71) perceived the developed product to be pleasant. L. plantarum Q823 had high viability counts (log colony forming units (cfu) g−1 7.0 ± 0.38) in the final product, although the viability of L. plantarum Q823 during storage time needs to be enhanced to obtain a probiotic product. Thus, within an optimized formulation, blackcurrant berries represent a potential raw material for functional frozen food products.

he aim of this study was to evaluate fermentation and chemical characteristics and the in situ degradability of sorghum silages enriched with dried Leucaena. The experiment was conducted as completely randomized design with four treatments (0 - control silage, silage without leucaena; 10.0, 20.0, or 30.0% inclusion of Leucaena) and five replicates, totaling 20 experimental units. The inclusion levels of leucaena influenced (P 0.05), with all silages having values above 90%. Gas loss decreased (P < 0.05) as the level of leucine increased in sorghum silage. A linear increase was observed for dry matter (P ? 0.0001) and crude protein (P = 0.0008) contents in response to Leucaena inclusion. There was a linear (P < 0.05) linear effect on neutral detergent fiber, hemicellulose and acid detergent fiber. As leucaena inclusion levels increased, for each 1% inclusion a reduction of 0.179 was observed; 0.059 and 0.119% for the values of neutral detergent fiber, hemicellulose and acid detergent fiber respectively. The inclusion of leucaena influenced (P < 0.05) the increase of silage lignin levels, probably due to the higher lignin content of the legume. The soluble fraction (a) of the silages increased along with the Leucaena inclusion levels, with highest values observed at the inclusion of 20 and 30% of the legume, respectively. Potential degradation (A) increased linearly with the levels of Leucaena added to the silage; the highest value for this variable was observed at 30% inclusion. Effective degradability (ED) increased up to the inclusion level of 20% (46.77%). Degradation rate (c) decreased markedly with the use of 30% Leucaena. The use of the forage part of Leucaena dried for three hours leads to reduced gas production, increased dry matter and crude protein contents, and decreased fiber contents. The degradability of dry matter increases up to the inclusion level of 20%.

Collagen is a promising biomaterial used in the beauty and biomedical industries. In this study, the physicochemical characterization, antioxidant activities, and protective effects against H2O2-induced injury of collagen isolated from Acaudina molpadioides were investigated. The amino acid composition analysis showed that the collagen was rich in glycine (Gly), alanine (Ala), and glutamic acid (Glu), but poor in tyrosine (Tyr) and phenylalanine (Phe). Zeta potential analysis revealed that the isoelectric point (pI) of collagen from Acaudina molpadioides was about 4.25. It possessed moderate scavenging activities of 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2’-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid (ABTS) radicals in a dose-dependent manner. In addition, the collagen was able to effectively improve cell viability and morphology, inhibit the production of Malondialdehyde (MDA), and increase the activities of Superoxide Dismutase (SOD) and Glutathione Peroxidase (GSH-Px) in cultured RAW264.7 cells, resulting in a protective effect against H2O2-induced injury. Overall, the results showed that collagen extracted from A. molpadioides has promising prospects in the beauty and cosmetics industries.

This study aimed to assess the fermentation profile, losses and chemical composition of the silages of five sorghum cultivars. A completely randomized design with five replicates was used. The experimental treatments were represented by five sorghum cultivars (Sorghum bicolor (L). Moench): 'BRS Ponta Negra' , 'BRS 610', 'BRS 655', 'BRS 800' and 'BRS 810'. There was variation (P<0.05) for the pH in the cultivars studied, with highest result of pH by 'BRS 610'. The average percentages of lactic acid, acetic acid and propionic acid, differed (P<0.05) among the cultivars, ranging from 32.9 to 59.5, 19.8 to 39.8, and 0.0 to 1.3g kg-1, respectively. The dry matter recovery varied among cultivars (P<0.05), allowing the identification of BRS Ponta Negra, and 'BRS 810' silages, as those which recovered the lowest dry matter, with values of 757.1 and 776.1g kg-1, respectively. There were differences (P<0.05) for dry matter, crude protein, ether extract, neutral detergent fiber, non-fibrous carbohydrates and total carbohydrates contents among the cultivars. It was concluded that, despite the morphological and chemical differences among cultivars, the resulting silages had good fermentation profile.

To investigate the structure and immunomodulatory activity of polysaccharide from Solanum muricatum, a novel acid polysaccharide named SMP-3a was purified from Solanum muricatum pulp through DEAE-52 cellulose column and Sephadex G-200 chromatography. Monosaccharide composition analysis showed that SMP-3a was mainly composed of rhamnose, arabinose, galactose, and galacturonic acid with the molar ratio of 1.09:2.64:1.54:1. The average molecular weight was found to be 227 kDa by high performance gel permeation chromatography (HPGPC). Thermal studies revealed the SMP-3a was a thermally stable polymer. Based on the results of methylation and NMR analysis, the backbone chain of SMP-3a was composed of →2)-α-l-Rhap-(1→, →4)-α-d-GalpA-(1→ and →4)-α-d-Galp-(1→. The side chain was consisted of α-l-Araf-(1→ and →5)-α-l-Araf-(1→. Immunomodulatory assay indicated that SMP-3a could significantly promote the proliferation of macrophages and stimulate the secretion of cytokines, including TNF-α, IL-1β, and IL-6. Our results suggested that SMP-3a could be used as a novel potential immunomodulatory agent in functional food.

Albino Grifola frondosa (Dicks.) Gray “maitake” mushrooms (described as G. albicans Imazeki and then placed in synonymy with G. frondosa) are particularly rare, and the few pertinent records are not treated in scientific publications. A field investigation carried out in Sicily (Italy) led to the collection of an unusual white Grifola specimen at the base of a living tree of Quercus pubescens Willd. s.l. The outcome of sequencing the internal transcribed spacer (ITS) region of nuclear ribosomal DNA (nrDNA) indicated that it belongs to G. frondosa and provided an insight to the phylogenetic relationships within the genus. The results of nutritional composition analysis showed that the albino basidioma possesses relatively high contents of Ca, Fe, K, and Cu and is rather low in Na when compared with literature data on edible mushrooms. Vitamin (B1, B2, B3, B5, B9, and D2) contents ranged from 0.15 to 3.89 mg per 100 g of mushroom dry weight. The cold-water extract of this specimen was effective at inhibiting the growth of Staphylococcus epidermidis ATCC 12228 and Pseudomonas aeruginosa ATCC 15442 at the maximum screening concentration of 50% v/v. In addition, the extract slowed down the ability of Staphylococcus aureus ATCC 43300 to form biofilms. According to data hereby reported, the albino G. frondosa is a culinary-medicinal mushroom with a promising exploitation potential.

 The aim of this study was to evaluate the replacement of Tifton 85 hay (Cynodon spp.) by maniçoba hay or silage (Manihot glaziovii Muell. Arg) on sheep intake and performance. Twenty-four male Santa Ines animals were used, with initial body weight of 19.77 ± 1.95 kg and average age of 160 days. The animals were distributed in three treatments (Tifton 85 hay-TH, Maniçoba hay-MH and Maniçoba silage-MS), arranged in a randomized blocks design, with 8 replicates per treatment. The feedlot period lasted for 71 days. The means of the variables were tested by Tukey’s test at 5% probability. Sheep fed MH presented higher dry matter intake (p > 0.05) than those fed TH (1.17 kg day-1 vs 1.06 kg day-1). Neutral detergent fiber intake was higher (p > 0.05) for MH-fed sheep (0.394 kg day-1) when compared to MS (0.340 kg day-1). The digestibility of total carbohydrates was higher (p > 0.05) for MH diet (0.71 g kg-1) than TH (0.67 g kg-1). The average daily gain and body weight at slaughter did not differ (p > 0.05) among treatments. Maniçoba hay or silage can replace Tifton 85 hay in sheep diets.
