Abstract One of the most important components in spreads is the fat phase. The characteristics of the used fat determine most of the quality factors of the products such as viscosity, texture, colour, shelf life, etc. In these kinds of products, the commonly used fat is palm fat, however, in recent years it has had a bad press due to its negative environmental impact and health concerns. Therefore, the aim of our research was to develop a palm oil free hazelnut spread. We investigated the effect of replacing the fat in the fat phase with milk fat or coconut fat to the apparent viscosity, colour and texture properties of the product. According to our results the palm fat had the highest and coconut fat had the lowest viscosity. In texture analyses palm fat and milk fat showed no significant difference in hardness and in work of penetration. Coconut fat was significantly different in every texture attributes from the other samples. In the case of colour measurement all samples were significantly different. Despite the observed differences in some parameters the suitability of milk fat for hazelnut spread production should be further investigated (sensory analyses, shelf-life).

The effect of revalorized Bimi leaves (B) and/or mustard (M) addition, as supplementary ingredients, to develop an innovative kale (K) pesto sauce was studied. Microbial, physicochemical (color, total soluble solids content -SSC-, pH and titratable acidity –TA-) and sensory quality were studied during 20 days at 5 °C. Bioactive compounds changes (total phenolics, total antioxidant capacity and glucoraphanin contents) were also monitored throughout storage. The high TA and pH changes in the last 6 days of storage were avoided in the K+B pesto when adding mustard, due to the antimicrobial properties of this brassica seed. SSC was increased when B + M were added to the K pesto, which positively masked the kale-typical bitterness. Mustard addition hardly change yellowness of the K pesto, being not detected in the sensory analyses, showing K+B+M pesto the lowest color differences after 20 days of shelf life. The addition of Bimi leaves to the K pesto enhanced its phenolic content while mustard addition did not negatively affect such total antioxidant compounds content. Finally, mustard addition effectively aimed to glucoraphanin conversion to its bioactive products. Conclusively, an innovative kale pesto supplemented with Bimi by-products was hereby developed, being its overall quality well preserved up to 20 days at 5 °C due to the mustard addition.

Phenols are plant metabolites characterised by several interesting bioactive properties such as antioxidant and bactericidal activities. In this study the application of a phenols concentrate (PC) from olive vegetation water to two different fresh products – gilt-head seabream (<em>Sparus aurata</em>) and chicken breast – was described. Products were treated in a bath of PC (22 g/L; chicken breast) or sprayed with two different solutions (L1:0.75 and L2:1.5 mg/mL; seabream) and then stored under refrigeration conditions. The shelf life was monitored through microbiological analyses – quality index method for seabream and a specific sensory index for raw breast. The secondary products of lipid-peroxidation of the chicken breast were determined using the thiobarbituric acid reactive substances (TBARs) test on cooked samples. Multivariate statistical techniques were adopted to investigate the impact of phenols and microbiological data were fitted by DMfit software. In seabream, the levels of PC did not highlight any significant difference on microbiological and sensory features. DMfit models suggested an effect only on H<sub>2</sub>S producing bacteria with an increased lag phase compared to the control samples (C: 87 h <em>vs</em> L2: 136 h). The results on chicken breast showed that the PC bath clearly modified the growth of <em>Pseudomonas</em> and <em>Enterobacteriaceae</em>. The phenol dipping was effective in limiting lipid-peroxidation (TBARs) after cooking. Treated samples disclosed an increase of shelf life of 2 days. These could be considered as preliminary findings suggesting the use of this concentrate as preservative in some fresh products.

<p>This study aimed to investigate the effects of grafting tomato on different tobacco rootstocks on quality factors and nicotine content. The commercial variety (Solanum lycopersicum ‘H2274’) (BIOTECH) of the tomato was used as the scion plant, and six different tobacco (Nicotiana tabacum L.) rootstocks were used: Taşova, Tekel, Muş, Samsun, Dişbudak, Hasankeyf cultivars. Cleft grafting method was used in all plants. Yield of non-grafted and grafted plants grown in open-field conditions was calculated, and there was a significant increase in yield in grafted tomatoes compared to non-grafted tomatoes. There was significantly increased lycopene and β-carotene levels (mg kg-1), especially in ‘Tekel’, ‘Taşova’, ‘Samsun’, and ‘Hasankeyf’ tobacco grafts. There was a statistically significant difference between grafted and non-grafted plants according to 2, 2-diphenyl-1-picrylhydrazyl (DPPH) free radical retention capacities and total phenol (TP) values. Evaluation of quality determinants including pH values, titratable acidity values (citric acid %), soluble solid content (SSC)(oBrix) , fruit size ratios, showed that tomatoes grafted with ‘Muş’ tobacco rootstock were of higher quality. There was no significant difference between grafted and non-grafted plants according to nicotine analysis of the tobacco-grafted tomatoes, and due to acceptable ranges of nicotin level on tobacco grafted tomato plants were considered to be suitable for consumption. It could be concluded that grafting practices have significantly positive effects on tomato yield and quality.<br /><br /></p>

Calonectria pseudonaviculata and Pseudonectria foliicola causing the infamous ‘boxwood blight’ and ‘Volutella blight’, respectively, are a constant threat to the boxwood production and cut boxwood greenery market. Both pathogens cause significant economic loss to all parties (growers, retailer, and customers) in the horticultural chain. The objective of this study was to evaluate efficacy of disinfesting chemicals [quaternary ammonium compound (QAC), peroxy, acid, alcohol, chlorine, cleaner] in preventing plant-to-plant transfer of C. pseudonaviculata and P. foliicola via cutting tools, as well as reduction of postharvest boxwood blight and Volutella blight disease severity in harvested boxwood greenery. First, an in vitro study was conducted to select products and doses that completely or near-completely inhibited conidial germination of C. pseudonaviculata and P. foliicola. The selected treatments were also tested for their ability to reduce plant-to-plant transfer of C. pseudonaviculata and P. foliicola and manage postharvest boxwood blight and Volutella blight in boxwood cuttings. For the plant-to-plant transfer study, Felco 19 shears were used as a tool for mechanical transfer of fungal conidia. The blades of Felco 19 shears were exposed to a conidial suspension of C. pseudonaviculata or P. foliicola by cutting a 1 cm diameter cotton roll that had been dipped into a fungal suspension. Disease-free boxwood rooted cuttings (10 cm height) were pruned with the contaminated shears. The Felco 19 shears were equipped with a mounted miniature sprayer connected to a pressurized reservoir of treatment solution that automatically sprayed the blade and plant surface while cutting. The influence of accumulated sap on the shear blade was studied through 1- or 10-cut pruning variable on test plants and screened for the efficacy of treatments. Then, the boxwood rooted cuttings were transplanted and incubated in room conditions (21 °C, 60% RH) with 12 h of fluorescent light; data evaluation on disease severity was done weekly for a month. Disease progress [area under disease progress curve (AUDPC)] was calculated. In another study, postharvest dip application treatments were used for the management of postharvest boxwood blight or Volutella blight on boxwood cuttings. The harvested boxwood cuttings were inoculated with a conidial suspension of C. pseudonaviculata or P. foliicola, then dipped into treatment solution 3 days afterwards. The treated boxwood cuttings were kept in room conditions, and boxwood blight or Volutella blight disease severity as well as marketability (postharvest shelf life) assessed every 2 days for 1 week. A significant difference between treatments was observed for reduction of boxwood blight or Volutella blight severity and AUDPC. The treatments (ODD + DoD + DdD + DB)AC [Simple Green D Pro 5], 2 propanol + DDAC (0.12%) [KleenGrow], and DBAC + DEAC [GreenShield] were the most effective in reducing the plant to plant transfer of boxwood blight and Volutella blight when pruned with contaminated Felco 19 shears. In addition to the three effective treatments above, acetic acid (2.5%) [Vinegar], 2-propanol + DDAC (0.06%), sodium hypochlorite (Clorox) and potassium peroxymonosulfate + NaCl (2%) [Virkon] were effective in reducing postharvest boxwood blight whereas DBAC + DBAC [Lysol all-purpose cleaner], ethanol [70% (Ethyl alcohol)] and DDAC +DBAC [Simple Green D Pro 3 plus] were effective in reducing Volutella blight disease severity and AUDPC, and also maintained better quality and longer postharvest shelf life of boxwood cuttings when applied as a dip treatment. The longer postharvest shelf life of boxwood cuttings noted may be attributed to reduced disease severity and AUDPC resulting in healthy boxwood cuttings.

The work has been designed to investigate the utilization of milk for consumption of fluid milk and milk products, their distribution pattern, pricing, shelf life and consumer’s preference of Mymensingh municipality in Bangladesh. The study was based on milk and milk products and data were collected from the selected sweetmeat shops by direct interview, of which 20 samples were collected from sweetmeat shops and 7 from goalas. Both tabular and statistical methods were used for collected data analysis. Shopkeepers of different sweetmeat shops received raw milk from farmers (52.6%) and goalas (47.4%) and the highest amount of whole milk was required in per unit production of rasomalai (21%) and ghee (18%) whereas the lowest amount in chomchom (9%). Milk products prices were not remained same throughout the year in this municipality due to fluctuation of raw milk availability and their price. Eid, Puja festivals and other educational activities results that may increase milk products selling especially rasogolla and kalojam. Research findings also showed non-significant difference in case of pricing, distribution pattern, shelf life and selling of milk and milk products following sweetmeats.Asian J. Med. Biol. Res. Two herds, each of 19 Friesian cows, were run on separate farmlets in north-western Tasmania. One herd (NW) grazed pasture only, and was estimated to be receiving 75% of potential intake, while the second herd (W) received 3.0 kg coarsely hammermilled wheat per cow, daily for 42 days during early lactation in addition to pasture. Although the feeding of wheat increased total feed intake, there was no significant difference between the groups in either daily milk yield (21.5 v. 21.8 L cow-1), milk fat yield (1.1 v. 1.09 kg cow-1), liveweight change (0.05 v. -0.2 kg cow-l) and herbage intake (12.0 v. 12.0 kg DM cow-1 day-1) of cows or of pre- (1.77 v. 1.8 t DM ha-1) and post- (1.31 v. 1.32 t DM ha-1) grazing mass, on farmlets NW and W respectively. We conclude that the feeding of wheat did not increase milk production or improve liveweight change under the conditions of this experiment.

Salmonellosis is one of the major public health concerns in Bahrain as it has increased rapidly during the past few years. This study aims to determine the prevalence of salmonellosis in children and the possible risk factors such as age, geographical area, nationality, gender, unsafe drinking water, infant born weight and gastrointestinal disease. The cases of salmonellosis in children reported by the Ministry of Health of Bahrain ranged from 21 to 26 per 100,000 population during the period 2012–2016. Salmonellosis cases were geographically concentrated in the capital and northern regions. Statistical analysis showed a significant difference in the number of salmonellosis cases between Bahrainis and non-Bahrainis based on region, and gender (p < 0.001). In the Bahraini cohort, there was an association between the increase of cases and the number of gastrointestinal disease-related deaths (p < 0.05). In addition, unsafe water (over the level of 2.14%) and low-birth weight (<3.100 g) were associated, but not statistically significant (p = 0.086 and p = 0.126, respectively) with the increase of salmonellosis cases. Despite the decline in the number of cases, the results of this study contribute to the understanding of the epidemiology of Salmonella in humans and this, in turn, will help develop and implement preventative measures.
