ABSTRACT: A current alternative for meeting the modern consumer’s beans food demands is the industrial processing. This study evaluated the adaptability of eight Brazilian beans cultivars to industrial canning from commercial class cultivars of Carioca and of Black beans. The grains were processed in an industry sector using metallic cans with a capacity of 420 g, where the samples were conditioned without previous hydration. The cooking and sterilization process took place in a rotating autoclave. Quality parameters were evaluated in the canned beans. As a result, it was verified that, for the Carioca class, the Estilo cultivar differs from the rest of the genetic materials in terms of its low drained weight, which contributes to the increase in the total solids in the sauce, which have low hardness values. Estilo cultivar is not suitable for the type of processing used in this experiment. For the Black class, similar quality characteristics were observed between Esplendor and Uirapuru and between Esteio and Campeiro cultivars, where the latter stands out due to its lower damaged bean indices after processing. Finally, with the information present in this paper we intend to contribute to future researches on this subject and thereby increase the consumption and exportation of beans as processed product.

Any evaluation of breeds or production systems for beef must consider effects on production, carcass and meat quality characteristics. Holstein-Friesian (HF) cattle are bred for dairy traits only, while Norwegian dairy cattle (NOR) have been selected with some emphasis on beef characteristics. A comparison of production data from bulls of these two breeds has been presented previously (Kirkland et al., 2005). The objective of the present study was to evaluate specific carcass and meat quality parameters of HF and NOR bulls.

Aim of present study was to evaluate quality of three collected sets of canola oil containing crude oil, neutralized oil, bleached oil, deodorized oil and canola oil deodorizer distillate (DD) form three different edible oil processing industries. Physiochemical properties such as moisture, color, free fatty acid (FFA), acid value (AV), peroxide value (PV), p-Anisidine value (AV), total oxidative (totox) value, saponification value (SV), iodine value (IV), unsaponifiable matter and soap content were evaluated. The results of the present study indicated that each stage of processing has different impact on the determined quality parameters. Overall processing was well controlled and final product i.e. refined, bleached and deodorized (RBD) canola oil was found to be fit for human consumption. Only soap contents should be further controlled during neutralization process to avoid extra processing time and losses in the bleaching process. High FFA contents in DD samples indicated that it could be used as a potential and cheap source for biodiesel production.

SUMMARYCommercial bulk milk contained, in its acid-soluble nucleotide fraction, small quantities of CMP and AMP as well as a high proportion of orotate (503±16 μg/g of total solids). These components were altered by thermal treatment during processing. Standard sterilization and spray drying of milk lowered significantly the CMP, AMP, and orotate concentrations. HTST pasteurization caused a slight decrease in CMP and AMP concentrations, but the orotate content remained unchanged. The UHT sterilization seemed to be the thermal treatment in which the acid-soluble nucleotides of milk underwent least change. It is therefore concluded that the decrease in concentration of the nucleotides of milk is more directly related to the time for which the milk remains at the processing temperature than to the temperature itself.

AbstractIntermetallics are known as a group of materials that draws attention with their features such as ordered structure, high temperature resistance, high hardness and low density. In this paper, it is aimed to obtain intermetallic matrix composites and also to maintain some ductile Nb and Ti metallic phase by using 99.5% purity, 35-44 μm particle size titanium, niobium and aluminium powders in one step via recently developed powder metallurgy processing technique - Electric current activated/assisted sintering system (ECAS). In this way, metallic reinforced intermetallic matrix composites were produced. Dominant phases of TiAl3 and NbAl3 which were the first compounds formed between peritectic reaction of solid titanium, niobium and molten aluminum in Ti-Al-Nb system during 10, 30 and 90 s for 2000 A current and 1.5-2.0 voltage were detected by XRD and SEM-EDS analysis. Hardness values of the test samples were measured by Vickers indentation technique and it was detected that the hardnesses of intermetallic phases as 411 HVN whereas ductile metallic phase as 120 HVN.

J. Plant Sci. 91: 261–271. In this study, pasta-quality-associated characteristics of 25 durum wheat genotypes were investigated. Durum wheat genotypes consisted of 13 advanced experimental lines and 12 registered cultivars that were grown in three different locations of Turkey for 2 yr. Genotype, location, year and their interactions were found to be statistically significant in terms of all investigated quality characteristics. Mean quality parameters for the genotypes varied as follows: yellowberry kernel 1.7–6.1%, pigment content 3.67–8.31 mg kg−1, lipoxygenase (LOX) activity 12.9–27.9 EU g−1, protein content 10.8–11.8% (14% mb), gluten index (GI) 12-61, sodium dodecyl sulphate-sedimentation volume 17.3–28.7 mL, specific sedimentation volume 1.60–2.52 mL. Of the genotypes, 10 contained γ-gliadin 45 and six γ-gliadin 42 proteins. Except for Zenit, none of the registered cultivars and advanced experimental lines investigated in this study were able to meet simultaneously the requirements for high-quality pasta products; yet certain experimental lines prevailing in specific quality characteristics, such as Line-Gdem-2, Line-Gdem-12 and Line-20, may be used for further breeding purposes. The results of this study also imply that grain yield and quality should be taken collectively into consideration in wheat breeding programs.

Summary The purpose of this study is to examine the effects of the storage period on the quality characteristics of Bovans Brown table eggs. Eggs from 47-week-old hens were sampled on the day of laying and stored in a refrigerator (4°C) for periods of 7, 14, 21, and 28 days. Measurements were performed for each storage period relative to the most important quality parameters of eggs. The following egg parameters were evaluated: weight, weight loss, shell breaking force, albumen height, Haugh units and yolk color. The results obtained show that the albumen height and Haugh unit (HU) were affected by the storage period and are of immense importance. The following parameters were found to be significantly influenced by different storage periods: weight loss (P<0.05), albumen height (P<0.05) and Haugh unit (P<0.01). Rapid reductions in the albumen height were recorded during 7, 14, 21 and 28 days of storage (ranging from 6.90 mm to 6.07mm). Moreover, the Haugh unit values also decreased during storage from 81.27 to 74.89 at 4°C. The present results suggest that the albumen height and the Haugh unit are the most important parameters of egg quality, obtained from commercial layers raised in battery cages, affected by a storage period of 4 weeks.

Bearing in mind certain established European Union regulations on non-industrial poultry meat production, experimental investigations were conducted with the aim to examine the effect of two different rearing systems (free-range rearing and extensive rearing in the chicken pen) on some meat quality characteristics. Investigation results on the shares of muscular tissue, bones and skin in major carcass parts (breasts, thighs and drumsticks) were used as poultry meat quality parameters. Based upon the obtained study results, it could be concluded that a somewhat higher meat share in breasts and drumsticks was recorded with the free-range-reared broilers as compared to the extensively reared ones. A somewhat higher meat share in the drumsticks was registered with the hens whereas other differences from the point of view of the sex effect were small.
