Honey is a natural product which owes its health benefits to its numerous bioactive compounds. The composition of honey is highly diverse and depends on the type of honey and its origin. Antioxidant capacity arises mainly from the total content of polyphenols and their composition. The aim of this study was to perform a multidimensional comparative analysis of phenolic compounds of honeys of various origins. Honeydew, buckwheat, manuka, Malaysian and goldenrod honeys had the highest antioxidant capacity (above 400 mg Trolox equivalents kg−1). These honeys were also characterized by the highest total polyphenol content (about 2500 mg gallic acid equivalents (GAE) kg−1) and the highest total flavonoid content (1400–1800 mg catechin equivalents (CAE) kg−1). Other honeys had much lower antioxidant properties. A multidimensional analysis of the profiles of phenolic compounds showed that honeys constitute a non-homogeneous data set and manuka honey was in contrast to other samples. Principal component analysis (PCA) (based on 18 phenolic compounds) distinguished honeys into five groups. Manuka, Malaysian and honeydew honeys created their own separate groups and the location of other honeys was variable. Ultra-high-performance liquid chromatography (UHPLC) analysis demonstrated that profiles of polyphenols in honeys were highly varied. Caffeic acid, datiscetin and rhamnetin were characteristic compounds for manuka honey. Quercetin, kaempferol and apigenin were present in all honeys except Malaysian honey. The antioxidant properties and the profiles of bioactive phenolic compounds of honeys were miscellaneous. The richest sources of polyphenols were local buckwheat and honeydew honeys, alongside exotic manuka and Malaysian honeys. These honeys could provide valuable ingredients to the human diet, helping to prevent diseases.

Results of the study of the chemical composition of aerial parts of two plant species - Verbascum thapsus and Verbascum marschallianum of the Scrophulariaceae family collected during the fruiting period in the Altai region of Kazakhstan are presented in the article. The quantitative and qualitative composition of biologically active substances was determined. Samples of Verbascum thapsus, contain 0.63% alkaloids, 0.43% saponins, 0.15% organic acids, 2.30% tannins, 1.07% flavonoids, 0.43% coumarins and 1.62% iridoids. Samples of Verbascum marschallianum contain 0.69% alkaloids, 0.50% saponins, 0.65% organic acids, 1.02% tannins, 1.45% flavonoids, 0.96% coumarins, 2.29% iridoids. The variety of biologically active compounds present in the studied plant species results in a wide range of biological activity. A comparative analysis of the mineral, amino and fatty acid composition of plants Verbascum thapsus and Verbascum marschallianum was carried out. The total content of free amino acids was 83.86-85.84%. Analysis of the mineral composition showed the presence of 11 mineral elements: K, Na, Mg, Ca, Cu, Zn, Cd, Pb, Fe, Ni, Mn, which allows us to recommend the studied plants as a raw material rich in macro- and microelements.

Production of plant products, including juices around the world increases continuously. In the fruit and vegetable juices contain a significant amount of monosaccharides (glucose and fructose), organic acids, vitamins, phenolic compounds, mineral substances and other biologically active components that determine the nutritional and dietary value. For the prevention of various diseases associated with impaired metabolic processes, we developed a new technology of preparation of food by blending juice of pumpkin, quince and persimmon. Thus prepared organic blended juice contains a substantial amount of free glucose and fructose, different phenolic compounds, a sufficient amount of organic acids, mineral elements, including iodine and other components that determine its nutritional and biological value. In prepared juices were evaluated the quantitative indicators of β-carotene, vitamin C, glucose and fructose, sucrose, starch, pectin substances. Also in the atomic absorbtion spectrometer Analyst 400 (PerkinElmer, USA) was analyzed content of the organic acids and phenolic compounds. Prepared juices were tested in accordance with 10 point scoring scale. It is established that all juices contain a sufficient amount of the minerals. In pumpkin and quince juices not contain iodine while it presents in sufficient amount in persimmon juice that’s why in the blended juice mineral in addition to mineral elements iodine are contained. In pumpkin and persimmon aliphatic acids are contained in small amount. For this reason during the blending process was used quince juice which is rich in aliphatic acids. The blended juice is light straw color, with delicious flavor, a slight astringent property and a balanced taste.

The study compared the content of eight phenolic acids and four flavonoids and the antioxidant activity of six Polish varietal honeys. An attempt was also made to determine the correlations between the antioxidant parameters of the honeys and their polyphenol profile using principal component analysis. Total phenolic content (TPC), total flavonoid content (TFC), antioxidant activity (ABTS) and reduction capacity (FRAP) were determined spectrophotometrically, and the phenolic compounds were determined using high-performance liquid chromatography (HPLC). The buckwheat honeys showed the strongest antioxidant activity, most likely because they had the highest concentrations of total phenols, total flavonoids, p-hydroxybenzoic acid, caffeic acid, p-coumaric acid, vanillic acid and chrysin. The principal component analysis (PCA) of the data showed significant relationships between the botanic origin of the honey, the total content of phenolic compounds and flavonoids and the antioxidant activity of the six Polish varietal honeys. The strongest, significant correlations were shown for parameters of antioxidant activity and TPC, TFC, p-hydroxybenzoic acid, caffeic acid and p-coumaric acid. Analysis of four principal components (explaining 86.9% of the total variance), as a classification tool, confirmed the distinctiveness of the Polish honeys in terms of their antioxidant activity and content of phenolic compounds.

Introduction. Honey, propolis and pollen belong to bee products that have beneficial biological properties. These products exhibit e.g. antibacterial, antifungal and antioxidant properties. Due to biological activity and natural origin, bee products are used, e.g. in the food industry, cosmetology and pharmacy. Aim. The aim of the study was to compare the antioxidant and antibacterial activity of honey, propolis and pollen from an apiary located in Wielkopolska Province. Material and methods. Honey, propolis and pollen used in this study came from the same apiary located in Wielkopolska Province. The antioxidant potential of bee products was evaluated applying DPPH· free radical scavenging activity assay. The antimicrobial activity of the tested bee products was determined by the point-diffusion method against 13 strains of pathogenic and potentially pathogenic bacteria. In addition, the total content of phenolic compounds in honey, propolis and pollen was determined by the colorimetric method. Results. Propolis exhibited higher antioxidant activity, in comparison to honey and pollen. The antiradical activity of propolis was equal to 80% approx. activity of Trolox, the standard antioxidant. Among tested bee products, propolis was characterized by the highest total phenols content. In addition, honey, propolis and pollen showed antagonistic activity against tested bacterial strains. Conclusions. The obtained results indicate that among the tested bee products of native origin, i.e. honey, propolis and pollen, propolis characterized by the highest antioxidant activity and the total content of phenolic compounds. In addition, all bee products showed bactericidal activity against the tested bacterial strains.

Проведен сравнительный анализ вида кривых титрования, оптических спектров, содержания органических кислот и катионов щелочных и щелочноземельных металлов красных сортовых вин с нахождением критериальных маркеров. Объекты исследования – красные сортовые вина, произведенные по одной технологии из выращенного в центральной зоне Краснодарского края винограда сортов Каберне Совиньон, Мерло, Саперави, Изабелла. Установлено, что кривые титрования индивидуальны, позволяют дать качественную оценку подлинности винодельческой продукции по начальной величине рН (обусловлена содержанием калия), виду кривых титрования до начала скачка (обусловлен содержанием винной и яблочной кислот). Определено количественное содержание титруемых кислот, а также маркерные значения, подтверждающие подлинность вин: рНо, tk, dpH/dt. Оптические свойства вин не позволяют дать количественную оценку фенольных веществ, но расширяют возможности применения данного метода в качестве интегральной характеристики сортовых красных вин по виду оптического спектра и значению оптической плотности D и длине волны λ. Отношение катионов щелочных и щелочноземельных металлов между собой можно применять в качестве дополнительного маркера сортовых вин, произведенных из винограда вида Vitis vinifera или Vitis labrusca. Показано, что отличие форм кривых титрования разных вин, а также оптических спектров и различия содержания органических кислот и катионов щелочных и щелочноземельных металлов можно использовать как графические образы винодельческой продукции конкретного наименования в рамках национальной системы защиты вин, обладающих особыми качествами. A comparative analysis of the type of titration curves, optical spectra, the content of organic acids and cations of alkaline and alkaline earth metals of red varietal wines with the search for criteria markers was carried out. The objects of the study are red varietal wines produced using the same technology from grapes grown in the central zone of the Krasnodar Territory, the variety: Cabernet Sauvignon, Merlot, Saperavi, Isabella. It is established that the titration curves are individual, allowing us to give a qualitative assessment of the authenticity of wine products by the initial pH value (due to the potassium content), by the type of titration curves before the jump (due to the content of tartaric and malic acids). The quantitative content of titrated acids was determined, as well as marker values confirming the authenticity of the wines: pH, tk, dpH/dt. The optical properties of wines do not allow us to give a quantitative assessment of phenolic substances, but they expand the possibilities of using this method as an integral characteristic of varietal red wines by the type of optical spectrum and the value of the optical density D and the wavelength λ. The ratio of cations of alkali and alkaline earth metals to each other can be used as an additional marker of varietal wines produced from grapes of the Vitis vinifera or Vitis labrusca species. It is shown that the difference in the shapes of the titration curves of different wines, as well as the optical spectra and differences in the content of organic acids and cations of alkaline and alkaline earth metals can be used as graphic images of wine products of a specific denomination within the framework of the national system for the protection of wines with special qualities.
