Goat milk is a high-quality food of fundamental importance for thousands of people involved in the socioeconomic development of this product, and dairy goat farms are well estasblished in the agricultural scenario, especially when analyzing small rural producers. The quality of goat milk is defined by its physicochemical and microbiological parameters. Adequate hygiene, handling, and management practices, from obtaining milk to commercialization, are of fundamental importance for guaranteeing food quality and safety for the consumer market. It is important to know the microbiological quality of milk, since it belongs to one of the most relevant food groups for the population. Brazilian legislation establishes minimum quality requirements for goat milk intended for human consumption in Normative Instruction 37 ̸2000. The goals of this literature review were to present the issues related to the physicochemical composition, microbiological aspects, and nutritional properties of goat's milk as a reference measure and to highlight some characteristics. Despite the similarities with the milk of other animal species, goat milk is a unique product, and the study of this raw material is of great importance for industry as well as for the scientific community.

In order to determine the safety of milk produced by smallholder dairy goat farms, a farm-based research study was conducted on commercial dairy goat farms to compare the microbiological quality of milk produced using 3 different types of dairy goat production systems (intensive, semi-intensive and extensive). A survey of dairy goat farms in and around Pretoria carried out by means of a questionnaire revealed that most of the smallholder dairy goat farms surveyed used an extensive type of production system. The method of milking varied with the type of production system, i.e. machine milking; bucket system machine milking and hand-milking, respectively. Udder half milk samples (n=270) were analysed, of which 31.1 % were infected with bacteria. The lowest intra-mammary infection was found amongst goats in the herd under the extensive system (13.3 %), compared with 43.3 % and 36.7 % infection rates under the intensive and semi-intensive production systems, respectively. Staphylococcus intermedius (coagulase positive), Staphylococcus epidermidis and Staphylococcus simulans (both coagulase negative), were the most common cause of intramammary infection with a prevalence of 85.7 % of the infected udder halves. The remaining 14.3 % of the infection was due to Staphylococcus aureus. Bacteriology of bulk milk samples on the other hand, showed that raw milk obtained by the bucket system milking machine had the lowest total bacterial count (16 450 colony forming units (CFU)/mℓ) compared to that by pipeline milking machine (36 300 CFU/mℓ) or handmilking (48 000 CFU/mℓ). No significant relationship was found between the somatic cell counts (SCC) and presence of bacterial infection in goat milk. In comparison with the herds under the other 2 production systems, it was shown that dairy goat farming under the extensive production system, where hand-milking was used, can be adequate for the production of safe raw goat milk.

Goat milk is biologically highly valuable protein food intended for nutrition of offspring and as raw material for preparation of different dairy products. Therefore, in our opinion, it was justified from zoo technical, genetical and economical aspect to direct our attention towards Serbian white diary goat and study basic traits of this breed. Based on our previous investigations of traits of Domestic white goat we have established that this was a domestic population of expressed hereditary milk traits and good quality of milk. This lead to more detailed study of the quality of milk obtained from the genotype called Serbian white goat in first lactation, created based on Domestic white goat, especially since there is great interest in breeding of this specific genotype on the territory of Serbia and also abroad. Based on performed investigations and established results it can be concluded that Serbian white goat belongs to the dairy goat type and is our best goat population. Regarding the quality of analyzed milk, in general it is of medium quality, however, the percentage of fat, proteins and lactose is very high, which is very important for dairy industry and further processing of milk into high quality goat cheeses which appear on our markets in very small quantities. Processing of goat milk into high quality cheese types is now performed in small number of mini dairy plants.

AbstractWater pollution is an essential component for the farmers in managing their agriculture fams. In almost all cases, without the chemical and microbiological analysis of water samples, the effect is damaging the animals and also the consumers. The study was carried out in Sibiu region of Romania, along Hârtibaciu River, and includes four farms, averaging 250 goats with different production system. Difficulties in ensuring quality milk, derived from various sources of contamination, the quality of water is directly depended on the maintenance of water suply. The foreign substances or microorganisms sometimes don’t affect the appearance or taste of the water, but can influence the health of animals and of course the quality of dairy products. This study was made to analyse the microbiological quality of water resources of the farmers, knowing that this is a major factor which influence the guality of the milk. The bacteriological tests were made onto Agar medium culture in petri dishes and were incubated at 37°C for 48h. Based on the microbiologicaly tests of the Hârtibaciu River resource, we could analyse the quality of the milk, too. The results of this study was presented and discused with the farmers and it was the starting point for them in changing their breeding technology, looking forward to improve their dairy production. A better quality of goat milk will be the main purpose of this study knowing that the farmers successed in their business

Microbiological quality of Ulva lactuca and Ulva clathrata (Chlorophyta) along the coastline of La Paz, B.C.S., México Total, fecal coliforms and the enterococcus group in Ulva lactuca and U. clathrata were measured in four localities of the coastline of La Paz, B.C.S, Mexico. Levels of fecal coliforms in water were below the standard of the Ecological Criteria of Water Quality (EC-WQ) which indicates a healthy La Paz inlet (below 200 MPN/100ml). Values of fecal coliforms in algae were below the NOM-031-SSA1-1993 levels determined for marine organisms destined for human consumption. These values were high only in few months. No enterococci were detected in the samples.

Raw salads are regularly implicated in food-borne disease outbreaks globally. Consumption of kachumbari, a raw vegetable salad, alongside roast meat is widespread in Kenya. The aim of this study was to evaluate the bacteriological quality of kachumbari samples (n=39) collected from a cross section of roasted meat eateries in Kenya. The United Kingdom’s Health Protection Agency guidelines were used to infer safety of the salads due to lack of local criteria for microbiological safety of ready-to-eat fresh produce placed in the market. Based on Escherichia coli counts, 14 (35.9%) of the samples were of satisfactory microbial quality (<20 CFU/g), 7 (17.9%) in the borderline (20–≤102 CFU/g), and 18 (46.2%) unsatisfactory (>102 CFU/g). All samples examined for staphylococci had counts falling within the borderline range (20–≤104 CFU/g). Collectively, 3 (7.7%) of the sampled salads were classified as potentially harmful to health and/or unfit for human consumption due to the presumptive presence of 2 (5.1%) Campylobacter spp. and 1 (2.6%) E. coli O157. Salmonella was not detected in any of the samples. The presence of hygiene indicator microorganisms and pathogens demonstrates that kachumbari salads present a public health risk.

The purpose of bovine colostrum, being the milk secreted by a cow after giving birth, is to transfer passive immunity to the calf. The calves have an insufficient immune system as they lack immunoglobulins (Igs). Subsequently, the supply of good quality bovine colostrum is obligatory. The quality of colostrum is classified by low bacterial counts and adequate Ig concentrations. Bacterial contamination can contain a variety of human pathogens or high counts of spoilage bacteria, which becomes more challenging with emerging use of bovine colostrum as food and food supplements. There is also a growing risk for the spread of zoonotic diseases originating from bovines. For this reason, processing based on heat treatment or other feasible techniques are required. This review provides an overview of literature on the microbial quality of bovine colostrum and processing methods to improve its microbial quality and keep its nutritional values as food. The highlights of this review are: high quality colostrum is a valuable raw material in food products and supplements, the microbial safety of bovine colostrum is increased using appropriate processing, suitable effective heat-treatment, which does not destroy the high nutrition value of colostrum, the heat treatment processes are cost-effective compared to other methods, and heat treatment can be performed in both small- and large-scale production
