ABSTRACT Small sour starfruit is a fruit whose limited utilization to traditional processing. The short shelf life causes a low level of consumption. The effort to extend the shelf life of small sour starfruit is to use it as dried sweets fruit. The purpose of the study was to determine the physicochemical and organoleptic characteristics of dried sweets small sour starfruit based on the concentration of brown sugar and the type of aqueous solution. Variations in treatment namely P1 (60% brown sugar concentration, lime water soaked), P2 (60% brown sugar concentration, husk ash soaked), P3 (60% brown sugar concentration, salt solution), P4 (70% brown sugar concentration, lime water soaked), P5 (70% brown sugar concentration, husk ash soaked), P6 (70% brown sugar concentration, salt solution), P7 (brown sugar concentration 80%, lime water soaked), P8 (80% brown sugar concentration, husk ash soaked), P9 (80% brown sugar concentration, salt solution). Observations included texture, water content, vitamin c levels, reducing sugar levels, ash content, and organoleptic tests. The results of the study were analyzed descriptively. The results showed that the higher concentration of brown sugar used resulted in ash content, and the reduced sugar content increased and the texture became softer, while the water content and vitamin C levels decreased. The use of the lime water soaked resulted in increased values of texture, ash content, and sugar content, while the water content and vitamin C levels decreased. The organoleptic test results are subjective and level acceptable to panelists on the parameters of color, aroma, taste and texture. Umur simpan belimbing wuluh yang singkat menyebabkan tingkat konsumsinya rendah. Upaya untuk memperpanjang umur simpan belimbing wuluh adalah menjadikannya manisan kering. Tujuan penelitian ini untuk mengetahui karakteristik fisikokimia dan organoleptik manisan kering belimbing wuluh berdasarkan variasi konsentrasi gula merah dan jenis larutan rendaman. Variasi perlakuan yaitu P1 (konsentrasi gula merah 60%, larutan rendaman air kapur), P2 ( konsentrasi gula 60%, larutan rendaman air abu sekam), P3 (konsentrasi gula merah 60%, larutan rendaman larutan garam), P4 (konsentrasi gula merah 70%, larutan rendaman air kapur), P5 (konsentrasi gula merah 70%, larutan rendaman air abu sekam), P6 (konsentrasi gula merah 70%, larutan rendaman larutan garam), P7 (konsentrasi gula merah 80%, larutan rendaman air kapur), P8 (konsentrasi gula merah 80%, larutan rendaman air abu sekam), P9 (konsentrasi gula merah 80%, larutan rendaman larutan garam). Pengamatan meliputi tekstur, kadar air, vitamin c, gula reduksi, kadar abu, dan uji organoleptik. Hasil penelitian dianalisis secara deskriptif. Hasil penelitian menunjukkan tingginya konsentrasi gula merah mengakibatkan nilai tekstur, kadar abu, dan gula reduksi meningkat, sedangkan kadar air dan vitamin c menurun. Penggunaan larutan rendaman air kapur mengakibatkan nilai tekstur, kadar abu, dan kadar gula reduksi meningkat, sedangkan kadar air dan vitamin c menurun. Hasil uji organoleptik bersifat subjektif dan pada taraf dapat diterima oleh panelis pada parameter warna, aroma, rasa, dan tekstur. Shrimp paste is a fermentation product of shrimp and has a distinctive smell and taste. The paste is made from a mixture of shrimp, fish salt and brown sugar. The purpose of this study was to determine the effect of sugar concentrations on the chemical, physical, microbiological and sensory characteristics of shrimp paste. Five differentconcentrations of brown sugar (0; 7.5; 10, and 12.5%) were applied. The shrimp paste was analyzed for their protein content, water content, amino acids, salinity, total sugar content, pH, colour test, viability of LAB  and sensory. The sugar concentration significantly affected protein content, water content, total sugar, color, salt and organoleptic (p<0.05), but did not significantly affect on the water content, pH and LAB (p>0.05). The protein levels decreased with the increasing of sugar concentration. The brightness (L*) and redness (a*) were slightly decrease with the increasing of sugar concentration. The shrimp amino acid was dominated by glutamate acid, however, the concentration of amino acids decreased with the increasing concentration of the sugar. Addition of sugar to the shrimp paste improved the acceptance of the panelist, resulting higher score as compared to that of control. The best treatment in this study was the shrimp paste added with 10% sugar having the protein content 29.084%; water content 34.11%;  sugar content 15.37%, pH 6.97; L 46.52; salt 13.63%; glutamate acid 23115.83 mg/kg, BAL <10 log CFU/mL and total organoleptic value 8.

ABSTRACTOne type of plant that can be used as a medicinal plant is talok or kersen (Muntingia calabura). Talok fruit is round and red when ripe. Ripe fruit for jaundice, to treat gout. Talok fruit is easily damaged, so it is not durable to store. Storage in fresh form, fruit quickly decays. The nutritional content of talok (kersen) is quite large but has not been utilized properly. This study aims to determine the characteristics of dried candied talok (kersen) with a variety of blanching and soaking time in lime water, in order to obtain good quality sweets and preferred by consumers. Candied fruit is expected to be used as filler for bakery products or other food products. This research was conducted at the Laboratory of the Faculty of Agricultural Technology, State Polytechnich of Jember. This study used a complete factorial randomized complete block design, with blanching variation factors (without blanching, water blanching, and steam blanching) and soaking time in betel lime water (1, 2, 3 and 4 hours). The analysis carried out included Water Content, Ash Content, Vitamin C, Total Sugar Levels, Antioxidant Levels, and Organoleptic Tests (color, sweet taste, talak fruit taste, overall preference). The results showed that dried candied talok fruit was favored by having a water content of 10.95%, ash content of 3.53%, vitamin C levels of 40.665 mg / 100 g, and anti-oxidant levels of 84.91%. The results were obtained from the long immersion treatment in betel lime water for 4 hours and with deep blanching treatment. Banana “kapas” is an original banana cultivar from Samarinda, with the characteristics at the time of mature is yellow fruit skin color, flesh color yellowish white and has a sweet taste. During this time the banana kapas has not been utilized properly. Based on the characteristics possessed by banana kapas can be processed into the processed products sale banana. This study aims to determine the effect of temperature and drying time on the chemical properties of sale of banana kapas produced, the level of panelist reception at organoleptic test and to get the time and temperature of the dryer that produces a quality banana sale based on chemical properties and organoleptic. The results showed that the temperature and duration of the dryer and its interactions had the significant effect on water content, ash content, vitamin C and reducing sugar content. Treatment with temperature 75oC and 21 hours drying time gave the best result with water content, ash content, vitamin C and reducing sugar are 32.80%, 1.13%, 60.65 mg/g and 16.08% respectively. For hedonic test, hedonic values of color, flavor, aroma and texture is like the hedonic quality of brown, sweet taste, rather banana flavored and hard texture.

Abstrak. Buah pala merupakan salah satu produk lokal Aceh yang dapat diolah menjadi berbagai produk makanan sampingan salah satunya adalah selai. Pada penelitian pembuatan selai daging buah pala dilakukan dengan variasi konsentrasi larutan perendaman garam (30%, 50%, 70% ) dan konsentrasi gula (0%, 2,5%, 5%). Penelitianinibertujuanuntukmengetahuipengaruh konsentrasi larutan perendaman garam dankonsentrasigulapadapembuatanselaidagingbuahpala dengan menggunakanrancangan RAL 2 faktor dengan 3 kali perulangan. Pada penelitian ini dihasilkan rendemen 52.62 %, total padatan terlarut 66,19 0Brix, kadar vitamin C 0,29 mg, kadar air 25,05%, organoleptik hedonik (warna, aroma, rasa) dan uji ranking terdapat pada perlakuan konsentrasi larutan perendaman garam 5% dan konsentrasi gula70% (P3G3). Hasil penelitian menunjukkan bahwa konsentrasi larutan perendaman garam (P) berpengaruh sangat nyata (P≤0,01) terhadap hedonik rasa selai pala. Konsentrasi gula (G) berpengaruh nyata (P≤0,05) terhadap kadar air, serta berpengaruh sangat nyata (P≤0,01) terhadap rendemen, total padatan terlarut, hedonik rasa, dan aroma dari selai pala yang dihasilkan. Interaksi antara konsentrasi larutan perendaman garam dan konsentrasi gula (PG) berpengaruh nyata (P≤0,05) terhadap rendemen dan rasa. Abstract. Nutmeg is one of Acehlocalproduct that canbe processed into various food product one of which is the jam. In the study of making meat nutmeg jam do with variation in the immersion solution concentration of salt (30%, 50%, 70%) and sugar concentration (0%, 2.5%, 5%). This study aim to determine the effect of soaking salt concentration andthe concentration of sugar in the manufacture ofmeat nutmeg jam using RAL 2 factor design with three repetition. In this experiment resulting yield 52.62%, total dissolved solids 66.190Brix,0.29 mg vitamin C content, 25.05%,water content, hedonic organoleptic (color, aroma, taste) and a ranking test contained in the treatment solution concentration of salt immersion 5% and 70% sugar concentration (P3G3). The results showed that the concentration of the salt solution immersion (P) was highly significant (P≤0,01) against hedonic taste nutmeg jam. The concentration of sugar (g) significant (P≤0,05) against moisture, as well as the very significant effect (P≤0,01) to the yield, total dissolved solids, hedonic flavor and aroma of nutmeg butter produced. The interaction between the soaking solution concentration of salt and sugar concentrations (PG)significant (P≤0,05) to the yield and the best taste.

<em>Research on the utilization of liquid smoke especially for preservation of fruit has been done and become one of alternative methods that can be used to maintain fruit shelf life. Liquid smoke raw materials can come from a variety of sources one of which comes from the Alang-alang (Imperata cylindrica). This study aims to determine the ability of liquid smoke made from  alang-alang as a preservative of bananas and to know the effect on the characteristics of bananas. The sample used in this research is a local banana known as Pisang Makau (Musa spp). This research uses experimental method with 7 days of storage time. Initial stages of the research are cleaning the fruit, dyeing, drying, and storage at room temperature. This research uses liquid smoke from alang-alang by using 2 various concentrations 50% and 100%. The next stage is the analysis of the characteristics of bananas such as color, fruit texture, fruit weight, sugar content, and vitamin C levels. Based on the analysis results obtained by Pisang Makau with the treatment of liquid has a longer shelf life than the control. Based on the results of the analysis of the shelf life of fruit treated with liquid smoke decreased levels of sugar and vitamin C levels. Percentage decrease levels of sugar and vitamin C between the fruit with the treatment and control not much different. This shows that liquid smoke from alang-alang has the ability to retain the shelf life of bananas without affecting sugar and vitamin C levels in bananas in this case for Pisang Makau. Levels of sugar and vitamin C in bananas decreased during the process of storage and bunding of fruit</em>

In agricultural sector, maturity is the main decision criterion for starting the harvest. This criterion is usually revealed by a number of parameters such as pH, sugar, dry matter, water and vitamin C, which are informative but technically tedious to measure. The cashew apple is the hypertrophied peduncle which is attached to the cashew nut. It is a nutritious (very juicy fruit (85 to 90% water), sweet (7 to 13% carbohydrates), acidic and vitamin C content) fruit with high therapeutic and medicinal properties. The cashew apple is used as a raw material for many industrial applications (juice and alcohol). This research was conducted as a preliminary step towards the development of a real-time remote sensing technique for assessing the quality of tropical fruits. Spectral acquisitions were carried out from intact cashew apple using optical system composed reflector coupled with spectrometer USB 4000 FL from Ocean Optics (350-1100 nm). Immediately after spectral acquisition, the samples were analyzed by using chemical methods (sugar content, dry matter content, water content, vitamin C and pH). Preprocessing treatment method, bootstrap method was required to create statistical new samples and to increase the number of samples required. This method was used to improve the predictive performance of calibration model. Statistical models of prediction were developed using an artificial neural network (ANN) method. The results obtained from the models built by ANN showed strong relationships between predicted and experimental values: (Rsquare = 0.9870, RMSE= 0.0262) for pH, (Rsquare=0.9869, RMSE=0.1392) for Sugar, (Rsquare=0.9726, RMSE=0.3333) for water content, (Rsquare=0.9703, RMSE=0.3464) for vitamin C and (Rsquare=0.9922, RMSE= 5.0304, RMSE=5.0304) for dry matter. These results confirm the potential of visible spectroscopy to predict quality parameters of cashew apples remotely and make decisions about best harvest time

Jelly candy is a soft textured candy processed with hydrocolloid components such as gum, pectin, agar, starch, carrageenan, gelatin. These are used to modify the chewy texture. This study aimed was to determine the effect of the combination of chicken feet gelatin and agar on the quality of jelly candy. Processing of chicken feet gelatin jelly candy based on Caeccar et.al (2018) method by modification. The study used a completely randomized design (CRD) with one factor, five levels and three replications. The factors studied were the ratio of chicken feet gelatin and agar 80:20; 60:40; 40:60; 20:80; 0:100. Product quality characteristics observed in this study were water content, ash content, reducing sugar content, sucrose content, and organoleptic quality. The results showed that the combination of chicken feet gelatine and agar were significantly affected water, ash, reducing sucrose content. Jelly candy with a treatment combination of 80% chicken feet gelatine and 20% agar was the best treatment. The results of the analysis of the candy were water content of 11.02± 0.04%, ash content of 0.89± 0.00%, reducing sugar content of 10.83± 0.01%, sucrose content of 50.68± 0.28%. The organoleptic test results showed that chicken feet gelatine improved the texture and taste of jelly candy.

Based on the study results, this paper reports a technology to produce natural fruit and berry pastila and marmalade of improved nutritional and biological value with a long shelf life. Critical control points of product safety have been identified and scientifically substantiated. The technological process to prepare pastila and marmalade involves exposing the raw materials to high and low temperatures while maintaining certain indicators of the content of dry substances. The identification feature of marmalade products is the content of a certain type of fruit raw materials, which poses risks throughout the life cycle of product manufacturing despite the fact that the preparation and storage of the raw materials implies the temperature range from 0 °C to minus 15 °C. Problematic issues of mold occurrence have been considered. It was established that the moisture content in the product above 15 % leads to an increase in the content of mold fungi and significantly reduces its shelf life. This paper gives the results of a study to identify the preservation of vitamin C in products prepared from fresh berries and from berries subjected to freezing. It was revealed that in the process of storing the raw materials at a temperature of minus 15 °C, the amount of vitamin C in the resulting product decreased by 11.3 % compared to the product prepared from fresh raw materials. The maximum limit of the high preparation temperatures of 108 °C did not significantly affect the loss of vitamin C. Studies were conducted to determine the sugar content in products whereby a high fructose content was identified. Critical control points at all stages of production were determined, which has made it possible to choose the optimal technological modes and parameters for the safety and quality of the product

Jelly is a soft textured candy that is processed by the addition of hydrocolloid components such as agar, gum, pectin, starch, carrageenan, gelatin and others that are used for texture modification to produce a chewy product. The purpose of this study was to determine the appropriate addition of chicken eggshell powder to soy milk jelly candy characteristics and to determine panelist acceptance.  This study used a Completely Randomized Design (CRD) consisting of 5 treatments: the addition of chicken eggshell powder concentrations namely 0%, 0.2%, 0.4%, 0.6% and 0.8% of the total ingredients for the manufacture of jelly candy with 3 replications. Observations on soy milk jelly candies are pH, water content, ash content, reducing sugars, sucrose, calcium, protein, water activity (aw), gel strength, total plate count, and organoleptic tests. The results showed that the difference in the addition of chicken eggshell powder concentration to soymilk jelly candy significantly affected pH, water content, ash content, reducing sugar content, sucrose, calcium, and gel strength, but did not significantly affect protein and water activity (aw).   best results are soy milk jelly candy added with 0.8% chicken eggshells powder, with the highest calcium content of 0.51%, 15.46% moisture content, 1.32% ash content, 50.55% sucrose content, content reducing sugar 5.58%, protein content 2.93%, total plate rate 3.1 x 103 CFU / g, and gel strength 269.17 N / cm2.

Abstract Gandaria leather is a kind of fruit leather processed by gandaria fruit in the form of thin sheets with a thickness of 2-3 mm and has a specific consistency and taste according to gandaria fruit. The purpose of this study was to determine the effect of added sugar on the physicochemical characteristics of gandaria leather. This study used a single-factor completely randomized design, with 0%, 5%, 10%, and 15% sugar concentrations. The results showed that the sugar concentration had a very significant effect on the parameters of water content, total sugar, total acid, vitamin C, and water activity (aw), and had a significant effect on the tensile strength of gandaria leather. The physicochemical characteristics of gandaria leather from various sugar concentration treatments are as follows: water content (14.05% -20.13%), total sugar (80.56% - 84.90%), total acid (3.10 - 12.37 mg/100g), vitamin C (59.44 - 78.48 mg/100g), water activity (0.48 - 0.62), and tensile strength (0.20-0.37 N). The resulting gandaria leather qualifies as good fruit leather, and the treatment with a 10% sugar concentration is recommended for gandaria leather which has the potential to be developed and commercialized.
