Abstract Black garlic is a type of heat-treated garlic for which the traditional process is extremely simple but it is very time-consuming, taking more than one month. The purpose of this research was to reduce the processing time of black garlic. A novel processing including soaking and freezing was applied for the pre-treatment of the garlic. The effects of two temperatures (60 and 80 °C) and two relative humidities (65 and 80% RH) were investigated to find the optimum conditions for black garlic production. The optimum conditions for black garlic production were pre-treatment using CaCl2 soaking followed by freezing before being further incubated at 80 °C and 80% RH for 1 week. This optimal condition produced black garlic with high antioxidant activity as 5,390 and 25,421 mg Trolox/100 g dry weight for DPPH and ABTS assays, respectively. However, the incubation process at 60 °C and 65% RH provided golden garlic with the highest S-allylcysteine (SAC) content by about 1,772 mg/100 g dry weight. This novel process shortened the processing time of black garlic by about four times and provided a new processed garlic product called “golden garlic”.

A comparative study for evaluating Italian and Spanish accessions of Brassica rapa var. rapa L., including turnip greens and turnip tops, was carried out at different locations with a view to determine the effect of earliness on crop production, antioxidant activity, glucosinolates amount, and profile (GLSs) and total phenolics content. The accessions evaluated were represented by two turnip top local varieties (one Italian variety and a Galician one), four new synthetic varieties established by Misión Biológica de Galicia (MBG-CSIC), and three commercial varieties widely used by growers in Galicia and in Italy. The results showed a great variability regarding flowering time, fresh and dry weight of the leaves and flower buds, and the branch number per plant. The highest turnip greens production was found in two synthetic varieties (“SIN07” and “SIN01”) for both countries. Local varieties “BRS550” and “CM39” were also suitable for turnip greens production in Spain and Italy, respectively. For turnip tops, the highest production was found for “SIN07” in Spain, for “CM39” in Italy and for “BRS550” in both countries. We found a high diversity in the total and individual glucosinolate, phenolic content, and antioxidant activity among genotypes, geographical origins, and the different parts of the plant (leaf and flower). Varieties “SIN01” and “SIN07” showed the highest values in total GLSs, total aliphatic and gluconapin contents in turnip greens followed by the two commercial varieties. For turnip tops, the highest values in gluconapin, aliphatic, and total GLSs contents were found in “SIN01” and “BRS550”. Even though different varieties stand out over the rest depending on the location, “SIN01”, “SIN07”, “CM39”, and “BRS550” could be recommended for turnip greens production because of its high antioxidant activity. The study showed that the latest varieties are more productive and show higher bioactive compounds than the earlier ones and that it is possible to improve genotypes for different growing cycles. Therefore, these varieties could be proposed for further breeding programs for B. rapa production.

Using ultrasound (US) in proanthocyanidin (PA) extraction has become one of the important emerging technologies. It could be the next generation for studying the US mechnophore impact on the bioactive compound’s functionality. The objective of this study was to demonstrate the potential of US treatment on PAs extracted from kiwifruit (Actinidia chinensis) leaves, and to provide a comprehensive chemical composition and bioactivity relationship of the purified kiwifruit leaves PAs (PKLPs). Several methods like single-factor experiments and response surface methodology (RSM) for the four affected factors on US extraction efficiency were constructed. HPLC-QTOF-MS/MS, cytotoxicity analysis, and antioxidant activity were also demonstrated. In the results, the modeling of PA affected factors showed that 40% US-amplitude, 30 mL/g dry weight (DW) solvent to solid ration (S/S), and 70 °C for 15 min were the optimum conditions for the extraction of PAs. Furthermore, PKLPs exhibited significant radical scavenging and cellular antioxidant activity (p < 0.05). In conclusion, this study’s novelty comes from the broad prospects of using US in PKLP green extraction that could play an important role in maximizing this phytochemical functionality in drug discovery and food science fields.

Pittosporoposis kerrii Craib is the consumed plant of Maechaedee Subdistrict, Wiang Pa Pao District, Chiang Rai Province. The area of survey is households that plant P. kerrii Craib for consuming and selling with the highest number of 200 trees per household. Therefore, this plant is increasingly interested in evaluation of the useful consumption. The purpose of this study was to investigate antioxidant and nutrition facts of P. kerrii Craib. For nutrition facts per 100 g dry weight, the result revealed that P. kerrii Craib seed extraction contained 2.70 g of protein, 37.79 g of carbohydrate, 1.83 g of lipid, 1.36 g of crude fiber, 1.20 g of ash and 191.4 kcal of energy. The contents of vitamins were examined. It was found that P. kerrii Craib seeds contained vitamins B1 and B2 (0.018 and 0.092 mg per 100 g dry weight, respectively). Antioxidant was determined by DPPH assay method. The results showed that P. kerrii Craib seed extract had the extremely high antioxidant activity (91.20% inhibition). The experiment exposed that P. kerrii Craib seeds provided the useful consumption and should be promoted to support local economic for sustainable development.

In order to extract lycopene more effectively, this experiment focused on the optimization of ethanol pretreatment method to study the effects of ethanol treatment on the extraction rate of lycopene and its antioxidant activity. The test results show that 2 times ethanol treatment is very effective for improving lycopene yield. The optimum conditions of ethanol treatment are temperature 50 ℃, treatment time 1 time 2h, 2 times 2h, solid to liquid ratio is 1:12. The lycopene yield can be reached 20mg / 100g above.

Verbena officinalis Linn is a traditionally known medicinal plant which is used against a number of diseases including inflammatory conditions. In this study its antioxidant activity (reducing powers, 2, 2-diphenyl-1-picrylhydrazyl (DPPH) scavenging activities), ferric reduction activity potential (FRAP), total flavonoid concentration and antimicrobial activities of 80%, 90%, 100% methanol and chloroform extracts of V. officinalis Linn root and 90% and100% methanol leaf extracts were determined. Its antioxidant activity increases with increase in amount of extract (10% to 40%v/v). Total flavonoid content (TFC) varied from 73.32±0.002 mgQE/100g of dry weight (90% methanol) to 42.39±0.032 mgQE/100g dry weight (chloroform), 2,2-diphenyl-1-picrylhydrazyl (DPPH), radical scavenging activity (%) was varied between 87.39% (90% methanol) to 45.57% (chloroform) while Ferric reducing antioxidant power was observed between 372.93±0.04 mgAAE/100 g extract (90% methanol) to 129.41±0.026 mgAAE/100 g chloroform in the root extract. The methanolic extract of the leaf showed less antioxidant activity than the methanolic extract of the root. Crude extracts of V. officinalis root showed various degree of antimicrobial activity towards drug resistance microbial pathogens. Growth inhibition tests against bacterial pathogens demonstrated concentration dependence. Moreover, gram positive bacteria were more susceptible to V. officinalis root extract when compared to gram negative bacteria. In general V. officinalis root and leave extracts possess strong antioxidant and antimicrobial activities.

Background: The natural antioxidants have an important role in the prevention of many diseases. The aim of study is to investigate phytochemical components, antioxidant activity and acute oral toxicity of Pomegranate (Punica granatum L.) fruit peel (PFP) extract. Materials and methods: Phytochemicals of PFP were determined by qualitative chemical tests, thin layer chromatography, total polyphenol and flavonoid contents. The PFP extract was evaluated for antioxidant activity by DPPH assay and MDA assay. In vivo acute oral toxicity test was conducted using Karber-Behrens method to determine LD50. Results: Results illustrated that PFP mainly contains flavonoids, alkaloids, tannins, triterpenes, saponins, and coumarins. PFP extract exhibited the total polyphenol and flavonoid contents with 189.97 mg gallic acid equivalent/g dry weight and 9.42 mg quercetin equivalent/g dry weight, respectively. The DPPH free radical scavenging and anti-lipid peroxidation activities of PFP extract were expressed with IC50 value of 4.80 μg/mL and 0.38 μg/ mL, sequentially. Simultaneously, the Dmax (the maximum dose administered to mice that no toxicity was observed) of PFP extract was determined to be 21.28 g/kg, equivalent to 35.64 g dried herb. Conclusion: The PFP extract is relatively safe and revealed high antioxidant activity. Diseases mediated by the immune system are difficult problems to treat such as human immunodeficiency virus (HIV) and other lethal viruses. Infections that occur in normal people are generally brief and rarely leave permanent damage. Treatment of this disease requires an aggressive and innovative approach to the development of new treatments so that it requires the role of immunomodulators to improve the immune system. A substance that acts as an enhancer or immune enhancer can be obtained by using herbs that are efficacious as immunostimulants. One of the herbs used is herbal binara (Artemisia vulgaris L) which has been studied as a potential immunomodulator with high antioxidant activity. Previous research also stated that red shoots (Syzygium oleana) were studied as potential immunomodulators with high antioxidant activity. Several other species such as Syzygium samarangense have 16 flavonoida compounds which show pharmacological immunological activity. The purpose of this study was to determine the content of secondary metabolites of ethanol extract of herbal binara (Artemisia vulgaris L.) with red shoots (Syzygium oleana) and to determine the best dose of extract from the ethanol extract of herbal binara (Artemisia vulgaris L.) with red shoots (Syzygium oleana) can reduce the volume of swelling of mouse feet. Examination of the chemical content of secondary metabolites from the ethanol extract of herbal binara (Artemisia vulgaris L.) with red shoots (Syzygium oleana) is carried out by chemical screening and characterization of simplicia and extract. The method used is the slow type hypersensitivity method. In this test the independent variable is the secondary metabolite of ethanol extract of herb binara (Artemisia vulgaris L.) with red shoots (Syzygium oleana) with four concentrations (50, 100, 200 and 400 mg / kgBB). The positive control used by Stimuno dose is 32.5 mg / kgBB

The aim of this study was to determine the phenolic content and antioxidant activity of extracts obtained from herb of Tanacetum vulgare L. (tansy) harvested in two different locations from the western part of Romania. Aqueous extracts of tansy presented high antioxidant activity that ranged between 295.77 and 653.65 mg GAE/L, and remarkable percentage of inhibition (31.82-65.05 %). The compounds quantified in the plant extracts that were determined by UHPLC are: ascorbic acid, riboflavin, pyrocatechol, rutin, quercetin, and kaempferol. Extracts obtained from tansy flowers showed higher content of phenols compared to that obtained from leaves. Similarly, the flower extracts present a high antioxidant activity that could suggest their use as natural additives in food preservation and also in pharmaceutical industry and veterinary medicine.


Macadamia shells were used to prepare modified carbon by chemical agent H2O2 (25%) in 48 hours with coke ratio: H2O2 = 1:10. Modified carbon from Macadamia shells with chemical agent H2O2 has capable of adsorption heavy metal copper (Cu 2+) at an assumption concentration is 30ppm in the optimum conditions such as pH = 4, dose is 1.8 g/l, and the processing time is 30 minutes. The result showed that the adsorption ability of the material reached the highest efficiency is 78.33%. This result showed that modified carbon from shells Macadamia by chemical agent H2O2 capable of removing applications on heavy metal copper (Cu2+) in wastewater.
