The method of solution of the problem of polyunsaturated fatty acids (PUFA) lack in milk products is offered in the work. It is offered to create the milk-containing products (sour cream product) with adjusted fatty acid composition. The possibility of replacement of the mass part of milk fat (50 %) by the blend of natural vegetable oils was studied. For the solution of this problem the program within MatLab mathematical package was elaborated. The recommended fatty acids (FA) ratio [3] is selected as optimization parameter. The optimized blend was created using the elaborated program. The data, received by mathematical calculations, were experimentally proved using the method of gas-liquid chromatography [7]. On the based of the results, received at the studies, it can be stated, that 50 % replacement of mass part of fat (m.p.f.) in milk products (sour cream product) by elaborated blend, allows partially adjust its FA composition.

Abstract The early period of postnatal ontogeny of sheep is characterized by a variety of metabolic processes that result in the formation and consolidation of a certain type of metabolism. A special role is played by lipids, which together with proteins and carbohydrates constitute the bulk of organic compounds, cells and the organism as a whole. The purpose of this research was to study the polymorphism of CAST and GH genes as well as its association with the fatty acid composition of blood plasma lipids in lambs. The content of fatty acids was determined by gas-liquid chromatography in the form of methyl esters. From the data obtained, it follows that in all studied ontogeny periods the peripheral blood of sheep with CASTNN and CASTMM genotypes had a higher concentration of fatty acids such as palmitic, stearic, linoleic, and arachidonic acids. The content is as follows: 27.58, 45.40, 3.16, 0.28% vs. 26.21, 45.31, 3.62, 0.18% at the age of 2 months; 25.07, 43.25, 6.05, 1.74% vs. 23.24, 38.76, 6.49, 1.32% at the age of 4 months; 20.64, 22.26, 14.17, 3.38% vs. 17.64, 19.91, 15.07, 2.46% at the age of 8 months (P ˂ 0.05), (P ˂ 0.01). Studies of blood lipid composition of GHBBand GHAA genotype carriers showed that palmitic, stearic, linoleic, and arachidonic acids were dominant: 27.95, 27.96, 19.04% vs. 26.08, 23.88, 17.56% at the age of 2 months, 46.87, 39.87, 22.37% vs. 3.24, 6.87, 15.56% at the age of 4 months; 0.45, 1.68, 3.81% vs. 0.29, 1.29, 3.19% at the age of 8 months (P ˂ 0.05), (P ˂ 0.01). Thus, this study emphasizes that there is a close relationship between the ratio of fatty acids in total blood lipids in lambs and the intensity of growth and development, ensuring and controlling the direction of biochemical processes in the growth and development of young sheep.

Продукты масложировой промышленности играют важную роль в формировании рациона питания человека. При этом особое внимание отводится растительным маслам ввиду их высокой физиологической ценности. На сегодняшний день достаточно остро стоит вопрос о способах их идентификации. В связи с тем, что стоимость растительного масла в значительной степени обуславливается выбором сырья, наиболее распространенным видом фальсификации является внесение недобросовестными производителями в готовую продукцию более дешевых видов масел. Приведен анализ современных способов идентификации растительных масел из различного сырья. До настоящего времени метод газожидкостной хроматографии являлся основным при выявлении примесей посторонних жиров в продукции по ее жирнокислотному составу. Также для выявления фальсификатов могут быть использованы такие инструментальные методы, как ЯМР-спектроскопия, ИК-спектроскопия, а также метод изотопной масс-спектрометрии, который является наиболее перспективным. Особый научный интерес представляет идентификация растительных масел по их географическому месту происхождения. Основываясь на анализе литературы, показано, что наибольшее распространение при установлении региональной принадлежности масел получили исследования, направленные на изучение изотопных характеристик углерода (13С/12С), кислорода (18O/16O) и водорода (2H/1H) элементов, входящих в состав продукта, а также его жирнокислотного состава. Описаны преимущества комплексного подхода исследований, включающего в себя создание массива данных, состоящего из значений различных показателей, и его глубокий анализ с использованием статистических методов анализа. Математическая модель может быть усилена данными элементного профиля масла, изотопных характеристик отдельно взятых жирных кислот или содержанием фенольных соединений. Products of the fat and oil industry play an important role in shaping human diet. At the same time, special attention is paid to vegetable oils in view of their high physiological value. Today, the question of how to identify them is quite acute. Due to the fact that the cost of vegetable oil is largely determined by the choice of raw materials, the most common falsification type is the introduction of cheaper oils types into finished products by unscrupulous manufacturers. The authors provide an analysis of modern methods for identifying vegetable oils from various raw materials. It has been shown that the gas-liquid chromatography method is the main one in identifying products by their fatty acid composition and makes it possible to establish the presence of foreign fats impurities. Also, methods of isotope mass spectrometry, NMR spectroscopy, IR spectroscopy and electrophysical methods of analysis can be used to detect counterfeits. Of particular scientific interest is the vegetable oils identification by their geographical place of origin, which is very important for some countries of the European Union. Based on the analysis of literature, it has been shown that the most widespread in the regional oils affiliation establishing are researches aimed at researching the isotopic characteristics of carbon (13C/12C), oxygen (18O/16O) and hydrogen (2H/1H) of the elements that make up the product, and also its fatty acid composition. The advantages of an integrated research approach are described, including the creation of a data array consisting of the values of various indicators and its in-depth analysis using statistical analysis methods. The mathematical model can be strengthened by data on the elemental profile of the oil, isotopic characteristics of individual fatty acids, or the content of phenolic compounds.

Anethum sowa L. (Dill) seeds were investigated to determine the fatty acid composition and proximate analyses. The seeds contain 9.36 % fatty oil. The saturated and unsaturated fatty acids contributed 6.22% and 93.78% respectively of the oil. The per cent composition of the extracted oil was identified by Gas Liquid Chromatography (GLC). Among the six fatty acids identified from this study oleic acid contributed the highest proportion (87.10%), where as, linolenic, palmitic, stearic, behenic and arachidic all together contributed the rest (12.90%). Proximate analyses showed that A. sowa. seeds are good source of dietary fibre. Overall Dill seeds oil can be considered as a good source of oleic acid. The sensitivity of Listeria monocytogenes Scott A and ATCC 19114 to antimicrobial compounds was altered when bacterial membrane lipid composition was modified by growth in the presence of added fatty acids. Analysis of cellular fatty acid composition by gas-liquid chromatography indicated that L. monocytogenes Scott A cells contained 0.97, 2.32, 0.81, and 0.72% (relative) of C14:0, C16:0, C18:0, and C18:l, respectively. In the presence of exogenously supplied C14:0, C16:0, C18:0, and C18:l, the percentages increased to 14.03, 30.92, 16.30, and 27.90%. Average MICs for L. monocytogenes Scott A and ATCC 19114 to sodium chloride, tertiary butylhydroquinone, methyl paraben, and propyl paraben were 10.0%, 81, 1406, and 544 μg/ml, respectively. Growing either strain in the presence of 50 μg/ml of either exogenously added C14:0 or C18:0 fatty acids increased their resistance to the four antimicrobial compounds. However, growth in the presence of C18:1 led to increased sensitivity to the antimicrobial agents. The results indicate that the susceptibility of L. monocytogenes to antimicrobial agents is related to the lipid composition of the cell membrane. Consequently, food preservation processes which alter fatty acid composition of L. monocytogenes could result in changes in antimicrobial susceptibility.

The total saponifiable fatty acids of three stable L-phase variants of Staphylococcus aureus induced by cycloserine, methicillin, and lysostaphin were examined by gas-liquid chromatography. Five separate preparations of each of the three variants were examined. Twenty-nine fatty acids were identified. The fatty acid patterns of the three variants were very similar.

1. Adipose tissue was obtained simultaneously from subcutaneous and deep sites in children undergoing elective surgery, and from different subcutaneous sites in adults. The lipid content and fatty acid composition were measured using gas-liquid chromatography and the number of cells counted after fixation in osmium tetroxide. The mean amount of lipid per cell was used as a measure of the size of the cells.2. Cells from deep sites in children were significantly smaller (P > 0.001) than those from subcutaneous sites in the same individual. Cells from different subcutaneous sites were of similar size.3. The fatty acid composition of the lipids was similar in tissue taken from the abdominal wall and from deep sites.4. The fatty acid composition of adipose tissue from the lower leg showed an increase in the monounsaturated fatty acids and a decrease in the saturated fatty acids compared with the fatty acid composition of tissue from other subcutaneous sites.

Representative samples of channel catfish (Ictalurus punctatus Rafinesque) were obtained from five processing plants and analyzed by gas–liquid chromatography for fatty acid composition of muscle tissues. Twenty-three fatty acids were measured. The saturated fatty acids comprised 26.5%, monoenes 48.1%, dienes 13.0%, trienes 3.1%, tetraenes 3.6%, pentaenes 1.3%, and hexaenes 1.9% of total fatty acids. Fatty acid composition varied significantly (P <.01) among fish obtained from the same plant, and in addition, significant variation associated with processing plant was observed for some fatty acids.

The fatty acid comparative essay of high aquatic plants: Typha latifolia L., Ceratophyllum demersum L. and Veronica anagallis-aquatica L. from water bodies of Baikalian region was carried out. For the first time this biochemical parameter of water form V. anagallis-aquatica was compared with that of coastal-water T. latifolia and submerged C. demersum. The fifteen individual molecules of fatty acids with a chain length from 12 to 22 carbon atoms have been identified by the method of gas liquid chromatography – mass spectrometry. The fatty acid composition of investigated species was different. Among the fatty acids saturated and unsaturated molecules was found, the most distributed fatty acids was saturated palmitic (С16:0), steric (С18:0) and unsaturated linoleic (С18:2 w6), α-linolenic (С18:3 w3). In total, the C16 and C18 acids in studied species accounted for 98%. Differences in the composition of fatty acids of the studied species are discussed from the standpoint of the characteristics of fatty acid metabolism depending on the habitat of plants and are considered as one of the mechanisms of their adaptation to late vegetation. Studies of the fatty acid composition of aquatic organisms contribute to the overall strategy of plant adaptation to changing environmental conditions and are important for the ecological and biochemical monitoring of the ecological status of water bodies.
