Nowadays, there is a growing consumer interest in food products, made from vegeta-ble raw materials. The article is devoted to an actual topic related to the choice of plant mate-rials, based on its nutritional and biological value, in order to create functional beverages. The analysis of the world market of vegetable analogues of milk was implemented. Based on the literature, the following raw materials were analyzed: cashew nuts, cannabis fruits, sesame and poppy seeds, almond kernels, buckwheat seeds and oats, soybeans. The data on nutritional value, vitamin-mineral and amino acid composition, as well as the composition of fatty acids of the specified raw materials was presented. The conclusion is made about the perspective of its use for the manufacture of drinks, alternative cow’s milk. The article reflects the results of research work on the creation of a functional drink based on sesame seeds, provides information about the nutritional value and biochemical composition of the drink, made on the basis of this raw material. Sesame milk when used regularly can help prevent diseases of the car-diovascular system, the gastrointestinal tract, the musculoskeletal system.

Abstract: Functional products are currently attracting a lot of research interest. Modern people’s diet does not satisfy their need for nutrients, vitamins and minerals, and functional products can make it more balanced. In particular, our diet is lacking in protein. This paper discusses the prospects for enriching dairy products with plant protein derived from pine nuts and their products. Pine nut paste, fat-free milk, and oil cake are a valuable source of fatty acids, vitamins, and microelements. The protein, lipid, vitamin, and mineral content of these products makes them suitable for combining with milk. Their water-holding and fat-emulsifying capacities allow their use as stabilizers and emulsifiers. Siberian pine nuts grow wild in the Kemerovo Region, which makes their use as a raw material economically feasible. The article introduces a number of functional dairy products enriched with pine nut products, such as cheese, ice cream, and cottage cheese. Further, it describes the production process and the products’ nutritional value. The chemical composition of new types of dairy products shows that using pine nut oil cake, fat-free flour, paste, and oil enriches them with plant proteins, vegetable fats, vitamins as well as macro- and microelements. Replacing dairy raw materials with plants does not reduce the nutritional value of new dairy products. Dairy foods are rich in protein, fat, and minerals. The vitamin content of new dairy products with functional ingredients is similar to that of dairy-based products. Moreover, using functional products (pine nut oil cake, fat-free flour, paste, and oil) enriches new types of dairy products with tocopherols.

Health indicators of the population depend significantly on the food quality and nutritional value. Simple carbohydrates excess of and lack of protein, dietary fiber, vitamins, minerals, antioxidants and other physiologically active substances increase the risk of socially significant disease progress. The development and production of mass-consumed products with high nutritional and biological value, including affordable non-traditional raw materials use, are promising areas of the food industry development aimed at improving the nutritional status of the population. The article presents the research results on the developed Noodle products recipes from non-traditional raw materials that meet modern healthy nutrition requirements, intended for dietary treatment and dietary prevention of people with overweight / obesity. The research aimed at expanding the range of macaroni products with these characteristics. As the main raw material, a man selected whole-wheat flour – new spelt flour, and as additional raw materials – buckwheat flour, broccoli and celery powders. The researchers found that the introduction of macaroni products from buckwheat spelt, broccoli and celery powders into the recipe had a multidirectional effect, reducing or increasing various indicators of its nutritional value. The changes range did not affect the overall characteristics. The satisfaction degree of the average daily need for food substances and energy when consuming a portion of 100 g for each sample of developed Noodle products allows them to be classified as functional products that are protein and dietary fiber sources, according to the requirements of the TR CU 022/2011.

Проанализированы проблемы на рынке молока и молочных продуктов России в условиях глобального экономического кризиса: перепроизводство молока в основных странах-экспортерах, снижение закупочных цен на сырое молоко, снижение цен на биржевые товары в мире и России в 2020 году, тренд на уменьшение спроса на молочные продукты на мировом рынке в среднесрочном периоде, снижение общего спроса на молочные продукты на внутрироссийском рынке при падении реальных доходов населения, изменение структуры потребления. Проведена оценка новых возможностей и угроз для развития отрасли: со стороны потребителей — рост цен на продовольствие, снижение доходов; с позиции производителей молока — снижение закупочных цен, рост требований к сырью для производства продукции с увеличенными сроками годности, дефицит рабочей силы, вероятное сокращение господдержки в результате снижения цен на углеводороды, попытки регулирования цен; со стороны перерабатывающих предприятий — сокращение спроса, снижение цен на готовую продукцию вслед за мировыми ценами. Обоснованы приоритеты инвестирования в молочном скотоводстве и основные формы совершенствования государственной поддержки отрасли, обеспечивающие эффективную адаптацию производителей молока к новым экономическим условиям, повышение устойчивости отрасли при усилении макроэкономических рисков. The article analyzes the problems in the Russian milk and dairy products market in the context of the global economic crisis: overproduction of milk in the main exporting countries, lower purchase prices for raw milk, lower prices for commodities in the world and in Russia in 2020, trend to reduce demand for dairy products on the world market in medium term, a decrease in total demand for dairy products in the Russian market with a decrease in the purchasing power of the population, a change in the structure of consumption. An assessment of new opportunities and threats to the development of the industry was carried out: on the part of consumers — rising food prices, lower incomes; from the perspective of dairy producers — reduction in purchase prices, increased requirements for raw materials for the production of products with extended periods, labor shortages, the likely reduction in state support as a result of lower prices for hydrocarbons, attempts to regulate prices; on the part of processing enterprises — reduction of demand, reduction of prices for finished goods following world prices. The investment priorities in dairy cattle breeding and the main forms of improving state support for the industry, ensuring the effective adaptation of milk producers to new economic conditions, increasing the sustainability of the industry with increasing macroeconomic risks, are substantiated.

Purpose. The purpose of the article is to determine the prospects of deep processing of corn in Ukraine, taking into account the restraining factors of development, on the basis of the analysis of the state and tendencies of functioning of the world market of corn. Methodology / approach. During the research, general scientific and special research methods were used, in particular: analysis and synthesis, scientific abstraction – in determining the purpose and formulating conclusions; comparative, calculation, statistical and graphical ones – in the assessment, analysis, comparison and establishment of patterns of the current state and trends in the production of corn and its deep processing; program-target one – to substantiate the factors of intensification of deep processing of corn in Ukraine. Results. The analysis was carried out and tendencies of world corn production were determined. The shares of countries-producers and countries-consumers of corn were calculated; their dynamics of changes were analyzed. Analysis of the dynamics of prices for corn grain on the Chicago Mercantile Exchange indicates that the price of raw materials is gradually declining, so agricultural enterprises that sell corn as a raw material, lose income from its production. The structure of corn use in different directions in the world was analyzed, and the structure of its use in the USA was considered in more detail. Factors of activation of deep processing of corn were identified. In Ukraine, deep grain processing as an industry is just beginning to develop, so it is worth processing corn, based on the experience of leading countries, such as the USA and China. Estimated costs for the construction of a modern plant for deep processing of corn and income from the implementation of this investment project were calculated. Originality/scientific novelty. The scientific novelty of the study is a comprehensive analysis of the world corn market; economic substantiation of expediency of corn processing in Ukraine; improving the system of factors to intensify the development of deep processing of corn in Ukraine. Practical value / implications. The practical value of the results of the study is that they will contribute to the formation of the concept of intensifying the development of deep processing of corn in Ukraine. The main results can be used by agro-industrial enterprises during the development of deep corn processing projects.

The topicality. The current state of nutrition of Ukraine population is analyzed in the article, draws conclusions about the possible improvement of the situation by creating products from fish raw materials with the addition of functional food ingredients of plant origin, which will have improved organoleptic characteristics and increased energy and nutritional value, as well as recommended as a functional product in the diet of certain categories of the population. Purpose and methods. The purpose of the study is to substantiate the recipe of a new type of fish semi-finished products “Zrazy fish slices chopped with poppy and sesame seeds” with enrichment with their functional ingredients. The object of research is the technology of the semi-finished product “Zrazy fish cut with poppy and sesame seeds”. The subject of the study are semi-finished products “Zrazy fish slices”, semi-finished products “Zrazy fish slices with poppy seeds and sesame seeds”, Atlantic mackerel fillets (DSTU 4378: 2006), sesame seeds (DSTU 7012: 2009) and poppy seeds (DSTU 7696: 2015). Research methods: the research was based on methods of theoretical generalization, comparative analysis, and calculation, organoleptic. Results. The results of theoretical and experimental research of creation of technology of fish semi-finished product “Zrazy fish cut with poppy and sesame seeds” of functional purpose have been shown. The chemical composition of the main raw material of the dish – Atlantic mackerel has been analyzed and its advantages in the recipe composition have been proved. Possibility of using poppy seeds and sesame seeds as functional ingredients in the dish has been confirmed. The organoleptic parameters of the dish were studied and the optimal ratio of poppy seeds and sesame seeds in breadcrumbs has been determined. The nutritional, energy value and vitamin-mineral composition of the dish “Fish slices chopped with poppy and sesame seeds” have been calculated. Conclusions and discussions. The traditional recipe of the dish “Zrazy fish cut” has been analyzed. The expediency of modification of the traditional recipe due to the complete replacement of the main fish raw material with Atlantic mackerel fillet and the functional ingredients introduction of plant origin, namely poppy seeds and sesame seeds in breadcrumbs zrazy has been proved. The optimal content of poppy seeds and sesame seeds has been determined in the recipe of the dish “Fish cut with poppy seeds and sesame seeds”, which is 1.2% of poppy seeds and 0.6% of sesame seeds in breadcrumbs. It has been found that the variant of the recipe № 3 dishes “Zrazy fish slices cut with poppy and sesame seeds” has the best organoleptic quality indicators: harmonious taste properties, and due to the introduction of breading poppy and sesame seeds acquire an attractive and original appearance. It has been proved that the introduction of Atlantic mackerel fish fillets, poppy seeds and sesame seeds into the recipe composition allows to significantly increase the content of fats (5 times chopped fish with poppy seeds and sesame seeds) in fats (5 times), unsaturated fatty acids (4.5 times) , PUFA (6.9 times). The content of such minerals as calcium, magnesium, iron, and vitamins B2, B3, B6, PP, K, D in the dish increased by more than 50%. The latest recipe “Fish cut with poppy and sesame seeds” ensures the absorption of calcium in full due to the presence in its chemical composition of the optimal ratio of Ca: P: Mg = 1: 1,48: 0,5. The energy value of the dish has increased almost 1.5 times. The degree of daily nutrient requirements for men of the III working age group aged 30 to 39 years of the dish “Fish cut with poppy and sesame seeds” in such as dietary fiber (13.05%), PUFA (36.6%), calcium (12.99%), magnesium (18.88%), phosphorus (19.23%), vitamin D (258.4%).

One of the technological innovations nowadays is the development of industrial processing of agricultural raw material, manufacturing process leading to lower risks – «Low/No/Reduced» and «Better-for-you». This may be done by light processing of raw materials and use of traditional technologies, i.e. fermentation of craft beverages by natural symbiotic cultures Oryzamycesindichiand Medusomycesgisevi (kombucha). The recent years saw a worldwide interest to a horticultural crop called Hippophaerhamnoides (sea-buckthorn) as it is eco-friendly and healthful. Its fruits have a special smell and taste, are reach in carotene, carotenoids, tocopherols, ascorbic acids, polyphenols. The composition is the reason why it is used for foodstuff, i.e. pastry, dairy products, unclarified juice. Production of beverages fermented by natural symbiotic cultures and local orchard products is a new direction in Russia. The supplies are limited which means that the research is relevant. The aim of the research is to study the possibility of usage ofjuice of Hippophaerhamnoides fruits in the new technology of soft drinks production fermented by Oryzamycesindichi and Medusomycesgisevi. A single nutritious substrate for Oryzamycesindichi and Medusomycesgisevi symbiotic cultures cultivation was proved impossible to be produced. Still the possibility to replace polyphenols of the Medusomycesgisevi by those of the sea-buckthorn juice must be analyzed.Sea-buckthorn juice added in a culture medium fermented by Oryzamycesindichi and Medusomycesgisevi symbiotic cultures increases biosynthetic activity of acidforming bacteria. This tangibly improves organoleptic properties of the fermented soft beverages produced. Besides, the technology of Oryzamycesindichi and Medusomycesgisevi production presupposes no clarification which makes the process of the Hippophaerhamnoides use significantly easier. The research helped to identify that the sea-buckthorn juice used in a must fermented by Medusomycesgisevi has many advantages. Namely more comprehensive utilization of carbohydrate, a higher level of reduction of organic acids, and decrease of the time of technological process (24 hours less).

Introduction. With the development of the food and processing industry, the matter of environmental pollution is becoming more and more acute. Environmental protection is based on the principle of rational use of natural resources and sustainable technology. Vegetable pomace is a secondary raw material; its amount depends on the production technology and equipment. The observed positive trend in the gross harvest of vegetables in open ground can increase the number of vegetable processing enterprises and the capacity of existing enterprises. Eventually, waste will start accumulating at processing sites, and it will have to be used as raw materials. The present paper features the content of biologically active substances in pomace of carrots and beets grown on the territory of the Siberian region and introduces options for their further use in functional foods. Study objects and methods. The research featured carrot pomace of the varieties Losinoostrovskaya, Nantskaya, and Queen of Autumn, as well as beet pomace of varieties Cylinder and Bordeaux. All the samples were harvested in the Kemerovo region in 2019. Determination of physical and chemical parameters was carried out using standard methods. Carotenoids, flavonoids, β-cyanine were studied using spectrometry and photocolorimetric method. Results and discussion. The experiment featured the content of bioactive substances in pomace of carrots and beets obtained during industrial processing. The content of carotenoids in carrots (mg of β-carotene per 100 g of dry weight): for Losinoostrovskaya variety – 23.56 ± 0.23; Nantskaya – 25.32 ± 0.18; Queen of Autumn – 20.78 ± 0.25. Flavonoid content (mg of catechol equivalent per 100 g of dry weight): Losinoostrovskaya – 12.02 ± 0.37; Nantskaya – 13.45 ± 0.56; Queen of Autumn – 11.50 ± 0.48. The content of β-cyanine in beets (mg per 100 g of dry weight): Cylinder – 100.0 ± 8.5; Bordeaux – 35.0 ± 1.8. The nutritional value of carrot and beet pomace with a mass fraction of moisture was 10%. The nutritional value of vegetable pomace is due to the high content of dietary fiber; therefore, the raw materials can be considered for functional food production. The content of biologically active substances in vegetable pomace (flavonoids, carotenoids, β-cyanines) can enhance the functional orientation of this secondary raw material when used in food technologies for the production of food of high nutritional value. Conclusion. The results obtained will make it possible to use the biochemical potential of plant raw materials in many aspects, as well as to obtain new functional food products, thereby expanding the range of healthy foods.

The article presents the results of studies obtained in the study of the quality of milk processed with the use of high-frequency acoustic cavitation and dairy products produced with its use. The research was carried out with the use of General scientific and special research methods in the laboratory of the Department of technology of storage and processing of animal products of the K. A. Timiryazev and in the accredited laboratory of technochemical control of the all-Russian research Institute of dairy industry. It is shown that the treatment of cow's milk-raw materials high-frequency ultrasonic vibrations (above 45 kHz), the generated electric ultrasonic device immersion type pulse impact ouzo "Activator-150", the number of bacteria of group of intestinal sticks (coliforms) decreased by almost 40%, which allows to make a conclusion about the appropriateness of the selected method of exposure for the destruction of microorganisms E. coli and coliform bacteria. Processed, using high-frequency acoustic cavitation, cow's milk was used for the production of brine cheese-cheese. It is shown that cheese cheese had a high nutritional value, which is due to the preservation of essential substances in the raw material (in particular, calcium, which in the production of cheese cheese precipitates if pasteurized milk is used), elastic consistency, safety of consumer characteristics - microbiological and physico-chemical.

One of the most important problems of the population's nutrition is the high caloric content of flour confectionery products, due to their oversaturation with carbohydrate and fat components. This trend leads to micronutrient deficiencies, and later to metabolic problems and deteriorating health. In recent years, there has been an expansion of the range of waffles, improving technology through the wider introduction of various ingredients of plant origin. Crustilian is a crunchy product or component of a dish that has a crispy texture (waffles, cereal breads) or a surface (a crust of bread or potato balls with a fried crust). Crustilian is also used as a layer for cakes or desserts, which usually consists of waffle crumbs, chopped nuts and melted dark chocolate. There are still many variations for making crustilians. The range of applications of crustilian in the manufacture of sweet dishes is extremely wide. The nutritional value of crustilians is determined by the composition of raw materials and can be significantly increased due to the rational selection of components, the introduction of enrichments in the recipe, as well as technological processing, which increases their digestibility. Improving the technology of crucifers waffles by increasing their nutrient density will expand the range of products with functional ingredients, and enrichment of the micronutrient composition due to valuable plant raw materials will improve the nutritional value and organoleptic characteristics of the finished product. A line of crustilians with a high content of biologically active compounds has been developed due to the introduction of superfoods such as flax seeds, sesame seeds, sunflower and walnuts and peanuts into the product formulation. It is established that the use of peanuts and walnuts, in the composition, makes the dough less crispy and more fatty. The presence of flax and sesame does not reduce the crunchiness of the finished product, which is characteristic of crustilians, but, on the contrary, slightly increases this figure. It is proved that the index of nutritional density of crustilian made according to the developed recipe in comparison with the prototype is characterized by an increase in the index of nutritional density in three times, while the mass fraction of the macronutrients increases from 1.26 to 2.5 times, depending on the micronutrient. increases only 1.1 times.

Biocorrectors are dry concentrates from natural raw sources with high nutritional value due to the high content of important chemical components of food, including essential, minor, and biologically active nutrients. The raw material for the production of natural biocorrectors can be waste from cutting the fish and animal products. It is promising to use the skin of an octopus, the weight of which during cutting is up to 37% of the weight of raw materials, Pacific herring milt, which is formed during cutting in an amount of up to 12.4% of the weight of raw materials, and bivalve mantle mollusk of Primorsky scallop, accounting for about 10% of its mass. The goal of the research is to obtain dry food concentrates from seafood waste that exhibit functional properties. To preserve and form the specific properties of finished products, namely high biological value, digestibility, organoleptic indicators of concentrates, low-processing temperatures (cryotechnology) were used, which maximally preserved the composition, structure and other natural properties of raw materials. The dry seafood concentrates obtained by cryogenic technology exhibit high functionality and can be used as biocorrectors of food in order to impart high nutritional and biological value to it due to the balance of microand macronutrients.
